We hypothesized that supplementing finishing diets with palm oil would promote adipogenic gene expression and stearoyl-CoA desaturase (SCD) gene expression in subcutaneous (s.c.) and intramuscular (i.m.) adipose tissues of feedlot steers. Eighteen Angus and Angus crossbred steers were assigned to three groups of 6 steers and fed a basal diet (control), with 3% palm oil, or with 3% soybean oil, for 70 d, top-dressed daily. Tailhead s.c. adipose tissue was obtained by biopsy at 14 d before the initiation of dietary treatments and at 35 d of dietary treatments. At slaughter, after 70 d of dietary treatment, tailhead s.c. adipose tissue and i.m. adipose tissue were obtained from the longissimus thoracis muscle. Palm oil increased plasma palmitic acid and soybean oil increased plasma linoleic acid and ${\alpha}$-linolenic acid relative to the initial sampling time. Expression of AMP-activated protein kinase alpha ($AMPK{\alpha}$) and peroxisome proliferator-activated receptor gamma ($PPAR{\gamma}$) increased between the initial and intermediate biopsies and declined thereafter (p<0.03). SCD gene expression did not change between the initial and intermediate biopsies but declined by over 75% by the final period (p = 0.04), and G-coupled protein receptor 43 (GPR43) gene expression was unaffected by diet or time on trial. Soybean oil decreased (p = 0.01) $PPAR{\gamma}$ gene expression at the intermediate sample time. At the terminal sample time, $PPAR{\gamma}$ and SCD gene expression was less in i.m. adipose tissue than in s.c. adipose tissue (p<0.05). $AMPK{\alpha}$ gene expression was less in s.c. adipose tissue of palm oil-fed steers than in control steers (p = 0.04) and CCAAT enhancer binding protein-beta ($CEBP{\beta}$) gene expression was less in s.c. and i.m. adipose tissues of palm oil-fed steers than in soybean oil-fed steers (p<0.03). Soybean oil decreased SCD gene expression in s.c. adipose tissue (p = 0.05); SCD gene expression in palm oil-fed steers was intermediate between control and soybean oil-fed steers. Contrary to our original hypothesis, palm oil did not promote adipogenic gene expression in s.c. and i.m. adipose tissue.
Sucuk is the most popular dry-fermented meat product. Sucuk has a relatively high fat. Poppy seed oil as animal fat replacer was used in Turkish sucuk and effects of its use on sucuk quality were investigated. There was a significant (p<0.5) treatment × ripening time interaction for moisture, pH (p<0.05) and 2-thiobarbituric acid reactive substances (TBARS) values (p<0.01). Increasing poppy seed oil level decreased (p<0.05) TBARS values. Addition of poppy seed oil to the sucuks had a significant effect (p<0.01) on hardness, cohesiveness, gumminess, chewiness and springiness values. Cholesterol content of sucuks decreased (p<0.05) with poppy seed oil addition. Using pre-emulsified poppy seed oil as partial fat replacer in Turkish sucuk decreased cholesterol and saturated fatty acid content, but increased polyunsaturated fatty acids. Poppy seed oil as partial animal fat replacer in Turkish sucuk may have significant health benefits.

The objective of this study was to investigate the effects of canola and flaxseed oils on the physicochemical properties and sensory quality of emulsion-type sausage made from spent layer meat. Three types of sausage were manufactured with different fat sources: 20% pork back fat (CON), 20% canola oil (CA) and 20% flaxseed oil (FL). The pH value of the CA was significantly higher than the others (p<0.05). The highest water holding capacity was also presented for CA; in other words, CA demonstrated a significantly lower water loss value among the treatments (p<0.05). CA had the highest lightness value (p<0.05). However, FL showed the highest yellowness value (p<0.05) because of its own high-density yellow color. The texture profile of the treatments manufactured with vegetable oils showed higher values than for the CON (p<0.05); furthermore, CA had the highest texture profile values (p<0.05) among the treatments. The replacement of pork back fat with canola and flaxseed oils in sausages significantly increased the omega-3 fatty acid content (p<0.05) over 15 to 86 times, respectively. All emulsion sausages containing vegetable oil exhibited significantly lower values for saturated fatty acid content and the omega-6 to omega-3 ratios compared to CON (p<0.05). The results show that using canola or flaxseed oils as a pork fat replacer has a high potential to produce healthier products, and notably, the use of canola oil produced characteristics of great emulsion stability and sensory quality.
Hibiscus is rich in acids, anthocyanins, flavonols, oils, proanthocyanidins, and various pigments. It is utilized for medicinal purposes, to improve human health, and as a galactagogue to stimulate milk production in cows. Due to its biofunctional activities, hibiscus oil has broad applications spanning different fields. This study analyzed the pH and organoleptic quality attributes of three different vegetable-based milk analogs supplemented with hibiscus oil at 0%-1.5% concentrations. The results revealed that the addition of hibiscus oil did not affect pH; however, as the concentration of the hibiscus oil increased, the organoleptic quality attributes of the milk analogs supplemented with it decreased. All three milk analogs supplemented with 0.25% hibiscus oil demonstrated favorable attributes compared to the control group. This study provides valuable foundational data for developing new vegetable-based milk analogs that possess enhanced biofunctionality through the supplementation of hibiscus oil.
To study the acute effect of dietary docosahexaenoic acid (DHA, $C_{22:6}$) on the expression of adipocyte determination and differentiation-dependent factor 1 (ADD1) mRNA in pig tissues, weaned, crossbred pigs (28 d of age) were fed with either 10% (on as-fed basis) tallow (high stearic acid), soybean oil (high linoleic acid), or high DHA algal oil for 2 d. The plasma and liver DHA reflected the composition of the diet. The adipose tissue and skeletal muscle DHA did not reflect the diet in the short term feeding. The results also showed that the diet containing 10% algal DHA oil significantly decreased the total plasma cholesterol (39%) and triacylglycerol (TG; 46%) in the pigs. Soybean oil significantly decreased plasma TG (13.7%; p<0.05), but did not have an effect on plasma cholesterol. The data indicate that different dietary fatty acid compositions have different effects on plasma lipids. The ADD1 mRNA was decreased (p<0.05) in the liver of DHA oil-treated pigs compared with the tallow-treated pigs. The diets did not have significant effect on the ADD1 mRNA in adipose tissue. Addition of algal DHA oil in the diet increased acyl CoA oxidase (ACO) mRNA concentration in the liver, suggesting that dietary DHA treatment increases peroxisomal fatty acid oxidation in the liver. However, dietary soybean oil supplementation did not affect mRNA concentrations of ADD1 or ACO in the tissues of pigs. Because ADD1 increases the expression of genes associated with lipogenesis, and ACO is able to promote fatty acid oxidation, feeding DHA oil may change the utilization of fatty acids through changing the expression of ADD1 and ACO. Therefore, feeding pigs with high DHA may lead to lower body fat deposition.

The aim of the study was to investigate the effect of dietary fish oil supplementation on the semen characteristics of the Markhoz buck. Sixteen bucks were randomly allocated into 4 groups and received four different diets: unsupplemented control diet, supplemented with fish oil at 2.50% dry matter (DM), supplemented with fish oil (2.50% DM) and vitamin E (0.30 g/kg DM), and supplemented with vitamin E (0.30 g/kg DM). All experimental diets were formulated according to AFRC (1998). Semen was collected at 14 d intervals from June 17, 2006 to September 2, 2006. Semen characteristics were evaluated. Significant effects (p<0.05) of the week (sampling time) were observed for all parameters except semen volume. Also a significant effect (p<0.05) of dietary treatment was observed for all parameters except for percent sperm with normal morphologies and semen volume. Fish oil supplementation with excess vitamin E had a significant effect (p<0.05) on total number and sperm density, motility and progressive motility, percentage viability and dead sperm. The interaction between fish oil feeding and sampling time was significant (p<0.05) for all of the parameters. The bucks that received fish oil in association with vitamin E, effect fish oil showed the greatest improvement in semen characteristics compared with the other groups (p<0.05). This study showed that fish oil supplementation with vitamin E may have a beneficial effect on the semen quality and fertility of Markhoz bucks.

Objective: The objective of this study was to determine the effect of inclusion level on the digestible energy (DE), metabolizable energy (ME), and total tract digestibility of acid-hydrolyzed ether extract (AEE) of cottonseed oil when fed to growing pigs. Methods: Forty-two barrows (initial body weight = $35.51{\pm}2.01kg$) were randomly allotted to a completely randomized design with a corn-soybean meal basal diet, five levels of cottonseed oil (2%, 4%, 6%, 8%, and 10%) and a 10% soybean oil diet. Each diet was replicated six times with one pig per replicate. The experiment lasted 19 days, 7 d for cage adaptation, 7 d for diets adaptation and last 5 d for feces and urine collection. The energy values and apparent total tract digestibility (ATTD) of cottonseed oil and soybean oil were calculated by the difference method, and regression equations were established to predict the energy values of cottonseed oil. The apparent digested fat of the entire intestinal tract was also regressed against dietary fat intake to determine the true total tract digestibility (TTTD) and endogenous loss of fat for cottonseed oil. Results: The results showed that the DE and ME contents of cottonseed oil were not different as the inclusion level increased. The DE and ME values determined by the regression equation were 36.28 MJ/kg and 34.96 MJ/kg, respectively, and the values were similar to the mean DE and ME values calculated by the difference method (36.18 and 35.56 MJ/kg, respectively). The ATTD of cottonseed oil was also not affected by the inclusion level of cottonseed oil, and the TTTD and EFL determined by the regression method were 92.40% and 13.83 g/kg of dry matter intake for corn-soybean basal diet. The DE, ME, and ATTD of AEE in soybean oil determined by the difference method were 35.70 MJ/kg, 35.20 MJ/kg and 92.31%, respectively. There were no differences in the DE, ME, and ATTD between cottonseed oil and soybean oil, although the ratio of unsaturated to saturated fatty acids for soybean oil was higher than for cottonseed oil. Conclusion: The DE, ME, and ATTD values of cottonseed oil were not affected by its dietary inclusion level. The energy values of cottonseed oil determined by the difference and regression methods were similar. Furthermore, the ratio of unsaturated to saturated fatty acid for oils was not the decisive factor to influence the energy values and ATTD of oils.

A total of 80 pigs ($5.68{\pm}0.61kg$ BW; 21 d of age) were used to evaluate the effect of fat sources in weaned pigs. Pigs were allotted into five treatments based on body weight, in a completely randomized block design. Treatments consisted of diets representing different ratio between soy oil or corn oil and tallow; 1) S100 (soy oil 100%), 2) S75 (soy oil:tallow=75:25), 3) S50 (soy oil:tallow=50:50), 4) C75 (corn oil:tallow=75:25), 5) C50 (corn oil:tallow=50:50). During d 0 to 14, pigs were fed diets containing 3,400 kcal ME, 23% crude protein, 1.65 % lysine and for the period of d 15 to 28, pigs were fed diets supplying 3,400 kcal ME, 20.5% crude protein, 1.355% lysine. For d 0 to 14, a significant differences in ADG and ADFI were observed among treatments, pigs fed animal-vegetable fat blends gained more than pigs fed the S100. As tallow addition was increased from 25% to 50% replacing soy or corn oil, ADG was improved from 6.32% to 28.38%. In phase II (d 15 to 28) period, ADG, ADFI and FCR were not significantly different among treatments. For overall period (d 0 to 28), pigs fed 50% animal:50% vegetable fat blends diets consumed more feed and grew faster than pigs fed control diet and 75% vegetable oil:25% tallow groups, but the differences was not significant among treatments. Apparent DM, CP and fat digestibility were increased with time postweaning for each treatment. There were no differences in digestibilities of total amino acid during overall period. The combination of soy oil or corn oil with tallow produced slightly higher serum triglycerides (TG) and total cholesterol (TC) combination compared with the soy oil alone. In conclusion, tallow:soy (or corn) oil blends diets improved growth rate and the ratio of 50% tallow plus 50% soy (or corn) oil blends diets were favorable for growth and nutrient digestibilities of weaned pigs.

A total of 125 pigs (5.8 kg of BW) were allotted in a completely randomized block design. Treatments were coconut oil, corn oil, soybean oil, tallow and tallow+lecithin. Each treatment had 5 replicates with 5 pigs per replicate. From d 0 to 7, pigs fed vegetable oil supported greater average daily gain (ADG) and improved feed/gain (F/G) compared to pigs fed the animal fat. Addition of lecithin to tallow increased ADG by 7.2%. Feed intake were similar for all treatment groups. From d 8 to 14, pigs fed coconut oil and soy oil showed better ADG and average daily feed intake (ADFI) than any of the others. From d 15 to 21, pigs fed the tallow diets had lower gains (p < 0.05) than those fed diets that contained vegetable oil and tallow with added lecithin. The effect of different fat sources on gain became smaller with age. Feed intakes were similar between the vegetable oil and lecithin supplemented diets each week postweaning except for pigs fed tallow (p < 0.05). Feed : gain ratios were superior during the initial 2 weeks postweaning period when pigs were provided vegetable oil diet compared with pigs fed tallow. All pig groups had similar feed : gain ratios during 3 weeks. Combinations of tallow with lecithin tended to have intermediate feed/gain ratio. It was found that vegetable oils were much better in improving growth rate of the piglets. Lecithin significantly improved growth rate and feed efficiency of the pigs through the whole experimental period compared to tallow. Coconut oil was the most effective in improving growth of pigs during the first two weeks postweaning. Corn oil had equal value with soy oil in improving growth performance of weaned pigs. When vegetable oil was added, the digestibilities of nutrients except for minerals were higher than when the tallow was fed. Nutrients digestibility was similar among vegetable oils. The addition of lecithin to tallow increased digestibility of gross energy, dry matter, ether extract and crude protein. Crude ash and phosphorus digestibility were not affected by the treatments. Dry matter excretion was not different among treatments except for tallow which showed significantly higher dry matter excretion (p < 0.05), while nitrogen excretion was significantly decreased in pigs fed vegetable oil sources. However, Phosphorus excretion was not affected by the different fat sources.
