The prevalence rate of osteoporosis in older men and women has recently increased, and thus bone health is a major concern in Korea. This concern, along with increasing concern regarding youth height, has led to growth of the functional food industry for children, reaching approximately 200 billion won. It is necessary to develop safe and effective functional materials for bone growth and health. Foods are excellent sources of functional material as they are safe to use. It is well known that the phosphopeptide casein, which is derived from milk, is effective against osteoporosis by aiding in the absorption of calcium. In our study, collagen peptides derived from porcine skin were evaluated as a functional material for bone growth, as several peptides have been shown to aid in osteoblast formation.

This study was conducted to evaluate the acceptability of cured cooked boneless chicken drumettes as a raw material for Chuncheon Dakgalbi and to observe its effect on pH, lipid oxidation, volatile basic nitrogen (VBN) content and total viable count (TVC) during refrigerated storage under vacuum. Boneless chicken drumettes were dry cured with a mixed curing agent (0.20% w/w) consisting of sodium chloride (93.1%), sodium nitrite (5.9%) and sodium bicarbonate (1.0%) for 24 h at $2{\pm}2^{\circ}C$. Cured samples were cooked using an oven at $150^{\circ}C$ for 20 min and stored at $5.5{\pm}0.5^{\circ}C$ for 60 days under vacuum. Non-cured cooked sample was used as a control. Sensory evaluation was performed on day 2 of storage using 22 untrained panelists and samples were mixed with Dakgalbi sauce and reheated using a microwave for 2 min. There were no significant differences between control and treatment group on appearance, flavor, texture, juiciness and overall acceptability. Cured cooked boneless chicken drumettes had significantly (p<0.05) higher pH, lower lipid oxidation, VBN and TVC consistently during storage in comparison with control. These results suggest that dry curing could be applied to boneless chicken drumettes as raw material for Chuncheon Dakgalbi and could extend its shelf life during refrigerated storage under vacuum.

This research was conducted to develop a new approach to Chuncheon Dakgalbi processing by various chicken materials, seasoning (conventional sauce/CS and new approach of seasoning by adding the curing mixture/CSA), and cooking methods. Three chicken breeds (broiler, old broiler and spent laying hen) were divided into five experimental groups: broiler-CS, old broiler-CS, old broiler-CSA, spent laying hen-CS, and spent laying hen-CSA. All samples were stored at $5^{\circ}C$ for 12 d. For sensory evaluation, all samples were cooked with conventional cooking (pan grilling) or high temperature and pressure cooking (at $121^{\circ}C$ with pressure 1.5 $Kg_f/cm^2$ for 30 min). The chicken material analysis showed that the moisture and crude protein content, cooking loss and shear-force of the old broiler and spent laying hen were higher (p<0.05) than those of the current broiler, but the crude ash, crude lipid and WHC were lower (p<0.05). The addition of CSA increased the pH value and reduced the lipid oxidation at the end of storage regardless of chicken breeds (p<0.05). The high temperature and pressure cooking method seemed to increase the taste, smell and overall-acceptability scores of the old broiler and spent laying hen Chuncheon Dakgalbi regardless of the implementation of new approach of seasoning (CSA). In conclusion, an old broiler and spent laying hen can be used as material of Chuncheon Dakgalbi by the application of a new approach of seasoning and cooking method.
An experiment was conducted to study the effect of frequency of defoliation on the ensiling characteristics and nutritive value of Guineaecotype 'A' (Panicum maximum Jacq) grass. Guinea grass harvested at 2, 3, 4, 5, 6, 7, 8, 9, 10 and 12-week cutting intervals was chopped (2 cm) and ensiled alone or with the addition of coconut (Cocos nucifera L.) meal (w/w-fresh weight basis), for periods of 6, 7 or 8 weeks in 2-litre laboratory silos. Dry matter, water soluble carbohydrates, lactic acid, pH, ash, nitrogen and digestibility in vitro were measured in representative samples of preensiled and ensiled material. Dry matter content of silages prepared from herbage harvested at 2 and 3 weeks intervals was lower (P<0.05) compared to longer defoliation intervals. The pH of silage prepared from herbage over 8 weeks old were higher (P<0.05) than those harvested below 8 weeks. The water soluble carbohydrate content of silage prepared from 3-weekly defoliated herbage was higher (P<0.05) than those prepared from longer periods. Lengthened growth period decreased (P<0.001) the crude protein content of the ensiled material, whereas the addition of coconut meal resulted in marginal increases. In vitro organic matter digestibility of the silages decreased (P<0.05) with the increase in forage maturity.
This study was carried out to improve utilization of substitute fly-ash in bedding material of animal waste treatments. The amount used of fly-ash used in a pigpen or beef stall was 50% lower than that of existing bedding material of animal waste treatments. From the results, substitution effect of fly-ash put over the floor of the stable became much better. Effects of processed fly ash as a spread straw decreased ammonia(NH3) and Hydrogensulfide (H2S) gas at beef stall, but there was no benefit of replacement terms. Effect of processed fly ash as a spread straw increased 4∼5 times replacement terms more than control NH3 and H2S gas was decreased. A lot of maggots and porasites were grown at sawdust pig farm, but fly ash inhibited to grow maggots and paraeters. In conclusion, as substituting fly-ash for 5% sawdust(DM basis) in making animal waste into a compost with fly ash, we can reduce the sawdust purchasing costs and produce the high quality of a compost, especially a pollutant as NH3 and H2S gas, etc. from the process of biodegradation, and as substituting fly-ash(1,540 won per ton ; can be extended the replacement period of spreading straw approximatively 4∼5 times) for sawdusts(111,000 won per ton) will increase a real income in livestock house.
To explore the factors restricting animal performance in relation to sward structure under a strip-grazing system, measurements of sward factors, herbage intake and milk production at 3 levels of herbage allowance were made on perennial ryegrass (Latium perenne L.) sward for 3 experimental periods. About 29%, 36% and 52% of the biomass offered was removed by grazing in high $(42kg\;OM{\cdot}day^{-1}{\cdot}head^{-1})$, medium $(30kg\;OM{\cdot}day^{-1}{\cdot}head^{-1})$ and low $(18kg\;OM{\cdot}day^{-1}{\cdot}head^{-1})$ herbage allowance plots. Live leaf material was much more affected by grazing under different herbage allowance levels than dead material or leaf sheath. Grazing with a low herbage allowance decreased the proportion of live lamina by 93% and live lamina density by 96% before grazing. The density of dead material plus sheath was decreased by 17% after grazing at a low allowance, while it slightly increased or remained constant in the plots applied with high and medium allowances, respectively. The highly significant (p<0.01) correlations between herbage allowance and proportion (r=0.94) and density (r=0.91) of live lamina in residual sward after grazing were observed. Daily herbage intakes in the plots with high and medium levels of herbage allowance were not significantly different at $15.3kg\;OM{\cdot}head^{-1}$ in average, whereas with low level it decreased to $13.9kg\;OM{\cdot}head^{-1}$. Daily milk production was significantly (p<0.05) declined from $22.3kg{\cdot}head^{-1}$ (at high herbage allowance) to $19.7kg{\cdot}head^{-1}$ (at low herbage allowance). The data obtained clearly indicated that herbage intake and milk production were highly affected by the characteristics of residual sward, which were closely related to the level of herbage allowance.

This study evaluated the effect of vacuum and modified atmosphere (40% $CO_2+60%$$N_2$, MA) packaging on the chemical composition, physicochemical properties and sensory attributes of chill-stored meat from 10 fallow deer (Dama dama) bucks at 17 to 18 months of age. The animals were hunter-harvested in the forests of north-eastern Poland. During carcass dressing (48 to 54 h post mortem), both musculus longissimus muscles were cut out. Each muscle was divided into seven sections which were allocated to three groups: 0, A, and B. Samples 0 were immediately subjected to laboratory analyses. Samples A were vacuum-packaged, and samples B were packaged in MA. Packaged samples were stored for 7, 14, and 21 days at $2^{\circ}C$. The results of the present study showed that the evaluated packaging systems had no significant effect on the quality of fallow deer meat during chilled storage. However, vacuum-packaged meat samples were characterised by greater drip loss. Vacuum and MA packaging contributed to preserving the desired physicochemical properties and sensory attributes of meat during 21 days of storage. Regardless of the packaging method used, undesirable changes in the colour, water-holding capacity and juiciness of meat, accompanied by tenderness improvement, were observed during chilled storage.
Objective: This study was conducted to determine the seasonal characteristics of odorous material emissions from a swine finishing barn equipped with a continuous pit recirculation system (CPRS) using aerobically treated manure. Methods: The CPRS consists of an aerobic manure treatment process and a pit recirculation system, where the solid fraction is separated and composted. The aerated liquid fraction (290.0%±21.0% per day of total stored pig slurry) is continuously recirculated to the top of the slurry in the pit. Four confinement pig barns in three piggery farms were used: two were equipped with CPRS, and the other two operated a slurry pit under the slatted floor across all seasons. Results: The indoor, exhaust, and outside odor intensities were significantly lower in the CPRS group than in the control group (p<0.001). In the CPRS group, the odor intensity outside was significantly lower in the fall than in the other seasons (p = 0.015). In the indoor atmosphere, the temperature and CO2, NH3, and H2S contents of the CPRS group were significantly lower than those of the control group (p<0.05). In the CPRS group, indoor temperature did not significantly change in the spring, summer, and fall seasons and was significantly lower in the winter (p = 0.002). NH3, H2S, methyl mercaptan, dimethyl disulfide, trimethylamine, phenol, indole, and skatole levels were significantly lower in the CPRS group than in the control group (p<0.05). There were significant seasonal differences on the odorous material in both the control and CPRS groups (p<0.05), but the pattern was not clear across seasons. Conclusion: The CPRS can reduce the indoor temperature in the summer to a level similar to that in the spring and fall seasons. The CPRS with aerated liquid manure is expected to reduce and maintain malodorous emissions within acceptable limits in swine facilities.
A series of experiments were performed to study the influence of the following parameters on the physical traits and composition of swine manure compost: (1) addition of magnesium (Mg) at a molar ratio of 1.2 with respect to $PO_4$, and (2) reutilization of compost containing $MgNH_4PO_4{\cdot}6H_2O$ (magnesium ammonium phosphate, MAP). Three independent batch tests were conducted for replication: batch test I-control (C) and Mg added (T), batch test II-C, T and compost recycle ($T_{R1}$), and batch test III-C, T and compost recycle ($T_{R2}$). Magnesium addition and compost reutilization had no adverse effect on the degradation of organic matter. Reuse of the compost, however, had a clear effect on the total nitrogen (TN) and total phosphorus (TP) contents in the final compost. Repeated compost reutilization as a bulking material was resulted in composts rich in N and P. Upon adding the Mg supplement to the composting materials, the ortho-phosphate (OP) to TP ratio decreased due to the MAP crystallization reaction. The decrease in the OP/TP ratio and the increase in the TP content of the compost indicate that water-soluble phosphate is converted into a slow-release phosphate by the formation of crystals during composting. X-ray diffraction analysis of the irregular shaped crystals in the compost indicated that they are MAP crystals and that the crystallization of MAP begins immediately after the addition of the Mg supplement. The Mg addition to composting materials and the reutilization of compost as a bulking material would be a practical means to conserve nutrient content.
