Physicochemical Properties of Rice Flours as Influenced by Soaking Time of Rice (쌀의 수침시간에 따른 쌀가루의 이화학적 특성)

  • This investigation was undertaken for the purpose of studying the physicochemical properties of rice flour made by various soaking time(1,4,6,8,12 hours) of rice. As the soaking time was longer, the lightness of rice flours increased, on the contrary its redness and yellowness decreased. Rice flours had higher swelling power and solubility by increasing soaking time, but water binding capacity decreased upon soaking of rice. Hot water insoluble amylose of rice flours was decreased, whereas hot water soluble amylose was increased as the soaking time increased. The amylograph indices indicated that initial pasting temperature of rice flours decreased, while maximum viscosity increased as the soaking time increased.

Changes in Properties of Waxy Rice During Steeping in Water (찹쌀의 수침중 성질 변화)

  • The steeping of waxy rice in water at $20^{\circ}C$ for 12 hr resulted in the decrease of protein, crude fat and ash contents. Water-binding capacity and swelling power (at $80^{\circ}C$) of waxy rice flour increased upon steeping. Maximum viscosity of waxy rice flour in 0.19 N sodium hydroxide solution was increased up to 6 hr steeping and decreased thereafter. The amylograph indices increased as the steeping time increased. The degree of changes in properties during steeping was different between two waxy rice cultivars.

Influence of Amylose Content and Particle Size on Physicochemical Properties of Rice Flours

  • Seven rice varietes(Suweonjo, Suweon232 , BG276-5, IR44, IR41999-139, Suweon230 and Yongjubyeo) were used to study the influence of amylose content and particle size on the physicochemical properties of rice flours. Suweonjo has the highest amylose content (27.1% amylose content) had the finest flour particle as supproted by scanning electron microscopy (SEM). Suweonjo had the highest value in hardness of rice grain but the lowest length/width ration. There were no significant differences in color values among the rice flours. Data of brabender visco/amylograph was not associated with amylose content. Yongjubyeo had the highest maximum viscosity and breakdown value while Suweonjo had the lowest maximum viscosity , setback value and breakdown value. Yongjubyeo had the lowest water solubility index (WSI). The Suweon232 rice variety absorbed more water than any other varieties but rice varieties and amylose contents affected water absorption a little.

Rheological Properties of Buckwheat-Wheat Flour Mixture (메밀과 밀가루 혼합분의 물성 특성)

  • 메밀가루를 이용한 빵을 만들기 위하여 밀가루에 메밀가루를 10,20,30%를 혼합한 반죽과 30% 메밀복합분에 글루텐, ascorbic acid 및 HPMC를 혼합한 반죽들의 amylogram, farinogram 및 extensogram의 특성을 측정하였으며 SEM을 이용한 반죽의 구조도 관찰하였다. Amylograph에 의한 호화개시온도, 최고점도 및 최고점도시의 글루텐, ascorbic acid 및 HPMC의 의해 감소하는 경향이었다. Farinograph에 의한 흡수량은 메밀가루의 참가량이 많을수록 약간씩 감소하였고, 글루텐을 첨가하였을 경우에는 증가하였으나 HPMC에 의해서는 오히려 감소하였다. 반죽형성시간은 메밀가루의 혼합비율이 높을수록 점차 짧아졌고 첨가제에 의해서는 증가하였다. Extensograph에 의한 발효특성은 메밀가루의 첨가량이 많을수록 신장도와 신장에 대한 저항도는 감소하였으나 첨가제사용에 의해 증가하였으며 특히 글루템에 의해 신장저항도와 반죽의 강도가 높게 나타났다. 또한 SEM에 으한 반죽의 구조는 메밀가루의 혼합비율이 높아질수록 규칙적인 protein matrix를 형성하지 못하고 구형의 큰 전분입자와 작은 전분입자들이 엉겨서 덩어리진 상태로 혼합되어 있었으며 첨가제에 의해 전분입자와 단백질matrix 상호간에 결합상태가 개선되었으며 특히 첨가제 중 글루템은 밀가루 반죽과 유사하였으므로 빵의 부피 및 제빵성을 향상시켜 줄 것으로 생각된다.

Properties of corn Starches Isolated from Irradiated Glutinous and Non-Glutinous Corn Grains

  • Physicohemical properties of corn starches isolated from non-glutinous and corn grains fol-lowing γ-irradiation up to 10kGy were investigated. Blue value, water binding capacity and swelling power decreased, while alkali number ad solubility increased by γ-irradiation , which was more pronounced in glu-tinous corn starch than in non-glutinous corn starch. The optical transmittance increased with an increment of heating temperature and applied irradiation doses. No significant difference was observed in Hunter's color value between both starches isolated from non- irradiated and irradiated and irradiated corn grains. Amylograph viscosities decreased remarkably as dose levels increased. The overall effects of γ-irradiation was more distinguished in glutinous starch than in non-glutinous starch.

  • Pasting characteristics and amylose-surfactant complex forming ability of sweet potato starch were investigated after defatting and the addition of surfactants, such as SSL (sodium steamyl-2-lactylate) Dimodan (mono/di glyceride) and SE (sucrose ester) with different concentrations. All starch granules were smooth and round, there were no damages to starch granules after defatting and surfactant addition. amylose content of surfactant added stach decreased and me order of decrease was SSL, SE and Dimodan. The cornplex forming ability of SE added starch increased according to increasing HLB value. As surfactants concentration increased, amylose complex formig ability increased. In case of gelatinization patterns by amylograph, the initial pasting temperature of surfactant added starches was higher than mat of untreated or defatted starches, but viscosity at each temperature were all decreased. Soluble carbohydrate and leached amylose of starches increased at increasing temperature, those of surfactant added starches decreased at each temperature in the order of SSL, SE and Dimodan.

Effects of Adding Sugars and Lipids on Characteristics of Cooked Rice (당류 및 유지류 첨가가 밥의 특성에 미치는 영향)

  • To investigate the effect of adding sugars and lipids on characteristics of cooked rice, the solubility, swelling power, blue value, amylogram and sensory evaluation characteristics of cooked rices with 0.5, 1.0, 1.5, 2.0% level of sugars and lipids additives were measured. The solubility, swelling power and blue value of cooked rice with sugars were increased as the more sugars were added. Those parameters of the cooked rice with isomalto oligosaccharide were higher than sucrose. The solubility decreased as the more lipids were added. The swelling power decreased as the more lipids were added. As the result of amylograph analysis, addition of isomalto oligosaccharide accelerates the gelatinization and retards the retrogradation. In sensory evaluation, the cooked rice with 0.5% level of sucrose and isomalto oligosaccharide were showed better acceptability than the others. In conclusion, the additions of sugars and lipids affect characteristics of cooked rice. Especially, the cooked rice with 0.5% isomalto oligosaccharide was showed the best physiochemical and sensory properties.

초산 쌀전분의 이화학적 특성

  • 추청벼와 삼강벼를 원료로 하여 전분을 제조하고 그 전분을 이용하여 초산 쌀 전분을 제조하여 얻어진 초산쌀 전분의 이화학적 성질을 검토하여 다음과 같은 결과를 얻었다. 초산 쌀 전분의 용해도와 팽윤력은 원료 전분에 비하여 높았으며 품종간에 약간의 차이를 나타내었다 광투과도는 원료 전분에 비하여 높았으며 원료 전력은 6$0^{\circ}C$, 초산 쌀 전분은 5$0^{\circ}C$부터 증가하기 시작하였으며, blue value는 원료 전분보다 낮게 나타났다. alkali number는 원료 전분보다 약7배 높았으며, 초산 쌀 전분 겔의경도, 응집성, 접착성, 점착성 및 저장성은 원료 전분 겔보다 높았으며 품종간에 약간의 차이를 나타내었다. Amylograph에 의한 초산 추정 및 삼강벼 전분의 호화개시온도는 각각 59$^{\circ}C$, 62$^{\circ}C$로서 초산 처리에 의해 5~6$^{\circ}C$ 낮아졌고, 초산 쌀 전분의 점도는 원료 전분에 비하여 14~38% 증가하였으며 추청벼 전분이 삼강벼 전분보다 높았다. 초산쌀 전분 입자의 표면구조는 원료 전분에 비하여 다소 팽윤되어 헝클어진 형태를 나타냈으며, 7$0^{\circ}C$ 30분 가열에 의해서 완전히 붕괴되었다.

Physiochemical Properties of Purple-Fleshed Sweet Potato Starch (자색고구마 전분의 이화학적 특성)

  • Physicochemical properties and gelatinization patterns of purple-fleshed sweet potato starch were studied. Shape of starch granule was round and polygonal, X-ray diffraction pattern was Ca-type. Amylose content was 14.4% which was lower than that of other sweet potato starch. Water binding capacity was 82.54%, swelling power and solubility at 8$0^{\circ}C$ were 27.94% and 15.35%, respectively. Initial temperature of gelatinization was 72$^{\circ}C$ using Brabender/Visco/Amylograph, consistency and setback were lower than those of other sweet potato starch. The peak temperature and enthalpy determined by DSC were 68.1$^{\circ}C$, 1.24cal/g, respectively. The transmittance of starch dispersions in alkaline solutions increased with NaOH concentration up to 0.17N, and then changed slowly at 0.19N or above. The apparent viscosities were similar to the transmittance of starch dispersions in alkaline solutions, but drastically increased above 0.21N.

Quality Characteristics of Fresh Pasta Noodles Containing Added Citrus Peel Powder (진피가루를 첨가한 생면 파스타의 품질 특성)

  • The findings of this study into the quality of fresh pasta noodles containing different amounts of the lyophilized citrus peel powder are as follows. The higher the amount of the citrus peel powder in the pasta, the higher was its WRC. The Hunter's values, whether L, a, and b all increased in both cooked and raw noodles. The higher the amount of the citrus peel powder, the less the level of tensions and the lower the setback values. These results suggest that the citrus peel powder might have a controlling effect on retrogradation. As for the characteristics of cooked pasta noodles, the weight decreased; the volume increased; and the moisture absorptive power also increased. The tasters' preferences were in the following order: 3%>0%>5%>7%>1%. In other words, a citrus peel powder content of 3~5% appears to be most appropriate.
