The caterpillar-shaped Chinese medicinal mushroom (DongChongXiaCao) looks like a worm in the winter and like a grass in the summer. The fruiting body has been regarded as popular folk or effective medicines used to treat human diseases such as asthma, bronchial and lung inflammation, and kidney disease. The fruiting bodies of Cordyceps militaris, C. pruinosa and Paecilomyces tenuipes that formed on the living silkworm (Bombyx mori) host were used in this examination. This study was carried out to investigate the soluble sugar, amino acid and fatty acid profiles in the fruiting-bodies. Soluble sugars such as glycerol, glucose, mannitol and sucrose were mainly found in the fruiting bodies of C. militaris, C. pruinosa and P. tenuipes. Total soluble sugar content was 29.23 mg/g in C. militaris, 8.61 mg/g in C. pruinosa and 24.00 mg/g 1in P. tenuipes on dry weight basis. Total free amino acid content was 14.09 mg/g 1in C. militaris, 34.60 mg/g in C. pruinosa and 17.09 mg/g in P. tenuipes. The content of oleic acid in fatty acids was above high more than 30% regardless of species.
The change of physicochemical characteristics of sesame with roasting temperature$(110^{\circ}C{\sim}230^{\circ}C)$ were investigated to get a useful index which needs to manufacture roasted sesame and sesame oils, In the physicochemical properties of roasted sesame, the contents of moisture, specific volume, oil yields and sesame cakes were changed significantly above $170^{\circ}C$. Fat and protein in sesame cakes were changed slightly. Desirable roasting temperature was $220^{\circ}C$ in considering oil yields and sensory qualities. Total amino acids such as arginine, serine, threonine, lysine. cystine, tyrosine and most of the free amino acids, and sucrose of free sugars were reduced significantly above $170^{\circ}C$ and $190^{\circ}C$. respectively. These reductions of sugar and amino compounds were assumed to play an important role in Maillard reaction for the formation of browning pigment, taste and aroma. It was confirmed that this reaction was pyrolytic degradation which took place in water-deficient and oil-rich system at relatively high temperature.

This study was conducted to investigate the influence of the mixed application of chemical fertilizer (CF) and liquid swine manure (LSM) on the agronomic characteristics, dry matter yield, amino acids, minerals, and free sugars in cultivating Sorghum ${\times}$ Sudangrass hybrid (SSH) on paddy soil. The field experiment was designed in a randomized block design with three replications and consisted of CF 100% (C), CF 70% + LSM 30% (T1), CF 50% + LSM 50% (T2), CF 30% + LSM 70% (T3), and LSM 100% treatment (T4). The application of LSM was based solely on the nitrogen. Plant length, leaf length, leaf width and number of leaf were significantly higher in T4 (p<0.05), but stem diameter did not show significant differences among treatments. Stem hardness increased significantly (p<0.05) as the LSM application rate decreased, but sugar degree decreased significantly (p<0.05) as the LSM application rate decreased. Fresh yield, dry matter yield and TDN yield were the highest in T4, whereas the lowest in T2 (p<0.05). Crude protein, crude fat and crude ash were the highest in C, T4 and T2, respectively (p<0.05). However, NDF and ADF did not show significant difference among treatments. Crude fiber decreased significantly (p<0.05) as the LSM application rate increased. The total mineral content was decreased significantly (p<0.05) as the LSM application rate increased. Total amino acid content was higher in the order of T1> C> T3> T4> T2 (p<0.05). Free sugar content increased significantly (p<0.05) as the LSM application rate increased. The analysis of all the above results suggests that the application of liquid swine manure is very effective, considering the yield performance and the content of sugar degree and free sugar. In addition, liquid swine manure may be possible to grow Sorghum ${\times}$ Sudangrass hybrid without chemical fertilizer.
This work measured the approximate levels of chemical components in the fleshpeel of unripe peaches picked at different times. The unripe samples were divided into two groups. Group I was picked on April 20 and Group II on May 2. Both samples were analyzed for organic acids, free sugars, Brix values, acidity, amino acids, and minerals. The major organic acid contents in Group I and Group II samples were oxalic acid> citric acid> malic acid> tartaric acid. The order of major free sugarin Group I and Group II samples were arabinose> sucrose in flesh and arabinose> glucose> sucrose in peel. The order of amino acid levels in all samples was aspartic acid> proline> glutamic acid> serine> leucine> lysine. The Brix values, acidity levels, and pH values of all samples were in the ranges of $7.6-9.8^{\circ}Brix$, 0.50-0.55 % and 4.13-4.17, respectively. The order of mineral content in all samples was K> Ca> Mg> Na.

This study was carried out to compare and analyze the effect of Korean effective microorganism(KEM) and seafood amino acid fertilizer(SAF) application on apple on functional substances of fruit. Vitamin C in fruit of control and KEM/SAF treated were 29.3 and, 39.8 mg, respectively. Also active oxygen scavenging ability of those treatments measured with DPPH method were 40.6 and 54.1%, respectively. Vitamin E contents of those treatments were 2.51 and 2.50 mg, respectively. Sitosterol, a phytosterol, contents of those treatments were 4.79 and 5.41 mg, respectively. Proportion of sugars, fructose, glucose, and sucrose in the fruit of control were 36.1, 15.3 and 17.8%, respectively. Those of the fruit of KEM/SAF treated were 45.9, 13.2 and 18.8%, respectively. Malic acid contents of control and KEM/SAF treated fruits were 53.7 and 43.8%, respectively.
The purpose of this study was to analyze the chemical components of Perilla leaf(frutescens Britton var. scuta Kudo) according to the making process, and to examine Hunter's color value and sensory evaluation of Jasosuksu by extraction time. Perilla leaves were prepared in three types; fresh leaf, dried leaf in the shade and roasted leaf after being dried in the shade in order to make Jasosuksu. The results of the research were as follows: Free sugars(sucrose, glucose, fructose) and organic acids(citric acid, tartaric acid, malic acid, succinic acid) were present in the fresh leaf, dried leaf and roasted leaf. $15{\sim}16$ kinds of amino acid including aspartic acid were determined in the fresh leaf, dried leaf and roasted leaf, and the major free amino acids were serine, aspartic acid, and glutamic acid. The major total amino acids of tile fresh leaf, dried leaf and roasted leaf were glutamic acid, histinine, and glycine. The major fatty acids of Perilla leaves were palmitic acid, linolenic acid, and linolenic acid. The content ratio of linolenic acid in fresh leaves was the highest, but that of palmitic acid was lower than that of dried leaves and roasted leaves. L value, a value, and b value of Perilla leaf were the highest in the roasted leaves followed by the order of dried leaves and fresh leaves. L value and b value of Jasosuksu extracted from roasted leaves were higher than Jasosuksu extracted from dried leaves. The preference of color, flavor, sweetness of Jasosuksu extracted from dried leaves was the highest when extraction time was 10 min. at $70^{\circ}C$, but that of Jasosuksu extracted from roasted leaves was the highest when extraction time was 15 min. at $70^{\circ}C$. The preference of color, flavor, taste of Jasosuksu extracted from roasted leaves was higher than that of Jasosuksu extracted from dried leaves.

Proximate composition and the contents of free sugars, minerals, fatty acids, amino acids and in vitro digestibility of mixed pollen load were analyzed. The protein in pollen load per 100g was 25.2g, lipid 5.4g, non-fibrous carbohydrate 50.0g and fiber 10.4. Free sugars in pollen load, as dry basis g per 100g, was fructose 26.6g, glucose 13.1g, sucrose 0.2g, maltose 1.3g, melezitose 0.02g and F/G ratio was 2.0. The content of mineral in pollen load was in the order K > P > Mg > Ca > Fe > Na > Mn > Zn > Cu. Unsaturated fatty acid of pollen load was about 69.1% and polyunsalturated fatty acid being about 50.3%. The ratios of SFA : MUFA : PUFA and PUFA : SFA were 0.61 : 0.37 : 1.00 and 1.63 respectively. The total amino acid contained in pollen load 22,337.5mg/100g and total essential amino acid was 39.2% of the total amino acid. proline was the most abundant amino acid (2,824.7 mg/100g),followed by Glu, Leu, Asp, Val, Phe, Ile, Ala and Thr. E/T ratio of protein in pollen load was 2.03 ; protein score, 65.2(Lys) : A/E ratio(egg), 61.7(Lys) : amino acid score, 51.7% after 1hr and on non-fibrous carbohydrate was 80.6%. But that of protein was 67.3% after 1hr, 75.5% after 2hr.
Soluble carbohydrates and free amino acids in the terminal buds of Pinus elliottii were analyzed to understand the nutritional status of the buds during the period of female strobilus initiation. Grafted, 18-year-old slash pine trees in a seed orchard were divided into two groups, abundant-flowering (AFG) and poor-flowering group (PFG) according to their flowering history. Four types of terminal buds, with two types from each group, were examined: (1) large buds in upper crown (female-producing buds) and small buds in lower crown (male-producing) in AFG, (2) large buds in upper crown (vegetative buds) and small buds in lower crown (male-producing) in PFG. Bud samples were collected four times from late July to early September. Free sugars and free amino acids (75% ethanol-soluble) were determined by gas chromatography and automatic analysis, respectively. Sugar content in the large buds of both groups was greater than in the small buds of the same group. Fructose and glucose were major sugars found in the bud tissue. Arginine was the most abundant amino acid in all four types of buds, with the concentration increased from 23% in late July to 60% in early September. Arginine and total amino acid content in the female-producing buds of AFG was much lower than three other types of buds. When female-producing buds and male-producing buds of AFG were compared in their arginine content, the former contained about same amount as the latter in late July, but showed one-fourth of the latter in early September. The low level of argining in the female-producing buds suggested a minimal or negative role of arginine in the initiation of female flower primordia. A higher sugar to amino acid ratio was observed with female-producing buds of AFG than with vegetative or male-producing buds of either flowering group. The low amino acid content in the femaleproducing buds suggested that initiation of female strobilus primordia was associated with temporary reduction in the metabolic activity of the buds.

The chemical components in different parts of Artemisia argyi was investigated to provide industrial possibilities as functional foods The analysis result of proximate composition in leaves, stems and roots of Artenisia argyi was substantially as follows. The crude protein contents were 19.87, 6.14 and 5.68%, the crude lipid contents were 4.56, 1.30 and 1.20%, the crude fiber contents were 16.80, 29.70 and 29.45%, respectively. The major mineral components in Artemisia argyi were potassium, calcium and magnesium. Contents of potassium and calcium in leaves were 4,270.24 and 617.64 mg/100 g, respectively, they were more than double the contents of root. Sucrose and glucose as main free sugars were detected in the leaves and roots. However, glucose and fructose were identified in the stem. Total amino acids showed 17 amino acids. Contents of total amino acid in the leaves was the highest as 4,864.11mg/100g, and the stems and roots showed 1,953.99 and 1,601.73mg/100g, respectively. The major amino acids in the leaves and stems were proline(963.91 and 407.52mg/100g) and aspartic acid(577.38 and 299.17mg/100g), respectively. Glutamic acid(206.34mg/100g) and arginine(193.23mg/100g) were main amino acids in the roots. The major fatty acids in all parts were linoleic acid($C_{18:2}$), behenic acid($C_{22:0}$), and palmitic acid($C_{16:0}$). Eupatilin(35.0mg/100g) and jaceosidin (107.63mg/100g) as physiological compounds contents were higher in leaves than other parts.

In the experiment for the flavour extracting methods, dynamic headspace(DHS) is more effective for collection of volatile flavour than simultaneous distillation extraction(SDE). The best polarity available at the moment is 5% phenyl methyl poly-siloxane which will separate non-polar, intermediate and polar components with good resolution.
