  • This study was carried out to develop nutrition education materials for nutrient intake and the prevention of disease for the elderly and to test their effects on the health-related matters and nutrition intakes after nutrition education. The mean age of the subjects was 71.6 years old. Diet adjustment for health increased a little bit from 2.2% to 11.1% after education but with no significance. The highest reported chronic illness was hypertension. The drinking of the subjects decreased a little bit after their education but wasn't significant. There were no significant changes to the frequency of food consumption across all the items after education, but there was a small increase to the daily intake of milk and dairy products and fruits and to a balanced diet three times per day. There was a significant increase in the intake of such nutrients as energy(p<0.05), protein(p<0.01), lipid(p<0.05), phosphorus(p<0.05), sodium (p<0.05), vitamin $B_2$(p<0.05), vitamin $B_6$(p<0.05), and niacin(p<0.001) after education. Those findings show that nutrition education provided to the elderly had no clear effects on the items that required memorization such as nutrition knowledge but did have some effects on dietary life. If the nutrition education requiring memorization is provided repeatedly with data supplemented, more effective nutrition management will be possible.

  • The purpose of the study was to investigate the status of the nutritional education program on educational perception, facilities, contents and systems, which were focused on the school obesity education in the elementary school. A five point Likert scale was used to evaluate the importance and performance of each item in four sections of the survey and Importance-Performance Analysis (IPA; gap between importance and performance) matrix analysis was applied to determine improvement priority. The findings from IPA matrix analysis are in the following. The items of the sections to be improved intensively are recognition of parents and in-charge teacher, availability of the education place, preparation of consulting room, preparation of various teaching media, interest of an education program, meal adjustment of overweight children, combination with education and exercise, education for psychological factors, development of scientific and systematic education program and reduction of meal service duty for education. Accordingly, the IPA matrix analysis suggested that an intensive improvement area should be excessively concentrated on for better performance. The regional gap between importance and performance showed significant difference for textbook and diet of overweight children in Kyunggi-Do. There were significant differences for the government perception, dietary habits and food-life education, fast-food education, education for breakfast importance, and education of school meal indication system and method to read food nutrition indication in Chollabuk-Do. As for the age gap between importance and performance, the twenties showed significantly bigger gaps in perception of school dietitians and linking between school meals and diet education. Therefore, more proactive efforts for the education for obesity prevention are necessary to prevent childhood obesity in elementary school and to help children to possess better health throughout their entire lives.

  • Hemodialysis (HD) patients can experience appetite alterations that affect meals and nutritional status. Few qualitative studies have assessed the chronic impact of HD on the everyday diet. This study aimed to characterise comprehensively the experiences of HD patients adapting to appetite alteration. Semi-structured, face-to-face interviews were conducted in a unit of a tertiary hospital to understand patient experiences with appetite alteration. An interview guide was used to consider adaptive processes developed after reviewing the literature and based on the researchers' clinical experiences. A single researcher conducted all interviews to maintain consistency in data collection. The interview content was analysed using Nvivo 11 based on grounded theory and constant comparison analysis. As a results, the mean age and HD vintage of 14 participants were 60 and 5.8 years, respectively. We developed a self-care model based on HD patient experiences with appetite alteration based on axial and selective coding. Differences in urea sensitivity, taste alteration, and social support could be explained by timing of transitions, life events, and responses to stress. Self-care processes are adapted through the processes of "self-registration" and "self-reconstruction," starting with "disruption." At the stage of adjustment, 4 self-management types were derived based on pattern of self-care: self-initiator, follower, realist, and pessimist. The results of this study provide unique qualitative insight into the lived experiences of HD patients experiencing appetite alteration and their self-care processes. By recognising dietary challenges, health teams can better support HD patients in the transition from dietary education to self-care.

  • Korean youth spend tremendous time in school for preparing for college admissions. Their academic achievement and overall satisfaction with their lives are affected by how well they adapt to life in school. Successful adaptation to school is important enough to affect a student's future social life. One of the factors that affect adaptation to school is the psychological condition of adolescent anxiety. Anxiety is one of the common mental disorders that appear in people who are not familiar with new environments. Anxiety is known to be related to behavioral problems, and problems with psychological and emotional adaptation. This condition is dramatically increased in adolescents.Parental conflict in particular is known to be a major factor in affecting youth anxiety. As parental conflict became more severe, children felt more negative emotions such as anger, sadness and worry. Moreover, when a child's issue caused the parental conflict, there were more side effects in the emotional condition of the child. This study shows how parental conflict affects a child's anxiety and a child's school life. This problem is analyzed through structural equation modeling.

  • In this thesis, we investigate the psychosocial variables within the family environments of Attention Deficit Hyperactivity Disorder with (ADHD+CD/ODD) or without (ADHD) externalizing symptoms. The subjects in this research were 86 boys and girls(aged range 6 to 14 years) consisted of 20 ADHD, 22 comorbid ADHD(ADHD+CD/ODD) and 44 normal control group(NC). We have collected data on children and their mothers. The psychosocial variables included in the analysis are socioeconomic status, parent's educational level, life stress event, and the rate of psychiatric disorders in relatives. The self-reported questionnaires marital discord(MAS), parenting stress(PSI), and parenting attitute(MBRI) completed by mothers. The results indicated that ADHD+CD/ODD is supposed to have higher level of family adversity suggested by the lower SES, lower parental educational level, higher life stress events, and more psychic disorders in relatives compared with ADHD or normal control group. In MAS, ADHD+CD/ODD group has significantly the lowest scores on each factor of the measure of marital adjustment. Parents of ADHD+CD/ODD are much more likely to have positive parenting stress when compared with the parents of ADHD. Especially, mothers of ADHD+CD/ODD have the lowest tendency in the mean score on affective, accepted attitudd. In an inapropriate parenting attitude perceived by children, father of ADHD+CD/ODD have the most negative, contradictory attitude and mothers of ADHD+CD/ODD have the most restrictive, negative and contradictory attitude.

  • This study aimed to identify the causality between climatic and soil variables affecting the yield of Italian ryegrass (Lolium multiflorum Lam., IRG) in the paddy field by constructing the pathways via structure equation model. The IRG data (n = 133) was collected from the National Agricultural Cooperative Federation (1992-2013). The climatic variables were accumulated temperature, growing days and precipitation amount from the weather information system of Korea Meteorological Administration, and soil variables were effective soil depth, slope, gravel content and drainage class as soil physical properties from the soil information system of Rural Development Administration. In general, IRG cultivation by the rice-rotation system in paddy field is important and unique in East Asia because it contributes to the increase of income by cultivating IRG during agricultural off-season. As a result, the seasonal effects of accumulated temperature and growing days of autumn and next spring were evident, furthermore, autumnal temperature and spring precipitation indirectly influenced yield through spring temperature. The effect of autumnal temperature, spring temperature, spring precipitation and soil physics factors were 0.62, 0.36, 0.23, and 0.16 in order (p < 0.05). Even though the relationship between soil physical and precipitation was not significant, it does not mean there was no association. Because the soil physical variables were categorical, their effects were weakly reflected even with scale adjustment by jitter transformation. We expected that this study could contribute to increasing IRG yield by presenting the causality of climatic and soil factors and could be extended to various factors.

  • Purpose: The purpose of this study was to verify the relationship among depression, school adjustment, parent-child bonding, parental control and smartphone addiction, and to identify factors which influence smartphone addiction in adolescents. Methods: A cross-sectional design was used, with a convenience sample of 183 middle school students from 3 middle schools. Data collection was conducted through self-report questionnaires from April to May, 2017. Data were analyzed using ${\chi}^2$ test, Fisher's exact test, t-test, one-way ANOVA, correlation coefficient analysis, and binary logistic regression with SPSS Ver. 21.0. Results: The mean score for smartphone addiction was 29.40. Of the adolescents, 21.3% were in the smartphone addiction risk group. Logistic regression analysis showed that gender (OR=7.09, 95% Cl: 2.57~19.52), school life (OR=0.86, 95% Cl: 0.79~0.93), smartphone usage time (OR=1.32, 95% Cl: 1.04~1.66), and parental control (OR=4.70, 95% Cl: 1.04~21.29) were effect factors for the smartphone addiction risk group. Conclusion: Findings indicate that school satisfaction was an important factor in adolescents' smartphone addiction. Control oriented parent management of adolescents' smartphone use did not reduce the risk of smartphone addiction and may have worsen the addiction. Future research is needed to improve understanding of how teachers and parents will manage their adolescents' use of smartphones.

  • pH adjustment would be of advantage in improving the water holding capacity of muscle proteins. The objective of this study was to evaluate the addition of fish sarcoplasmic protein (SP) solution, which was adjusted to pH 3.0 or 12.0, neutralized to pH 7.0, and lyophilized to obtain the acid- and alkaline-treated SP samples, on the functional properties of the chicken myofibrillar protein induced by microbial transglutaminase (MTG). The solubility of alkaline-treated SP was higher than that of the acid counterpart; however, those values of the two pH-treated samples were lower than that of normal SP (p<0.05). All SP solutions were mixed with myofibrillar proteins (MP) extracted from chicken breast, and incubated with MTG. The shear stresses of MP with acid- and alkaline-treated SP were higher than that of normal SP. The thermal stability of MP mixture reduced upon adding SP, regardless of the pH treatment. The breaking force of MP gels with acid-treated SP increased more than those of alkaline-treated SP, while normal SP showed the highest value. The MP gel lightness increased, but cooking loss reduced, with the addition of SP. Smooth microstructure of the gel surface was observed. These results indicated that adjusting the pH of SP improved the water holding capacity of chicken myofibrillar proteins induced by MTG.
