어류뼈를 이용한 수산연제품의 기능성 개선 (Improvement of the Functional Properties of Surimi Gel Using Fish Bone)

  • 어류뼈 속에 함유된 칼슘제를 이용한 적색육어류 연제품의 품질 개선을 위한 일련의 연구로 칼슘 강화 적색육어류 연제품의 제조조건 및 저온 저장 중 품질 안정성에 대하여 살펴보았다. 가용성 칼슘 및 젤리강도의 결과로 미루어 보아 적색육어류 연제품의 기능성 개선을 위하여 첨가하는 칼슘제의 적정농도는 고등어 육에 대하여 0.9%이었다. 가용성 칼슘함량은 이 조건으로 제조한 칼슘제 첨가 연제품(105.0 mg/100 g)이 칼슘 무첨가 제품(2.9 mg/100 g)보다 훨씬 높았다. 저장 중 칼슘 첨가 제품은 수분함량, 아미노산 조성, 칼슘 및 인함량의 경우 변화가 없었고, pH, 휘발성염기질소, 히스타민함량, 과산화물값 및 갈변도의 경우 대조제품에 비하여 완만하게 증가하였으며, 생균수 및 대장균군은 검출되지 않았다. 곡류에 부족하기 쉬운 Iysine 등과 같은 아미노산, DHA, EPA 및 칼슘함량은 칼슘제 첨가 적색육어류 연제품이 무첨가 제품보다 높았다. 이상의 결과로 미루어 칼슘제 첨가 연제품은 영양 및 기능성이 우수하고, 식품위생적으로 안전한 식품으로 판단되었다.

A Synergistic Effect of Chitosan and Lactic Acid Bacteria on the Control of Cruciferous Vegetable Diseases

  • Two lactic acid bacteria (LAB) designated J02 and J13 were recovered from fermented vegetables based on their ability to suppress soft rot disease caused by Pectobacterium carotovorum subsp. carotovorum (Pcc) on radish. J02 and J13 were identified as Lactobacillus pentosus and Leuconostoc fallax, respectively. The ability of J02 and J13 to suppress plant diseases is highly dependent on chitosan. LAB alone has no effect and chitosan alone has only a moderate effect on disease reduction. However, J02 or J13 broth cultures plus chitosan display a strong inhibitory effect against plant pathogens and significantly reduces disease severity. LAB strains after being cultured in fish surimi (agricultural waste) and glycerol or sucrose-containing medium and mixed with chitosan, reduce three cruciferous vegetable diseases, including cabbage black spot caused by Alternaria brassicicola, black rot caused by Xanthomonas campestris pv. campestris, and soft rot caused by Pcc. Experimental trials reveal that multiple applications are more effective than a single application. In-vitro assays also reveal the J02/chitosan mixture is antagonistic against Colletotrichum higginsianum, Sclerotium rolfsii, and Fusarium oxysporum f. sp. rapae, indicating a broad-spectrum activity of LAB/chitosan. Overall, our results indicate that a synergistic combination of LAB and chitosan offers a promising approach to biocontrol.

The Effects of Mechanically Deboned Chicken Hydrolysates on the Characteristics of Imitation Crab Stick

  • The effects of adding mechanically deboned chicken (MDC) hydrolysates on the quality characteristics of imitation crab stick (ICS) during storage were investigated. ICS was prepared from Alaska Pollack, chicken breast surimi, and protein hydrolysates enzymatically extracted from MDC. ICS samples were divided into 4 groups: without protein hydrolysate (control), added with 0.5% protein hydrolysate (T1), added with 1.0% protein hydrolysate (T2), and added with 1.5% protein hydrolysate (T3). Results showed that crude protein content did not differ significantly among the ICS samples (p>0.05). ICS sample added with MDC hydrolysates had higher crude fat and ash content but lower moisture content than the control (p<0.05). Lightness was significantly lower in T2 and T3 than in the other groups at 0 and 4 wk of storage. Also, whiteness decreased in the groups contained MDC hydrolysates. Breaking force and jelly strength were higher in samples containing MDC hydrolysates compared to control samples (p<0.05). Additionally, saturated fatty acid contents were lower in the groups containing MDC hydrolysates than in control sample groups (p<0.05). Polyunsaturated fatty acid (PUFA) and essential fatty acids (EFA) were significantly higher in T2 and T3 than the control samples. In particular, all samples containing MDC hydrolysates had reduced thiobarbituric acid-reactive substances (TBARS) values at 4 wk. Free radical scavenging activity also was increased with addition of MDC hydrolysates.

게 페이스트 첨가 패티의 제조 및 특성 (Preparation and Characteristics of Patty with Red-Tanner Crab (Chionoecetes japonicus) Paste)

  • New types of patties were prepared with surimi and crab paste, and then characterized. With an increase of additional ratios of crab paste, the moisture (64.8 to $61.5\%$) of the patties slightly decreased while the ash contents (2.3 to $3.7\%$) increased. The Hunter's color values of the patties decreased in lightness (L value, 58.79 to 54.27) but increased in redness (a value, -2.77 to 3.54). Thus, the patties that had added crab paste appeared slightly more reddish. According to the increasing of additional ratios of crab paste, sensory scores on color and flavor increased whereas the texture score decreased. From the above results, based on physical properties and sensory evaluation, the desirable additional ratio of crab paste for preparing patty was $15\%$. The calcium and phosphorus contents of the patties with the addition of $15\%$ crab paste were 148.8 mg/100 g and 139.6 mg/100 g, respectively, and their ratio (approximately 1:1) was the optimal range in body absorption efficiency. The calcium absorption rate with the $15\%$ additions was 4.9 times higher than that of the patty with no additions. Total amino acid content (16,302 mg/100 g) of the $15\%$ additions showed no difference to the patty without additions, and the major amino acids were aspartic acid, glutamic acid, leucine and lysine. Exceptionally, the cysteine content of the patty with the $15\%$ crab paste additions was 2 times higher than that found in the patty without crab paste. The major fatty acids were 16:0, 18:1n-9 and 18:2n-6 of the total lipids, and there was no difference between the patties with and without crab paste. The above results showed that crab paste can be used as a crab surimi gel source.

시판어묵의 식품학적 품질과 저장안정성 (Food Quality and Shelf-life of Korean Commercial Fried Kamaboko)

  • To confirm the food quality and storage stability of commercial Korean kamaboko, we experimented with the composition and textural properties using various surimis and kamaboko products. We also investigated changes in protein digestibility and lipid oxidation of vacuum packed products under chilled storage at $4{\pm}1^{\circ}C$. Among the fish meatbased surimi, vegetable mixed surimi had the lowest protein content (23.73 %), as compared to other surimi (51.9-73.6%). Siginificant (P<0.05) differences in protein, lipid content and degree of fat oxidation were noted between the fried kamaboko products of three companies. Adhesiveness, springiness, cohesiveness, gumminess, chewiness and resilience were similar in all samples, but there were notable differences in hardness and fractuability between samples. In vitro protein digestibility and trypsin indigestible substrate (TIS) were not inversely proportional in fried kamaboko products. The protein digestibility (80.30%) of steamed vegetable mixed fried kamaboko was lower than that of other fried samples (84.9-86.2%). Computed protein efficiency ratio (C-PER) of companies A and C's fried kamaboko was 2.6 but company B's was 1.9. There was no noticeable change in thiobarbituric acid reactive substances (TBARs) or protein digestibility for any of the vacuum packed fried kamaboko during 30 days of chilled storage.

Properties of Frankfurter-type Sausages with Pork Back-fat Replaced with Bovine Heart Surimi-like Materials

  • This study investigates the effect of bovine heart surimi-like material (BHSM) used as a back fat replacer, on the physicochemical and sensory characteristics of frankfurter-type sausages. Frankfurter-type sausage with added BHSM had a higher moisture content and lower fat content than the control. In addition, the samples with added BHSM had higher pH, cooking loss and 2-thiobarbituric acid-reactive substance (TBARS) value and lower water exudation than the control. The sausage formulation with 40% BHSM was more effective in delaying lipid oxidation without affecting cooking loss compared to the 60% BHSM treatment sample. Results showed that hardness values increased upon replacement with BHSM, and sausages manufactured with 40% BHSM had higher lightness and lower redness values. Panelists found there were no differences in color, odor, and tenderness scores and the overall acceptability score found that treatment samples containing 20% and 40% BHSM were preferable to the control after storage for 14 d. These results indicate that fat replacement with BHSM was beneficial to the quality of frankfurter-type sausages, and acceptable reduced-fat products can be produced when back fat is replaced with up to 40% BHSM.

고콜레스테롤 식이로 유도된 고지혈증 모델 흰쥐에서 새송이 버섯 첨가 어묵의 섭취가 지질 대사 및 효소 활성에 미치는 영향 (Characteristics of Surimi Gel (King Oyster Mushroom and Cuttlefish Meat Paste) on Lipid Metabolism and Antioxidant Status in High-cholesterol-fed Rats)

  • 본 연구는 새송이 버섯을 첨가하여 만든 어묵이 체내 지질 대사와 효소 활성에 미치는 영향을 알아보고자 수컷 Sprague-Dawley 흰쥐 30마리를 대상으로 고콜레스테롤(1%)첨가 기본식이, 30% 일반어묵 첨가 식이와 40% 새송이 버섯 첨가 오징어 어묵 식이를 급여하였다. 평균 식이 섭취량은 대조군, 일반 어묵군, 새송이 버섯 첨가 오징어 어묵군에 따른 각 군 간의 유의적인 차이는 볼 수 없었다. 체중 증가량과 식이효율은 대조군에 비해 실험군 모두 유의적으로 감소하는 경향을 보였다. 혈장 중성지질과 총 콜레스테롤, 동맥경화지수(A.I), GOT, GPT 수준은 대조군이 새송이 버섯 첨가 오징어 어묵군에 비해 유의적으로 높게 나타났다. HDL-콜레스테롤의 경우 새송이 버섯 첨가 오징어 어묵군이 대조군과 일반 어묵군보다 낮게 나타났고, 간조직의 콜레스테롤 및 중성 지방 농도는 유의적으로 차이가 없는 것으로 나타났다. 혈장과 간조직 TBARS 수준은 대조군보다 새송이 버섯 첨가 오징어 어묵군에서 유의적으로 낮은 수치를 보였다. 항산화 효소 활성도에서 SOD활성도는 대조군과 일반 어묵과의 유의적인 차이가 없었으며, CAT활성도는 대조군보다 새송이 버섯 첨가 어묵이 유의적으로 높게 나타났으며. GPx활성도 역시 유의적으로 높게 나타났다. 이 결과들을 종합해 보면, 고콜레스테롤혈증 흰쥐에서의 새송이 버섯 첨가 오징어 어묵은 전반적인 지질대사 개선과 함께 SOD, CAT, GPx와 같은 항산화 효소의 활성을 증가시켜 항산화 방어계에도 긍정적인 효과를 나타냄으로써 앞으로 고콜레스테롤 혈증 예방 등의 혈관 순환기 계통 질병을 예방하기 위한 식품으로써의 활용이 기대된다.

  • As a part of the studies on effective utilization of polyunsaturated lipids in sardine (Sardinops melanosticta) when the refined sardine oil was added to surimi-based product as a dietary supplement of biologically active fatty acids, eicosapentaenoic aicd and docosahexaenoic acid, storage stability and the effect to the qualify of the product was tested. Addition of the refined sardine oil up to $5\%$ to surimi did not affect the textural properties of the product. And the polyunsaturated fatty acids of the sardine oil was fairly stabilized when it stored for 1 month at room temperature and 43 days at $5^{\circ}C$. These results suggested the possibility that the refined sardine oil or other fish oils containing highly polyunsaturated fatty acids, especially EPA and DHA could be used as a food ingredient for dietary supply of the lipids.

Succinylation에 의한 붕장어껍질 젤라틴의 기능성 개선 (Improvement in functional properties of conger eel skin gelatin by succinylation)

  • 어류껍질 젤라틴의 수식에 의한 유화성 및 유화안정성과 같은 기능성을 개선하여 적색육어류 연제품의 품질개선제로 이용할 목적으로 붕장어껍질 젤라틴의 succinylation을 시도하였다. Succinylation의 정도는 젤라틴에 대하여 첨가하는 succinic anhydride의 비율 0.3까지는 첨가량에 따라 증가하였으나, 그 이상의 농도에서는 거의 변화가 없었다. 유지흡수성, 유화성 및 유화안정성은 무수식 젤라틴이 각각 1.8ml/g, 55% 및 49%이었고, 수식에 의해 개선되어 succinylation 정도가 89.9%일 때 이들의 값이 각각 5.8ml/g, 84% 및 78%이었고, 그 이상의 농도에서는 거의 변화가 없거나 서서히 감소하였다. 또한 용해도의 경우 40%, 보수력의 경우 50%, 거품성 및 거품안정성의 경우 0.4 및 0.3정도 개선되었다. 수식 젤라틴은 무수식 젤라틴에 비하여 아미노산조성의 경우 거의 차이가 없었고, 중금속함량은 오히려 낮았다.
