  • Objectives: The purpose of this study was to investigate the behavioral modification of obese adults who underwent nutritional and physical activity education. Twenty obese females, aged 20-60 years old, with BMIs (Body Mass Index) >30 or body fat (%) >40 were subjected to this study. Methods: The physical activity education program consisted of doing exercise in a gymnasium together or home exercise. Dietary attitudes and dietary intakes were assessed using weight control, physical activity, and eating habits. The nutrition-exercise educational period was 12 weeks. Results: After the study period, there was significant improvement in physical activity and eating habits score. Furthermore, there was a significant increase in the dietary intakes of fiber, iron, potassium, vitamin A, vitamin $B_6$, and niacin. Blood pressure, blood glucose, and total cholesterol levels showed a tendency to decrease, but there was no significant difference. BMI, fat mass, abdominal circumference, and visceral fat levels were significantly reduced while muscle mass significantly increased. Conclusions: This study suggests that behavioral modification by nutrition and physical activity education with feedback has positive effects on dietary intake and anthropometric biomarkers in obese adults. Therefore, lifestyle interventions of this kind could be recommended as a method for obesity management.

  • There was an outbreak of food poisoning due to eating well-cooked imported tropical fish, Stromateus stellatus on May, 2000, in Korea. Gastrointestinal symptoms such as diarrhea ($92\%$), nausea ($77\%$), abdominal pain ($54\%$), vomiting ($46\%$) and headache ($23\%$) were experienced within $0.5\~2$ hours (median 1 hour) after eating, Any specific natural toxins were not confirmed concerned to those poisoning, but large amount of abnormal lipid ($23\%$) was found from the muscle such as 1-O-diacyl glyceryl ethers (DAGE), which was consisted of $61.8\%$ of total lipid. The 16:0 ($66.3\%$) and 18:1 ($15.8\%$) alkyl chains were dominant in all alkyl chains of DAGE which were presumed as the causative agent for the diarrheal food poisoning. O1eic acid (18:1) was found as a major fatty acid at the sn-2 or 3 in DAGEs. O-16:0-18:1-18:1 ($16.2\%$),O-16:0-18:1-22:1 ($14.7\%$) and O-18:0-18:1-22:1 ($11.0\%$) were contained as the major molecular species of DAGEs by RI-HPLC.

  • This study was conducted to evaluate the effects of dietary Korean red pine bark extract as an antibiotic replacement on cecum microflora, immune functions, blood lipids, carcass characteristics, and growth performance in broiler chickens. There were four treatment groups: a control group, an antibiotic group, and two treatment groups receiving 65 and 80 ppm Korean red pine bark extract. Growth performance, carcass weight, dressing percentage, and breast and thigh muscle weight of the broiler chickens fed 80 ppm of red pine bark extract was higher than the broilers of the control group and the antibiotic group. Abdominal fat was lower in both groups of broiler chickens fed red pine bark extract, but the growth of immune organs such as the thymus, spleen, and bursa of Fabricius was significantly higher in the group that received a diet supplemented with 80 ppm red pine bark extract than in the control group and antibiotic group. Concentrations of triacylglyceride and total cholesterol were significantly lower in both groups that received red pine bark extract when compared to the control group and the antibiotic group. The concentration of serum IgG was significantly higher in the 80 ppm red pine bark extract group than in the control group and the antibiotic group. The numbers of Bifidobacterium and Lactobacillus in the cecum digesta were significantly increased, while the numbers of Escherichia coli and Salmonella were significantly reduced in the group that received 80 ppm red pine bark extract when compared to the control group and the antibiotic group. These results suggest that the a diet with 80 ppm Korean red pine bark extract as a replacement for antibiotics improve the cecum microflora, immune functions, blood lipids, carcass characteristics and growth performance of broiler chickens.

  • Gulbi were made by salting Yellow corvenia (Pseudosciaena manchurica) with the in three ways: the dry salting method with bay salt, the dry salting method with purified salt or with the abdominal brine injection method with purifie salt. The half of the sample was dried by the control system of temperature and humidity: the other part was dried by the natural condition. In fresh muscle, the content of IMP, hypoxanthine, inosine and AMP were $13.40,\;9.28,\;3.01{\mu}mole/g$ and trace amount, dry basis, respectively. In fresh egg, the content of AMP, hypoxanthine, inosine and IMP were 13.98, 6.56, 1.98 and $1.93{\mu}mole/g$, dry basis, respectively. During the drying process of Yellow corvenia, the content of hypoxanthine increased remarkably, while the content of AMP, IMP and inosine decreased ana remained as trace amount. It can be suggested that the characteristic flavor of Gulbi is not attributed to the nucleotides and their related compounds but rather to free amino acids.

  • This study was conducted to determine the effects of dietary supplementation with conjugated linoleic acid (CLA) feeding levels (0, 0.5, 1.0, 1.5, and 2.0%) on the carcass characteristics, growth performance, serum cholesterol, and fatty acid in thigh of chicken meat. Two hundred broiler (Arbor Acre Broiler, male) were randomly assigned to five groups and were fed for five weeks and slaughtered. Thigh muscle was used for determining fatty acid composition. There was no significant difference in growth performance, such as weight gain, feed intake and feed conversion by CLA levels. Among carcass characteristics, percentage of carcass, thigh, breast, and drumstick was not influenced by the dietary CLA levels, but abdominal fat was significantly reduced with the increased CLA amount in the broilers diets (p<0.05). Higher CLA levels increased HDL-C and reduced total cholesterol and LDL-C (p<0.05). As the dietary CLA levels increased, muscular palmitic acid (saturated fatty acid) levels was increased, but the rates of oleic acid, linoleic acid, and arachidonic acid (unsaturated fatty acid) were decreased. In addition. CLA isomers were linearly increased with the increase in dietary CLA levels (p<0.05). As a conclusion, 2% of CLA feeding is possible to maximize accumulation of CLA in meat, but changes in fatty acid composition is not profitable. Therefore, 1% of CLA feeding i,j considered to be proper for accumulation of CLA and minimization of the change in fatty acid.

  • The purpose of this study was to compare the validity of obese index among body mass index (BMI), waist to hip ratio (WHR), and waist circumference (WC) and to determine which is the best in relation to cardiovascular disease (CVD) risk in Korean elderly more than 65 ages. Data from the 1998 Korean Health and Nutrition Survey were used (n=1017). Anthropometric indices and CVD risk factors were measured, and chi-square test, analysis of variance following duncan's multiple range test, partial correlation analysis, and Receiver Operator Characteristic (ROC) curves were used in the analysis. Anthropometric values were decreased in both male and female when ages were goes up. In female elderly, it specially showed the characteristics of upper body fat and systolic blood pressure risk (p<0.05). Among life style factors the current smokers were prevalent in obese male (p<0.05), but not prevalent in female having obese or upper body fat. Also, person with upper body obesity have more exercise than that of normal group (p<0.01). Mean BMI values of the current smoker was lower than that of normal group in both sexes (p<0.01). Mean BMI value of person with other risk factors were higher than that of normal groups (p<0.05). Among 7 CVD risk factors in partial correlation analysis, WC had the highest correlation coefficient in 5 in male, whereas BMI in 4 in female. In ROC analyses of 12 risk factors and health conditions, the largest area under curve of obese indices for risk factors were WC>WHR>BMI in male and BMI>WHR>WC in female. The optimal cutoff values of each index (BMI : WHR : WC) for one or more risk factors were 19.02 : 0.84 : 71.3 in male and 19.04 : 0.88 : 85.6 in female. In conclusion, Most Korean elderly showed non-obese and abdominal obesity likewise other Asians. Also CVD risk factors were prevalent in Korean elderly within normal limits of obese indices. Therefore the upper body fat indices reflected in the aged whose muscle mass is replaced by fat must be used as an indicator of CVD risk together with BMI. Although WHR was the worst index based on partial correlation analysis and so located between BMI and WC in ROC curve analysis in both sexes, it need to be use with WC to screen the cardiovascular risk group.

  • The purpose of this study is to investigate the effect of a practiced aquatic exercise program on the body function of obese women in the community, with knowledge of obesity preceded by obesity management education. The subjects were 20 obese women aged 51 to 79 who participated in the program for 8 weeks among the participants of health program in S healthcare center in D city. The aquatic exercise program, which includes obesity management training, consists of a total of 110 minutes, including twice a week, 20 minutes of obesity management training, and 60 minutes of aquatic exercise program. Obesity management education focuses on physical activity practice and dietary training. The results of this study showed that the aquatic exercise program including the 8 - week obesity management training decreased abdominal circumference, body weight and body mass index (p <.001, p <.001, p <.001),increased grip strength(P <.05), which is an effective program for reducing obesity and improving muscle power. In the follow-up study, it is necessary to increase the number of subjects and to develop the experimental design study with the control group and the participatory obesity management underwater exercise program that the participant directly participates and leads. It also suggests that additional strategies for continuous lifestyle improvement are needed.

  • This study was performed to find out the persimmon vinegar as a functional drink on reducing blood lipids and enhancing exercise performance. For these, thirty two Sprague-Dawley male rats were divided into 4 groups; control (CONT), water placebo with high fat diet control (ACON), high fat diet with 2.5 times diluted persimmon vinegar ingestion (PV2.5), and high fat diet with 5.0 times diluted persimmon vinegar ingestion (PV5.0). Body weight was not different. Abdominal fat pads were statistically reduced in PV2.5 and PV5.0 compared to CONT and ACON. Blood glucose was not significant but TC, LDL-C and TG were lower in PV2.5 and PV5.0 than other groups, and HDL-C in PV2.5 was the highest among groups. Glycogen contents in the muscle and liver were higher in PV2.5 and PV5.0 compared to CONT and ACON. These results suggested that persimmon vinegar ingestion may inhibit the blood lipids increase and increase glycogen storage which possibly enhancing exercise performance. Therefore, persimmon vinegar has the possibility as the functional drink.
