The attempts to develop natural antioxidants have been made with aerial part of 16 Compositae species by analyzing their phenolic compound contents, scavenging activities on 1,l-diphenyl-2-picrylhydrazyl (DPPH) and 2,2'-azino-bis-(3-ethylbenzthiazoline-6-sulphonic acid) (ABTS) radicals, ferrous ion chelating effects and inhibition effects on peroxidation of linoleic acids. Total polyphenol and flavonoid contents were highest in Matricaria recutica. Scavenging activity on DPPH and ABTS radicals were highest with extracts of Echinacea angustifolia and Serratula coronata var. insularis f. insularis, respectively. Aerial palt extracts of all species showed lower DPPH scavenging activity than ascorbic acid and 2,6-Di-tert-butyl-4-methylphenol (BHT). But Serratula coronata var. insularis f. insularis demonstrated higher ABTS scavenging activity than ascorbic acid and BHT. In Hieracium pilosella, Echinacea angustifolia, Matricaria reculica extracts showed higher ABTS scavenging activity than BHT. Ferrous ion chelating effects was highest with Matricaria recutica extract, but the effects were much lower than ethylenediaminetetraacetic acid (EDTA). The inhibition activity in lipid peroxidation of linoleic acids was highest in Eupatorium japonicum with 90.06% inhibition 4 days after reaction and 40.52% after 24 days. This demonstrated higher inhibition activity and longer lasting than BHT. Aerial part of Matricaria recutica for extraction source, rather than flower, has higher potential for antiox.idant material. In conclusion, development of natural antioxidants in Compositae is possible by studying antioxidant activity of each species.
The objective of this study was to optimize the conditions for enhancing the antioxidant properties of sword bean (Canavalia gladiata) as a coffee substitute in two processing methods, roasting and grinding. The optimum conditions for removing off-flavor of the bean and maximizing functionality and efficiency were light roasting and cryogenic grinding (< 53 ㎛). In these conditions, extraction yield was 16.75%, total phenolic content (TPC) was 69.82 ± 0.35 mg gallic acid equivalents/g, and total flavonoid content (TFC) was 168.81 ± 1.64 mg quercetin equivalents/100 g. The antioxidant properties were 77.58 ± 0.27% for DPPH radical scavenging activity and 58.02 ± 0.76 mg Trolox equivalents/g for ABTS radical scavenging activity. The values for TFC and ABTS radical scavenging activity were significantly higher (p < 0.05) than in other conditions, and TPC and DPPH radical scavenging activity were second highest in lightly roasted beans, following raw beans. HS-SPME/GC-MS analysis confirmed that the amino acids and carbohydrates, which are the main components of sword bean, were condensed into other volatile flavor compounds, such as derivatives of furan, pyrazine, and pyrrole during roasting. Roasted and cryogenically ground (cryo-ground) sword beans showed higher functionality in terms of TFC, DPPH, and ABTS radical scavenging activities compared to those of coffee. Overall results showed that light roasting and cryogenic grinding are the most suitable processing conditions for enhancing the bioactivity of sword beans.
The antioxidant substance in black onion was identified. The assays that used 1,1-diphenyl-2-picrylhydrazyl (DPPH) and 2,2'-azino-bis(3-ethylbenzthiazo line-6-sulphonic acid) ($ABTS^+$) radicals showed that the ethyl acetate fraction of black onion methanol extract had a higher level of radical-scavenging activity than the other fractions. Two antioxidative compounds were purified and isolated from the ethyl acetate fraction via column chromatographies of silica gel and Sephadex LH-20 using the guided DPPH radical-scavenging assay. The isolated compounds were identified as 3,4-dihydroxybenzoic acid (1) and quercetin (2) based on mass spectrometry and nuclear magnetic resonance. The isolated compounds showed a high level of DPPH and ABTS+ radical-scavenging activity. Compound 2 had a higher level of radical-scavenging activity than 1.
This study examined the total phenolic and flavonoid compounds, and the antioxi dant activity of major cultivars of Prunus mume in Korea. The total phenolic content ranged from 64.13 to $93.43mg{\cdot}100g^{-1}$, with the content in 'Osuku' being higher than that in the other cultivars; a difference in the content among cultivars was observed. The total flavonoid content was $6.16{\sim}18.57mg{\cdot}100g^{-1}$, showing a significant difference, with the highest content being noted in 'Gojirou'. The DPPH radical scavenging activity was measured and was relatively high for Nanko, Kamakami, Natsuka, Dana, and Osuku cultivars. When ABTS radical scavenging activity was measured, all the cultivars showed a scavenging activity over 80%, with the scavenging activity of 'Osuku' being the highest. With respect to nitrite scavenging ability, all cultivars exhibited a high scavenging activity of over 50%, with the highest activity observed for 'Nanko' (76.03%), 'Gojirou' (70.56%), and 'Yourou' (70.32%). Based on the study results, it is considered that Prunus mume can be a useful resource because of various substances with functional physiological activities.

Present studies were conducted to investigate the effects of water and 80% ethanol solvent on antioxidant activities of flower extracts of Chrysanthemum frutescens, Coreopsis lanceolata, Matricaria recutica, and Hieracium pilosella. Extraction yields of water extracts ranged 27.15~40.25% and 80% ethanol extracts 24.92~42.84%, respectively. In all species polyphenol and flavonoid contents were higher with 80% ethanol extraction, especially in C. lanceolata. Same results were obtained with scavenging effects on DPPH and ABTS radicals and ferrous ion chelating effects. Scavenging activity of flower extracts on DPPH radicals was highest in H pilosella - higher than that of synthetic antioxidant DHT. Higher scavenging activity on ABTS radicals was observed with M. recutica. Generally Compositae flower extracts exhibited higher scavenging activity on ABTS radicals than DPPH. Scavenging activity on ABTS radicals of M. recutica and P pilosella were superior to those of ascorbic acid and BHT. Ferrous ion chelating effects were much higher with H. pilosella flower extracts by 80% ethanol. Chelating effects of 4 species were much lower than those of EDTA. In conclusion, to develop natural antioxidant from above 4 Compositae species, 80% ethanol is recommended for efficient solvent to obtain maximum antioxidant isolation and activity.

The purpose of this study was to investigate the antioxidant activity and β-glucan content of extracts extracted by varying the temperature at 30, 55 and 80℃ after hot air drying or freeze drying of Pleurotus ostreatus and Pleurotus eryngii. For the analysis antioxidant activity of each mushroom, β-glucan, total phenol, flavonoid contents, and DPPH·ABTS+·Nitrite assay were measured. Also, the β-glucan content, total flavonoid content and ABTS+ scavenging activity increased with freeze drying rather than hot air drying, and increased with increasing extraction temperature in both mushrooms. However, the total phenol and nitrite scavenging activity increased with hot air drying rather than freeze drying, and decreased with increasing temperature in both mushrooms. DPPH scavenging activity was not significant in both mushrooms, but decreased with increasing extraction temperature. Pearson's correlations between total flavonoid content and antioxidant activities were r=0.719~0.753 (p<0.01). As a result, the β-glucan content, total flavonoid content, and ABTS radical cation scavenging activity were highest during freeze drying and extraction at 80℃. And the highest total phenol content, DPPH radical scavenging activity and nitrite scavenging activity were obtained during hot air drying and extraction at 30℃.
This study was designed to investigate the contents of icariin during ripening of Epimedium koreanum with sugar and Soju (25, 30, and 35% alcohol contents) using a homemade method. Contents of icariin of Epimedium wine were examined using high performance liquid chromatography. Icariin levels in Epimedium wine increased during the first 3 days of storage; after 6 days, icariin contents decreased gradually until 30 days. Contents of icariin in Epimedium wine by storage temperature (5 and $20^{\circ}C$) were not different during storage. After 30 days, icaiin was not detected in all tested Epimedium wines. Epimedium wines were assessed for 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity, 2,2'-azinobis(3-ethylbenzothiazoline-6-sulfonic acid) and (ABTS) radical scavenging activity. DPPH and ABTS radical scavenging activities increased in early storage periods, however, after 6 or 9 days, activities decreased gradually.
This study was to conducted to investigate the antioxidative activity of 70% ethanol extracts of kiwi of three different colors (gold, green and red) by measuring DPPH, ABTS radical scavenging activity, tyrosinase inhibitory effect, metal chelating effect, reducing power, and nitrite scavenging activity. Total polyphenol contents were: gold kiwi, 3.09 mg GAE/g, green kiwi 2.71 mg GAE/g, and red kiwi 4.59 mg GAE/g, respectively. Red kiwi showed higher antioxdidant activity than gold and green kiwi. DPPH and ABTS radical scavenging activity, and nitrite scavenging activity of red kiwi exhibited 94.83, 99.57, and 97.88%, respectively, at a concentration of 20 mg/mL, which were equal to those of ascorbic acid (positive control). Metal chelating effect of red kiwi was superior to that of ascorbic acid. Therefore, the availability of red kiwi will be increased in the field of functional material for food additives and value added products.
Ginseng seeds were treated with different autoclaving temperatures and autoclaving times, and extracted with 80% methanol to measure changes in antioxidant activity. The antioxidant activity of ginseng seeds treated by autoclaving was measured by 1,1-diphenyl-2-picrylhydrazyl radical scavenging activity, 2,2'-aziono-bis(3-ethylbenzthiazoline)-6-sulfonic acid radical scavenging activity, superoxide dismutase SOD-like activity, ferric reducing antioxidant power (FRAP), and total phenolic compound content. As autoclaving temperature and time were increased, the L lightness value decreased and the redness value tended to increase. Total phenolic compound content was about three times higher in ginseng seeds treated with autoclaving at 130°C than in ginseng seeds that were not treated. DPPH radical scavenging activity and ABTS radical scavenging activity increased as autoclaving temperature and time were increased. In particular, when the concentration was 100 ppm, the ABTS radical scavenging activity was 91.80% in ginseng seeds treated by autoclaving at $130^{\circ}C$, which was the highest antioxidant activity. FRAP and SOD-like antioxidant activity tended to increase significantly as autoclaving temperature and time were increased.
To make sure of the usefulness of extract of Rubus coreanus Miquel for producing functional feeding honey, we compared some antioxidative indicators of feeding honey using extract of Rubus coreanus Miquel with acacia honey, SueBee Clover honey(USA), feeding honey on the market. The water content of four honeys were 16.6~26.5%, pH were 3.18~3.70, and titratable acidity ranged 0.018~0.022%. The phenolic compound contents of SueBee Clover honey and feeding honey using extract of Rubus coreanus Miquel were 8.3 mg/100 g and 7.3 mg/100 g, respectively, and were significaltly higher thgheacacia honey and feeding honey on the market. The flavonoid contents per 100 g of honey ranged from 2.3 mg(acacia honey) to 15.0 mg(SueBee Clover honey). DPPH anion scavenging activity of four honeys were not high. 0.5~2.0 g/ml of feeding honey using extract of Rubus coreanus Miquel was 16~36% and showed a concentration-reliant figure. At the concentration of 0.25~0.75 mg/ml, the reducing power of four honeys increased concentration-dependently, and the power of 0.25 mg/ml of feeding honey using extract of Rubus coreanus Miquel was corresponding to thgt of $150{\mu}g$/ml of a vitamin C solution. ABTS radical scavenging activity of feeding honey using extract of Rubus coreanus Miquel was 43.3~68.4%; the highest activity amongst all samples. When plotting the dose-response curve, ABTS radical scavenging activity also increased as their concentration increased from 62.5 mg/ml to 500 mg/ml. The heat treatment reduced the phenolic compound contents of acacia honey and feeding honey using extract of Rubus coreanus DPPH anion scavenging activity of feeding honey on the market and feeding honey using extract of Rubus coreanus Miquel did not changed significaltly after heating for 20 min, and the three honey except SueBee Clover honey maintained the reducing power with the same treatment.
