The Non-Enzymatic Browning and Shelf-Life of Dried Shrimp during Storage under Fluctuating Temperature Conditions (건조 새우의 변온저장중 갈변 및 Shelf-life)

  • The kinetics of browning reaction of dried shrimp powder samples were investigated during storage. The temperature conditions of the ding process were $25^{\circ}C\;and\;45^{\circ}C$, and the samples were stored at water activity ($a_w$) of 0.33, 0.44, 0.52, 0.65 and temperatures of $35^{\circ}C,\;45^{\circ}C,\;55^{\circ}C$ and temperature fluctuations between $33^{\circ}C\;and\;55^{\circ}C$. When the shrimp was dried at $25^{\circ}C$ the activation energies obtained from the Arrhenius plot ranged from 13.57 to 14.33 kcal/mol. From these energies of activation, the $Q_{10}$ values at $25^{\circ}C$ showed 1.93 to 2.00. In the case of drying at $45^{\circ}C$ the activation energies were $13.12{\sim}13.61\;kcal/mol$ and $Q_{10}$ values were $1.89{\sim}1.93$, respectively. In addition, a storage study under square-wave fluctuating temperature conditions was carried out by varying the shrimp sample temperature between $35^{\circ}C\;and\;55^{\circ}C$ within 7 days regular fluctuation cycle. The data obtained from the fluctuating temperature storage study will be used in the prediction of shelf-lives. The shelf-lives assessed at $25^{\circ}C$ from the accelerated shelf-life tests ranged from 4 days at aw 0.65 to 139 days at aw 0.33.

Bioconversion of Straw Into Improved Fodder: Mycoprotein Production and Cellulolytic Acivity of Rice Straw Decomposing Fungi

  • Sixty two out of the sixty four species of fungal isolates tested could produce both $exo-{\beta}1,4-gluconase\;(C_1)$ and $endo-{\beta}1,4-gluconase\;(C_x)$ on pure cellulose and rice straw as carbon source in Czapek's medium. Fifty-eight and fifteen species were able to grow at $25^{\circ}C$ and at $45^{\circ}C$, respectively. Eleven species could grow at both $25^{\circ}C$ and $45^{\circ}C$ while, four species appeared only at $45^{\circ}C$. The most cellulolytic species at $25^{\circ}C$ was Trichoderma koningii producing 1.164 $C_1$ (mg glucose/1 ml culture filtrate/1 hr) and 2.690 $C_x$ on pure cellulose, and 0.889 $C_1$, and 1.810 $C_x$ on rice straw, respectively. At $45^{\circ}C$, the most active thermotolerant species were Aspergillus terreus, followed by A. fumigatus. Talaromyces thermophilus was the highest active thermophilic species followed by Malbranchea sulfurea. Most of these species were also active in fermentation of rice straw at 25 and $45^{\circ}C$ (P<0.05). The most active ones were T. koningii, A. ochraceus and A. terreus, which produced 201.5, 193.1 and 188.1 mg crude protein/g dry straw, respectively.

  • Ramen flour formulation was optimized by applying a mixture experimental design. In the optimization, the overall palatability (OP) of cooked ramen and the rheological properties of selected dough were maximized or minimized. Blended ratios of the ingredients such as Dark Northern Spring (DNS), Hard Red Winter (HRW), and Soft White (SW) were designed on a simplex-lattice. Dough rheological properties were measured by Rapid Visco Analyser (RVA), Farinograph, and Extensograph, and the overall palatability by sensory evaluation. Several principal dough rheological properties such as RVA peak viscosity (PV), Farinograph development time (DT), and Extensograph resistance/extensibility after 45 min (R/E 45 min) were selected to influence the overall palatability by canonical correlation analysis (CCA). Goals of the optimization were given as OP maximized, PV maximized, DT minimized, and R/E at 45 min maximized. The optimization results were found to be DNS 33.3%, HRW 33.3%, and SW 33.3% with OP, 5.825; PV, 587.9 cP; DT, 3.1 min; R/E at 45 min, 2.339 BU/mm.

Analysis of Output Power of Unimorph Cantilever Generator Using $0.72Pb(Zr_{0.47}Ti_{0.53})O_3-0.28Pb((Ni_{0.55}Zn_{0.45})_{1/3}Nb_{2/3})O_3$ Thick Fim for Energy Harvesting Device Applications

  • 에너지 하베스터에 적용 가능한 $0.72Pb(Zr_{0.47}Ti_{0.53})O_3-0.28Pb((Ni_{0.55}Zn_{0.45})_{1/3}Nb_{2/3})O_3$ (PPZNN) 후막세라믹의 구조적 압전 특성을 조사하였다. $850^{\circ}C$에서 하소를 마친 파우더를 72시간 볼 밀링 처리한 후, 테잎 캐스팅 공정을 이용하여 0.3mm의 두께로 PPZNN 압전 세라믹을 제조하였다. $900^{\circ}C$에서 $1200^{\circ}C$까지 다양한 온도에 소결하여 온도가 증가될수록 정방형 구조로 상전이 거동하는 모습을 보였으며, 특히 $1050^{\circ}C$에서 소결된 PPZNN후막 세라믹은 이차상이 없는 고밀도의 미세구조가 관찰되었다. $d_{33}$=440 pC/N 그리고 kp = 0.46의 우수한 압전 특성을 보였으며, 에너지 변환 성능을 나타내는 $d33{\cdot}g33$ 값은 약 $20439{\times}10^{-15}\;m^2/N$ 로 매우 우수하였다. PPZNN후막 세라믹을 유니몰프 켄틸레버 형태로 제작하여 발전 평가하였을 때 저항이 470 $k{\Omega}$에서 969 ${\mu}W$ (4930 ${\mu}W/cm^3$)로 관찰되었다. PPZNN 후막 압전 세라믹은 향후 압전에너지 하베스터 소재로 다양한 응용분야에 사용될 것으로 예상된다.

Ichthyofauna and Fish Community in Lake Paro (파로호의 어류상 및 어류군집)

  • The ichthyofauna and community structure in Lake Paro, Korea, was investigated from December 2002 to september 2003. Buying the surveyed period 45 species belonging 12 families were collected. There were 15 Korean endemic species 33.33%, including Hemibarbus mylodon, Aeheilognathus yamatsutae nnd Ooreoperca hem. Dominant species were Zacco platypus (72.41%) and subdominant species were Hemibarbus labeo (9.75%). Also, Opsariichthys uncirostris amurensis (5.98%), Zacco temmincki (2.42%), Rhinogobius brunneus (2.01%) and Hypomesus olidus (0.88%) were numerous. The biomass of collected fishes were Zacco platypus (82,803.15 g), Hemibarbus labeo (32,942.63 g), Opsariichthys uncirostris amurensis (27,482.39 g), Cyprinus carpio (6,502.87 g), Anguilla japonica (3,022.15 g) and Siniperca scherzeri (2,711.05 g). Of the 10 introduced fishes in Lake Paro Cyprinus carpio (Israeli type), Carassius cuvieri, Micropterus salmoides and Lepomis macrochirus were originated form foreign countries but Anguillta japonica, Hemiculter eigenmanni, Hypomesus olidus, Oncorhynchus masou mason, Chaenogobius urotaenius, Rhinogobius giurinus were introduced from other native river systems.

A Study on the Mechanical Properties of the Friction Welding with Hollow and Solid Shaft of SM45C (SM45C의 중실축과 중공축의 마찰용접 특성에 관한 연구)

  • The present study examined the mechanical properties of the friction welding with hollow and solid shaft of SM45, of which the diameter is 25.2mm and 33mm. Friction welding was conducted at welding conditions of 2,000rpm, friction pressure of 50MPa, upset pressure of 70MPa, friction time of 0.4sec to 1.4sec by increasing 0.2sec, upset time of 2.0 sec including variable such as friction time are following. Under these conditions, a tensile test, a hardness test and a microstructure of weld interface were studied. The results were as follows : When the friction time was 1.0 seconds under the conditions, the maximum tensile strength of the friction weld happened to be 1,094MPa, which is 120% compared with the tensile strength of SM45C base metal. The upset length linearly increased as friction time increased. According to the hardness test, the hardness distribution of the weld interface was formed from 475Hv to 739Hv. HAZ(Heat Affected Zone) was formed from the weld interface to 2mm of SM45C.

Detection Capability by Change of Amylograph Characteristics of Irradiated Black Pepper (방사선 조사된 검은후추가루의 Amylograph Characteristics의 변화에 따른 검지 가능성)

  • A study was carried out to establish a detection method for irradiated black pepper using amylograph characteristics. The maximum viscosity, viscosity at $93^{\circ}C$, viscosity after 15 min at $93^{\circ}C$, viscosity at $45^{\circ}C$, viscosity after 30 min at $45^{\circ}C$, and viscosity after 60 min at $45^{\circ}C$ decreased with increasing irradiation doses, but initial pasting temperatures, maximum viscosity temperatures, breakdown, setback, and consistency did not show great changes. The high correlation coefficients $(R^2>0.97)$ were shown between irradiation doses and amylograph characteristics except for breakdown $(R^2>0.75)$, setback $(R^2>0.88)$ and consistency $(R^2>0.31)$. These results suggest that detection of irradiated black pepper is possible using amylograph characteristics.

  • Egg masses of the root- knot nematodes ( Meloidogyne incognita, M. arenaria and M. haply) were exposed to two different regimes of soil moisture (459 and 2459) and temperature ( -2$^{\circ}C$ and 33$^{\circ}C$), quite extreme condition in their natural environment, and their survival rate was compared. Three species did not show any difference in the rate when exposed to either soil moisture for 25 days, with the rate in the range of 8.6% to 10.4%. In response to temperature treatment, however, they differed : the best survival rate was obtained from M. incognita at high temperature ( 33"C) and from M, hapla at low temperature (-2$^{\circ}C$) plot. The third species (M. arenaria) was intermediate in both temperature regimes.imes.

Bioconversion of Straw into Improved Fodder: Fungal Flora Decomposing Rice Straw

  • The fungal flora decomposing rice straw were investigated all over the soil of Sharkia Province, east of Nile Delta, Egypt, using the nylon net bag technique. Sixty-four straw-decomposing species belonging to 30 genera were isolated by the dilution plate method in ground rice straw-Czapek's agar medium at pH 6. The plates were incubated separately at $5^{\circ}C,\;25^{\circ}C\;and\;45^{\circ}C$, respectively. Twenty nine species belonging to 14 genera were isolated at $5^{\circ}C$. The most frequent genus was Penicillium (seven species), and the next frequent genera were Acremonium (three species), Fusarium (three species), Alternaria, Chaetomium, Cladosporium, Mucor, Stachybotrys (two species) and Rhizopus stolonifer. At $25^{\circ}C$, 47 species belonging to 24 genera were isolated. The most frequent genus was Aspergillus (nine species), and the next frequent genera were ranked by Penicillium (five species), Chaetomium (three species), Fusarium (three species). Each of Alternaria, Cladosporium, Mucor, Myrothecium and Trichoderma was represented by two species. At $45^{\circ}C$, 15 species belonging to seven genera were isolated. These were seven species of Aspergillus, two species of Chaetomium and two species of Emericella, while Humicola, Malbranchea, Rhizomucor and Talaromyces were represented by one species respectively. The total counts of fungi the genera, and species per gram of dry straw were significantly affected by incubation temperature and soil analysis (P < 0.05).
