Study on texture change of cooked rice within a short time after cooking (취반 후 단시간 경과에 의한 쌀밥의 조직감 변화 연구)

  • The aim of this study was to investigate the texture change of cooked rice within a short time after cooking. Using four instant rice brands, the texture change within 30 min after cooking was measured by the texture profile analysis (TPA) method for hardness, adhesiveness, cohesiveness, chewiness, and springiness with different compression ratios (30, 70%) and cross-head speeds (0.5, 1.0 mm/s). In the case of cohesiveness, adhesiveness, and chewiness, there were significant differences in the rice textures at 20 to 30 min after cooking compared to that in the sample immediately after cooking. In particular, adhesiveness showed significant differences at 10 min after cooking. However, there were little significant differences within 30 min for springiness. In conclusion, when measuring cooked rice texture, it is desirable to measure it, if possible, within 10 to 20 min after cooking.

The Effect of Heat-treatment on Brazing Characteristics of WC-9%Co/SUJ2 Steel (WC-9%Co와 SUJ2강의 접합특성에 미치는 열처리의 영향)

  • In The study, the bonding of WC-9%Co to SUJ2 steel using Ag-Cu-Zn-Cd insert metal has performed to investigate the bonding properties by heat-treatment. Bonding was brazed for 5-30min at 95$0^{\circ}C$, performed solution treatment for 5 min at 85$0^{\circ}C$ and sustained subsequently oil quenching. To investigate the effect of heat-treatment, tempering was executed at $600^{\circ}C$ for 30 min after oil quenching. Mechnical properties and chemical compositions on the brazed bonding interface were investigated by means of microstructural observation, 4-point bending test and EDS and XRD measurements. The results obtained were as follows. 1) The bonding strength of WC-9%Co/SUJ2 joints by Ag-Cu-Zn-Cd insert metal obtained about 78, 117 and 72MPa after brazing for 5, 20 and 30 min at 95$0^{\circ}C$. And the highest bonding strength obtained about 131MPa after brazing for10 min at 95$0^{\circ}C$ 2) Higher bonding strength of 288MPa was obtained in the joint that brazed for 10 min at 95$0^{\circ}C$, and carried out tempering for 30 min at $600^{\circ}C$ subsequently. 3) Fracture of joint brazed by Ag-Cu-Zn-Cd insert metal for 5, 10, 20 and 30 min created WC-9%Co/SUJ2 interface. The joint that brazed for 10 min at 95$0^{\circ}C$ and then tempered for 30 min at $600^{\circ}C$ was fractured at the site of WC-9%Co.

Effect of renal ischemia on amino acid transport in rabbit renal cortical slices (신장 허혈이 토끼 신피질 절편에서 아미노산 이동에 미치는 영향)

  • This study was carried out determine the effect of renal ischemia on amino acid transport in rabbit renal cortical slices. The animal models of renal ischemia induced experimentally by clamping the renal artery. These results were summarized as follows: 1. The uptake of amino acids lysine and ${\alpha}$-aminobutyrate(AIB), dicarboxylate succinate and organic anion PAH in cortical slices was normal or increased after 30 or 60 min of ischemia in vivo. 2. In a 30 min ischemic kidney, the slice uptake of amino acids was returned to the control level by 30 min of reflow. In a 60 or 90 min ischemic kidney, the lysine uptake was returned to the control level after of reflow, but the uptake of AIB and succinate was significantly reduced during reflow period of 30-120 min. 3. Oxygen consumption in cortical slices was increased after 30 min of ischemia but was not altered by 60 min of ischemia. This results indicat that transient ischemia caused increasing of amino acid uptake in renal cortical slices without metabolic disorder of renal proximal tubule.

Effect of Electrolyte Flow Rates on the Performance of Vanadium Redox Flow Battery (바나듐레독스흐름전지 전해질 유량에 따른 성능변화)

  • The electrolyte flow rates of vanadium redox flow battery play very important role in terms of ion transfer to electrolyte, kinetics and pump efficiency in system. In this paper a vanadium redox flow battery single cell was tested to suggest the optimization criteria of electrolyte flow rates on the efficiencies. The compared electrolyte circulation flow rates in this experimental work were 15, 30 and 45 mL/min. The charge/discharge characteristics of the flow rate of 30 mL/min was the best out of all flow rates in terms of charging and discharging time. The current efficiencies, voltage efficiencies and energy efficiencies at the flow rate of 30 mL/min were the best. The IR losses obtained at thd current density of $40mA/cm^2$, at the flow rates of 15, 30 and 45 mL/min were 0.085 V, 0.042 V and 0.115 V, respectively. The charge efficiencies at the current density of $40mA/cm^2$ were 96.42%, 96.45% and 96.29% for the electrolyte flow rates of 15, 30 and 45 mL/min, respectively. The voltge efficiencies at the current density of $40mA/cm^2$ were 77.34%, 80.62% and 76.10% for the electrolyte flow rates of 15, 30 and 45 mL/min, respectively. Finally, the energy efficiencies at the current density of $40mA/cm^2$ were 74.57%, 77.76% and 73.27% for the electrolyte flow rates of 15, 30 and 45 mL/min, respectively. The optimum flow rates of electrolytes were 20 mL/min in most of operating variables of vanadium redox flow battery.

Changes in Verbal Cognitive Performance, Blood Oxygen Saturation and Heart Rate due to 30% Oxygen Administration (30% 산소 공급에 의한 언어 인지 능력, 혈중 산소 농도, 심박동율의 변화)

  • In this study, changes in verbal cognitive performance, blood oxygen saturation and heart rate due to 30% concentration oxygen supply were observed. Five male (24.6±0.9) and five female (22.2±1.9) college students were asked to perform 28 verbal cognitive tasks of the same difficulty during two types of oxygen (concentration 21%, 30%) administration. The experimental sequence consisted of Rest1 (1 min.), Control (1 min.), Task (4 min.), and Rest2 (4 min.) and the physiological signals such as blood oxygen saturation and heart rate were measured throughout the stages. The experimental result showed that the performance increased significantly at 30%'s concentration of oxygen rather than 21%'s, which shows oxygen supply has positive influence on verbal cognitive performance. When 30% concentration oxygen is supplied, the oxygen saturation in the blood significantly increased comparing to 21%. The heart rate showed no significant difference. Significant correlations were found between changes in oxygen saturation and cognitive performance. It is suggested that 30% oxygen can stimulate brain activation by increasing actual blood oxygen concentration in the process of cognitive performance.

Capacitation and acrosome reaction differences of bovine, mouse and porcine spermatozoa in responsiveness to estrogenic compounds

  • Background: Endocrine disruptors are exogenous substance, interfere with the endocrine system, and disrupt hormonal functions. However, the effect of endocrine disruptors in different species has not yet been elucidated. Therefore, we investigated the possible effects of $17{\beta}$-estradiol (E2), progesterone (P4), genistein (GEN) and 4-tert-octylphenol (OP), on capacitation and the acrosome reaction in bovine, mouse, and porcine spermatozoa. In this in vitro trial, spermatozoa were incubated with $0.001-100{\mu}M$ of each chemical either 15 or 30 min and then assessed capacitation status using chlortetracycline staining. Results: E2 significantly increased capacitation and the acrosome reaction after 30 min, while the acrosome reaction after 15 min incubation in mouse spermatozoa. Simultaneously, capacitation and the acrosome reaction were induced after 15 and 30 min incubation in porcine spermatozoa, respectively. Capacitation was increased in porcine spermatozoa after 15 min incubation at the lowest concentration, while the acrosome reaction was increased in mouse spermatozoa after 30 min (P < 0.05). E2 significantly increased the acrosome reaction in porcine spermatozoa, but only at the highest concentration examined (P < 0.05). P4 significantly increased the acrosome reaction in bovine and mouse spermatozoa treated for 15 min (P < 0.05). The same treatment significantly increased capacitation in porcine spermatozoa (P < 0.05). P4 significantly increased capacitation in mouse spermatozoa treated for 30 min (P < 0.05). GEN significantly increased the acrosome reaction in porcine spermatozoa treated for 15 and 30 min and in mouse spermatozoa treated for 30 min (P < 0.05). OP significantly increased the acrosome reaction in mouse spermatozoa after 15 min (P < 0.05). Besides, when spermatozoa were incubated for 30 min, capacitation and the acrosome reaction were higher than 15 min incubation in E2 or GEN. Furthermore, the responsiveness of bovine, mouse and porcine spermatozoa to each chemical differed. Conclusions: In conclusion, all chemicals studied effectively increased capacitation and the acrosome reaction in bovine, mouse, and porcine spermatozoa. Also we found that both E2 and P4 were more potent than environmental estrogens in altering sperm function. Porcine and mouse spermatozoa were more responsive than bovine spermatozoa.

Characterization of Band Gaps of Silicon Quantum Dots Synthesized by Etching Silicon Nanopowder with Aqueous Hydrofluoric Acid and Nitric Acid

  • Silicon quantum dots (Si QDs) were synthesized by etching silicon nanopowder with aqueous hydrofluoric acid (HF) and nitric acid ($HNO_3$). Then, the hydride-terminated Si QDs (H-Si QDs) were functionalized by 1- octadecene (ODE). By only controlling the etching time, the maximum luminescence peak of octadecylterminated Si QDs (ODE-Si QDs) was tuned from 404 nm to 507 nm. The average optical gap was increased from 2.60 eV (ODE-Si QDs-5 min) for 5 min of etching to 3.20 eV (ODE-Si QDs-15 min) for 15 min of etching, and to 3.40 eV (ODE-Si QDs-30 min) for 30 min of etching. The electron affinities (EA), ionization potentials (IP), and quasi-particle gap (${\varepsilon}^{qp}_{gap}$) of the Si QDs were determined by cyclic voltammetry (CV). The quasi-particle gaps obtained from the CV were in good agreement with the average optical gap values from UV-vis absorption. In the case of the ODE-Si QDs-30 min sample, the difference between the quasi-particle gap and the average optical gap gives the electron-hole Coulombic interaction energy. The additional electronic levels of the ODE-Si QDs-30 min and ODE-Si QDs-15 min samples determined by the CV results are interpreted to have originated from the Si=O bond terminating Si QD.

Effects of Short-term Immobilization Stress on the Mouse Serum Concentrations of Cortisol and Dehydroepiandrosterone Sulphate (단기 속박스트레스가 마우스 혈청 Cortisol, Dehydroepiandrosterone Sulphate 농도에 미치는 영향)

  • We have investigated the effect of short-term immobilization stress on the serum concentrations of cortisol and DHEAS in BALB/c male mice. Serum cortisol and DHEAS concentrations were measured by radioimmunoassay(RIA). We found there were significantly increased in the cortisol levels in 30 min-stressed group(Ⅰ-30N) compared with control(C) group (p<0.01), and also increased with significance in 120 min-stressed group(I-120N) compared with C group(p<0.01). Cortisol concentrations were significantly increased in both 30 min-stressed group(Ⅰ-30T), and 120 min-stressed group(Ⅰ-120T) compared with C group(p<0.01). The sustained increase of cortisol levels were observed in both SG treated and SG non-treated group. Serum cortisol levels were lower in SG treated group than SG non-treated group with significance(p<0.01). By contrast, DHEAS levels were slightly decreased without significance in Ⅰ-30N, but significantly decreased in Ⅰ-120N compared with C group(p<0.01). There were slightly decreased in the DHEAS levels in Ⅰ-30T, but significantly decreased in Ⅰ-120T compared with C group(p<0.01). However, SG treatment did not induce any significant changes of DHEAS levels in both 30 min and 120 min-stressed group. Though short-term immobilization stress, the continuous decline of DHEAS levels were observed. Therefore, these results show that short-term immobilization stress affects the serum concentrations of cortisol and DHEAS in mice.

The Effect of Exercise on the Conversion Rate of Ingested Glueose to Glycogen in the Hindlimb Skeletal Muscles in Rats (흰위에서 운동부하후 경구투여한 Glucose가 특성이 다른 골격근에서 Glycogen으로 합성되는 속도)

  • In the present study the effect of exercise on the conversion rate of ingested glucose to glycogen in the different types of hindlimb skeletal muscles in Sprague-Dawley male rats was studied. The amounts of synthetized glycogen from ingested glucose of fast-twitch white(WV), fast-twitch red(RV), mixed type of fast-twitch white and red(EDL), and slow-twitch(SOL) muscles were determined at 30 and 90 min. after ingestion of 25% glucose solution which contained $^{14}C$-glucose($2m{\ell}(1uCi)$/100gm B. W.)in control and exercise loaded rats. The result was summarized as follows : The about 55% at 30 min. and 70% at 90 min. after glucose ingestion were absorbed from gastrointestinal tract. This result shows no effects of exercise on absorption rate from gastrointestinal tract. The amount of synthetized glycogen of SOL from ingested glucose at 30 and 90 min. after glucose ingestion were highest, whether WV were lowest in hindlimb skeletal muscles in control and exercise loaded rats. In the exercise loaded rats, the amounts of synthetized glycogen of SOL, RV, and EDL at 90 min. after glucose ingestion was much higher than control rats, but not different in WV between exercise-loaded and control rats. At 30 min. after glucose ingestion, only SOL of exercise loaded rats was higher than control rats. In the control rat, the synthesis of glycogen was almost completed during initial 30 minutes. On the other hand, in the exercise loaded rat, except WV was opposite result of control rats, i. e., amounts of synthetized glycogen were major during late period. The amount of synthetized glycogen of liver at 30 and 90 min. after glucose ingestion in exercise loaded rats was higher than control rats. The rate of glycogen synthesis in control and exercise loaded rats were higher between 30-90 minute than initial 30 minute.

Effect of virus infectivity titer following centrifugation and filtration during virus extraction from fish samples

  • A $0.45-{\mu}m$ membrane filter is generally used to remove bacterial contamination during virus extraction from fish samples. However, the number of fish viruses is drastically reduced after filtration with a $0.45{\mu}m$ filter. In this study, we investigated the effect of filters on virus infectivity titer and the change in virus titer and bacterial number following different centrifugation conditions to determine a suitable procedure for virus extraction from fish samples. $10^{4.05}$ and $10^{5.05}TCID_{50}/ml$ of infectious hematopoietic necrosis virus (IHNV) and $10^{4.05}$ and $10^{4.55}TCID_{50}/ml$ of Oncorhynchus masou virus (OMV) were not detectable after filtration with two types of $0.45-{\mu}m$ filters, except the IHNV titer was reduced by about 10 fold after filter use (company A). No significant difference was found in the virus titer following centrifugation at $880{\times}g$ (30 min) or $3,500{\times}g$ (30 min), whereas IHNV and OMV titers were reduced by about 10 and 10-1000 fold by centrifugation at $14,000{\times}g$ (30 min) and $14,000{\times}g$ (10 and 30 min), respectively. A total of 97.7-99.9% Escherichia coli were eliminated by centrifugation at $880 {\times}g$ (30 min) and $3,500{\times}g$ (30 min). These results show that fish viruses were affected by filtering, even though the effect differed by virus species and filter type. Therefore, centrifugation at $3,500{\times}g$ (30 min) and use of medium with antibiotics may be useful for virus extraction along with a reduction in bacteria.
