대학생의 생활습관요인, 식습관 및 영양소섭취 조사 - 영양교육 전후를 중심으로 - (Survey on the Lifestyle Factors, Food Habits and Dietary Nutrient Intake of College Students - Before and after nutrition education -)

  • This study examined the lifestyle factors, dietary attitudes, food habits, and dietary nutrition intake of college students before and after nutrition education. A total of 44 college students were recruited and a questionnaire survey was conducted. Dietary nutrient consumption was obtained from the one day 24-hr recall. Scores on 'Concerns about health (p<0.05)', 'Regular exercise (p<0.01)', and number of steps (p<0.001) were significantly higher after-training. The dietary attitude (31.3 vs. 33.7, p<0.01) and food habits (53.5 vs. 59.7, p<0.01) were significantly higher after-training. The scores on 'Eating a lot of food that I want to eat is more important than nutrition (p<0.01)', 'I am interested in information on nutrition and health (p<0.01)', 'Have three meals a day (p<0.01)', 'Have breakfast regularly (p<0.01)', 'Drink milk every day (p<0.001)', 'Have fruits every day (p<0.05)', and 'Apply nutrition knowledge to daily life (p<0.001)' were significantly higher after-training. Among the nutrients intakes, the protein (p<0.05), vitamin C (p<0.01), and calcium (p<0.001) were significantly higher after-training. Nutrition education improved the lifestyle factors, dietary attitudes, food habits, and dietary nutrition intakes.

전라남도 7개 지역에 거주하는 남녀 장수인의 봄과 가을 영양섭취 실태 비교 연구 (Study on Nutrition Intakes of Long-Lived Men and Women Living in Seven Regions in Jellanam-do: Comparisons between Spring and Fall)

  • This study examined nutrient intake of long-lived men and women living in Jeollanam-do (Gangjin, Goksung, Gurye, Damyang, Boseong, Suncheon, Jangheung) which is known as representative Korean longevity area. Using the 24 hr recall method, dietary nutrient intake data were collected from 134 subjects (67 for 80~89 years old, 67 for more than 90 years old) in spring and fall 2012. Nutrient for each subject were calculated using CAN-pro. Subjects' daily mean intake levels of macronutrients, vitamins and minerals were higher in fall than in spring. Compared to KDRIs, subjects less than recommend (RNI/AI). East consumed nutrients compared to KDRIs were folate, potassium, calcium, vitamin $B_1$, vitamin $B_2$ and vitamin E. Subjects 232.8~363.1% of recommended intake level for natrium. The nutrient adequacy ratio (NAR) was 0.87 for subjects in their 80s and 0.79 for than 90 years old. The average NAR of all subjects was 0.83. The index of nutritional quality (INQ) exceeded 1 for most nutrients except for Ca (0.87), K (0.77), vitamin $B_1$ (0.84), vitamin $B_2$ (0.70) and folate (0.68). The average INQ was 1.31. This study concluded that even though long-lived men and women living in Jeollanam-do consumed less than RNIs, nutrition consumption quality was relatively fine based on NAR and INQ results.

강화지역 장수노인의 식습관 및 영양소섭취량 (Food Habits and Nutritional Status of the Long-Lived Elderly People in Ganghwa-gun Area)

  • This survey was carried out to obtain the information concerning nutritional status, including factors of food habits and nutrient intake of the long-lived elderly men and women living in Ganghwa-gun. In order to assess the quality of dietary intake among the elderly, a survey was conducted during December 2003 of 103 subjects who were over 85 years of age. Dietary nutrient intake data were obtained through the 24 hr recall method. Chi-square test and t-test were the main data analysis method. Their dietary habits such as three meals a day and a regular meal time have shown that they have generally good eating habits. Average daily calorie intake ($\%$ RDA) was 1233.2 kcal ($68.8\%$) for male and 1215.8 kcal ($75.8\%$) for female which were lower than the Recommended Dietary Allowances (RDA) for Koreans. Energy intake of females got closer to RDA than that of male. Protein intake was 49.3 g for male and 46.9 g for female (which was $82.3\%$ RDA for male and $85.1\%$ RDA for female) for elderly person, the proportion of animal protein to total protein intake were $45.2\%$ for male and $39.0\%$ for female. Average CPF ratio of energy intake for both male and female were 68.7 : 16.1 : 15.2 and 69.6 : 15.4 : 15.0. SFA : MUFA : PUFA ratio of the subject was 0.78 : 1.03 : 1.00 for male and 0.64 : 0.92 : 1.00 for female. Calcium intakes for both males and females were 321.3 mg and 377.2 mg. Vitamin A was the nutrient found to be least sufficient. Mean daily intakes of most of the vitamins and minerals for both males and females were lower than RDA except vitamin C and Zn for female, especially $\%$ RDAs of vitamin A, Ca for male and vitamin A for females were less than $50\%$ of RDA. In conclusion, long-lived elderly in Ganghwa areas did not consume enough nutrients quantitatively as well as qualitatively, especially Ca, Fe, vitamin A, vitamin $B_2$ and vitamin E. These results suggest that nutritional guidelines for older Koreans should focus on the maintenance of adequate energy intake. In addition, selection of foods with high protein and calcium, such as dairy food, should be emphasized, particularly in the long-lived elderly.

식이 섬유소 및 실크 펩타이드 보충이 영양소 섭취상태 , 체적지수 및 복부 비만에 미치는 영향에 관한 연구 (Study on Consequent Nutrient Intake Status , Body Mass Index , and Fat Distribution after Silk Amino Peptide and Dietary Fiber Supplementation)

  • This study is to investigate consequent nutrient intake status, influence of body mass index(BMI), and fat distribution on the silk amino peptide(SAP) and dietary fiber supplementation. During 2 months of this research (January to March, 2002), 45 women aged 20yr – 30yr (average age 24.6yr) were selected as subjects. Nutrient intake was investigated by questionnaire, 24-hr recall method. Antropometric assessments of the subjects were investigated by SBIA method(Segmental bioimpedance assay, In body 3.0). The results are as follows: mean body weight 57.7kg, mean body height 161.9cm mean BMI 22.0, and mean food habit score was 8.47. Defecation frequency was increased by dietary fiber supplementation. Frequency of pain during defecation was significantly decreased by dietary fiber supplementation (p<0.01). Feeling of residual feces was significantly improved by dietary fiber supplementation(p<0.001). Status of energy and carbohydrate intakes significantly decreased after dietary fiber supplementation(P<0.05). Body fat and WHR(waist hip ratio) significantly decreased after dietary fiber supplementation(P<0.001), and percent body fat was decreased by dietary fiber supplementation, significantly(P<0.05). Above results of this study show that dietary fiber-added routine diet improves defecation condition, and lessens body fat, percent body fat without losing body muscle. Especially, declination of abdominal fat and WHR were notable. That meant decreased risk factor.

Comparisons of food security, dietary behaviors and nutrient intakes between adult North Korean Refugees in South Korea and South Koreans

  • BACKGROUND/OBJECTIVES: North Korean refugees (NKRs) in South Korea are a unique population as they must adapt in a new country with similar cultural traits but different social, political, and economic systems, but little research has been conducted on diet and nutrition in this population. This study examined food security, dietary behaviors, and nutrient intakes among adult NKRs living in South Korea and compared them to those of South Koreans. SUBJECTS/METHODS: The subjects were 139 adult NKRs (25 men, 114 women) living in the Seoul metropolitan area, and 417 age- and sex- matched South Korean controls (SKCs; 75 men, 342 women) selected from the Korea National Health and Nutrition Examination Survey (KNHANES). Food security and dietary behaviors (meal skipping, eating-out, meals with family, nutrition education and counseling, and nutrition label knowledge and utilization) were obtained using self-administered questionnaires. Nutrient intakes were assessed by 24-hr recall. The statistical analysis was performed using IBM SPSS ver. 23.0. RESULTS: In South Korea, food security had improved over the previous 12 months, but remained significantly poorer for NKR women than SKC women. Meal skipping was three times more frequent than for SKCs and eating-out was rare. Average energy intake was 1,509 kcal for NKR men and 1,344 kcal for NKR women, which was lower than those of SKCs (2,412 kcal and 1,789 kcal, respectively). Significantly more NKRs (men 24.0%, women 21.9%) showed simultaneously deficient intake in energy, calcium, iron, vitamin A, and riboflavin than SKCs (men 2.7% (P = 0.003), women 7.0% (P < 0.001)). NKR women had a significantly higher index of nutrient quality (INQ) for some nutrients than SK women. CONCLUSIONS: This study reports significant differences in food security, dietary behaviors, and nutrient intakes between NKRs and SKCs. Generally, NKRs reported lower intakes despite improved food security, but relatively good INQs across nutrients. Further research is needed to understand processes of food choice and consumption among NKRs to provide appropriate support aimed at improving diets.

The Relationship of Dietary Heavy Metal Intake with Serum Trace Elements in College Women Living in Choong-Nam Area

  • The purpose of this study was to study the intake of heavy metals such af arsenic, lead and cobalt and the relationship of dietary heavy metals with serum iron, topper, and zinc, which play important roles in hematopoiesis, in healthy college women living in Choongnam Korea, where we have detected heavy metals (As, Pb, Co) in some marine products in previous studies. The nutritional status of the subjects (35 women) was evaluated by anthropometric measurements, 24-hr dietary recall for 3 days. And 3-day diets (by weighing method) and blood were collected to analyze As, Pb, Co, Fe, Cu, Zn, Hb, Hct, and MCHC. The mean age, height, weight, and BMI were 20 years, 158 cm, 55 kg and 22.42 kg/$m^2$, respectively. The mean daily energy intake was 85.85% of RDA for Koreans. The ratio of energy from carbohydrate, protein, and fat was 60 : 24 : 16. The mean daily intake of heavy metals (As, Pb, Co) was 1.77 mg/day, 75.21 $\mu$g/day and 21.12 $\mu$g/day. And the mean daily intake of iron, copper, and Zinc concentrations were 97, 68, and 92% of normal values. The mean serum heavy metals (As, Pb, Co) were 16.14 $\mu$g/dl, 4.32 $\mu\textrm{g}$/dl and 0.02 $\mu$g/dr, respectively Mean blood levels of Fe, Cu, Zn, Hb, Hct, and MCHC were at normal levels. Dietary heavy metals except Co were not significantly different from serum Fe, Cu, Zn and Hb, Hct, and MCHC. However, there was a tendency toward lower serum concentration of Fe, Hb, Hct, and MCHC in the subjects with higher heavy metals (As) intake. Among heavy metals, only dietary Co showed a significant negative correlation with Hb (p< 0.001) and Hct (p < 0.001).

가임기 여성의 주요 엽산급원식품 및 동 식품의 엽산함량 분석 (Major Foods for folate and Their Folate Contents of Korean Child-bearing Women)

  • In this study, we determined major foods and food groups which contributed to the intake of folate in korean child-bearing women. Folate content of the major foods was also analyzed. A total of 91 healthy women with childbearing potential participated. They were divided into one of three groups by age; A (15∼24 yrs), B(25∼34 yrs) and C (35∼49 yrs). Food consumption data of the subjects were obtained by the 24-hr recall method. The rate of contribution of each food to the total intake of dietary folate was determined. Seventy major foods for folate were selected from the 178 foods they consumed. Two sets of the 70 foods were collected from different markets. After extracting folates from the foods by heating with a HEPES-CHES buffer, the samples were treated with α-amylase, protease and folate intakes was Korean cabbage kimchi followed by laver, soybean sprout, rice, yolmu kimchi, eggs, lettuce, perilla leaves, sea mustard and radish root. Food items that contributed to folate intake were slightly different among the age groups. Although the folate content of Korean cabbage kimchi was 51.6 ㎍/100g, but due to the high amount of intake, it was ranked the first major food prviding folate. High folate foods containing over 100㎍/100g were laver, corn flakes, spinach, mungbean, sesame, quail's eggs, small radish kimchi, kidney beans, leeks and peanuts. However, based on the serving size, spinach, corn flakes, leeks, sweet potato, pepper leaves, quail's eggs, crown daisy, small radish kimchi and perilla leaves contributed above 50㎍ of folate per serving size.

대구지역 여대생의 식습관에 따른 영양소 섭취량과 체성분 분석 (Nutrient Intake and Body Composition Analysis according to Food Habits in College Females in Daegu Area)

  • The aim of this investigation was to assess the relationship between food habits and nutrient intake in college female students. Nutrient intakes of 149 female subjects aged 19.3 y were determined by using 24-hr recall. The questionnaire included general characteristics and food habits (frequency of breakfast and fast food intake). Body composition was determined by bioim- pedance analysis. Nutrient analysis was performed with Can pro software. Statistics were generated using SAS 9.3 (SAS Institute, Cary, NC). Mean intake of energy, fiber, calcium, potassium. vitamin $B_2$ and vitamin C by the subjects ware below KDRIs. The nutrients for which the largest proportion of subjects showed inadequate intakes (less than the RI or AI) were potassium, calcium, vitamin C and fiber. Subjects that consumed fast food ${\leq}6$ times showed significantly lower intakes of calcium, potassium, fiber, vitamin A, vitamin $B_6$ and vitamin C. Subjects who skipped breakfast more frequently showed significantly lower intakes of energy, carbohydrate, fiber, calcium, iron, potassium, vitamin $B_2$ and vitamin C than subjects who ate breakfast more frequently. This is strong evidence that higher intakes of nutrients such as potassium, fiber, and calcium are associated with increased frequency of eating breakfast or decreased frequency of eating fast food. Low calcium, fiber, and potassium intakes may thus lead to chronic diseases. Nutrition education can be an important facilitator for improving nutrient intakes.

규칙적인 운동습관이 여대생들의 주요 영양소 섭취실태 및 에너지 균형도에 미치는 영향 (The Effect of Regular Exercise on Nutritional Intakes and Energy Balance of College Women)

  • The purpose of this study was to investigate to the effect of regular exercise on nutrients intakes and energy balance related to food habit and nutrient knowledge of college women. This study was conducted from May to June in 2000. One hundred and forty female students made their three day dietary records by 24-hr recall method and one day activity record. The questionaires were designed to fine out food habit and nutrition knowledge status. The height. weight and blood pressure were measured and also body fat mass and lean body mass measurements were performed. The results obtained are summerized as follows. Average height and weight of E(exercise) group were found to be increased than those of NE(non-exercise) group. The percent of body fat and body fat mass(kg) in E group were slightly lower than those of NE group. Calorie intake of NE group was 1,664kca1 per day. This was composed of carbohydrate 60%kcal. protein 14%local and fat 24%local. Calorie, calcium, iron, vitamin A, vitamin B$_2$ and niacin intakes of NE group were lower than those of RDA and calorie intake of E group was 2.313kca1 per day. This was composed of carbohydrate 54%, protein 13% and fat 31%. Other nutrients such as iron, vitamin A, niacin and vitamin C were lower than those of RDA. Daily energy expenditure and physical activity of E group were 2,397.6$\pm$49.2kca1; 1,035.7 $\pm$36.5kcal, respectively and it was higher than those of NE group.

농촌 성인 남녀의 단백질 섭취 실태 및 급원과 식습관, 기호품과의 관계 (A Survey of Protein Nutrition of Rural Adults in Korea and A Correlation between Their Protein Nutrition and Their Food Habits)

  • The purpose of this study is to provide useful information which will aid in the promotion of nutritional policy in the Korean rural area which are derived from a survey of intake and source of protein in some Korean rural adults and the correlations between their protein nutrition and various nutrients, the uses of tobacco, alcohol, coffee, etc. The survey was conducted from July, 24 through July, 18, 1989. The healthy subjects were 45 males(average age 42.3, average BMI 22.1kg/m2) and 55 females (44 years, 21.2 kg/m2) residing in Sungjoo Kyun, Chulanam-Do, Korea. The subjects were examined for the anthropometric, food Intake and food habits. Their daily diets were measured by 24-hr recall method. The results can be summarized as follows : The daily mean protein intakes of male and female subjects were 9595 of RDA(66, 5g) (16. 7% of total food intake per day) and 102.3Bh of RDA(61g) (14.8% of total intake per day) respectively. The order of sources of animal protein in all subjects was fish(47.9%), meat(29.8%), milk (12%), and egg(10.3%). Among protein sources the intake frequencies of fork and chicken were higher than those of others. The protein nutrition of the subjects showed positive correlations with energy and fat, carbohydrate, fiber at the level of significance of 1%. The protein nutrition of the male subjects showed no correlation with age, BMI, uses of alcohol, coffee, medicine, but the plant protein nutrition showed a positive correlation with smoking and exercise(at 5%). And the protein nutrition of the male subjects showed no correlations with uses of tobacco, alcohol, coffee, medicine and their opinion of their present state of their health, but the age of the male subjects showed negative correlations with milk(at 1%) and egg(at 5%). In conclusion, the daily protein Intake was good and the main sources of animal protein were fishes in rural adults. The protein nutrition of the subjects showed a correlation with energy, fat, carbohydrate and in the case of female, milk and egg intakes showed the negative correlation with age.
