Effect of Non-oxidized and Oxidized Soybean Oil Supplemented with Two Levels of Antioxidant on Broiler Performance

  • A study was designed to determine the effects on broiler performance of two levels of antioxidant (ethoxyquin) in poultry rations containing two levels of oxidized and non-oxidized soybean oil. One hundred and eighty, day old broiler chicks were randomly divided into six experimental groups comprising thirty chicks on each treatment. Six experimental rations having 2% nonoxidized soybean oil, 2% and 3% oxidized soybean oil, all three supplemented with normal (125 g/t) or higher (175 g/t) level of ethoxyquin, were formulated for both starter (0-28 days) and finisher (29-42 days) phases. These rations were randomly fed to six experimental groups having 30 birds on each ration and three replicates on each treatment. Weight gain and feed conversion ratio (FCR) of chicks fed 2% non-oxidized and 2% oxidized soybean oil were statistically non-significant. Weight gain in groups fed 3% oxidized oil was significantly lower than non-oxidized group while FCR was significantly lower than both groups. Weight gain in the higher level ethoxyquin group was significantly better than lower level, while feed intake and FCR were statistically non-significant in both levels of ethoxyquin. Acid and Thiobarbituric Acid (TBA) values in the three groups differed significantly with the lower in non-oxidized group and highest in the 3% oxidized group. Higher level of ethoxyquin significantly lower acid and TBA values compared to lower level of ethoxyquin. Thus it can be concluded that oxidation of oil reduces its feeding value and that the addition of ethoxyquin is beneficial.

초산과 Trisodium phosphate로 처리한 닭고기의 소매점 판매 및 냉장동안 이화학적 변화 (Physicochemical Changes of Chicken Treated with Acetic Acid and Trisodium Phosphate for Retail and Refrigerated Storage)

  • 본 연구는 2.5-10% (w/v) trisodium phosphate (TSP) 및 0.5-2% (v/v)의 초산 용액에서 10분간 닭고기 (평균 500$\pm$30 g 중량) 다리의 표면을 침지한 다음 소매점(2$\pm$1。C) 및 4oC 냉장 동안 pH, thiobarbituric acid (TBA)가 및 육색에 미치는 영향을 분석한 결과이다. 2.5-10% TSP용액의 처리구는 처리 직후 대조구 보다 유의적으로 높은 pH 가를 나타내었으며 5-l0% TSP용액의 처리구는 저장 8일 까지 지속되었다 2.5-10%의 TSP용액의 처리구는 처리직후부터 저장 4일 까지 TBA가의 유의적 증가를 나타내었다. 0.5-2%초산용액의 처리구의 pH가는 처리직후 대조구보다 유의적 감소를 나타내었으며, 1.5-2%초산 처리구는 저장 16일 동안 지속되었다. 0.5-2%초산용액 처리구의 TBA가는 저장 4일 까지 대조구와 유의적 차이를 나타내었으며, 1.5-2%초산용액 처리구는 저장 8일 까지 지속되었다. 0.5-2%초산 용액 처리구의 Hunter color L$^+$ 가는 처리직후 대조구와 유의적 차이가 없었으며, 저장 4일과 12일에는 대조구와 유의적 차이를 나타내었다. 1-2%초산 용액 처리구의 Hunter color a$^+$가는 처리직후부터 저장 16일 동안 대조구와 유의적 차이가 있었다. 0.5-2%초산 용액 처리구의 Hunter color b$^+$ 가는 저장 4일에서 12일 동안 대조구와 유의적 차이가 없었었다.

Lard와 Corn oil이 Ethanol로 처리한 Mouse의 혈청 총 Cholesterol함량 및 간 Thiobarbituric acid치에 미치는 영향 (Effect of Lard and Corn oil on Serum total Cholesterol Content and Liver Thiobarbituric acid Value in Mice treated with Ethanol)

  • The study carried out to clarify the effects of lard and corn oil on serum total cholesterol content and liver thiobarbituric acid (TBA) value in ethanol (Et-OH) fed mice. Results obtained from the present study were a follows: 1. serum total cholesterol content was considerably increased by 25% Et-OH administration in mice. In case of 25% Et-OH plus Lard group and Lard group both group were also increased significantly to compare with normal value of mice but 25% Et-OH plus lard group was shown very higher value rather than that of Lard group and Lard group was found similar tendency to compare with the 25% Et-OH plus saline group except to after the 1 day. 2. serum total cholestrol content of 25% Et-OH plus Corn oil group and corn oil group were also increased significantly to compare with normal value, but the 25% Et-Oh plus Corn oil group slightly higher level than that of Corn oil group except to after the 3 days. 3. Lard group was also very similar tendency to compare with the corn oil group except to the 3 days. 4. liver TBA value was increased by 25% Et-OH fed mice. 25% Et-OH plus Lard group and Lard group were also increased significantly to compare with liver TBA value in normal mice, but 25% Et-OH plus Lard group was found higher value rather than that of lard group and 25% Et-OH group (Control). Lard group was similar to that of Control group except to after the 1 day. And 25% Et-OH plus Corn oil group was considerably increased rather than that of Control group, and liver TBA value of the above group was similar to that of 25% Et-OH plus Lard group except to after the 3 days. Corn oil group was shown lower value than that of lard group, but it was no significant.

  • 뽕나무가루 첨가 배지에서 배양한 느타리버섯균사체 배양물의 조추출물이 자유라다칼로 유도한 linloeic acid의 산화를 대조구에 비해 75.9% 감소시켰고, mouse liver microsome산화에서도 NADPH/Fe$^{++}$ system에서 64.3% 감소시켰다. 이와 같은 효과는 조추출물로부터 용매분획한 분획물의 단독 효과보다 우수하였다. 상황 및 동충하초버섯균사체 배양물의 조추출물도 느타리 버섯균사체 배양물의 조추출물과 효과가 유사하였지만 다소 낮았다.

  • Effects of powdered siho(bupleuri radix) on serum and liver lipid composition and antioxidative capacity were investigated in rat fed high oxidized fat. Sixty male Sprague-Dawley rats weighing 161.25$\pm$2.51g were blocked into four groups according to body weight and raised seven weeks with basal diet(normal group), basal diet and 10% oxidized fat(control group), basal diet, 10% oxidized fat and 2% powdered siho(2% powdered siho group) and basal diet, 10% oxidized fat and 3% powdered siho(3% powdered siho group). Feed intake, body weight gain and feed efficiency were not significantly different among oxidized fat diet groups. The values of total cholesterol and triglyceride in plasma and liver showed no significantly different(p>0.05) in the oxidized fat diet groups. Plasma HDL-cholesterol showed atendency to increase in powdered siho diet groups. The values of thiobarbituric acid in plasma and liver were lower in the powdered siho diet groups than control group. Plasma GOT and GPT activity showed a tendence to decrease in powdered siho groups. Liver glutathione peroxidase activity showed a tendence to increase in powdered siho diet groups. Thus, it seems that powdered siho had some antioxidative elements.

유자액 처리에 의한 고등어유와 필렛의 냉장 저장중 품질 특성 (Quality Characteristics of Citron Treated Mackerel Oil and Fillet during Refrigerated Storage)

  • 유자를 이용하여 등푸른생선인 고등어에 유자 자숙액 및 착즙액을 처리하여 냉장 보관하면서 기름을 추출한 고등어유와 고등어 필렛의 여러 가지 특성을 측정한 결과는 다음과 같다. 고등어 필렛를 냉장 보관하면서 25일간의 저장기간별 휘발성 염기질소와 TMA-N를 측정한 결과 유자액을 처리하지 않은 대조구에 비하여 1, 2% 처리구와 자숙액 처리구에서 유의적으로 낮게 나타났으며, 저장기간이 증가함에 따라 대조구는 유자액 처리구에 비하여 더욱 높게 나타났으며, 유자액 처리구중 특히 자숙액 처리구가 가장 낮게 나타났다. 고등어유의 과산화물가, 카르보닐가, 산가 및 TBA가를 측정한 결과 대조구에서 대체로 저장기간이 실험 시작 시에 비해 25일 후에는 급격히 증가하는데 비하여 유자액 처리구에서는 완만한 증가를 보였으며, 특히 자숙액 처리구에서 더욱 완만하게 나타나 다른 처리구에 비해 유의적으로 낮게 나타났다. 관능평가 결과에서도 전반적인 기호도에서 자숙액 처리구가 가장 높은 점수를 나타내 대조구와 2% 처리구에 비해 유의적인 차이를 나타냈으며, 1% 처리구에서도 높은 점수를 나타내 자숙액 처리구와 차이를 나타내지 않았다. 본 실험결과로 볼 때 간 고등어 제조 시 유자액 처리는 고등어의 산패를 감소시키고, 비린내를 완화하는데 효과적이며 특히 유자 자숙액 처리군이 좋은 결과를 나타냈으며, 유자 자숙액 대신 착즙액 처리 시 1% 용액을 사용하는 것이 바람직하다고 사료된다.

소자강기탕(蘇子降氣湯)과 가미소자강기탕(加味蘇子降氣湯)이 I형(型) 및 IV형(型) 알레르기 반응(反應)과 폐손상(肺損傷)에 미치는 영향(影響) (The effects of Sojagangkitang and Gamisojagangkitang on the Type I and IV hypersensitivities and on the experimental lung damage)

  • This study attempted to investigate the effects of Sojagangkitang and Gamisojagangkitang on the variation of lung thiobarbituric acid(TBA) value, tracheal glycoprotein, serum sodium ion$(Na^+)$ contents, serum potassium ion$(K^+)$ contents ; immediatly type allergy reaction, delayed type allergy reaction in rats and mice. The results were as follows: 1. Sojagangkitang and Gami-sojagangkitang revealed significant effect on immediatly type hypersensitivity responds to histamine. 2. Sojagangkitang and Gami-sojagangkitang revealed significant effect on delayed type hypersensitivity responds to picryl chloride. 3. Sojagangkitang and Gami-sojagangkitang revealed significant effect on delayed type hypersensitivity responds to SRBC, effect of Gami-sojagangkitang was outstanding. 4. Lung thiobarbituric acid(TBA) value was decreased with statistical significance. 5. Sojagangkitang and Gami-sojagangkitang revealed decreasing effect on Tracheal glycoprotein contents, effect of Gami-sojagangkitang was outstanding. 6. Sojagangkitang and Gami-sojagangkitang revealed decreasing effect on phenol red excretion of respiratory tract. 7. Viscosity of mucine solution was decreased in proportion to increasing dosage of the Sample. 8. Serum $Na^+$ contents was not recognized significance. 9. Sojagangkitang and Gami-sojagangkitang revealed decreasing effect on Serum $K^+$ contents, effect of Gami-sojagangkitang were outstanding. According to the above results, it seems that Sojagangkitang and Gami-sojagangkitang can be applied for asthma, chronic obstructive pulmonary diseases, allergic respiratory diseases.

  • The effects of dietary chitosan on lipid oxidation, fatty acid composition and blood profile of porks were investigated. A total 24 pigs(55$\pm$5kg) were fed a control diet (a commercial diet) or chitosan-supplemented diets (T1; 0.2% chitosan, T2; 0.4% chitosan, T3; 0.6% chitosan) for 6 weeks. After six weeks, pigs were slaughtered and bellies were collected from each treatment group. Samples were stored at 0$\pm$1$^{\circ}C$ for 14 days. The thiobarbituric acid reaction substance(TBARS) values of all the treatments increased until 7 days of storage. The fatty acid and crude fat composition of all the treatments were not changed during storage significantly. The total cholesterol and triglyceride in blood chemistry tend to lower chitosan supplemented groups then control group.

채취시기에 따른 고들빼기의 성분 조성과 산화방지활성 (Effect of collection time on the chemical composition and levels of thiobarbituric acid reactive substance of Godulbaegi (Youngia sonchifolia M.))

  • 본 연구에서는 식품으로서 활용범위가 점차 증가되고 있는 고들빼기 식품의 품질에 영향을 미칠 수 있는 여러 화학 성분과 기호성에 관계되는 특수성분을 조사하기 위하여 10월(A)과 12월(B) 2회에 걸쳐 채취시기별로 나누어 분석하였으며, 고들빼기에 함유된 항산화물질을 분석하여 가공식품으로 정착시키는데 필요한 기초 자료를 얻고자 하였다. 고들빼기의 채취 시기별 일반성분의 변화를 조사한 결과, 잎과 뿌리에서 채취 시기가 경과할수록 수분 함량과 조지방 함량은 공통적으로 감소하였으나, 섬유질, 단백질, 가용성무질소물 및 회분 함량은 증가하는 경향을 나타냈다. 무기질은 채취 시기가 경과할수록 잎의 Mg과 Na를 제외하고는 모든 시료에서 공통적으로 증가하는 경향이었다. Vit. C와 Niacin은 채취 시기가 경과할수록 잎과 뿌리 모두에서 공통적으로 감소하는 경향이었으나, Vit. $B_1$, $B_2$는 소량 증가하는 경향을 보였다. 고들빼기 잎과 뿌리의 주된 유기산은 구연산, 사과산 및 주석산이 검출되었고, 시기별로 성분함량의 차이는 보이지 않았다. 주요 구성아미노산은 잎과 뿌리 모두에서 isoleucine과 leucine이었고, 채취시기가 늦을수록 구성아미노산 함량은 증가하였다. 고들빼기의 잎과 뿌리에 함유된 유리당은 fructose, glucose, sucrose, maltose 등 4개의 당이 확인되었고 총 유리당 함량은 채취 시기가 늦을수록 증가하였다. Phenol화합물은 arbutin, catechin, chlorogenic acid, p-coumaric acid 등 4개의 성분이 확인 되었으며, 잎보다 뿌리 함량이 높은 것으로 나타났으며, 채취시기가 늦을수록 그 함량이 증가하는 것으로 나타났다. 고들빼기 항산화력은 잎보다 뿌리의 항산화력이 더 강한 것으로 나타났으며, 채취 시기가 늦을 수 록 더 강한 것으로 나타났다.

The Effects of Fatty Acid Composition and Storage Conditions on the Oxidative Stability of Various Vegetable Seed Oils

  • Vegetable seed oils (VSOs) have been extracted and used not only as ingredients in food and as sources of dietary lipids, but also as sources of nutraceuticals used to overcome the various oxidative stresses that contribute to the development of diseases, including cancer and other chronic conditions. The chemical compositions and oxidative stabilities of various VSOs were therefore investigated; samples were stored for 35 d, with each oil having been tested under $O_2$ exposure, sealed from $O_2$ exposure and sealed from $O_2$ exposure while containing $O_2$ scavengers. Oxidative stability was evaluated by peroxide value (POV), p-anisidine value (p-AnV), iodine value (IV), and thiobarbituric acid (TBA) value. Perilla seed and flaxseed oil were mostly composed of linolenic acid (45.5% and 59.7%, respectively), whereas pine seed oil was mostly composed of linoleic acid (48.3%). Meanwhile, camellia seed and olive oils contained 80% oleic acid, which correlated strongly with oxidative stability. The POV, p-AnV, and TBA values were the highest under $O_2$ exposure, and the lowest in the presence of $O_2$ scavengers. These results indicate that VOS oxidative stability depends not only on storage conditions, but on unsaturated fatty acid profiles as well.
