Organic Acids, Free Sugars, and Volatile Flavor Compounds by Type of Jerusalem Artichoke (돼지감자의 품종별 유기산, 유리당 및 휘발성 향기성분)

  • This study analyzed contents of organic acids, free sugars, and volatile flavor compounds by type of Jerusalem artichoke (Helianthus tuberosus L.). Organic acids in dried Jerusalem artichoke were mainly composed of malic acid, citric acid, and succinic acid. Sucrose, fructose, and glucose were the major sugar components of dried Jerusalem artichoke. Free sugars were more abundant in the white colored sample than in the purple colored sample. In contrast, purple colored sample contained more organic acids than the white colored one. Volatile compounds in Jerusalem artichoke were investigated using the solid-phase micro-extraction method of gas chromatography/mass spectrometry. A total of 117 volatile compounds were identified in Jerusalem artichoke, and chemical classification was as follows: 5 acids, 13 alcohols, 19 aldehydes, 12 hydrocarbons, 15 ketones, 8 miscellaneous, 27 pyrazines, and 18 terpenes in all samples. Terpene was the most abundant in Jerusalem artichoke, and ${\beta}$-bisabolene was the main component in terpenes. The second most common compound was aldehyde, and hexanal was the highest. Pyrazines were the most abundant in the roasted samples, and 2,5-dimethyl-3-ethylpyrazine was present at the highest level, followed by 2,5-dimethylpyrazine. Compared with purple samples, main compounds contained in white samples were aldehydes and hydrocarbons, whereas the major compounds in purple samples were terpenes and alcohols.

  • To elucidate the relationship of the quality of aromatic tobaccos to their chemical constituents, certain chemical components and leaf quality by price were compared among cured leaves produced under different soil moisture levels during growing season. As the soil moisture increased, plant height and the length and width of largest leaf increased. days to flower was shortened and total chlorophyll and carotenoid content of green leaf decreased. As the soil moisture increased, leaf quality was deteriorated. The content of nicotine, pet. ether ext. and total nitrogen increased with slight increment of nonvolatile organic acids and higher fatty acids, but ash content and pH of cured leaves decreased under high soil moisture content. Volatile organic acids such as 3-methyl pentanoic acid, the main compounds contributing to the aroma of oriental tobacco, and most volatile neutrals decreased conspicuously under high soil moisture. The content of pet. ether ext., volatile organic acids, volatile neutrals, ash and pH of cured leaves were found to be the appropriate factors for the quality evaluation of aromatic leaves grown under under different soil moisture.

Physicochemical Characteristics Based on Fining and Filtering of Muscat Bailey A Grape Wine (Muscat Bailey A 품종 포도주의 청징과 여과에 따른 이화학적 특성)

  • Since the domestic grape wine industry has been stagnant, the quality of Korean wine must be improved to compete with imported wines. For improving the quality of domestic wine up to 'unfined' or 'unfiltered' wine, this study investigated the possibility of producing 'unfined' or 'unfiltered' wine and their physicochemical characteristics. Muscat Bailey A as a domestic grape was selected to make wine. Prior to refining process after alcohol fermentation, the wine samples were divided into three specimens depending on the treatment of bentonite for clarification and filter (sample A treated with both bentonite and filter, sample B treated with bentonite only, and sample C treated without bentonite and filter). The physicochemical characteristics of each specimen after one week matureness were then investigated. Sample C showed highest values in total phenol and organic acid content among others. Samples B and C showed more stability in intensity, hue, and color. Although it is hard to compare domestic wine with imported wine, it may be possible to improve the quality of domestic wine and contribute to the development of the domestic wine industry when further studies are conducted on in-depth fermentation of wine and improvement of microbiological stability.

Alcohols and Volatile Organic Acids as Stimulants of Rhizomorph Production by Armillaria mellea (알코올 및 휘발성 유기산류가 뽕나무버섯의 균사속 생산에 미치는 영향)

  • To investigate symbiotic relationship of 'Chunma (Gastrodia elata) and the rhizomorph of Armillaria mellea, volatile organic acids and alcoholic compounds which were considered to be contained in Gastrodia elata were tested to determine stimulatory effects on rhizomorph growth on a chemically defined medium. Also, volatile organic acids were isolated from Gastrodia elata and analyzed by gas chromatography. The growth of rhizomorph was stimulated by the presence of alcohols and volatile organic acids, but acetic acid and methanol were ineffective. In the presence of valeric acid and ethanol, Armillaria mellea produced abundant rhizomorph at concentrations of 0.1 and 1%, respectively. Ethanol and valeric acid supplemented at regular intervals of 3 days as lower concentrations in the medium stimulated the growth of Armillaria mellea. The concentrations of ethanol and valeric acid as low at 0.01% added 3 days intervals for 15 days were more effective than initial concentrations of 0.1 and 1% in stimulating rhizomorph development of Armillaria mellea. Eight kinds of volatile organic acids were identified and quantified by gas chromatography. The major compounds were n-propionic, valeric, iso-carproic and caproic acids, and the minor compounds were iso-butyric, butyric, iso-valeric and hepatanoic acids. Valeric acid was the most abundant among them.

Non-Volatile Organic Acids, Mineral, Fatty Acids and Fiber Compositions in Dolsan Leaf Mustard (Brassica juncea) (돌산 갓의 비휘발성 유기산, 무기질, 지방산 및 섬유소 조성)

  • The compositions of non-volatile organic acids, mineral, fiber and fatty acids of leaf mustard were investigated. Non-volatile organic acid contents were higher in leaf than in leaf stalk. Of non-volatile organic acids assayed malic acid was the most abundant in both leaf (79.1 mg%) and leaf stalk (46.4mg%), followed by L-ascorbic, oxalic, citric and succinic acids. Mineral contents were also higher in leaf than in leaf stalk. Both leaf and leaf stalk contained calcium most, followed by magnesium, sodium, iron, zinc and copper. It has also been found that leaf mustard contains more iron than any other Cruciferous vegetables reported. The major fatty acid of total lipid was $\alpha$-linolenir acid (63.2% in leaf, 55.3% in leaf stalk). The ratios of polyun-saturated fatty acids to saturated fatty acids (P/S ratio) were 4.1 in leaf and 2.9 in leaf stalk. The content of pectic substances, in terms of alcohol-insoluble solid, of leaf was 9.4% which was 1.4-fold higher than that of leaf stalk. Of pectic substances, hot soluble pectins (HWSP) were present most and followed by sodium hexametaphosphate soluble (HXSP) and HCI soluble pectins (HSP). Total dietary fiber content of mustard leaf was 2.68% and in general, higher content of total dietary fiber than leaf had. Neutral detergent fiber content was higher than acid detergent fiber, and cellulose was higher than hemicellulose by 2.1-fold in leaf stalk.

Comparison of Physicochemical Characteristics of Traditional and Commercial Kochujang during Fermentation (재래식과 공장산 고추장의 이화학적 특성 비교)

  • Physicochemical characteristics of traditional kochujang fermented for 6 months and commercial kochujang were compared. Tested kochujang included 18 kinds of Sunchang kochujang prepared with glutinous rice, 10 kinds of Boeun kochujang prepared with barley and 17 kinds of Sachun kochujang prepared with wheat, and 10 kinds of commercial kochujang. Major free sugar was found to be glucose both in traditional and commercial kochujang. Fructose, maltose, and sucrose were also detected in small amounts. The contents of free sugars in traditional kochujang was approximately one fourth of those presented in commercial kochujang. Commercial kochujang showed the highest level of total free amino acids followed in decreasing order by Sachun, Sunchang, and Boeun kochujang. The most abundant free amino acid was serine in Sunchang kochujang and aspartic acid both in Boeun and Sachun kochujang. On the other hand, glutamic acid was the most abundant amino acid in commercial kochujang. Volatile organic acids in various kochujang were determined and acetic, propionic, butyric, and 3-methyl butanoic acids were found in traditional kochujang. However, 3-methyl butanoic arid was not found in commercial kochujang. The most abundant volatile acid was acetic acid in both tradtional and commercial kochujang. Analysis of non-volatile organic acids showed that large amounts of lactic, oxalic, and succinic acids were found in traditional and commercial kochujang. In addition to these, small amounts of itaconic, malic, malonic, and pyroglutamic acids were found in commercial kochujang.

Volatile Flavor Components in the Mashes of Takju Prepared Using Different Yeasts (효모종류를 달리한 탁주 술덧의 휘발성 향기성분)

  • In this study, we examined the volatile flavor components in the mashes of takju prepared using different yeasts such as Saccharomyces coreanus, S. ellipsoideus, S. carlsbergensis, S. cerevisiae (Baker's yeast), and S, rouxii by GC and GC-MS. Fourteen alcohols, 13 esters, 5 acids, 3 aldehydes, 7 amines, and 2 other compounds were identified in the mash after 6 days of fermentation. On day 6, the takju fermented by S. coreanus had the greatest variety of volatile flavor components. Fifteen flavor components, including ethanol, isobutyl alcohol, isoamyl alcohol, methyl pentanol, 1,3-butanediol, 3-methylthio-1-propanol, benzeneethanol, ethyl lactate, acetic acid, acetaldehyde, and 1,3-cyclohexane diamine, were typically detected in all the treatments. The relative peak areas of the volatile components were as follows: alcohols (96.758-99.387%), esters (0.081-0.968%), acids (0.040-0.640%), aldehydes (0.266-0.959%), and amines (0.011-0.047%). In particular, 1-propanol, isobutyl alcohol, 3-methyl-1-butanol, 2,3-butanediol, trimethyl benzylalcohol, heptene-2,4-diol, ethyl lactate, diethyl succinate, ethyl nonanoate, methyl hexadecanoate, linoleic acid, hexadecanoic acid, and acetaldehyde were hish in the takju made by S. coreanus. Also, ethyl stearate was high in the takju made by S. carlsbergensis, and hexanoic acid was high in the takju made by S. cerevisiae. Finally, methyl pentanol, 1,3-butanediol, 3-methylthio-1-propanol, benzene ethanol, ethyl octadecanoate, acetic acid, pentanal, and 1,3-cyclohexane diamine were high in the takju made by S. rouxii.

Volatile Organic Compounds Production from Aerobic Biotreatment of Dairy Wastewater by a Sequencing Batch Reactor (연속회분식반응기(SBR)에 의한 낙농폐수의 호기성처리에서 휘발성유기물질 발생)

  • Aerobic sequencing batch reactor (SBR) was used to treat screened dairy wastewaters. The study examined the production of volatile organic compounds (VOCs) and volatile fatty acids (VFAs) in the aerobic SBR and raw manure effluent storage over 35 days. The reduction of total VFAs in the aerobic SBR was over $59\%$ removal than that of the raw manure. Acetic acid production in the aerobic SBR and the raw manure effluent storage were kept 138 and 286 mg/L. The propionic acid in the aerobic SBR was 1.9 mg/L, while the raw manure effluent storage was 68 mg/L, respectively. The concentrations of VOCs in the aerobic SBR reactor and effluent fill down remarkably than the raw manure storage. The results confirmed that the aerobic biological treatment is an essential requirement for minimizing odor problems.
