Estimation of Environmental Effect and Genetic Parameters for The Carcass Traits in Hanwoo (Korean Cattle) (한우 도체형질의 환경효과 및 유전모수의 추정)

  • This study aims to estimate the genetic parameters for carcass traits on Hanwoo of breeding farmhouses using Animal Products Grading Service’s data of 428,812 cattle from 101 slaughterhouses nationwide from 2000 to 2005. Using carcass traits of carcass weight, eye muscle area, backfat thickness, marbling score, meat color and fat color that greatly influence Hanwoo's grade, the effects of carcass year, carcass season, sex and carcass region were estimated. Based upon carcass traits of carcass weight, eye muscle area, backfat thickness, marbling score and meat color that greatly influence Hanwoo’s grade, the heritabilities and genetic parameters were estimated of 17,578 Hanwoo slaughtered in 2005 with existing herdbook, where EM-REML algorithm was used in estimating genetic parameters. The mean and standard deviation of each carcass trait are 321.42±53.62kg, 76.25±10.43cm2, 9.96± 4.14mm, 3.75±2.00, 4.83±0.48 and 2.99±0.40, for carcass weight, eye muscle area, backfat thickness, marbling score, meat color and fat color, respectively. As a result of analysis on the effects of carcass year, the carcass weight, backfat thickness and meat color came out highest as 359.40±0.181, 9.82±0.017 and 4.90±0.002, respectively in 2004. As a result of analysis on the effects of carcass season, the carcass weight and eye muscle area came out highest as 345.88±0.144 and 79.57±0.033 respectively in spring, and the backfat thickness was highest as 8.78±0.013 in winter, and the meat color and fat color slightly came out higher as 4.88±0.002 and 2.96±0.001 in fall, while the marbling score was highest as 3.29±0.006 in summer. The results of the analysis on the effects of sex indicated that the backfat thickness and fat color were highest as 10.53±0.010 and 3.07±0.001 in cow, the carcass weight came out highest in Hanwoo steer as 368.03±0.068kg, the eye muscle area were highest as 82.96±0.042 in bull, and the marbling score was highest as 4.19±0.007 in steer, and the meat color was highest as 4.89±0.001 in cow.   • This study was conducted to identify the characteristics and estimate the genetic parameters of average daily gain (ADG) and carcass traits of Hanwoo. The data used in this study were 4,681 heads which were performance-tested and 4,442 heads which were progeny-tested in test station of National Agricultural Cooperative Federation. The means and standard deviations of ADG between 6~9 months (ADG:6-9), ADG between 9~12 (ADG:9-12) and ADG between 6~12 (ADG:6-12) from the performance test were $1.04{\pm}0.16$, $1.11{\pm}0.17$ and $1.07{\pm}0.11$, respectively. The phenotypic correlations of ADG:6-9 and ADG:9-12, ADG:6-9 and ADG:6-12, ADG:9-12 and ADG:6-12 were -0.03, 0.66 and 0.65, respectively. The phenotypic correlations of ADG:6-12 with carcass weight (CW), eye muscle area (EMA), backfat thickness (BF), and marbling score (MS) from progeny test were 0.446, 0.199, 0.0266 and 0.045, respectively. Estimated heritabilities from the pooled data were 0.251 (ADG:6-12), 0.298 (CW), 0.424 (EMA), 0.503 (BF) and 0.626 (MS), respectively. Estimated genetic correlations of ADG:6-12 with CW, EMA, BF, MS were 0.606, 0.292, -0.095 and -0.007, respectively. From these results, it could be suggested that selection for ADG significantly affects CW, EMA and BF by correlated response to selection.

Correlation Analyses on Growth Traits, Body Size Traits and Carcass Traits in Hanwoo Steers (한우 후대검정우 체중, 체척 및 도체형질간 상관분석)

  • This study was conducted to estimate correlation structure between Hanwoo steer growth traits - body weights at 6 month, 12 month, 18 month and 24 month of age, average daily gain, carcass traits, body size traits at 18 months of age. Hanwoo progeny test data(body weight, body size traits) collected from 2004 to 2008 on a total of 1,838 steers at Hanwoo Improvement Main Center(NACF) were analyzed. Carcass traits were used to score the 24 months of age and slaughter. Correlation analyses were performed with observed scales of the traits and with residuals considering fixed effects in generalized linear models. The correlated coefficient estimated between live weight at slaughter(24 months of age) and cold carcass weight was high at 0.92. Correlation between beef yield index values and backfat thickness was estimated to be high and negative at -0.92. Hip height and wither height was found to be highly correlated(0.89). Chest width and chest depth also was found to be highly correlated at 0.73. Rump width was highly correlated with chest depth(0.75) and chest width(0.74). Correlation between pelvic width and rump width was estimated to be 0.74. Hipbone width was shown to be highly correlated with chest depth(0.73), chest width(0.70), rump width(0.75), or pelvic width(0.75). Correlation between wither height and carcass weight was 0.48 in observed scale. Chest girth was phenotyically (residual correlation) correlated with carcass weight (0.51), the estimates of which were some higher than than with the other carcass traits. This study will be utilized for Hanwoo Steers genetic evaluation.

  • By direct sequencing of 12 STS marker, we identified 10 polymorphic SNPs. As a result of genotype frequency analysis between 10 polymorphic SNPs and extreme population (n=20) for marbling score in Hanwoo (n=233), there was over 40 percent of frequency difference of HWSNP_1-1 and HWSNP_9-4 SNP. HWSNP_1-1 SNP was significantly associated with marbling score in large-scale population (n=233). Therefore we suggested that HWSNP_1-1 SNP can be useful as a positional candidate for beef quality for marker-assisted selection in Hanwoo.

  • This study was conducted to investigate the genetic correlations among the traits used to select young bulls and proven bulls in Hanwoo Performance and Progeny Test Program in Korea. For the estimation of heritabilities and correlations among the growth traits of bulls and carcass traits of progeny steers, 2,532 records of performance tested bull calves and 1,819 records of progeny tested steers were collected from Livestock Improvement Main Center (LIMC), National Agricultural Cooperative Federation (NACF). Fixed effects of mixed model for each traits were selected by using stepwise regression analysis and prior values of variance components were estimated by MTDFREML. The prior values of variance components were estimated with pairwise 2 traits model followed by single trait analysis. The estimated heritability of backfat thickness(BF), dressing percentage(DP), loin-eye muscle area(LMA), marbling score(MS) and weight at 12 months(WT12) was 0.51, 0.32, 0.27, 0.33, 0.50 and 0.26, respectively. Genetic correlation of WT12 of bull calves with backfat thickness, carcass weight and loin-eye muscle area of steers was positive correlation as 0.05, 0.35 and 0.21, respectively. However genetic correlation of WT12 with DP and MS showed negative correlation as 󰠏0.09 and 󰠏0.27, respectively and these negative genetic correlations implies that bulls that may be superior in carcass traits can be lost at the first step of selection and current selection method should be modified to solve this problem.

  • Inositol 1,4,5-triphosphate receptor type 1 (IP3R1) is a $Ca^{2+}$ release channel that responds to the second messenger IP3 and that modulates diverse cellular functions such as contraction/excitation, secretion, gene expression and cellular growth. We discovered single nucleotide polymorphisms (SNPs) within IP3R1 gene and analyzed associations between gene polymorphisms and carcass traits in Korean cattle (Hanwoo) in order to develop novel DNA markers at genomic level. Three SNPs were detected at the position of g.1428617A>G, g.1418843C>T and g.1414377C>T with 24 unrelated Hanwoo samples by direct sequencing of the PCR products. We found that genotype of g.1414377C>T SNP was associated with live weight (P<0.05) and carcass weight (P<0.01) using the general linear model of SAS package. These results suggest that polymorphism of IP3R1 gene was associated with weight-related traits in Hanwoo.

Estimates of Genetic Parameter for Carcass Traits and Chemical Composition Analysis in Hanwoo (한우 도체형질 및 도체 일반성분 유전모수 추정)

  • The objective of this study is to check the applicability of the improved trait through the nutritional value of loin and the estimation of genetic parameter through the chemical composition analysis(moisture, crude fat, crude protein, crude ash) for Hanwoo carcass traits and loin. The data of 1kg of loin sampled and analyzed for 2,033 Hanwoo progeny test(steers) from $47^{th}$ to $57^{th}$ were used as the disclosure material used in this study. The study resulted that the heritability for carcass weight, eye muscle area, back fat thickness and marbling score which are Hanwoo carcass traits was estimated to be 0.37, 0.51, 0.44 and 0.57, respectively and the heritability for moisture, crude fat, crude protein and crude ash which are the chemical composition analysis to be 0.62, 0.64, 0.58 and 0.12, respectively. And the genetic correlation estimate between carcass weight and crude fat was 0.35, and marbling score with moisture, crude fat, crude protein and crude ash was -0.966, 0.964, -0.924 and -0.664, respectively. The genetic correlation between moisture and crude fat, crude protein was analyzed to be -0.998, 0.969 and a high genetic correlation was shown in crude fat and crude protein, -0.979. As the chemical composition analysis value showed high heritability in moisture, crude fat and crude protein, improved traits are considered to be available.

  • Hanwoo has improved the quality of carcass traits. Especially, the higher the grade, the better the texture and taste of Hanwoo. One of the many factors that determine consumer preferences in food is the flavor. The flavor of food is expressed through heat treatment, and fat, carbohydrate and water-soluble compound are important ingredients for flavor. Therefore, The purpose of this study was to investigate the characteristics of fatty acids and carcass traits of 373 Hanwoos. The oleic acid (C18:1) and linolenic acid (C18:3) contents were 48.08% and 0.11%, respectively, while the carcass weight, Eye muscle area, back fat thickness and marbling score of the carcass trait were 383.73 kg, 83.88 ㎠, 10.91 mm, 3.89, respectively. The heritability of oleic acid was estimated to be 0.726, and the phenotypic correlation between eye muscle area and marbling score was estimated to be 0.105 and 0.141, respectively. The phenotype of the marbling score and eye muscle area were positively correlated with Oleic acid. Therefore, the improvement of these two traits seems to affect the increase of unsaturated fatty acid content.

Studies on Genetic Parameter Estimation and Sire Selection to Ultrasound Measurement Traits of Hanwoo (한우 초음파생체단층촬영 형질에 대한 유전모수 추정과 씨수소 선발에 관한 연구)

  • This study is conducted to use the real-time ultrasound measurement data of Hanwoo as basic data being available to improvement. We used the ultrasound measurement data of 1,125 heads of performance tested cattle and the carcass data after castrating at about 12 months of age, fattened to 30 months, and then sold. For 921 heads of progeny tested cattle, we used test data and slaughter data. Heritabilities of ultrasound data for longissimus muscle area and backfat thickness measured at 12 months of age were estimated as 0.57 and- 0.41, respectively, and at 24 months of age, it was 0.57 and- 0.60, respectively, with high heritability. However, in estimation value of heritability containing ultrasound measurement for percent intramuscular fat, it showed low and medium heritability as 0.14 at 12 months of age and 0.22 at 24 months of age for each. The longissimus muscle area, backfat thickness, and percent intramuscular fat of ultrasound measure traits and longissimus muscle area, backfat thickness, marbling score of carcass traits genetic correlation of at 12 months of age were estimated as 0.616, 0.544, 0.501, respectively and at 24 months of age, it showed high genetic correlation as 0.894, 0.937, 0.263, respectively. As a result of ranking correlation between selection index by using weight, carcass traits at 12 months of age and selection index based on ultrasound measurement data which has high genetic correlation, in data of ultrasound measurement at 12 months of age, it showed high ranking correlation as that selection index of young bull was 0.140 and that of proven bull was 0.843.

Correlation Analyses on Body Size Traits, Carcass Traits and Primal Cuts in Hanwoo Steers (한우 후대검정우 체척, 도체형질 및 부분육간 상관분석)

  • This study was conducted to estimate the correlation structure between body size traits, carcass traits, and primal cuts in Hanwoo steers. Hanwoo progeny test data (body weight and body measurements) were collected from 2008 to 2010 from a total of 882 steers at the Hanwoo Improvement Main Center (NACF). Carcass traits considered were cold carcass weight, eye muscle area, backfat thickness, and marbling scores evaluated at the time of carcass grading. Correlation analyses were performed with observed scales of the traits and with residuals considering fixed environmental effects in generalized linear models. The correlation coefficient estimated between loin weight and chest girth was high at 0.74. The shank negatively correlated with pelvic width (-0.23) and hipbone width (-0.27). In addition, rib weight and chest girth was highly correlated (0.80). The correlation between carcass weight and chest girth was 0.86 in observed scale. Residual correlation between these traits was estimated at 0.65. Correlation between carcass weight and loin was 0.87 in the observed scale. Residual correlation was estimated at 0.83. The correlation coefficient estimated between shank weight and brisket and flank weight was negative at -0.69. Chest girth had a high correlation between primal cuts weight and body measurements. Thus, we believe that these results will provide a greater understanding on the relationship of primal cuts and other phenotypes, thus enabling valid production models for Hanwoo steers.
