The aim of this study was to analyse the quality of Yukwa puffed by using a vacuum puffing machine and compare to deep-fried Yukwa. The effect of vacuum puffing condition including heating temperature(100-${160^{\circ}C}$), preheating time(0-8 min) and vacuum puffing time(5-20 min) on physical and microstructure characteristics of the Yukwa was investigated. Vacuum puffed Yukwa at ${100^{\circ}C}$ heating temperature, 6 min preheating time and 10 min puffing time had highest value in volumetric expansion ratio(10.04) and lowest value in bulk density(0.15 g/$cm^{3}$). The breaking strength showed the lowest value of 140 g/$cm^{3}$ in vacuum puffing Yukwa at ${100^{\circ}C}$ heating temperature, 6 min preheating time and 15 min puffing time. The Yukwa puffed with the vacuum puffing machine at ${100^{\circ}C}$ heating temperature, 6 min preheating time and 15 min puffing time had the higher value of bulk density and the lower value of volumetric expansion ratio than those of deep-fried Yukwa. Increasing preheating time and vacuum puffing time caused an increase in white and an decrease in yellowness. The vacuum-puffed Yukwa exhibited smaller and uniform cell structure, while deep-fried Yukwa exhibited apparently in larger pores inside and smaller pores near the surface layer. The optimum condition of vacuum puffing machine for the production of vacuum-puffing Yukwa was ${120^{\circ}C}$ heating temperature, 4 min preheating time and 5 min puffing time.
Steam cakes were prepared with the addition of pine needle powder(Pinus densiflora Seib. et Zucc) at 0%, 1%, 2%, 3%, 4%, and their sensory quality and mechanical characteristics were compared. Sensory evaluation was performed and compared between the subjects in twenties and forties of age. As a result of the sensory evaluation in forties, steam cake with 3% pine needle powder showed the highest score in overall acceptability; however, in the group of twenties, control cake with no pine needle powder showed the highest score. In the measurement of color changes, L value(lightness) was decreased, but a value(redness) and b value(yellowness) were increased as the addition of pine needle powder increased. In textural characteristics, the hardness, springiness, gumminess and brittleness of steam cake were decreased by the increase of pine needle powder. The hardness and brittleness were increased as the storage time increased.

The properties of non-GM soybeans with lipoxygenase (LOX) free genotypes, such as Gaechuck#1 (black, LOX2,3-free), Gaechuck#2 (yellow, LOX2,3-free) and Jinyangkong (yellow, LOX1,2,3-free), were compared to Taekwangkong (yellow, LOX1,2,3-present) as control. Length and weight of soybeans were significantly longer in Gaechuck#1, but LOX free genotypes of yellow beans was smaller than Taekwangkong, in terms the size and weight. After soaking for 12 hr, increased ratios of soybean weight were 217.07~226.55%, and they were significantly higher in Gaechuck#2. The total color difference (${\Delta}E$) to Taekwangkong was the highest in Gaechuck#1, but another yellow soybean were similar. Crude lipids content was significantly higher in Taekwangkong (17.30%), and these LOX free genotypes (13.71~14.66%) did not show significant difference. Crude protein contents were significantly higher in Gaechuck#1 (34.79%) compared to the other soybeans (32.93~33.47%). Contents of glutamic acid among the detected composition amino acid were highest, and its total contents were highest in Gaechuck#1 (32.42 g/100 g), and the total content of Gaechuck#2 was similar to Taekwangkong. Contents of total isoflavone were higher in LOX free genotypes than Taekwangkong, especially significantly higher in Gaechuck#1 (1672.54 ${\mu}g/g$). Contents of total phenol were highest in Gaechuck#1 (276.91 mg/100 g), and flavonoids content of Gaechuck#1 (26.93 mg/100 g) was 2.6~2.8 times higher than the other samples. DPPH, ABTS radical scavenging activities and reducing power were significantly higher in Gaechuck#1. The yield of soybean curd from tested samples was the highest in Gaechuck#2. Gaechuck#2 as LOX free genotypes was similar to Taekwangkong with regard to physicochemical properties and antioxidant activities. Therefore, we propose that Gaechuck#2 is a more suitable genotype for soybean curd products.

Purpose: Xanthomatosis of the Achilles tendons is rare. In some patients, however, the lesions in the Achilles tendon need to be removed, which may be painful and disfiguring. While studies of successful surgical outcomes for the total resection and reconstruction of the Achilles tendon have been reported, reconstruction surgery has a technical challenge, and extended surgical exposures are required. This study analyzed five cases of bilateral xanthoma of the Achilles tendon, which was treated surgically using a wedge-shaped tendon-sparing approach to eliminate the need for tendon reconstruction. Materials and Methods: From July 2010 to May 2018, five patients with xanthomatosis in both Achilles tendons underwent wedge-shaped tendon preserving surgery. The average age was 49 years (range, 40-55 years), and the follow-up period was 21.4 months (range, 12-31 months). The patients consisted of three males and two females. Complications related to surgery were recorded. The outcome measures included the range of motion of the ankle joint, American Orthopaedic Foot and ankle Society (AOFAS) ankle/hindfoot score, and visual analogue scale (VAS) for overall satisfaction at the last follow-up. The availability of a single-limb heel raise and returning time to work were also measured. Results: Wound dehiscence that did not require secondary surgery was noted in one patient. At the last follow-up, the range of motion of the ankle joint was normal in all patients. The mean AOFAS ankle/hindfoot score was 91 (range, 85-96) and the VAS for the overall satisfaction ranged from 8 to 10. The average time between surgery and return to work was 27.6 days (range, 17-58 days) and all patients could perform a single-limb heel raise test. Conclusion: The tendon-sparing technique, which can preserve the anatomical functioning of the Achilles tendon, could be an excellent surgical approach because it has very promising functional and cosmetic surgical outcomes in patients with Achilles tendon xanthomatosis.

To control populations of the chestnut weevil, Curculio sikkimensis Heller, the effects of various immersion temperatures and times on the chestnut weevil were tested. The effects of immersion treatments on chestnut fruits were also analyzed. The mortality levels of C. sikkimensis larvae were evaluated at various temperatures ($30^{\circ}C$, $35^{\circ}C$, $40^{\circ}C$, $45^{\circ}C$, and $50^{\circ}C$) and time intervals (1, 2, 3, 5, 7, 10, 15, 22, and 24 h). Changes in the chestnut fruit due to the immersion treatment were measured in terms of color (lightness, redness, and yellowness), physiological effects (germination rate and decay rate), hardness, and change in constituent properties (moisture content, free sugar content, and tannin content). Mortality levels of C. sikkimensis larvae after immersion treatment at $30^{\circ}C$ were over 70% and 100% after 2 h and 7 h, respectively. Color (lightness, redness, and yellowness) of the chestnut fruits was not significantly different at $30^{\circ}C$ and $35^{\circ}C;$ however, the color was affected at temperatures over $40^{\circ}C$. The germination rate of the fruit was not affected by the immersion treatments, but the decay rate at $40^{\circ}C$ increased with an increase in immersion time. The hardness of the fruits decreased with an increase in immersion times and temperatures. These results can be used in the future for developing methods for the control of chestnut weevil populations.

현재 참외는 생산량의 대부분이 생과로 소비되고 있으나, 저장성이 낮아 새로운 가공식품 개발이 요구되고 있는 실정이다. 이에 참외식초/참외농축액을 함유하는 참외농축음료를 제조하였으며, 유통기간 동안 품질변화를 알아보기 위해 저장온도 및 저장시간에 따른 품질변화를 조사하였다. 배합조건에 따라 배합한 참외농축음료를 8$0^{\circ}C$에서 30분간 살균한 후 저장온도 및 시간에 따른 품질변화 및 관능적 특성변화를 모니터링하였다. 저장온도(20, 30, 40, 50, 6$0^{\circ}C$) 및 저장시간(0, 2, 4, 5, 8 week)을 독립변수(Xi.)로 하여 달리한 각 실험조건을 -2, -1, 0, 1, 2의 다신 단계로 부호화하고 실험조건을 설계한 다음 각 조건에서 저장된 참외음료의 품질특성(종속변수, Yn)을 모니터링하였다. 관능검사는 선정된 패널요원을 대상으로 4$^{\circ}C$에서 저장한 대조구와의 색상, 향, 맛 및 전반적인 기호도가 어떻게 달라지는가를 평가하였으며, 색도 및 갈색도를 측정하였다. 또한 제조된 참외 농축 음료를 저장하면서 미생물의 생육유무를 확인하기 위해 Petrifilm을 사용하여 미생물의 유무를 확인하였다. 참외식초/참외농축액을 이용한 참외농축음료를 제조하여 음료의 저장온도 및 저장시간에 따른 관능적인 특성 및 품질 특성을 모니터링하면서 저장성 실험을 통해 저장안전성을 평가한 결과 저장시간 및 저장온도에 따른 관능적인 색상은 1.6~4.0의 값을 나타내었으며, 향은 2.3~4.0의 값을 나타내었으며, 맛은 1.8~4.0의 값을, 전반적인 기호도는 2.1~4.0의 감을 나타내는 것으로 나타났다. 이화학적 품질 검사 결과, 색도L(백색도)값은 21.79~87.23, 색도 a(적색도)값은 -1.27~35.79의 값을 나타내었으며, 색도 b(황색도)값은 16.57~18.89의 값을 나타내었다. 갈색도는 0.386~3.214의 값을 나타내었으며, PH는 4.02~4.24의 값을 나타내었다. 일반미생물은 검사 결과 모든 조건에서 검출되지 않았다. 참외농축음료를 8$0^{\circ}C$에서 30분간 살균하여 미생물학적 품질 검사 결과 저장온도 및 저장시간에 따라 미생물이 검출되지 않았으며, 유통하기에 적합한 음료가 제조됨을 검증할 수 있었다.
This study was carried out to investigate the effect of vinegar on pH, total bacterial count, texture and color of rice with vinegar before and after storage at $4^{\circ}C$ and $25^{\circ}C$. This results obtained were summarized as follows : The pH value and total bacterial counts were not significant changed under different storage conditions with sushi vinegar, but control without sushi vinegar was increased the number of bacteria from storage 1 days. and When rice with vinegar was stored at low temperature ($4^{\circ}C$), the tendency of textural changes such as hardness, springiness, cohesiveness, chewiness, brittleness and adhesiveness was almost the same as those of $25^{\circ}C$. However, the rate of change was much higher in rice with vinegar when stored at $4^{\circ}C$ than at $25^{\circ}C$. and The Hunter's color parameters such as L, a, and b, of rice with vinegar were not changed much during storage at both $25^{\circ}C$. However, L value was slightly increased during storage, but a value was increased negatively without changing b value of rice with vinegar during storage at $4^{\circ}C$.
In order to investigate effects of dyeing conditions on the dyeing characteristics in silk during natural dyeing using indigo plants , various dyeing conditions including the temperature of dyeing solution, dyeing period, the concentration and pH of dyeing solution and mordants were treated. As the temperature of dyeing solution decreases low, the color of silk surface showed lower b value. The color of silk surface showed G line when the dyeing solution was $-5^{\circ}C$ and room temperature and GY line at more than $40^{\circ}C$. Coloring degree increased high as the temperature increases. Dyeing period showed no effect on the surface color, but as dyeing period was longer the coloring degree increased. When the concentration of dyeing solution was $1\~4\%$, the silk was colored to BG line and $5\%$ to B line. The coloring degree increased as the concentration of dyeing solution more increased. The pH of dyeing solution sensitively affected coloring of silk. The pH lower than 7 showed G line, pH 8 showed GY line and pH 9 showed YR line. Coloring degree decreased as pH was more increases. Surface color of silk was different according to the kinds of natural mordants and coloring degree was increased by the natural mordants.
Inadequate food handling and poor hand hygiene playa major role in the occurrence of foodborne diseases. The objective of this study was to find out if the level of microbial contamination on the hands of food preparers varies by time during their working period. This study focused on the contamination of aerobic plate count, total and fecal coliforms, Escherichia coli, Staphylococcus aureus, and Salmonella spp. Sampling from left hand and right hand of twenty food preparers was done with glove-juice method at every two hours during their work. Microbiological testing was conducted according to the Food Code of Korea. The microbiological load on the hands was changed over time. Samples taken from their hands before work and at 8 hours showed higher levels of bacteria than those taken at 2, 4, and 6 hours during work and/or after work (p < 0.05). The contamination levels of microorganisms were consistently higher in right hand than in left hand. Poor hand hygiene practices were indicated by the positive results for total and fecal coli forms, E. coli, S. aureus, and Salmonella spp. on the hands of some food preparers. This study indicates food preparers' hands can be a vehicle of pathogen during their work. The results of this study emphasize the importance of hand hygiene education and training targeting the food preparers.
This study was perfomed to evaluate the shelf-life, physicochemical, sensory evaluation of rice cake and noodle mixed with Bakjakyak(Paeonia japonica) powder at different ratio. Moisture content decreased gently during storage and the decrease was less in Bakjakyak powder-added groups than the control group. The color L value decreased significantly by with increasing the Bakjakyak powder and increased during storage. Color a and b value incresed significantly by addition of Bakjakyak powder. In the total plate count, Bakjakyak powder-added group showed less growth of microorganisms compared to the control group. As a result of the sensory evaluation, rice cake and noodle with Bakjakyak were superior in color, flavor, taste, cohesiveness and overall quality than that of control group. The 3%-added group was most superior in terms of color and the 1% added group gained the highest grade in terms of flavor, taste, overall quality. The results suggested that Bakjakyak was effective in increasing the shelf-life and retarding the staling of rice cake and noodle.
