Comparison of Food Component between Conger eel (Conger myriaster) and Sea eel (Muraenesox cinereus) as a Sliced Raw Fish Meat (생선회로서 붕장어 (Conger myriaster) 및 갯장어 (Muraenesox cinereus)의 식품성분 비교)

  • In Korea, the conger eel, Conger myriaster and sea eel, Muraenesox cinereus have been eaten as a sliced raw ash meat for a long time. This study was carried out to compare the food component and sensory differences of the conger eel and sea eel as a sliced raw fish meat. The yield and ash content of conger eel were slightly higher than those of sea eel, and no significant differences in moisture, crude protein and crude lipid. The major fatty acids of conger eel were 16:0 ($19.9\%$), 18 : 1n-9 ($36.1\%$) and 22: 6n-3 ($8.3\%$), while those of sea eel were 16:0 ($24.0\%$), 16: 1n-7 ($12.1\%$) and 18:1n-9 ($21.9\%$), The contents of (n-3)-fatty acids were low in all of the two samples. The contents of total amino acid in the conger eel and sea eel were 19,147.2 mg/100 g and 18,527.1 mg/100 g, respectively. The major amino acids of two samples were aspartic acid, glutamic acid and lysine. The chemical score in protein of conger eel was higher about $6\%$ than that of sea eel, and the Ca and P contents of conger eel were also higher than those of sea eel. Although the nutritional value of conger eel as a sliced raw fish meat was generally higher than that of sea eel, the sensory scores in taste and texture of conger eel were lower than those of sea eel.

Preparation of Instant Powdered Soup using Canned Oyster Processing Waste Water and Its Characteristics (굴통조림 부산액을 이용한 인스턴트 분말수프의 제조 및 특성)

  • To utilize canned oyster processing waste water effectively, this study was carried out to prepare instant powdered soup using the waste water (IPSW), Instant powdered souu from oyster hot-water extracts (IPSE) was prepared by mixing hot-water extracts powder (15 g) with table salt (5 g), cream powder (19 g), milk replacer (12 g), wheat flour (20 g), corn flour (15 g), starch (5 g), glucose (7.5 g) and onion powder (1.5 g). In preparing IPSW, mixed powder from wash water and boiling liquid waste, instead of powder from hot-water extracts and table salt, was added (powder from boiling liquid waste: powder from wash water= 12: 8) and other additives were added in proportion to those in the IPSE, The IPSW consists mainly of carbohydrates (about $72\%$). It was not different from the IPSE. The volatile basic nitrogen, viable cell counts, coliform group of the IPSW contains 33.4 mg/100g, $2.2\times10^4CFU/g$, <180 MPN/100g, respectively, and its water activity has 0.257. So it was a hygienically safe and conservable instant food. The main fatty acids of IPSW were 16: 0 and 18: 1n-9. Its chemical score of protein was $61.4\%$ and its main inorganic matter was iron. According to a sensual evaluation, in contrast to the IPSE, the IPSW had a bit lower aroma but better taste, It was concluded from the above chemical and sensory evaluation that even the boiling liquid waste which had been mostly abandoned because of its high table salt content can be used as a good material for instant powdered soup if it's powdered and mixed adequately with powder from wash water, and its table salt content is properly adjusted.

Chemical Compositions of Fermented Codonopsis lanceolata (발효더덕의 화학성분)

  • Dodok (Codonopsis lanceolata Bench. et Hook) root contains abundant pharmaceutical substances and is widely used as a food and a medicinal herb. To identify the major components, fermented Codonopsis lanceolata was analyzed for its chemical compositions prior to their pharmaceutical substances, which were used as the fundamental data. The contents of carbohydrate, crude protein, crude lipid and ash are 79.3%, 13.0%, 2.40% and 5.3%, respectively. The calories of fermented Codonopsis lanceolata was 390.5 kcal. Total dietary fiber was 47.4% of total carbohydrates. The protein was composed of 18 different amino acids. The contents of essential and non-essential amino acids were 8,118.18 mg and 10,913.42 mg. The K was the largest mineral followed by P, Ca and Mg, which means fermented Codonopsis lanceolata is alkali material. The contents of saturated fatty acids, monounsaturated fatty acids and polyunsaturated fatty acids were 37.76%, 3.84%, and 35.64%, respectively. Therefore, the amount of the total unsaturated fatty acid was higher than that of any other plant. The content of crude saponin in fermented Codonopsis lanceolata was 60.1 mg/g. It is expected that a follow up study on fermented Codonopsis lanceolata through development and evaluation of processed foods for their functional properties would provide useful information as a source of medicinal foods.

Physiochemical and Quality Characteristics of Young Radish (Yulmoo) Kimchi Cultivated by Organic Farming (유기농법에 의해 재배된 열무김치의 품질 및 기능적 특성)

  • This study compared and analyzed the physiochemical and quality characteristics of young radish kimchi made with YR-FNC or YR-GC cultivated by organic farming as well as kimchi made with young radish cultivated by chemical composting/general farming (YR-Control). YR-Control showed higher contents of water and crude protein than YR-FNC and YR-GC kimchi but lower contents of crude ash, dietary fiber, and vitamin C. YR-FNC and YR-GC kimchi also showed higher contents of P and Cu than YR-Control but lower contents of N, K, Ca, Mg, Fe, and Zn. YR-Control fermentation progressed faster than that of YR-FNC or YR-GC after 24 days, and YR-Control more rapidly reached an appropriate pH. On the other hand, YR-FNC and YR-GC kimchi fermentation progressed slow and did not reach a pH level below 5.3. For period of fermentation, YR-Control and YR-FNC kimchi showed no significant difference in reducing sugar content, whereas that of YR-GC kimchi decreased significantly after 24 days of fermentation (P<0.002). YR-FNC and YR-GC kimchi showed 1.5~3 times higher total polyphenol and flavonoid contents than YR-Control at the beginning of fermentation, whereas YR-Control and YR-FNC kimchi showed a significant increase in total polyphenol and flavonoid contents during the fermentation period. By day 7 of fermentation, YR-FNC kimchi showed higher contents of lactic acid bacteria and total microbes than YR-Control. In the sensory evaluation, YR-FNC and YR-GC kimchi showed higher preference values than YR-Control. Therefore, kimchi made from young radish cultivated by organic farming has a longer freshness period than control kimchi and is characterized by excellent sensory quality, increased physiological contents, and improved beneficial health effects.

Physicochemical and quality characteristics of the Korean and American blueberries (국내산과 미국산 블루베리의 이화학적 품질특성)

  • We investigated the quality characteristics of the Korean and American blueberry. There was a similarity between the general composition and sugar content of the Korean and American values. The pH values showed a low of 3.46 in American blueberries to a high of 4.49 in Korean blueberries. The L (lightness), a (redness), and b (yellowness) value scores of the American blueberry were higher than the Korean blueberry. The levels of total phenol content and DPPH radical scavenging abilities were 205 mg%, 93.48% in the Korean blueberry and 182 mg%, 84.32% in the American blueberry, respectively. The free sugar levels showed fructose 2,514 mg%, glucose 2,315 mg%, and sucrose 69 mg% in the Korean blueberry, while the free sugar levels of the American blueberry showed fructose 2,106 mg%, glucose 1,825 mg%. The contents of organic acid were lactic acid and tartaric acid in the Korean blueberry, while the organic acid in the American blueberry contained tartaric acid, succinic acid, oxalic acid, and lactic acid. The Korean blueberry has 12 kinds of free amino acids, while the American blueberry has 9 kinds of free amino acids. Furthermore, the Korean blueberry contains 390 mg% of total amino acids, which was higher than 32% in the American blueberry with 295 mg% of total amino acids. The fatty acid contents of the American blueberry (2,897 mg%) was higher than that of the Korean blueberry (2,783 mg%) as well as in the oleic acid, linoleic acid, and palmitic acid. The mineral contents of all the samples were P>K>Ca>Mg, respectively. Given the above results, the Korean blueberry bioactive chemicals or properties were thought to be somewhat higher than the American blueberry.

Quality characteristics and antioxidative activity of fermented milk added with hot water extract of Cordyceps militaris grown upon Tenebrio molitor (갈색거저리 유래 밀리타리스 동충하초 열수 추출물을 첨가한 발효유의 품질 특성과 항산화 활성)

  • This study was carried out to investigate the physicochemical and antioxidant properties of fermented milk with addition of hot water extract of Cordyceps militaris grown upon Tenebrio molitor. The general components of Cordyceps militaris grown upon Tenebrio molitor are moisture 10.85%, crude protein 18.44%, crude fat 2.07%, crude ash 5.46%. The DPPH radical scavenging activities of different solvents were the highest (74.81 EDA%) with hot water extract sample. The acidity of fermented milk was high with increasing amount of extracts. The pH of fermented milk reached 4.60-4.66 after 4 h of fermentation, and the number of lactic acid bacteria was highest (11.70 log CFU/mL) with 1% fermented milk. The moisture content of fermented milk showed no significant difference. In addition, contents of crude protein were not significantly different according to addition amount. Regarding Hunter's color values, L value decreased as the amount of extract increased, whereas a value and b value increased. The content of free amino acid increased with increasing amount of extract. The DPPH free radical scavenging ability and ABTS free radical scavenging ability of fermented milk were significantly different as the addition amount of extract increased. In the sensory evaluation, fermented milk containing 1% of extract showed the highest preference.

Temporal and Spatial Variations of Water Quality in the Cheonsu Bay of Yellow Sea, Korea (천수만 수질환경의 시·공간적 변동특성)

  • Temporal and spatial variations of water quality were investigated in the Cheonsu Bay of Yellow Sea, Korea from 2010 to 2011. Water samples were collected at 16 stations and physicochemical parameters were analyzed including water temperature, salinity, suspended solids (SS), chemical oxygen demand (COD), dissolved oxygen (DO), Chlorophyll a and nutrients. Spatial distribution patterns of all survey items were not clear among stations but the bimonthly variations were distinct except the bottom water of the suspended solids. The trend analysis by principal component analysis (PCA) during 2 years revealed the significant variations in water quality in the study area. Spatial water qualities were discriminated into 3 clusters by PCA; station cluster in the surface water 1, 2~11, and 12~16, the bottom water 1, 2~7, and 8~16. Annual bimonthly water qualities were clearly discriminated into 3 clusters by PCA. But tend of cluster in the surface and bottom water was difference, period most of the research was low in nutrient. Ecology-based water quality criteria was a good level of grade II. Bimonthly results are shown as III grade(normal) at June and August, II grade(good) at October and December and I grade for February and April. Water quality was showed by the input of fresh water same as those of Kyoungin coastal area, Asan coastal area, Gunsan coastal and Mokpo coastal area in the Cheonsu.

Leaching behaviour of the herbicide mefenacet in the soil columns (토양 column중 제초제 mefenacet의 용탈)

  • The leaching behaviour of [aniline-$^{14}C$]mefenacet in soil was investigated using glass columns (5 cm I.D. $\times$ 30 cm. H) packed with two types of soils with different physicochemical properties. $^{14}C$-Mefenacet (8.33 kBq) and mefenacet (in total, 1.05 mg/kg) were treated onto soil columns and rice plants (Oryza sativa L.) were grown for 17 weeks on these columns. Leachates from the columns were collected at the rate of 122.5 mL per week. $^{14}C$-Activities leached from soil A (OM, 3.1%; CEC, 86 mmol(+)/kg; texture, loam) columns with and without rice plants were 1.95 and 4.19% of the originally applied, whereas those from soil B (OM, 1.3%; CEC, 71 mmol(+)/kg; texture, loam) were 2.69 and 7.05%, respectively. These results indicated that larger amounts of $^{14}C$ were percolated from soil B with less organic matter and from the columns without vegetation. $^{14}C$-Activities absorbed by rice plants from soil A and B were 8.95 and 8.47%, respectively, most of which remained in the root and shoot excluding unhulled grains and ears without grains. $62\sim73%$ of the originally applied $^{14}C$ remained in the depth of $0\sim5cm$ in soil. The mass balance indicated that the losses by volatilization and/or mineralization amounted to $3.4\sim9.2%$ of the originally applied. $^{14}C$-Radioactivities in the aqueous phase of the leachates ranged from 59.4 to 97.7% of the radioactivities in leachates, showing the fast transformation of mefenacet to the polar metabolites.

  • These studies were Conducted to survey cultivation methods, and to analyze soil chemical properties for stable production of Aralia continentalis K., a promising medicinal crop, in the main producting districts. Aralia continentalis K. was cultivated with planting budstocks in distances of $90cm{\times}60cm$ for 3~4 years in the same field, and application rates were N 10~31 kg/10a and P, K 8~17/10a using inorganic fertilizer, that is compound fertilizer(21-17-17) for basal dressings and urea for topdressings. Most of all, the soil surveyed was coarse loamy class which was well drained and soil depth is 50~150cm in the valleys. Soil pH was low, and content of organic matters and av. $P_2O_5$ was abundant but that of exchangeable cation such as Ca, Mg, K was deficient. The relationship between growth characteristics and weight of fresh root was positive correlation in the order of No. of root, stem width, No. of node and branch, plant height and root width. On the path coefficiant analysis, the relationship between content of soil K, Ca and root yield was more apparent than other chemical properties.

Chemical Constituents of Korean Chopi (Zanthoxylum piperitum) and Sancho (Zanthoxylum schinifolium) (한국산 초피와 산초의 화학성분)

  • Zanthoxylum piperitum and Z. schinifolium have been utilized not only as food stuffs, but also as medicinal plants in Korea. In this study, lipids, sugar, amino acids and other components of Zanthoxylum piperitum and Z. schinifolium peels and seeds were analyzed by HPLC and GLC. Four samples contained common fatty acids such as linoleic, linolenic, palmitic, oleic and stearic acid. The contents of unsaturated fatty acids were 87.1% and 64.8% in Z. schinifolium peels and seeds, 73.6% and 62.9% in Z. piperitum peels and seeds, respectively. Z. schinifolium peels contained only beta-sitosterol, whereas other three samples contained campesterol, stigmasterol and beta-sitosterol. In case of free amino acids, peels of both species showed higher contents of acids than seeds of both species. Glutamic acid, aspartic acid, arginine, valine, and leucine were found in all four samples. Essential oils consisted of limonene (30.1-66.8%), beta-phellandrene (4.8-13.3%), citronellal (1.5-22%) and cineol (1.6-3.9%). It is worthwhile to note that the content of citronellal in Z. schinifolium seeds was higher than that of the others.
