Drying Characteristics of Succinic acid using the Microwave (마이크로파를 이용한 호박산 건조 특성)

  • Recently, biodegradable polymers are gaining more and more attention due to international environmental issues. Succinic acid is synthesised by chemical process of hydrogenation. Succinic acid synthesized has certain amount water content. To remove the water contained in succinic acid is used generally by hot air drying process. But recently, microwave drying process having the advantage of shortening the drying time and uniform drying of product are gaining more attention. In this study, hot air drying and microwave drying efficiency were compared at drying process. In addition, we confirmed commercial applicability in microwave drying process of succinic acid. Microwave drying process has higher efficiency than 70% compared with hot air drying process at thickness of 1cm. Economic efficiency were compared through examination of power consumption for complete drying of succinic acid at microwave and hot air dyring.

Effects of Organic Acid Addition on Fruiting Productivity and Primordium Formation in Grifola frondosa (유기산을 이용한 pH 조절 처리가 잎새버섯 자실체 발이 및 생산성에 미치는 영향)

  • This study was performed to develop a useful method for substrate pH adjustment in bottle cultivation of Grifola frondosa. Four types of organic acid solution-citric acid, malic acid, tartaric acid, and succinic acid-were added at 0.5% to 3.0% (w/v) into the substrate. The pH after the organic acid treatments ranged from 3.8 to 4.8 for the mycelial growth of G. frondosa after sterilization. Supplementation with succinic acid at 0.5% resulted in a shorter cultivation period and higher consistent yields compared to other organic acid treatments. These results indicate that the technique we developed is beneficial for higher production of G. frondosa using bottle cultivation.

Sugars in Korean and Japanese Pumpkin (한국산 호박 및 일본산 호박의 당 성분에 관한 연구)

  • Sugars in Korean and Japanese pumpkin were studied. The sugars in pumpkin were crushed and extracted by boiling for 30 min. Korean pumpkin was found to contain 0.41% of sucrose, 0.54% of fructose, 0.61% of glucose and 0.68% of starch. Japanese pumpkin was found to contain 2.60% of sucrose, 2.76% of fructose, 1.91% of glucose and 1.22% of starch. No other mono- and oligosaccharides were detected in the test of TLC and HPLC. Starch in Japanese pumpkin showed only signal of $\alpha$-1,4-glucosidic linkage by proton NMR analysis, and showed 86% of absorbance by iodine reaction compared with amylose(DP 117). These results indicated that starch in Japanese pumpkin is composed by only amylose. Pectin contents of Korean and Japanese pumpkin sowed 6.29% and 2.67%, respectively, as galacturonic acid by carbazole analysis.

Chemical Compositions of the Green and Ripened Pumpkin(Cucurbita moschata Duch.) (미숙호박과 완숙호박의 화학성분)

  • An attempt was made to investigate the chemical compositions of green pumpkin, edible flesh and seed of ripened pumpkin (Cucurbita moschata Duch.). The proximate compositions were moisture 9.34%, 11.98%, protein 12.70%, 13.38%, lipid 11.31%, 0.85%, carbohydrate 64.32%, 62.18%, fiber 6.31%, 4.54% and ash 6.05%, 7.76% in green and ripened pumpkin, respectively. The compositions of free sugar were glucose, fructose, sucrose, lactose and maltose in green and ripened pumpkin, respectively. During flesh growth, glucose, maltose and lactose was increased but sucrose and fructose was decreased in pumpkin. Pattern of 15 amino acid compositions in green and ripened pumpkin was shown to be of similarity. Major amino acids were glutamic acid, aspartic acid and alanine in green pumpkin and edible flesh of ripened pumpkin. And major amino acid in seed of ripened pumpkin were glutamic acid, arginine, aspartic acid and leucine. The predominant fatty acids were palmitic acid, linolenic acid, linoleic acid and oleic acid in green and ripened pumpkin, respectively. And those in seed of ripened pumpkin were linoleic acid, palmitic acid and oleic acid. The richest mineral contained in the green and ripened pumpkin was shown to be K and followed by Ca, Mg, Na and Fe in order.

The Comparision of Food Constituents in Pumpkin and Sweet-pumpkin (호박 및 단호박의 식품성분 비교)

  • This study was conducted to investigate the constituents of pumpkin and sweet-pumpkin. Moisture content of pumpkin was higher than that of sweet-pumpkin, but the other proximate constituents were lower. The major free amino acids were aspartic acid, threonine and cystine in pumpkin and cystine, arginine and tyrosine in sweet-pumpkin. Non-volatile organic acid of sweet-pumpkin was higher than that of pumpkin. Crude fat content of pumpkin and sweet-pumpkin were 0.33% and 0.48%. The major fatty acids were palmitic acid, linolenic acid and linoleic acid in pumpkin and oleic acid, linoleic acid and palmitic acid in sweet-pumpkin. The content of unsaturated fatty acid was 52.3%, 71.5% in pumpkin and sweet-pumpkin, respectively. The contents of minerals, vitamin C and carotenoid in sweet-pumpkin were higher than those of pumpkin.

Protective Effects of Succinic Acid of Succiniter against Liver Toxicity (간 독성에 대한 보석 호박 호박산의 간 보호 효과)

  • This study was performed to investigate the protective effects of succinic acid of Succiniter against carbon tetrachloride ($CCl_4$)-induced hepatotoxicity in rats. After an adaptation period of one week, Sprague-Dawley rats were administered succinic acid of Succiniter at 200 mg/kg every day for 21 days. Then $CCl_4$ (3.3 ml/kg) was intraperitoneally injected into rats of the other groups except the normal group, five hours after the last treatment of succinic acid of Succiniter on day 21. The succinic acid-treated group showed 93.20% and 88.76% of inhibitory effects in aspartate aminotransferase (AST) and alanine aminotransferase (ALT) activities, respectively, compared with the $CCl_4-treated$ group. The succinic acid-treated group showed inhibition of malonedialdehyde (MDA) by 85.17% compared with the $CCl_4-treated$ group. The succinic acid-treated group in liver homogenate promoted effects of 38.65% and 47.99% in superoxide dismutase (SOD) and catalase (CAT), respectively, compared with the $CCl_4-treated$ group. In conclusion, the AST and ALT activities of the succinic acid-treated group were both decreased compared with the $CCl_4-treated$ group. The MDA level of the succinic acid-treated group was decreased compared with the $CCl_4-treated$ group. However, the SOD and CAT levels of the succinic acid-treated group in liver homogenate were both increased compared with the $CCl_4-treated$ group. Also, histological examinations showed that the liver cell necrosis and centrilobular congestion aggregation induced by $CCl_4$ were clearly eliminated by treatment with succinic acid of Succiniter. These results suggest that succinic acid of Succiniter has a protective effect against liver damage and could be used in the development of the appropriate drug.

Synthesis of Succinic Acid from Hydrogenation of Maleic Anhydride (무수말레인산의 수소화 반응에 의한 호박산 합성)

  • In this study, the synthesis of succinic acid from hydrogenation of maleic anhydride over Pd/C were performed in aqueous solution at various reaction conditions. We confirmed that the distribution of product was different according to process parameters. When increasing the reaction pressure and agitation speed, the by-product decreased and the purity of succinic acid increased. From the result, we may conclude that the reaction pressure and agitation speed are important factors for promoting the mass transfer rate of gas-liquid interface by increasing gas-liquid solubility in liquid hydrogenation. When the reaction pressure increased from 5 bar to 10 bar, the reaction rate increased 2.14 times. When the agitation speed increased from 300 rpm to 700 rpm, the reaction rate increased 2.75 times.

Chemical Components in Different Parts of Pumpkin (늙은 호박의 부위별 화학성분)

  • The contents of free sugars, organic acids, amino acids, total carotenoids and pectin of pumpkin were analysed. Weight percentage of flesh was 84% of total weight. Rind and funicular attachment of seed were 10% and 3.5%, respectively. Major free sugars in pumpkin were fructose, glucose, sucrose. In flesh, fructose and glucose were the major free sugars, corresponding to 87% of total free sugars . Total sugar content in the flesh was three times higher than that in the funicular attachment of seed. Contents and composition of free amino acids were quite different according to the different parts of pumpkin. Non-volatile organic acids in pumpkin was malic, succinic and fumaric acid. The major acid in the flesh and funicular attachment of seed was malic acid and the contents in these parts were 85.2mg% and 226.5mg%, corresponding to 63% and 70% of the total organic acids, respectively. Eigh-tyseven percent of total carotenoids in the pumpkin was in the funicular attachment of seed, amounting 65.3mg%. However flesh and rind contained 6.6mg% and 3.3mg%, respectively. Water soluble pectin consisted 58% of the total soluble pectin in different parts of pumpkin, and soluble Pectin content was higher in funicular attachment of seed than in flesh. The major neutral sugars of the pectin in flesh and funicular attachment of seed were galactose and glucose consisting 45% and 36.5% of total neutral sugars.

Studies on the Composition of Fatty Acid and Protein in Pumpkin Seeds (호박씨의 지방산(脂肪酸) 및 단백질(蛋白質)의 조성(組成)에 관(關)한 연구(硏究))

  • Dehulled pumpkin seeds produced in Korea were defatted and their composition of fatty acid was analyzed by gas chromatography. Soluble protein and insoluble protein were isolated from the dehulled and defatted pumpkin seeds. The protein component was identified by disc-electrophoresis and the amino acid composition of the protein was analyzed. (1) The pumpkin seed contained 46.5% of fat and 25.5% of protein respectively. (2) The fatty acid of the pumpkin seed was compassed chiefly of linoleic acid (51.74%), oleic acid (22.2%), palmitic acid (18.1%) and stearic acid (7.84%) (3) The amino acid composition of the soluble and insoluble seed protein contained most of all the amino acids except for S-contained amino acids. (4) It has been identified by disc-electrophoresis that the soluble protein had 13 bands and the insoluble protein had 4 bands.

호박음료의 저장 중 품질변화 모니터링

  • 농산물의 효율적인 가공.저장은 농산물의 안정된 공급과 물가안정에 크게 기여하며, 부가가치 향상과 식품관련산업의 국제경쟁력 강화에도 필수적인 요건이라 할 수 있다. 호박은 전국 각지의 유휴지에서 별다른 시비나 농약의 사용없이 재배가능한 농산물로 vitamin C 및 vitamin A의 전구체인 carotene과 무기질, 식이섬유, 전분, 자당, 포도당 등이 풍부하다. 호박은 이뇨작용과 산후부종에 효과가 인정되어 널리 이용되고 있으며, 당뇨병, 야맹증, 각막건조증 등에도 효과가 있다. 국민의 생활수준이 향상되고 사회구조가 변화함에 따라 식품소비의 양상도 크게 변화하여 편의식과 건강 지향적인 가공식품의 수요가 급격히 증가하고 있으며, 이에 부응하여 건강식품에 관한 다각적인 연구가 많이 행해지고 있으나 미비한 실정이다. 호박은 특히 수분함량이 많고 조직의 연화현상 등으로 저장성이 낮아서 경제성이 떨어지므로 호박을 이용한 다양한 가공제품의 개발이 요구된다. 호박의 이용성을 검토하고, 나아가 호박의 부가가치 향상 및 경쟁력을 가진 지역특산물화를 위하여 기능성을 갖춘 건강음료개발을 시도하였으며, 이러한 음료의 유통중 품질변화를 모니터링하였다. 호박음료의 유통중 품질변화는 저장온도(20, 30, 40, 50, 6$0^{\circ}C$) 및 저장기간(0, 2, 4, 6, 8 week)에 따른 중심합성실험계획으로 실험을 행하여, 저장에 따른 당, 산, pH, 갈색도 및 관능적 특성에 대하여 반응표면분석을 하였다. 당도, 산도, pH 및 갈색도의 경우 저장시간에 영향을 많이 받는 것으로 나타났으며, 관능적 특성 중 전반적인 기호도에 있어서는 저장온도 및 저장시간에 영향을 많이 받는 것으로 나타났다. 당도, 산도, pH의 경우 저장온도 및 저장기간에 따라 큰 차이를 보이지 않았다. 갈색도의 경우 저장온도 51.1$0^{\circ}C$ 및 저장기간 7.33 week일 때 최대의 갈색도로 나타났다. 전반적인 기호도 있어서는 저장온도 32.52$^{\circ}C$ 및 저장기간 0.30 week일 때 우수한 것으로 나타났다.
