  • 조미료란 식품을 조리, 가공, 섭취할 때 맛을 증진시키거나 강화시킬 목적으로 사용되는 물질을 일컫는다. 발효, 종합 및 천연계 조미료의 국내외 시장동향에 대해 살펴보고, 조미료의 향후 발전방향과 중점 연구 분야, 관련업계의 연구개발 동향에 대한 고찰을 토대로 조미료 분야의 고부가가치 산업으로의 육성방안에 대해 알아보았다. 미원, 아이미 등으로 대표되는 발효조미료의 내수시장은 성숙기를 거쳐 소폭 감소세를 보이는 쇠퇴기에 접어들고 있다. 이는 소비자의 MSG에 대한 기피현상이 주 원인으로 판단된다. 전반적으로 품질 차별화 없이 가격 경쟁이 심화되고 있는 실정이다. 국내 종합조미료 시장은 1975년 국내에 처음으로 CJ에서 다시다 제품을 출시한 후 대상에서 1982년 맛나, 1988년 감치미를 출시하면서 30여 년간 지속적으로 성장해 왔다. 현재 시장규모는 2천억원에 이르고 있으며 최근 들어서는 성장세가 완만해지고 있고 가정용은 거의 정체되어 있다. 일본 조미료 시장은 발효조미료, 종합조미료 그리고 다양한 조미식품의 소재로 활용되는 천연조미료로 구분할 수 있다. 발효조미료 시장은 국내와 비슷한 상황으로 전체적인 물량변화는 약간 감소하는 경향이며 생산기지의 해외이전 현상이 뚜렷하다. 종합조미료 시장은 한국과 유사한 풍미조미료 외에도 보다 전문화되고 다양한 형태의 조미료가 시판되고 있으며, 전통적인 풍미조미료는 정체현상을 보이고 건강지향, 전용화 조미료가 호조를 보이고 있다. 일본과 한국의 조미료 발전 단계는 조금 차이를 보이고 있다. 현재 한국은 종합조미료 시대에서 용도별 조미료 시대로 넘어가는 단계에 있는 반면, 일본은 이미 메뉴 전용 조미료시대에 접어들었고, 건강, 기능성을 강조하는 시대로 나아가고 있다. 이들 변화는 건강에 대한 소비자의 관심과 그로 인한 보다 천연에 가까운 조미소재에 대한 수요, 동시에 맛에 대한 충족까지 요구하는 시대적 변화에 따른 필연적 결과로 보인다. 미래의 조미료는 천연계 소재의 사용량이 증가할 것이고, 소비자의 건강, 안전 추구심리에 부흥하여 안전성과 기능성을 부여하는 소재에 관심이 집중될 것으로 보인다. 더불어 전반적인 생활수준 향상에 따라 제품의 고급화와 전용화도 진행될 것으로 보인다. 향후 조미료시장을 주도할 각 현상에 대해 좀더 자세히 알아보고 학계 및 업체의 최근 연구동향과 제품개발 현황에 대해 고찰해 보았다. 기술연구 동향을 보면, 나노 기술에 의한 조미신소재연구, 초미분쇄기술, 미세 캡슐화 기술, 생물공학 기술이 활용된 발효 및 효소분해에 의한 펩타이드계 조미소재 개발 등이 활발하게 진행되고 있다. 선진업체 연구 및 제품개발 동향은 아지노모트/교와의 ''코쿠미''계 조미소재 연구개발, 일연푸드/동해물산의 천연 엑기스계 조미소재 연구개발, 보조주(주)의 주류 조미료 개발 위주로 살펴보았다. 조미료 시장의 발전 과정과 선진 업체들의 연구, 개발동향을 종합해 보면 첫째는 천연 건강지향에 부응하는 차별화된 소재 및 기능성 소재 개발이고 둘째는 맛과 편리함의 추구에 대응하는 메뉴 전용화 추세이다. 이를 위한 기술적 연구도 기능성 소재(히스티딘 함유 디펩타이드)개발, 나노기술, 미세캡슐화 기술 등을 통하여 다양하게 진행되고 있다. 조미료 산업을 첨단 고부가가치 산업으로 육성하기 위해서는 R&D 투자확대와 효율성을 제고하는 것이 필수적이다. 각 기업단위에서는 장기적 차원에서 첨단식품 기반기술에 대한 연구를 수행하거나, 전문 중소기업, 벤처를 육성하는데 지원해야 한다. 그러나 현실은 당장의 수익과 회사간 경쟁으로 인해 장기적 투자, 사회적 인프라 육성 등에는 관심을 쏟지 않고 있다. 조미료를 비롯한 식품에 관련된 기술들이 다양한 기초연구와 응용기술, 개발연구 등의 총합인 경우가 많기 때문에 이들 상이한 연구 분야간의 연계를 강화하고 개발된 기술의 이전, 확산체계를 구축할 필요가 있다. 이를 위해 기업간 수평적 네트워크 외에도 국가기관이 참여하는 연구 자원의 효율적 집행 기관이 필요하리라 본다.

Studies on the Processing of Powdered Katsuobushi and Its Flavor Constituents 1. Processing Conditions of Powdered Katsuobushi and Its Taste Compounds (분말가쓰오부시의 제조 및 풍미성분에 관한 연구 1. 분미가쓰오부시의 가공조건 및 정미성분)

  • This study was carried out to develop the powdered Katsuobushi (a kind of boiled, smoked, and dried fish product which is used for seasoning soup as it is.) using skipjack as a natural flavoring substance. The processing conditions of the powdered Katsuobushi and the changes of taste compounds during processing of the products were examined. In preparation of the powdered Katsuobushl, frozen skipjack was thawed, beheaded, gutted, filleted and then sliced to 1cm of thickness. The silted meats were boiled in skipjack extract for 20 minutes, and then it was smoked for, 3 times to $10\~12\%$ moisture content at $80^{\circ}C$ for 8 hours. The smoked - dried meats were followed to be 50 mesh of particle size. The effect of slicing and boiling in skipjack meat extract on enhancing flavor and on preventing lipid oxidation of product during processing were observed. The moisture content and crude lipid content of the powdered Katsuobushi was in the range of 11 to $12\%$ and 4.3 to $4.8\%$, respectively. The taste compounds of the product were nucleotides and their related compounds, 1135.8mg/100g ; free amino acid and related compounds, 2210.2mg/100g ; non-volatile organic acids, 1148.0mg/100g ; and total creatinine. 592.1mg/100g on dry basis, and small amount of betaine and TMAO. The major elements of mineral in the product were found to be K, Mg, Na, and Ca. The content of IMP was 542.0mg/100g, and major free amino acids were found to be histidine, anserine, taurine, carnosine and alanine of which occupied to $83.6\%$ of total free amino acids. In non -volatile organic acids, major ones were lactic acid, succinic acid, pyroglutamic acid and $\alpha-ketoglutaric$ acid. From the results of the chemical experiments and sensory evaluation, we may conclude that the flavor of the product from present experiment is more desirable than that of conventional products although the processing time used were much shortened than that of conventional method, and it can be commercialized as a seasoning powder.

Taste Compounds and Reapprearance of Functional Flavoring Substances from Low-Utilized Shellfishes (연안산 저활용 패류를 이용한 기능성 풍미소재의 정미성분 및 정미발현)

  • In present paper, we examined the flayer constituents and functionality of two stage enzyme hydrolysates (TSEH) of purplish clam and oyster, and also examined reappearance of oyster flavors through repreparation of individual flayer constituents. Total free amino acid contents in TSEH was $1943.0mg\%$ for purplish clam and was $5066.2 mg\%$ for oyster, respectively, Major free amino acids in purplish clam extracts were taurine, glutamic acid, glycine, alanine, Iysine and arginine, and in oyster extracts were taurine, asparagine, glutamic acid, valine, leucine, alanine, Iysine and arginine. As for nucleotides and related compounds, AMP was the principal component though small amounts in TSEH of purplish clam and oyster, and also contents of TMAO, total creatinine, and betaine were $41.2 mg\%,\;35,9 mg\%$ and $220.9 mg\%$ for that of purplish clam and $3.51 mg\%,\;33.4 mg\%$ and $380.9 mg\%$ that of oyster, respectively. The major inorganic ions in TSEH of both samples were Na, K, P, Cl and $PO_4$, and major non-volatile organic acid was succinic acid. The TSEH of purplish clam and oyster revealed very higher inhibition effect ($84.1\%,\;77.0\%$) in ACE inhibition than that ($0\~44.7\%$) of water and autolytic extract. A synthetic oyster extract prepared from pure chemicals on the basis of the analytical data on the TSEH, satisfactorily reproduced the taste of the natural extract except for a slight lack of mildness and odor. From the omission test the major taste compounds of oyster extract were free amino acid and inorganic ions. The quaternary ammonium bases, nucleotides and related compounds seemed to net an auxiliary role in taste of that.

Comparison of glucose, lactate, and nucleotide degradation products content of cooked Hanwoo and Australian beef steaks by internal temperature (가열 한우육 및 호주산우육 스테이크에서 심부온도에 따른 glucose, lactate 및 핵산 분해 물질 함량 비교)

  • This study was conducted to compare the glucose, lactate, and nucleotide degradation products content of cooked beef steaks from Korean Hanwoo (quality grade: 1) and Australian cattle (Bos indicus, grain-fed for 100 d) by internal temperature. The loins (M. longissimus dorsi) and top rounds (M. semimembranosus) from two cattle breeds were cut into about 2 cm thickness and then cooked in a $180^{\circ}C$ electronic oven until internal temperature attained to 50, 70, or $90^{\circ}C$. Regardless of internal temperature, glucose content was higher (P<0.05) in cooked loin and top round steaks from Hanwoo compared to those from Australian cattle. Lactate content was shown to be lower (P<0.05) in cooked steaks from Hanwoo than in those from Australian cattle. Lower (P<0.05) hypoxanthine and higher (P<0.05) guanosine 5'-monophosphate, inosine 5'-monophosphate, inosine contents were observed in cooked steaks from Hanwoo. Furthermore, glucose content tended to be decreased by internal temperature but nucleotide degradation products content was not changed by internal temperature. Therefore, these findings suggest that cooked Hanwoo beef steaks had higher flavor precursors related to sweet and umami tastes than cooked Australian beef steaks

Flavor Components in Sun-Dried Ray (마른 가오리의 풍미성분(風味成分))

  • To investigate the flavor components of sun-dried ray, Raja porasc, the contents of such as free amino acids, nucleotides and their related compounds, total creatinine, betaine, TMAO, fatty adds, and volatile compounds were analysed. The content of total free amino acids was 1773.3mg% on dry basis and the abundant amino acids were taurine, lysine, leucine, alanine, glycine, glutamic acid, proline, and valine in order and these amino acids accounted for 80% of total free amino acids in sun-dried ray. In the nucleotides and their related compounds, hypoxanthine was the most abundant. Ammonia-N was the most abundant, resulting 26.4% of extractive nitrogen which was 1965.6mg% and next free amino acid-N, total creatinine-N, and nucleotide-N in order. In the fatty acid composition of total lipid and neutral lipid, polyenoic acid was abundant holding 42.0%, 45.3% respectively. In phospholipid, the ratio of polyenoic acid and saturated fatty acid were similar to 39% respectively. The predominant fatty acids in total lipid, neutral lipid, and phospholipid were $C_{16:0},\;C_{22:6},\;C_{18:1},\;C_{18:0},\;and\;C_{20:4}$. In the volatile compounds, isocaproic acid, caproic acid, isobutyric acid, and butyric acid were the major portion of the 8 kinds of volatile fatty acids detected and 2-butanone, pentanal, and 2-methylpropanal were the major portion of the 8 kinds of volatile carbonyl compounds detected and also trimethylamine was the major portion of 2 kinds of volatile amines detected. It was presumed from the results that the reciprocal action of taste compounds such as free amino acids, nucleotides and their related compounds total creatinine, betaine, and TMAO and volatile compounds such as volatile carbonyl compounds, volatile fatty acids, volatile amines, and ammonia played an important role for the characteristics of flavor of sun-dried ray.

  • Characteristics of components related to meat taste of broiler and Korean native chicken (KNC) were investigated. Carnosine was detected much more in the breast meat of KNC at 28 weeks of age and in the leg meat of KNC over 6 weeks of age than broiler. Glutamic acid was much contained in the leg meat of KNC over 11 weeks of age. In the case of breast meat, the content of glutamic acid was higher in KNC over 6 weeks of age than that of others. The ratio of good-tasting amino acid to bitter-tasting amino acid was higher in KNC over 11 weeks of age than broiler. Concentration of IMP in KNC over 15 weeks of age was higher than that of broiler.

  • As a series of study for processing low salt fermented fish, this work was undertaken to investigate taste compounds of low sodium salt fermented anchovy and yellow corvenia comparing with conventional fermented fish ($20\%$ of salt contents) during the fermentation of 120 days at $25{\pm}3^{\circ}C$. The major amino acids in fermented anchovy at 60 day fermentation were lysine, alanine, leucine, valine, isoleucine, histidine, threonine and glycine, while those in fermented yellow corvenia at 90 day fermentation were lysine, leucine, alanine, valine, threonine, isoleucine, glutamic acid and methionine. These amino acids held $57\%$ of the total extractive nitrogen content for fermented anchovy and $41\%$ for fermented yellow corvenia, respectively. It was supposed from the results that principal taste compounds both for fermented anchovy and fermented yellow corvenia were free amino acids, and that nucleotides and their related compounds as well as total creatinine also played an assistant role. And also there was little difference between taste compounds of low salt fermented fish and those of conventional fermented fish irrespective of fish species.

Effects of Electrical Stimulation and Storage Temperature on ATP-related Compounds of Korean Native Cattle M. Semitendinosus Muscles. (전기자극방법 및 저장온도가 한우 M. Semitendinosus muscle의 핵산관련물질 생성 및 분해에 미치는 영향)

  • The effects of low and high-voltage-electrical-stimulation and storing temperature on concentration of adenosine triphosphate (ATP) related compounds were studied in M. Semitendinosus muscles from Korean native cattle. Seven beef carcasses were split, the one side was electrically stimulated for 1 minute by using stimulator adjusted to 400 V/60 Hz as high voltage or to 110 V/60 Hz as low voltage while the other side served as an unstimulated control. Both side samples were incubated at $5^{\circ}C\;and\;15^{\circ}C$ for 3 days. During storage, the concentration of ATP and its breakdown products were measured as a function of time. Significant differences (p<0.05) were observed in the variance of ATP, adenosine diphosphate (ADP) and inosine monophosphate (IMP) levels between low-or high-voltage-electrically stimulated muscles and unstimulated control at just after post-stimulation. The decomposition of adenosine compounds and the production of inosine compounds of low-voltage-electrically stimulated muscles were advanced more slowly than those of high-voltage-treatment muscles. With increasing storage time, the influence of electrical stimulation on changes of ATP related compounds in meat was decreased, but storing temperature begin to affect their concentration. Significant difference in the Hypoxanthine levels (p<0.05) was found of sample stored for 48 hours at $15^{\circ}C$ from samples stored at $5^{\circ}C$ regardless of electrical stimulation treatemt. IMP and inosine values in electrically stimulated muscles, higher than of a control during 72 hours of storage, indicated rapid production of flavor compounds in beef.

Selecting and evaluating microorganism strains to prepare low-salt doenjang for flavoring via the fermentation of rice and soybeans (쌀 및 콩 발효 균주선발과 이를 적용한 조미용 저염된장의 평가)

  • This study investigated the strains and fermentation characteristics of used to ferment a mixture of rice and soybeans to manufacture low-salt doenjang for flavoring. The soybean and rice mixture was fermented using three selected strains of Aapergillus oryzae and Bacillus sp. The changes in quality of the fermented products were found to be dependent on the aging period. Therefore, the strain and a suitable aging period were seleted based on the increases in AN, total sugar, and reducing sugar. The fermented products were prepared and mixed, using the selected or commercially available strains (the sample and control, respectively), to create low-salt doenjang. Following this, their characteristics were compared. The sample had a higher content of taste-related ingredients(free amino acid, nucleic acid-related substances) than the control. Using the selected strain to ferment a rice and soybean mixture will thus be expected to enhance the flavor of industrially produced seasoned doenjang.

Taste Characteristics and Functionality of Two Stage Enzyme Hydrolysate from Low-Utilized Longfinned Squid (창오징어 2단 효소분해엑스분의 정미특성 및 기능성)

  • The taste characteristics and functionality of low-utilized small longfinned squid as affected by two stage enzyme hydrolysis were examined. In taste active-components, total free amino acid contents in hot-water and autolytic extract, two stage enzyme hydrolysate (TSEH) of longfinned squid were 2,792.5 mg%, 8,393.8 mg% and 9,186.1 mg%, respectively. The major free amino acids were Pro, Leu, Glu, Tau, Lys, Arg, Phe, Val and Ile. As for quarternary ammonium bases, betaine was the principal component (593.8 mg%) and also contents of TMAO, AMP in longfinned squid TSEH were 234.8% mg% and 51.0 mg%, respectively. The major inorganic ions in TSEH were Na(874.0 mg%), K (398.2 mg%), Cl (1,213.1 mg%) and PO$_4$(995.9 mg%). From the results in sensory tests, TSEH was superior to other extracts on the aspects of taste characteristics such as umami intensity, sweetness, taste harmony and transparency of extract. Also TSEH of longfinned squid revealed very higher Angiotensin-I converting enzyme inhibition ratio (92.1%) than those of hot-water and autolytic extract.
