  • A Manufacturing Readiness Assessment (MRA) was adapted to prevent the probable ascending expense, poor quality, and delay from the development to production phase and assess the level of manufacturing readiness in 2012. Consequently, there are positive effects on improving the quality to identify the manufacturing risks during the production of military supplies and manage the issues in advance. On the other hand, because the appraisee is becoming accustomed to preparing for MRA checklists tailoring, it was found to intensify the MRA points more than before, which damages the goal of the MRA. This paper proposes the quantitative MRA methodology using MWV (Manufacturing Readiness Level 8 Weighted Value) to define and measure the HOM8, DOM8, ICOM8, and M8RA to reflect the history of MRA, the difficulties of MRA checklists, the intrinsic cruciallity and risk assessment of program, which can overcome the problems mentioned before. This paper shows the MWV of four weapon system programs to be carried out and an analysis of the proposed MRL 8 methodology.

  • Greenhouse gas(GHG) inventories were reported recently in various fields. It, however, has been rarely to mention about the accuracy and reliability of the GHG inventory results. Some reliable assessment methods were introduced to judge the accuracy of the GHG inventory results. It is, hence, critical to develop an evaluation methodology. This project was designed 1) to develop evaluation methodology for reliability of inventory results by GHG-CAPSS, 2) to check the feasibility of the developed evaluation methodology as a result of applying this methodology to two emission sources: liquid fossil fuel and landfill, and 3) to construct the technical roadmap for future role of GHG-CAPSS. Qualitative and quantitative assessment methodologies were developed to check the reliability and accuracy of the inventory results. Qualitative assessment methodology was designed to evaluate the accuracy and reliability of estimation methods of GHG emissions from emission and sink sources, activity data, emission factor, and quality management schemes of inventory results. On the other hand, quantitative assessment methodology was based on the uncertainty assessment of emission results. According to the results of applying the above evaluation methodologies to two emission sources, those seem to be working properly. However, it is necessary to develop source-specific rating systems because emission and sink sources exhibit source-specific characteristics of GHG emissions and sinks.

The Study on the Quality of Pre-Processed Vegetables in School and Institutional Food-Service (단체급식에서 사용되는 전처리 농산물의 품질 특성 분석)

  • This study was performed to investigate the quality of pre-processed vegetables used in school and institutional food-services. Pre-processed food materials (carrot, potato, and cabbage) frequently used in food-service were collected from 14 various processing company sources. The sensory and physico-chemical qualities of the pre-processed food materials were determined using sensory and instrumental analysis. For the physico-chemical analysis of the food materials, pH, total acidity, hardness, Hunter colorimeter value, reducing sugar and vitamin C content were determined. For the sensory quality evaluation, 15 panelist were trained and consensus was reached on the quality standards of the preprocessed materials (carrot, potato, and cabbage). Finally, appearance, color, texture, off-odor/taste, and overall quality were determined. In the physico-chemical analysis, there were no significant differences among samples collected from various processing companies. In sensory quality evaluations, the color quality of pre-processed potato was lower than that of other materials. From the coefficient correlations and partial least squares regression analysis between sensory and instrumental data, pH, total acidity, colorimeter values, and hardness were considered important components in assessing the quality of pre-processed vegetables.

Quality Characteristics and Glycemic Index of Oatmeal Cookies Made with Artificial Sweeteners (대체감미료를 첨가한 오트밀쿠키의 품질 특성 및 혈당에 미치는 영향)

  • This study investigated the optimal composition of sugar and artificial sweeteners in oatmeal cookies. Modified cookies were examined for their quality characteristics and glycemic index in humans. Oatmeal cookies with various amounts of sugar (20, 30, or 40%) were made to the equivalent sweetness of 100% sugar cookies (the control) with sucralose and stevioside. The density and acidity of cookie dough were not significantly different between the different cookie groups. However, baking loss and the spread index were significantly lower in the 100% sugar cookie group compared to cookies supplemented with artificial sweeteners. The color lightness (L value) and redness (a value) were highest in 30% and 100% sugar cookies, respectively. The strength of the cookies was negatively correlated with sugar content. In sensory evaluations, scores for taste, color and texture were higher in 30% and 40% sugar cookies, respectively, but the overall preference was higher in 30% sugar cookies. We therefore tested 30% and 100% sugar cookies for their glycemic index in college students. After overnight-fasted students consumed either 30% or 100% sugar cookies (containing 50 g of carbohydrate in dough weight), blood glucose levels increased 27.8 and 15.7 mg/dL, respectively, at 1 hour from the baseline. However, at 2 hours from the baseline, students who consumed 100% sugar cookies had a remarkably lowered blood glucose levels. Students who consumed 30% sugar cookies did not have as much of a change in blood glucose levels. In conclusion, 30% sugar oatmeal cookies made with sucralose and stevioside can be used to make a low-sugar cookie with a low glycemic index.

Changes of Quality Characteristics on the Cherry Tomatoes during the CA(Controlled Atmosphere) Storage (CA저장 중 방울토마토의 품질특성 변화)

  • The CA(Controlled Atmosphere) storage of cherry tomatoes were carried out under seven gas compositions including air. The weight loss of cherry tomatoes progressively increased with storage time. In the case of cherry tomatoes stored under CA conditions, increment of weight loss was reduced. However, cherry tomatoes (in air) tut about 15% weight at the end of storage. In CA stored cherry tomatoes lost about 10% weight at the same time. General trend was a decrease in titratable acidity with storage time. In air md 6.4% O$_2$, 4.2% CO$_2$, titratable acidity was lower than that in other storage conditions. During storage of cherry tomatoes, soluble solids increased till 8 days of storage, and then decreased. Stored cherry tomatoes in air and 6.4% O$_2$+4.2% CO$_2$ have lower values. Lycopene contents of cherry tomatoes with 6% O$_2$ storage condition increased and cherry tomatoes with 1% O$_2$+6% CO$_2$ and 3% O$_2$+3.1% CO$_2$maintained s initial contents. In air, flesh firmness decrease till 8 days, and then increase. At 1% O$_2$+6% CO$_2$ ethanol contents were ten times to that of other experimental conditions. Air and 6% O$_2$+7.8% CO$_2$ condition had lowest value for the ethanol content. In changes of organic acid and citric acid decreased slowly during storage, malic acid in air and below 3% O$_2$was disappeared at 8 days. Above 4% O$_2$concentration malic acid contents were maintained till 16 days. In over all acceptability, air and 6.4% O$_2$+7.8% CO$_2$ condition took a good score from the panel. Quality of stored cherry tomatoes was not edible condition in 1% O$_2$+6% CO$_2$. CA storage cherry tomatoes took a good score in firmness and juiciness where as control received good score in color and sweetness. This result was explained that in air ad 6.4% O$_2$+7.8% CO$_2$stored cherry tomato was ripened and full color development, but in CA was break stage because of suppressed ripening.

The Study on the Qualities of Commercial Anchovy Sauces and Kimchies Prepared with Different Anchovy Sauces (시판 멸치 액젓의 품질과 그 액젓으로 제조한 김치의 품질 연구)

  • To evaluate the quality of commercial anchovy sauces, 8 varieties (2 products from the Fishery Cooperation, 2 from small companies, and 4 well-known brands) were chosen and their physicochemical and sensory properties were examined. The salinity of anchovy sauces ranged from 19.8% to 26%, where product E was the saltiest and followed by F> H > B > E > A> C = G > D. Product D with the least salinity was turbid, rancid, and high in ammonia content, suggesting that it is difficult to control the quality of anchovy source with a low salt content. Protein content of anchovy sauces ranged from 2.51% to 2.64%. The unit price of anchovy source A was the highest, whereas B was the lowest. Sensory evaluation scores of anchovy sauces were in the order of B > G > A > F > E > C > H > D for color, B > G = C > H > E = F > G > D for odor, E > C > F > G > H > D > B > A for saltiness, and B > A > C > H > E = F > G > D for overall acceptability. Above results suggest that product B was the best in quality as well as the cheapest among all. Based on the above results, kimchies were prepared with product A, B, C with a high sensory quality and product H with a high market occupancy, and sensory evaluation was performed. The kimchi with product C got the highest sensory score in appearance and the one with product A and H in odor. Although the kimchi with product A generally had high scores throughout the fermentation period, there were no significant differences in texture, salty taste, and overall acceptability among kimchies with different varieties of anchovy sauces.

A Survey of Korean Housewives' Perception on the Commercial Korean Basic Side Dishes in Busan Area (시판 밑반찬에 대한 부산지역 주부의 인식조사)

  • The perception of Korean housewives was investigated on commercial Korean basic side dishes. The questionnaires were distributed to 464 housewives in Busan area. According to the survey, the housewives preferred discount stores (44.1%) to purchase basic side dishes. The reasons for purchasing them were convenience (54.6%) and readiness in small amount (23.1%). The housewives had high perception scores on saying cooking time (4.90/5.00), the possibility of purchasing when they need (3.93/5.00), and convenient use (3.85/5.00). However, they doubted the propriety of making use of chemical seasoning (2.15/5.00), the original place of raw food materials (2.21/5.00), and shelf life control (2.44/5.00). The satisfaction scores on the commercial basic side dishes were 3.06/5.00 in braised perilla leaves, 2.98/5.00 in braised soybean, 2.96/5.00 in pickled garlic, and 2.96/5.00 in stir-fried/muchim dried fish. The priorities on the improvement demand for the basic side dishes were appeared in order of the sanitary preparation, the consistent tastes, the proper amounts of chemical seasonings, and sanitary distribution systems.

Effect of Highly Water-Absorbing Polymer on Thrfgrass Quality of Creeping Bentgrass, Kentucky Bluegrass, and Zoysiagrass (초흡수성 고분자 중합체가 크리핑 벤트그래스, 켄터키 블루그래스 및 들잔디의 잔디품질에 미치는 효과)

  • Research was initiated to investigate the effect of high water-absorbing polymer on turf grass quality of three major turfgrasses. A total of 12 treatment combinations were used in the study. Treatments were made with different rates of sand, soil organic amendment (SOA), and water-swelling polymer (WSP). Visual turf grass quality was evaluated in creeping bentgrass (Agrostis palustris Huds., CB), Kentucky bluegrass (Poa pratensis L., KB), and zoysiagrass (Zoysia japonica Steud., Zoy) grown under greenhouse conditions. Significant differences were observed among the treatments in CB, KB, and Zoy. Visual quality ratings varied with mixing rates of SOA and WSP, being maximum 5.6 in differences among them. At the end of study it ranged from 0.3 to 9.6 in CB, 0.3 to 4.0 in KB, and 0.9 to 5.8 in Zoy. Turfgrass quality pattern changed with time after seeding among treatments influenced by WSP rates. From this study, a proper rate of WSP is considered to be 5%, 5~10%, and 5% for CB, KB and Zoy, respectively. In general, overall treatment effect of WSP on turfgrass quality was highly associated with SOA 20% in three turtgrass species. When mixing sand with SOA and WSP for rootzone soil, a proper rate of SOA is considered to be 15 to 20% for CB and KB, while 20% for Zoy of warm-season grass. A further study would be required to investigate the effect of varied, gradual mixing rates of WSP on growth characteristics of turfgrasses grown on mixtures of sand, SOA, and WSP before a field application.

Quality Characteristics of Madeleine Added with Lentil (Lens culinaris) Powder (렌틸콩 분말을 첨가한 마들렌의 품질 특성)

  • This study investigated the quality characteristics and antioxidant activities of madeleine added with lentil powder (LP). Madeleine was prepared with flour levels of lentil powder (0, 20, 40, and 60%). The pH, moisture, and specific gravity of madeleine decreased with increasing amounts of LP, whereas loss rate increased. Hunter L and b values of crust decreased with increasing amounts of LP, whereas a value of crust increased (P<0.05). Hunter L and b values of crumb increased with increasing amounts of LP, whereas a value of crumb decreased (P<0.05). For texture of madeleine with increasing amounts of LP, hardness and adhesiveness increased, whereas springiness, cohesiveness, and chewiness were reduced. DPPH radical scavenging activity of LP madeleine significantly increased with increasing amounts of LP (P<0.05). In the sensory evaluation of appearance, color, flavor, texture, taste, and overall preference, madeleine with LP 20% showed the highest value. It is suggested that LP 20% madeleine could be substituted for wheat flour to improve madeleine quality.

The Effect of Flour′s Protein Contents to the Properties of the Danish Pastry Made with Frozen Dough (밀가루 단백질 함량이 데니쉬 페이스트리 냉동생지의 품질 특성에 미치는 영향)

  • This study was carried out to evaluate the effect of flour's protein contents on the quality of Danish pastries made with frozen doughs. Danish pastries for frozen dough were made by straight dough method. Frozen doughs were stored for 12 weeks at -20$^{\circ}C$ and baked after thawing and fermentation a month. The volume, the moisture content, the texture and the quality evaluation of Danish pastries were investigated. The volume of Danish pastry decreased with the increase of frozen storage time. Danish pastry made by flour of 13.2% protein content showed larger volume than that made by flour of 9.2% protein content. The moisture content of Danish pastry revealed that there were no significant decrease with the increase of frozen storage time. In terms of hardness, Danish pastry made by flour of 9.2% protein content accomplished the best texture in the resulting pastry. On the quality evaluation, Danish pastry made by flour of 13.2% protein content had the highest score.
