Changes in Bioactive Compounds Throughout Ripening Stages of Green Pepper (Capsicum annuum L.) Exhibiting Varied Fruit Skin Colors (과피색이 다양한 풋고추 과실의 성숙단계에 따른 생리활성물질 변화)

  • This study aimed to investigate the changes in bioactive compounds across the ripening stages of three pepper cultivars, each characterized by unique skin colors. The samples used in this study consisted of three pepper cultivars distinguished by their skin colors as green, purple, and yellow green at breaker ripening stage. Samples were harvested at each of the four ripening stages, including premature, breaker, turning, and mature, and subjected to analysis for various bioactive compounds, including capsaicin, ascorbic acid, kaempferol, quercetin, and sugars. In all cultivars with varying skin colors, the capsaicin content within green pepper fruits consistently increased as the ripening stages advanced. Ascorbic acid was most abundant during the premature stage of development in purple and green cultivars, subsequently declining as maturation progressed. In the case of the purple cultivar, kaempferol content decreased by approximately 30% at the mature stage, while the green cultivar exhibited a gradual increase in kaempferol content with maturation. Conversely, the kaempferol content of the yellow green cultivar rapidly declined as maturation progressed. Regarding quercetin content, the purple and green cultivars tended to decrease with maturity, while the yellow green cultivar displayed an increasing trend. Furthermore, the accumulation patterns of glucose, fructose, and sucrose, the predominant free sugars in green pepper fruit, demonstrated an inclination to increase as the maturation stage advanced in both purple and green cultivars. In contrast, the yellow green cultivar initially showed an elevation in free sugar content during the immature stage, followed by a minor reduction during maturation and a subsequent rise during the mature stage. Each pepper cultivar, distinguished by its unique skin color, exhibits varying levels of bioactive substances at different ripening stages. Therefore, optimal harvesting and utilization should align with periods when the desired substance content is at its peak.

Effects of Organic Liquid Fertilizer on Growth and Fruit Quality of Hot Pepper (유기액비 시용량이 고추의 생육 및 품질에 미치는 영향)

  • This study was carried out to evaluate the effects of applying levels of organic liquid fertilizer (OLF) on growth and fruit quality of hot pepper. The OLF was made with compositions of chicken dung : rice bran : soybean meal (2:1:1). Hot pepper was applied with 5 treatments; control (chemical fertilize), OLF-1.0X (standard applying levels), OLF-0.7X (70% of standard applying level), and OLF-1.3X (130% of standard applying level). The plant height was reduced at 23cm in the OLF-1.0X treatment compared to control of 293cm. The number of hot pepper fruits was significantly increased. The content of capsaicin in the ripened pepper decreased by 23.6% in the OLF-1.0X treatment with $253mg{\cdot}kg^{-1}$ compared with control of $331mg{\cdot}kg^{-1}$, but the content of free sugar increased by 19.5%. The content of capsaicin and soluble solid content in OLF-1.3X treatment were significant different with other treatments. The yield of red pepper in OLF-1.0X treatments increased by 15% with $4,190kg{\cdot}10a^{-1}$ compared to control of $3,643kg{\cdot}10a^{-1}$, and OLF-1.3X and OLF-0.7X treatments showed increase by 10% and 6%, respectively.

A Comparison on the Quality Characteristics of Korean and Japanese Commercial Baechu Kimchi (한일 시판 배추김치의 품질특성 비교)

  • Recently, the consumption of commercial kimchi in Korea has increased over 30% and continues to grow rapidly. Similarly, over 50% of Japanese pickles(Tsukemono) have changed to kimchi and most of them are commerical. The purpose of this research is to cmopare and contrast Korean commerical kimchi to Japanese commerical kimchi. Furthermore, it is to provide valuable information to the consumers and suppliers as well as to improve the quality of commercial kimchi. Five different kinds of materials were used; (A) and (B) kimchi that were made and sold in Korea, (C) and (D) kimchi that were made and sold in Japan, and (E) kimchi made in Korea, but sold in Japan. The kimchi purchased on April 20th, 2002 and sensory evaluation, respectively, and they were preserved at $5^{\circ}C$. For the quality index, the followings contents were measured; moisture, ash, protein, crude lipid, mineral and capsaicin. In addition, pH, acidity and sensory evaluation for kimchi stored at $5^{\circ}C$ were measured for four weeks.

The Effects of Capsaicin Intake with High-Fat Diet on Tissue Glycogen Contents in Exercise-Trained Rats (캡사이신 첨가 고지방식이가 운동시 조직 글리코겐 농도에 미치는 영향)

  • This study is to investigate the effects of capsaicin with high-fat diet on tissue glycogen contents in exercise-trained rats. Forty male Sprague-Dawley rats were offered a high-fat diet for 2 wks in individual cages and were exercise-trained by a animal treadmill running throughout the experimental period. After 2 wks of the prefeeding with high-fat diet, the rats were divided into two group: high-fat diet group(CON)and high-fat diet + capsaicin(0.014%) group(CAP). The rats were killed by decapitation at 10 hr(rest), 1 hr and 2 hr after treadmill running(27m/min, 6$^{\circ}$). Body weight and epididymal adipose tissure weight were significantly lower in CAP than in CON, but soleus muscle weight was not different between the two groups. Glycogen contents in liver, soleus and gastrocnemius white muscles were significantly lower in CAP than in CON at rest, 1 hr and 2 hr (p<0.05). However, glycogen content in gastrocnemius red muscle was significantly higher in CAP compared with CON at 2 hr after the exercise(p<0.05). These results indicate that capsaicin intake with high-fat diet would decrease glycogen contents in liver and muscle, however, this effect on glycogen metabolism could be changed by muscle type.

Relationship between Red Pepper Intake, Capsaicin Threshold, Nutrient Intake, and Anthropometric Measurements in Young Korean Women (젊은 한국여성에서 붉은고추의 섭취량, 캡사이신 역치, 영양소 섭취량 및 신체계측치간의 관련성)

  • The effects of the amount of red pepper intake per a day on the capsaicin threshold, nutrient intake, and anthropo-metric measurements were investigated in 100 female students of university. Three 24-hour recalls were performed to estimate usual nutrient and red pepper intake of free-living participants. The solutions containing capsaicin at concentration of 0.05, 0.1, 0.2, 0.3, 0.4, 0.5ppm used for the evaluation of hot-taste detection threshold. Subjects were asked to recognize the burning sensation after tasting l0ml of each test solution in ascending order of capsaicin concentrations. Mean intake of red pepper was 4.6 g/d and the capsaicin threshold was 0.27 ppm. The detection threshold for capsaicin was correlated with the amount of pepper intake per a day. Red pepper intake was correlated with energy, protein, lipid, carbohydrate, Iron, vitamin A, vitamin B$_2$ niacin, and vitamin E intakes. However, it was not correlated with intake of calcium, vitamin B$_1$ or vitamin C. The red pepper intake was negatively correlated with fat mass and waist girth and the capsaicin threshold was also negatively correlated with pulse. In conclusion, red pepper intake was associated with nutrient intake and capsaicin threshold whereas it was negatively correlated with fat mass and waist girth.

Effects of Electroacupuncture on Food Intake and mRNA Expressions of the Hypothalamic Cholecystokinin in Rats (전침이 흰쥐에서 먹이섭취와 시상하부의 콜레시스토키닌 mRNA 발현에 미치는 영향)

  • 목적 : CCK는 현재까지 가장 많이 연구된 식후의 포만신호 전달물질로, 음식섭취를 감소하고, 캡사이신 반응성의 미주신경에 의해 위장운동과 위내의 공복감을 억제시킨다 전침의 진통효과 발현기전에 영향을 미치는 항아편양 단백물질로서, 내인성 CCK와 그 수용체(CCK-A와 CCK-B)의 역할은 기존의 연구에서 이미 보고되어 왔다. 이에 착안하여, 본 연구에서는 포만감의 측면에서 전침자극이 내인성 CCK의 발현에 어떠한 영향을 미치는가를 살펴보고자 한다. 방법 : 48시간 절식 쥐 모델을 이용하여, 전침자극 후 30분과 60분 동안, 먹이 섭취량 변화를 측정하고, 먹이섭취량에 영향을 주는 신경전달경로에서 CCK가 관여하는지를 확인하기 위해 미주신경절제술을 시행한 쥐와 비교하였다. 한편 48시간 절식 쥐 모델을 대상으로하여 침자극 후 시상하부의 CCK mRNA 발현변화를 관찰하였다. 결과 : 전침군에서 30분과 60분 뒤의 먹이 섭취가 대조군에 비해 현저히 낮게 관찰되었는데, 포만감에 관련된 침의 이와 같은 효과는 CCK 수용체에 길항작용이 있는 lorglumide와 미주신경절제술에 의해 차단됨을 알 수 있었다. 시상하부의 CCK mRNA의 발현되는 대조군에 비하여 전침군에서 증가하는 경향이 관찰되었으나, 통계학적인 유의성은 확인 할 수 없었다. 결론 : 위의 결과에서, 전침은 포만감에 영향을 미치는 내인성 CCK 메카니즘을 활성화시키는 것을 알수 있었다.

Quality Characteristics and Storage Stability of Wet Noodle based on Capsaicin-loaded Nanoemulsions (캡사이신 함유 나노에멀션으로 반죽한 생면의 품질특성과 저장안정성)

  • The objectives of this study was to investigate the properties and stability of the wet noodles added to nanoemulsion as a industrial model system, and in so doing, survey practical applicability in the food industry. In order to test out these objectives, the characteristics and stability of the wet noodles added to nanoemulsion were investigated and their cooking characteristics and capsaicinoids loss were examined. As a result, the test results showed that the findings indicated that the post-cooking loss of capsaicinoids in the wet noodles added to double-layer nanoemulsion covered with chitosan was less than the losses in the wet noodles added to any other noodles. More especially, this demonstrates that the noodle added to double-layer nanoemulsion covered with chitosan scored significantly higher than the others with reference to their cooking properties, color, texture, stability for storage stability, and sensory evaluation. These results show that the findings of this study demonstrated that the noodles added to nanoemulsions could be produced as a food-grade merchandise because they could provide enhanced encapsulation capacity of capsaicinoids and higher acceptability.

Preparation and Stability of Capsaicin-loaded Nanoemulsions by Microfluidazion (미세유동화법으로 제조한 캡사이신 함유 나노에멀션의 안정성)

  • The objectives of this study, which filled gaps in previous studies, were: (1) to find the optimal mixing condition of nanoemulsions containing oleoresin capsicum (OC), Tween 80, propylene glycol (PG), and sucrose monostearate (SES) by microfluidization; (2) to investigate their properties and stability depending on such factors as pH, temperature, and heating time; (3) to measure the effect of adding ascorbic acid. In order to test these objectives, the following three experiments were conducted: Firstly, in order to find the optimal mixing ratio, nanoemulsions containing OC - the mean diameter of which is smaller than 100 nm - were prepared through the process of microfluidization; and their mean particle size, zeta potential, and capsaicinoids were measured. The test results indicated that the mixing ratio at OC : Tween 80 : PG + water(1:2) = 1 : 0.2 : 5 was optimal. Secondly, the properties and stability of nanoemulsions were investigated with varying parameters. The test results illustrated that single-layer nanoemulsions and double-layer nanoemulsions coated with alginate were stable, irrespective of all the parameters other than/except for pH 3. Thirdly, the properties of nanoemulsions were then analyzed according to the addition of ascorbic acid. The results demonstrated that the properties of single-layer nanoemulsions were not affected by addition of ascorbic acid. In case of alginate double-layer nanoemulsions, the particle size was reduced, and zeta potential increased with the addition of ascorbic acid. In conclusion, the demonstrated stability of various nanoemulsions under the different conditions in the present study suggests that these findings may constitute a basis in manufacturing various food-grade products which use nanoemulsions-and indicate that food nanoemulsions, if adopted in the food industry, have the potential to satisfy both the functionality and acceptability requirements necessary to produce commercially marketable food-grade products.

Quality Characteristics of Cookies Added with Capsaicin Powder (캡사이신 분말을 첨가한 쿠키의 품질 특성)

  • This study investigated the quality characteristics of cookies containing capsaicin, the main source of spicy taste in pepper, which is well known for its various functions such as anti-oxidant, anti-cancer, anti-inflammatory, and anti-obesity activities, as well as pain-relief effect. Cookie samples were made by adding the capsaicin powder at different levels, including 40 mg% (C1), 85 mg% (C2), and 150 mg% (C3). In this study, measurement of the moisture, pH, color, spread factor, hardness, anti-oxidant activity, and sensory evaluation of the cookies was carried out. The results showed that the anti-oxidant activity increased when more capsaicin powder was added to the cookies (p<0.001). The moisture also increased with increasing capsaicin powder content (p<0.05), while the pH did not show any significant changes. As for the colors, the L value and b value decreased as more capsaicin powder was added, while the a value increased. The spread factor also increased significantly with the increase of capsaicin powder (p<0.01). Although the hardness increased with capsaicin powder content, no statistically significant differences were observed among the various cookies. In the sensory evaluation, Cookies containing 40 mg of capsaicin obtained the highest score in color, while cookies containing 150 mg of capsaicin showed the highest score in taste, texture, and overall acceptability.

Effects Quality Characteristics and Development of Global Sauce using Traditional Gochujang (세계적 소스류의 품질특성 다양화를 이용한 고추장소스개발)

  • Gochujang, a kind of fermented red pepper paste with soybean koji, is a traditionally using spices in Korea and is characterized by its special taste in combination with hot, sweet and salty taste, and its component are consist of protein, carbohydrates, capsanthin and capsinoids, vitamin and other minor components. We tried to develop Gochujang sauce characterized by mild hot and spicy taste, proper viscosity and its strong application to steak, fried food, pizza and others. Gochujang sauce tended to show strong red color and lightness as pH decreases and Paprica oleoresin improved a value to 12.11 and L value to 24.24 which is similar to tomato paste 1:1-1.5:1 ratio of Gochujang and tomato paste was evaluated to be acceptable in the aspect of Gochujang's characteristics.
