Hydration Rates and Changes of Hardness during Soaking of Polished Naked Barleys (쌀보리쌀의 수분 흡수 속도 및 침지 중 경도의 변화)

  • The predominant kernel(7mesh) of naked barleys were polished to give 65% yield. The diffusion coefficients and volume increase rates of polished naked burleys at $40^{\circ}C$ were $3{\sim}4$ and 2.2 times greater than those of naked barleys, respectively. The moisture gains of polished naked barleys were linearly related to the volume increases. The hardness of polished naked burleys during soaking was exponentially decreased.

Study on the immersion test of geopolymers made by recycling of coal ash (석탄회를 재활용한 지오폴리머 침지실험에 관한 연구)

  • A geopolymer was produced from coal ash generated from an integrated gasification combined cycle (IGCC) plant and its water resistance was evaluated. For this purpose, the geopolymer specimens were immersed in water for 30 days to measure changes in microstructure and alkalinity of the immersion liquid. Particularly, the experiment was carried out with foaming status of the geopolymers and parameters of room temperature aging condition, and immersion time. The foamed geopolymer containing 0.1 wt% Si-sludge had pores with a diameter of 1 to 3 mm and exhibited excellent foamability. Also, the calcium-silicate-hydrate crystal phase appeared in the foamed geopolymer. In the geopolymer immersion experiment, the pH of the immersion liquid increased with time, because the un-reacted alkali activator remained was dissolved in the immersion liquid. From the pH change of the immersion liquid, it was found that geopolymer reaction in the foamed specimen was completed faster than the non-foamed specimen. Through this study, it was possible to successfully produce foamed and non-foamed geopolymers recycled from IGCC coal ash. Also the necessary data for the safe application of IGCC coal ash-based geopolymers to areas where water resistance is needed were established; for example, the process conditions for room temperature aging time, effect of foaming status, immersion time and so on.

Study on Optimization of Persimmon Kochujang Jangachi Using Response Surface Methodology (반응표면분석법을 이용한 단감 고추장 장아찌 품질의 최적화 연구)

  • The purpose of this study was to determine the optimum sodium concentration (0~8%), soaking time (4~20 min) and storage time (0~60 day) for preparation of persimmon jangachi with kochujang sauce using response surface methodology. Physicochemical properties (salinity, pH, Hunter's color value, cutting force, and sensory evaluation) of persimmon kochujang jangachi were analyzed during storage at $20^{\circ}C$ for 60 days. When the proximate composition of persimmon was analyzed, moisture content, crude protein content, crude lipid content, and crude ash content were 85.41%, 0.51%, 0.22%, and 0.20%, respectively. For persimmon kochujang jangachi manufactured with different sodium concentrations, soaking times, and storage times, salinity, pH, Hunter's color value of L, a, and b, color, flavor, taste, texture, and overall preference were represented by a quadratic model. Cutting force was represented by a linear model pattern. In conclusion, the optimal formulation for persimmon kochujang jangachi, as assessed by numerical and graphical optimization methods, was a sodium concentration of 6.91%, soaking time of 11.36 minutes, and storage time of 25.18 days.

Effect of GA3 Treatment on the Flowering in Tuber of Zantedeschia 'Black Magic' (GA3 처리가 유색칼라 괴경의 개화에 미치는 영향)

  • Tubers(4-5cm diameter) of Zantedeschia 'Black Magic' were used to study the induction of flowering in GA3 soaking times and concentration. The GA3 soaking were 10 seconds and 30 minutes at the GA3 concentrations of 50, 100, 250, and 500 mg·L1. The time to emergence in GA3 treatment were 1.1~4.0 days shorter than control Growth characteristics were good in GA3 treatment but that was no significance in GA3 soaking time and concentration. When GA3 soaking time and concentration were increased, days to flowering was shorter, but flower stalk length, flower stalk width, flower length, flower width were no difference. The number of flower per tuber was most as 4.0~4.3 in 250~500 mg·L1 GA3 concentration and that was about 2 times compared to control. The normal flower ratio and bulb enlargement were similar compared with GA3 soaking time and concentration. GA3 250~500 mg·L1 treatment is necessary for improvement of number of flowers per bulb.

Quality Characteristics of Coffee Brewed from Green Beans Soaked in Mulberry (Morus bombycis) Extract (오디(Morus bombycis) 추출물 침지 커피의 품질 특성)

  • The objective of this study was to investigate the quality characteristics of coffee soaked in Morus bombycis extract. Green coffee beans were soaked in M. bombycis extract for 2, 4, and 6 hours (sample codes: 2H, 4H, and 6H) at $4^{\circ}C$. Soaked green beans were dried and roasted for coffee extraction. Two controls, roasted with the same amount of heat (C1) and showed the same weight after roasting (C2), were used. Physicochemical characteristics (pH, total acidity, color, browning index, and total soluble solids), DPPH free radical scavenging activity (DPPH), ferric-reducing antioxidant power (FRAP), oxygen radical absorbance capacity (ORAC), total polyphenol content (TPC), and total flavonoid content (TFC) were investigated. Lower pH and higher total acidity were observed in 2H, 4H, and 6H (P<0.05), supporting evidence of sour taste. There were significant differences in DPPH between the controls (45.51~47.02%) and samples (50.67~55.25%, P<0.05), although 2H and 6H did not show significantly higher DPPH than the controls. 2H, 4H, and 6H showed significantly higher FRAP values ($0.320{\sim}0.331\;FeSO_4{\cdot}7H_2O\;mM\;FeSO_4/g$) than controls ($0.265{\sim}0.271\;mM\;FeSO_4/g$). ORAC values of samples [1,062.86~1,153.68 mM trolox equivalent (TE)/g] were significantly higher than those of controls (689.40~942.12 mM TE/g). 2H, 4H, and 6H showed significantly higher TPC [24.27~26.07 mg gallic acid equivalent (GAE)/g] and TFC [3.75~4.28 mg quercetin equivalent (QE)/g] than controls (19.79~22.77 mg GAE/g and 1.07~1.95 mg QE/g, respectively) (P<0.05). M. bombycis extracts soaked into green coffee beans showed polyphenol compounds from green coffee beans. Consumer acceptance of 4H (5.12) was the highest, followed by C2 (4.92). C1 (4.14) showed the lowest consumer acceptance. Consumers were segmented into two groups, those who preferred M. bombycis extract-soaked coffee (approximately 61%) and controls (approximately 39%).

Effect of Osmopriming on Rice Seed Germination in Low Temperature (저온에서 볍씨 발아에 미치는 삼투처리 효과)

  • To improve the germination performance of rice seeds under suboptimal temperature, osmopriming with PEG-6000 was examined. Optimal PEG-6000 concentration to improve germination was 20% PEG-6000 solution, and rice cultivars used in this experiment were Sinunbongbyeo, Gancheokbyeo, Dongjinbyeo. The water content of seeds after soaking for 60 hours in the PEG solution is similar to that of seeds after soaking for 24 hours in the distilled water. Germination performance of the soaked seeds in the PEG solution was higher than that of the soaked seeds in the distilled water or the control, especially under suboptimal temperatures. Electrical conductivity of the soaked seeds in the PEG solution was lower than that of the soaked seeds in the distilled water or the control, and total dehydrogenase activity of the soaked seeds in the PEG solution was higher than that of the soaked seeds in the distilled water or the control. SDS-PAGE results of soluble protein from the embryos of seeds primed differently showed darker band in the seeds soaked in the PEG solution than the seeds soaked in the distilled water or the control at the 68 KD region. Also, band patterns of peroxidase and esterase of embryos soaked in the PEG solution were darked than that of embryos soaked in the distilled water or the control at the Rf 0.94 and Rf 0.87, respectively.

Changes in Volume of Soybeans during Hydration (콩의 침지중 부피의 변화)

  • During soaking of soybeans in water at $4^{\circ}C{\sim}98^{\circ}C$, the volume gain of soybeans held a linear relation with the square root of soaking time regardless of soaking temperatures and showed a highly positive correlation with weight gain, which indicated that the volume increase of soybeans was basically due to the diffusion of water. The activation energies for the volume increase were changed at $40^{\circ}C$. The log time to reach a fixed moisture content showed a linear relation with the soaking temperature during soaking of soybeans at $4^{\circ}C-60^{\circ}C$. The z-value to reach 50% hydration was $50^{\circ}C-55^{\circ}C$.

Optimization of Osmotic Dehydration Process for Manufacturing a Dried Sweet Pumpkin (건조단호박 제조를 위한 삼투건조공정의 최적화)

  • This study was conducted to develop a sweet pumpkin to intermediate materials for various processed foods and dried food having high quality. Factorial experiment design with three variables having three levels was adapted and response surface methodology was used to determine optimum conditions for osmotic dehydration of sweet pumpkin. The moisture content, weight reduction, moisture loss and solid gain after osmotic dehydration increased according to increasement of immersion temperature, concentration and time. The effect of concentration was more significant than that of temperature and time at given conditions. Sugar concentration and vitamin C content increased in accordance with increasement of immersion temperature, concentration and time during osmotic dehydration. Hardness was increased by increasing immersion time. The regression models showed very significant values and high correlation coefficients (R2) above 0.91, excepting hardness. The optimum condition for osmotic dehydration was 23$^{\circ}C$, 52$^{\circ}C$Brix and 80 min at the constricted conditions such as 60∼70% moisture content, above 3 mg/100 g vitamin C and more than 10 kg/$\textrm{cm}^2$ hardness.

Mass Transfer during Salting and Desalting Processes of Chinese Cabbage (배추의 염절임 및 탈염 공정중 물질이동)

  • The diffusion phenomena of water, solid and reducing sugar in Chinese cabbage during salting (5$0^{\circ}C$, 25% salt solution) and desalting (5$0^{\circ}C$, distilled water) were investigated. Water loss and solid gain during salting were rapid in the first 6hrs and then almost leveled off. After 24hrs of salting, water loss and solid gain in 100g of initial wet Chinese cabbage were 33.35g and 6.26g respectively. Moisture content was changed from 94.29% to 83.11% during 24hrs of salting. The reducing sugar concentration was also changed from 29.2 mg/$m\ell$ to 6.5mg/$m\ell$, which was linearized as a function of the square root of salting time and showing that Y=30.1841-5.0269√t. After 24hrs salting, water gain and solid loss during desalting were rapid in the first 4hrs and then increased linearly. After 12hrs of desalting, the water gain and solid loss in 100g of initial wet Chinese cabbage were 20.82g and 9.14g respectively. The amount of solid loss after 12hrs desalting was higher than that of solid gain after 24hrs salting due to the diffusion of solute presented initially in the Chinese cabbage during salting and desalting. The concentration of salt in Chinese cabbage after 12hrs desalting was 2.98% which was a suitable salt concentration for the preparation of Kimchi. At this time, the concentration of reducing sugar was only 1.6mg/$m\ell$. The linear regression equation of reducing sugar concentration during desalting was Y=6.7854-1.5992√t.

Decrease in Intrinsic Objectionable Odors and Change of Gastrodin Contents in Lactic acid Treated Gastrodia elate Blume (젖산 처리에 따른 천마의 불쾌취 감소 및 Gastrodin 함량 변화)

  • This study was carried out to decrease intrinsic objectionable odor, bitter and fishy taste and change the biobeneficial components (gastrodin and p-hydroxybenzyl alcohol) of Gastrodia elate Blume. First of all, Gastrodia elata Blume. was dipped in the rice-washed water and rice-bran solution fermented with Lactobacillus brevis and Lactobacillus plantarum. The objectionable odor, bitter and fishy taste were decreased considerably with the treatments. Gastrodia elata Blume. was also dipped in organic acids (10 different varieties). The result showed that the most effective treatment to reduce objectionable odor, bitter and fishy taste of Gastrodia elata Blume. was treated with 1.0% lactic acid. Eleven different kinds of volatile components such as acetaldehyde, formic acid ethyl ester, acetic acid ethyl ester, 4-methylphenol and 3-hydroxy-2-butanone were separated from Gastrodia elata Blume when treated with or without 1.0% lactic acid. 4-Methylphenol, which is an objectionable odor in Gastrodia elata Blume, decreased with the treatment of lactic acid. While the contents of gastrodin and p-hydroxybenzyl alcohol in Gastrodia elata Blume. increased by 20% when dipped in 1.0% lactic acid solution for 24 hours and steamed at $98^{\circ}C$ for 4 hours.
