Quality characteristics of noodle added with Aster scaber extracts solution and powder (참취 추출물을 첨가한 국수의 품질 특성)

  • The purpose of this study was to investigate the physicochemical and sensory characteristics of A. scaber noodle added with A. scaber extract solution or powder. The weight of cooked noodle and noodle added with A. scaber extract solution was higher than those of the non-added noodle (control) and dried A. scaber powder added noodle. As the amount of A. scaber extract solution or powder was increased, the water absorption rate of noodle was decreased. As the amount of A. scaber solution or powder was increased, the 'L' values of noodles were decreased. Since the 'a' values of all noodles were negative and the 'b' values of all noodles were positive, the color of all noodles were determined to be yellow green. The pH of noodles were 5 to 6 in control noodles and noodles with A. scaber powder. The pH of noodle added A. scaber extract solution was lower than those of others. As amount of A. scaber extract solution or powder was increased, the elasticity of all noodles was decreased. The chewiness of noodles was the highest in noodle added A. scaber extract powder. The quality of noodle added A. scaber extract solution was the excellent among the all other noodles. This result showed that, the quality characteristics and palatability of noodle added A. scaber extract solution or powder was higher than those of control noodle.

  • This study was to investigate the physicochemical and sensory characteristics of snack with various amounts Cham chwi and oil. This result was used to determine the optimum condition of adding levels of Cham chwi and oil. Flavor, crispness, greasiness, oil absorption, expansion rate were selected as the physicochemical and sensory characteristics to determine the optimum conditions of the amount of Cham chwi and oil. The predicted values were obtained by the regression method of RSM(response surface methodology). Conditions were standardized with maximum range of expansion rate when expected value of crispness was more than five and expected value of greasiness was less five. The optimum conditions of Cham chwi snack was established as the 8.6% of Cham chwi and 7.6% of oil.

  • The purpose of this study was to investigate the sensory and physicochemical attributes of Cham-chwi dduk with various amounts of Cham-chwi(Aster scaber) and salt. Cham-chwi dduk was made by steaming glutinous rice flour with Cham-chwi powder for 15 min. Cham-chwi powder was added 1, 3, 5% of glutinous rice flour weight and salt was added 0.5, 1.0 1.5%. According to the sensory evaluation, bitterness and Cham-chwi flavor increased as the amount of Cham-chwi increased and saltiness increased as the amount of salt increased(p<0.05). In the textural profiles, chewiness, adhesiveness, hardness and gumminess were highest when 3% Cham-chwi was added. The moisture content of Cham-chwi dduk was increased as the amount of Cham-chwi was increased and the amount of salt was decreased. The more amount of added Cham-chwi increase, the more green color was strong and yellow color was weak. These results were used to determine the optimum conditions of adding levels of Cham-chwi and salt. Conditions were standardized with minimum range of firmness when expected value of Cham-chwi flavor was more than six and expected value of bitterness was less five. The optimum conditions of Cham-chwi dduk was established as the 3.1% Cham-chwi and 0.6% salt.

Establishment and Growth of Different-aged Aster scaber Thunb. Seedlings in Mountainous Areas (苗齡을 달리한 참취종묘의 山地 활착 및 초기생육)

  • This study was conducted to evaluate the effect of locations and nursing days on the cstablishment and the first-year growth of Aster scaber seedlings in mountainous areas. Survival rates of the seedlings ranged from 72% in Bukbang to 27% in Mt. Yeonyup B. Survival rate of 90 days-seedlings was 65%. 150days-and 120days- seedling had 2 or 3 leaves but it was almost same as that of native plants. The plants grown in Mt. Yeonyup A averaged 10.7cm high and 90 days-seedlings grew best. Dry weight of plants grown from 120 days- and 90days- seedlings was respectively 215mg and 205mg.

Antioxidant activities of ethanol extracts of Aster scaber grown in wild and culture field (야생 및 재배 참취 에탄올 추출물의 항산화성)

  • The purpose of this study was to evaluate the functionality of ethanol extract of Aster scaber by analyzing anti-oxidant components and anti-oxidant activities, which was grown in wild and culture field. The yields of Aster scaber ethanol extracts were high after blanching treatment. The polyphenol content of dried Aster scaber grown in wild was 35.59 mg/g, which was higher than that of Aster scaber grown in culture field. The electron donating ability in all Aster scaber extracts were increased with increase in extract concentration, and the electron donating ability was the highest in extracts of the dried Aster scaber after blanching. The SOD-like activity of Aster scaber was the highest in its extract grown in wild field. In addition, the SOD-like activities of extracts of the dired Aster scaber after blanching were highest among the extracts of cultivated Aster scaber. The nitrite scavenging ability of extracts was increased at pH 1.2, and those was the highest in wild fresh Aster scaber. The inhibition effects on xanthine oxidase and tyrosinase were increased with increase in extract concentration, and the inhibition effects of extracts of Aster scaber in wild field were higher than those grown in culture field. Therefore, the consumption of Aster scaber would provide beneficiary effects due to its antioxidant activities and prevention of aging. The development of various processed food using Aster scaber will promote the consumption and its values.

The Effect of Powdered Herb of Aster scaber Thunb. on Antioxidant System in Ethanol-Treated Rats (참취 분말이 에탄올을 투여한 흰쥐의 항산화계에 미치는 효과)

  • The present study was conducted to investigate effect of powdered herb of Aster scaber Thunb. (chamchwi) on antioxidant system in ethanol-administrated rats. Four week-old Sprague Dawley male rats which had initial body weights of 97.10$\pm$4.50 g were randomly divided into three groups: control (ethanol treated, vitamin E-deficient group); 5% chamchwi (ethanol-treated, 5% chamchwi powder-supplemented group): 10% chamchwi (ethanol-treated, 10% chamchwi powder-suplemented group). Three groups of rats were suplemented with three experimental diets for 4 weeks and orally administrated 10% ethanol (v/v) daily via drinking water in the last experimental week. Contents of TBARS (thiobarbituric acid reactive substance). glutathione in liver and kidney and serum albumin were determined. The activities of superoxide dismutase (SOD), catalase and glutathione peroxidase (GSH-px) in liver and kidney were also analyzed. Relative weight of liver and spleen to body in chamchwi groups was lower than that in control group (p<0.05). The most remarkable result was that liver TBARS contents in chamchwi groups (5% chamchwi group, 46 $\mu\textrm{g}$ in MDA value; 10% chamchwi group, 35 $\mu\textrm{g}$) were significantly lower (p<0.05) than that in control group (66 $\mu\textrm{g}$). The supplement of chamchwi powder lowered the activity of manganese- superoxide dismutase (Mn-SOD), catalase in liver and GSH-px in kidney. The levels of glutathione in liver and kidney and serum albumin were not significantly different in all experimental groups (p<0.05). These results indicate that powdered herb of Aster scaber decreases lipid peroxidation and acitvity of Mn-SOD increased by alcohol-induced oxidative stress in liver of rats.

  • 참취(Aster scaber)는 국화과에 속하는 여러해살이식물로 취나물로 분류되어 전국에서 재배되고 있으며 주로 남부지역에서 조기재배 작형으로 많이 재배하고 있다. 참취의 잎과 줄기는 맛과 향기가 독특하여 예로부터 생채, 묵나물 등으로 이용되어 왔으며 칼슘, 철분, 비타민 A 등이 풍부하여 건강식품으로서도 가치가 높고 한약재로도 사용되기도 한다. 최근에는 항암효과와 더불어 콜레스트롤을 저하시키는 약리적 효능이 있는 것으로 밝혀져 기능성 식품으로도 각광 받고 있다. 참취 시설재배 시 통상 3년 마다 갱신이 이루어지고 있는데 그 이유로는 시설재배지 특성상 양분의 과다투입에 의한 염류집적과 잦은 관수로 물리성이 악화되어 참취의 생육이 저하되어 수량이 감소하는 결과를 초래한다. 본 연구는 토양개량제 처리에 따른 참취의 생육과 토양 물리화학성에 미치는 영향을 검토하여 참취 시설재배 농가에 활용할 수 있는 방안을 개발하고자 시험을 수행하였다. 2018년 4월부터 2019년 9월까지 전라북도 농업기술원 허브산채시험장에서 참취 시설재배를 대상으로 하고 무처리, 볏짚 1,000 kg/10 a, 왕겨 숯 1,000 kg/10 a, 야자섬유 1,000 kg/10 a, 4처리구로 하여 시기별 생육 및 토양특성을 조사하였다. 수확기 참취 생육특성은 초장은 25.6~27.2 cm, 엽장은 8.5~9.7 cm, 엽폭은 6.3~7.0 cm, 경직경은 4.3~4.6 cm, 및 수량은 $3.3{\sim}4.0kg/3.3m^2$으로 볏짚 처리구에서 대조구에 비해 좋은 생육 상황을 보였으며 수량성 또한 많았다. 시험 후 토양화학적 특성을 조사한 결과 토양 pH는 7.4~7.5, 토양유기물 함량은 34~36 g/kg, 유효인산 함량은 386~415 mg/kg 이었으며 처리 전 토양에 비하여 유기물 함량은 증가하고 유효인산은 낮아지는 경향을 보였다. 치환성 양이온 K, Ca, Mg는 K는 $0.8{\sim}1.0cmol_c/kg$로 낮아졌고, Ca와 $8.9{\sim}10.1cmol_c/kg$, Mg는 $3.1{\sim}3.4cmol_c/kg$로 증가하였다. 토양물리성의 변화는 왕겨숯 시용에서 대조구에 비해 가장 낮은 용적밀도 $1.22g/cm^3$와 가장 높은 공극률 54.09%을 보였다. 토양 삼상은 고상은 볏짚에서 51.98%로, 액상은 야자섬유에서 28.64%로, 기상은 왕겨숯에서 29.35%로 가장 높았다. 참취 시설재배지 토양개량제 시용함으로써 토양의 유기물함량 증가와 토양의 용적밀도 감소와 토양양 공극율 증가 등 토양의 물리 화학성을 개선할 수 있을 것으로 기대된다. 본 연구는 2년차 시험 결과로서 3년차에 재검토할 계획이다.

  • 참취(Aster scaber)는 국화과에 속하는 여러해살이식물로 취나물로 분류되어 전국에서 재배되고 있으며 주로 시설재배지 조기재배 작형으로 많이 재배하고 있다. 참취의 잎과 줄기는 맛과 향기가 독특하여 예로부터 생채, 묵나물 등으로 이용되어 왔으며 칼슘, 철분, 비타민 A 등이 풍부하여 건강식품으로서도 가치가 높고 한약재로도 사용되기도 한다. 최근에는 항암효과와 더불어 콜레스트롤을 저하시키는 약리적 효능이 있는 것으로 밝혀져 기능성 식품으로도 각광 받고 있다. 참취 시설재배 시 통상 3년 마다 갱신이 이루어지고 있는데 그 이유로는 시설재배지 특성상 양분의 과다투입에 의한 염류집적과 잦은 관수로 물리성이 악화되어 참취의 생육이 저하되어 수량이 감소하는 결과를 초래한다. 본 연구는 토양개량제 처리에 따른 토양 물리화학성과 참취의 생육에 미치는 영향을 검토하여 참취 시설재배 농가에 활용할 수 있는 방안을 개발하고자 시험을 수행하였다. 2018년 4월부터 2020년 7월까지 전라북도 농업기술원 허브산채시험장에서 참취 시설재배를 대상으로 무처리, 볏짚 1,000kg/10a, 왕겨숯 1,000kg/10a, 야자섬유 1,000kg/10a, 4처리구로 하여 시기별 토양특성 변화 및 생육 상황을 조사하였다. 자재 처리 후 3년차 토양 물리성의 변화는 볏짚 시용에서 가장 낮은 용적밀도 1.23g/cm3와 가장 높은 공극률 53.50%을 보였다. 토양 삼상은 고상은 왕겨숯에서 49.41%로, 액상은 왕겨숯에서 24.92%로, 기상은 볏짚에서 32.09%로 가장 높았다. 토양화학적 특성을 조사한 결과 토양 pH는 7.2~7.3, 토양유기물 함량은 32~39g/kg, 유효인산 함량은 440~487mg/kg 이었으며 처리 전 토양에 비하여 유기물 함량은 증가하고 유효인산은 낮아지는 경향을 보였다. 치환성 양이온 K, Ca, Mg는 K는 0.77~0.88cmolc/kg로 낮아졌고, Ca와 11.56~14.09cmolc/kg, Mg는 2.93~3.22cmolc/kg로 증가하였다. 참취 생육특성은 초장은 24.8~26.4cm, 엽장은 8.3~8.7cm, 엽폭은 6.3~6.7cm, 줄기수는 6.9~7.2주로 대조구에 비해 좋은 생육 상황 상황을 보였으며, 수량은 919~1,161kg/10a 으로 자채 처리구에서 대조구에 비해 수량성 또한 높았다 참취 다년재배지 토양개량제 시용함으로써 토양의 유기물함량 증가와 토양의 용적밀도 감소와 토양 공극율 증가 등 토양의 물리화학성을 개선할 수 있을 것으로 기대된다.

Effects of Growth Regulators, Temperature, and Light on the Germination in Wild Vegetable (Chwinamul) Seeds (生長調節劑 , 溫度 및 光이 취나물류의 種子發芽에 미치는 影響)

  • This study was conducted to determine the effects of growth regulators, temperature, and light on the germination of Chwinamul(Aster scaber, Aster tataricus, Synurus deltoides, Solidago virga-aurea var. asiatica, Ligularia fisheri) seeds. Compared to GA, IAA, and kinetin, BA (150ppm) stimulated best seed germination of all five species under the both light and dark condition at $25^{\circ}C$. The effect of growth regulators was not observed significantly under the light condition except of Ligularia fisheri and Synurus deltoides while it was shown markedly under the dark condition. Germination rates of Ligularia fisheri and Synurus deltoides in different concentration of BA were relatively higher under the light at $15^{\circ}C$ while those of other species varied in different concentration and temperature.

A Study on the Chemical Composition and Hypocholesterolaemic Effect of Aster scaber and Ixeris dentata (참취 및 씀바귀의 성분조성과 혈청 지질저하작용에 대한 연구)

  • The effects of Aster scaber(Cham chyi) and Ixeris dentata(Sumbagui) of composite were studied on lipid metabolism in rats. Thirty rats were divided into five groups and fed diets containing 1% cholesterol, 0.25% sodium cholate, 10% coconut oil and 5% lard(control group) for 4 weeks. For each experimental diet added was 5% plant powder or extract of the plant which was equivalent to 5% Plant powder by dry weight. The lipid components of serum were assayed. The concentration of the total cholesterol was significantly lower in Cham chyi, and Sumbagui powder and the extract groups of those powder than the control group. The concentration of HDL-cholesterol was significantly higher in rats fed Cham chyi and Sumbagui powder than the control group. The concentration of LDL, LDL-cholestrol, VLDL and chylomicron were comparatively lower in Cham chyi and Sumbagui powder groups than those in the control group. The concentration of seum triglyceride was lower in Cham chyi powder fed group than the control group.
