Study on the technique improvement of vacuum packaging for rice exported (수출 쌀 진공포장기술 개선 연구)

  • 2016년부터 중국에 수출한 진공포장 쌀이 진공이 풀려 중국 현지 소비자들에게 품질에 대한 신뢰저하로 외면 받아 판매에 어려움을 겪었다. 진공풀림 원인은 주로 포장재의 모양, 과열 열접착 및 운송 중 부주의 등을 들 수가 있다. 따라서 본 연구에서는 쌀 진공포장 후 진공 풀림현상이 발생되는 원인을 분석하고, 진공포장에 적절한 포장재 및 취급조건에 대해 구명하여, 중국 쌀 수출 시 품질신뢰도 및 경쟁력 제고로 쌀 수출 확대를 위해 진공 포장재, 진공포장기술 및 운송 취급 방법을 제시하고자 하였다. 미곡종합처리장에서 사용하고 있는 플라스틱 필름 포장재의 적합 여부를 살펴보기 위하여 산소투과도 및 투습도를 산소투과도 측정장치(OX-Tran Model 2/61, Mocon, USA), 투습도 측정장치(Permatran-W Model 3/33, Mocon, USA)를 이용하여 측정하였다. 적정 열접착 온도를 구명하기 위하여 열접착 작업시간 간격 3, 5, 10초 3수준으로 하고 가열시간을 0.2초~2초까지 9수준으로 설정하여 포장필름을 열접착한 후 접착상태를 조사하였다. 진공 포장된 쌀을 골판지상자에 2차 포장하여 운송할 때 진공풀림 현상이 발생 여부를 조사하기 위해 가상 운송시험을 진동시험 장치를 이용하여 수직 및 수평으로 진동시험을 수행하였으며, 또한 취급조건에 따라 진공풀림을 조사하기 위하여 골판지 상자단위, 비닐포장 단위로 50, 70, 90cm 높이에서 낙하 시험을 하고 진공풀림여부를 조사하였다. 유통 중인 쌀 진공 포장재는 나이론(nylon)+선형저밀도폴리에틸렌(LLDPE) 복합필름으로 산소투과도가 $30{\sim}70cc/m^2{\cdot}day$, 투습도가 $2{\sim}4.5g/m^2{\cdot}day$로 산소투과도 및 투습도가 충분히 낮아 진공포장재로 적합했으며, 적정 열접착온도 조건은 $130{\sim}150^{\circ}C$에서 1~1.5초가량 가열해야 되는 것으로 조사되었다. 진동시험 및 낙하시험결과, 골판지박스 포장 시 완충재를 사이에 넣은 경우 진골풀림이 적었고, 상자단위나 비닐포장단위 모두 가능한 50cm보다 높은 곳에서 낙하충격을 받지 않도록 취급해야 할 것으로 판단되었다.

Quality Changes of Rosemary-Onion Kimchi by Packaging Materials during Storage (포장재를 달리한 로즈마리 양파김치의 저장 중 품질 변화)

  • This study was carried out to investigate the effect of packaging materials (Ny/PE, PET/Al/PE, PET/PE/LDPE/CPP, PET/Al/Ny/CPP films, and bottle) and packaging methods (atmosphere and vacuum) on the physicochemical properties of Onion Kimchi and Rosemary-onion Kimchi stored at $5^{\circ}C$. Reducing sugar contents and pHs of Onion Kimchi and Rosemary-onion Kimchi decreased, whereas levels of titratible acidity and vit C contents increased with increasing the storage time. The fermentation of Rosemary-onion Kimchi was slower than that of Onion Kimchi. PET/PE/LDPE/CPP film was the most effective for Onion Kimchi packaging among all packaging materials tested.

Effect of Vacuumizing Conditions on Quality Changes of Flexible Package Kimchi (초기 진공조건이 유연포장 김치의 품질변화에 미치는 영향)

  • Kimchi vacuum packaged in PET/AI/PE pouch was stored at $0^{\circ}C\;and\;10^{\circ}C$ to evaluate the effect of vacuumizing conditions on quality changes. The quality of kimchi during storage was investigated in terms of pH, titratable acidity, color, viable counts of lactic acid bacteria including Leuconostoc and Lactobacilli and sensory properties. Titratable acidity and pH were not significantly different for the vacuum degrees. Color index (L b/a) values of crushed kimchi juice decreased exponentially and remained constant during storage, but the resulting color change was not affected by the vacuum degrees. Viable counts of lactic acid bacteria and sensory scores exhibited no significant difference among the kimchi of different vacuum degrees. Consequently, the vacuum degree in packaging of kimchi seemed to influence little on quality of kimchi. For enhancing the commercial value of vacuum packaged kimchi products, it would be appropriate to produce a slight vacuum, eliminating the head space, within packages.

Status of Packaging Materials for Frozen Foods and Analysis of Temperature Changes inside Packaging Materials during Frozen Process (냉동식품용 포장재 현황 및 냉동 과정 중 포장재 내부 온도 변화에 관한 연구)

  • This study analyzed various packaging materials and types for frozen foods and the effects of packaging materials on temperature changes during frozen process. Pouches with different film thickness were prepared and placed in an IQF freezer, then the temperature inside pouches measured using a deep thermometer. The most common types of primary packaging for frozen foods in the market was plastic pouches with polyethylene or polyamide/polyethylene multilayer materials. The temperature change inside of packaging was delayed with film thickness increased. As the size of packaged food increased, the temperature change inside the food was slowed down. In addition, the pouches with air inside took more time to reach $-30^{\circ}C$ compared to pouches with less air during frozen process. This study provides information on packaging materials and types for frozen foods and preliminary data of temperature change by different types of packaging.

Effects of Packaging Method on Physico-chemical Properties of Korean Beef (포장방법이 냉장 쇠고기의 이화학적 성질 변화에 미치는 영향)

  • The purpose of our study is to investigate the changes of physico-chemical properties according to packaging methods(vacuum packaged with polyamide/polyethylene, air packaged with polyvynyl-chloride) and illumination on the properties of Hanwoo beef. pH value in vacuum packaged beef tended to be decreased, but pH value in air packaged beef tended to be increased during storage for 21 days, irrespective of illumination. Contents of volatile basic nitrogen(VBN) and thiobarbituric acid(TBA) values were increased, regardless of packaging methods. However, vacuum packaged beef showed lower VBN, TBA values than those of air packaged beef. Red color(CIE a value) was also decreased. Regardless of packaging method, saturated fatty acids(SFAs) were increased, but unsaturated fatty acids(UFAs) were relatively decreased. And in the ratio of the UFA/SFA, vacuum packaged beef had lower UFA/SFA ratio than that of air packaged beef. In this study, the effect of illumination did not change on physico-chemical properties in Hanwoo beef. In conclusion, the results indicate that the vacuum packaging treatment was more important to prolong the shelf-life of Hanwoo beef than air packaging method.

Effects of Sterilization Temperatures and Internal Air Volumes of a Pouch on the Quality of Retort Rice (살균온도 및 포장재내 공기량이 레토르트 쌀밥의 품질에 미치는 영향)

  • Various sterilization temperatures $(110^{\circ}C,\;120^{\circ}C,\;130^{\circ}C)$ and air volumes (air, 31ml, half-vacuum; 13ml, vacuum; -0.7ml) within the retort pouch were tested for the development of the simple retort rice processing techniques in which the pouch were filled with rice and water, and then sterilized. Water content of retort rice was found to be 59.0-63.3% resulting from mixing the rice and water in the ratio of 1:1.1. The most uniform water content was obtained from retort rice sterilized at $130^{\circ}C$ and packaged under vacuum. The larger water content differences were observed with the increase in internal air volumes within the retort pouch. Spreading degree of retort rice was geater than that of general cooked rice, was lower in upper layer than in low layer, and became lower with the larger air volume and higher sterilization temperature. a degree of rice became higher with the Increase of sterilization temperature but that was not affected by the internal air volume of the pouch. The higher sterilization temperature and the lower the air volume, the higher the whiteness was. The highest whiteness was obtained by packaging under vacuum and sterilizing at $130^{\circ}C$. Intact degree was much higer in packaging under air than vacuum. In sensory evaluation the retort rice of vacuum pack was good in color and spreading degree but not in appearance because of blocking and deforming, but that of air pack was good in texture on the contrary. The best quality was obtained by packaging under half-vacuum and sterilizing at $130^{\circ}C$.

Effects of Various Packaging Materials on the Quality of Heat Treated Lotus Roots during Storage (포장재질에 따른 열처리한 연근의 저장 중 품질변화)

  • This study was investigated the changes in quality of heat treated fresh-cut lotus roots using various packaging materials. Lotus roots were purchased from Daegu, Korea. Lotus roots were washed, peeled and sliced with a sharp ceramic knife. The prepared peeled and sliced lotus roots were dipped for 45 sec in water at $55^{\circ}C$. After air-dried at room temperature, the slices were packaged with polyethylene films, polyethylene terephthalate tray+wrapping, vacuum packaging and then stored at $4^{\circ}C$. Changes in weight loss, color, firmness, microorganisms and sensory characteristics were measured. In general, the weight loss rate was increased slightly in vacuum packaged lotus roots. Application of heat treatment delayed browning of lotus roots, and especially vacuum packaged lotus roots were the most lowest ${\Delta}E$ value. However, L and ${\Delta}E$ value of PE film packaged lotus roots were increased highly during storage. The heat treated and vacuum packaging inhibited the growth of microorganisms effectively. The organoleptic quality of vacuum packaged lotus roots showed the best by sensory evaluation.

Quality and Shelf-Life of Vacuum Packed RTE (Ready-To-Eat) Hamburg Steak Depending on the Oxygen Permeability of Packaging Material and the Storage Temperature (포장재의 산소투과도와 저장온도에 따른 즉석섭취형 햄버그스테이크의 품질 및 저장성)

  • This study investigated the effects of the oxygen permeability of vacuum packaging film and the storage temperature on the quality and shelf life of Hamburg steaks during storage for 14 days. Control samples (C) were packaged in a polyamide/polyethylene (PA/PE) film and stored at $5^{\circ}C$. Treatment samples were either packaged in an ethylene vinyl alcohol/polyethylene (EVOH/PE) copolymer film and stored at $5^{\circ}C$ (T1), and in a PA/PE film and stored at $-18^{\circ}C$ (T2). The initial total plate count (TPC) was 3.6 log cfu/g. In T1 samples, TPC and Brochothrix thermosphacta counts were increased, similar to those in C samples, whereas Pseudomonas spp. counts were significantly lower than those in C samples during storage. Over the storage period, the volatile basic nitrogen values increased most rapidly in C samples, followed by T1 and then T2 samples. The values of thiobarbituric acid reactive substances steadily increased in all samples during storage. The colour parameters were not significantly different among the samples during storage. T1 samples maintained sensory qualities in flavour and off-odour parameters for two days longer than C samples did. At day 12, T2 samples were evaluated as being below the marketability score of 5.0 for texture. In conclusion, using high oxygen barrier films like EVOH/PE copolymer for packaging Hamburg steaks could extend the sensory qualities in view of flavour and off-odour during chilled storage. However, frozen storage at $-18^{\circ}C$ is recommended when the storage period is extended beyond 14 days at $5^{\circ}C$.

Effect of $CO_{2}$ Gas Packaging on the Shelf-life of Refrigerated Pork Cuts (탄산가스 포장에 의한 신선돈육의 저장성향상에 관한 연구)

  • Shelf-life of pork packaged under $CO_{2}$ was observed and the optimal volume of $CO_{2}$ gas was determined. High gas barrier film, EVOH($CO_{2}$ permiability; 1 $cc/cm^{2}{\cdot}24\;h{\cdot}atm$) was used as packaging material and the volume ratios of sample to $CO_{2}$ of 1 : 1, 1 : 3 and 1 : 5 were tried using the control of vacuum packaged pork. To ev.3luate quality of pork cuts, total plate counts, TBA, color and sensory score were monitored during the storage at $4{\pm}1^{\circ}C$ for 31 days. TPC of vacuum packaged pork increased up to $4.6{\times}10^{6}\;CFU/cm^{2}$ in 24 days while that of $CO_{2}$ gas packaged pork $4.5{\times}10^{5}\;CFU/cm^{2}$ at the same storage period, and it took 7 days more for gas packaged pork to reach the same TPC count. There was no significant difference in TBA value between vacuum packaged and gas packaged pork. In the color L and a values were not affected by treatment but vacuum packaged pork cuts showed higher b value than gas packaged pork. According to sensory evaluation, gas packaged pork showed less off flavor, better flavor and freshness than vacuum packaged one (P<0.05).

Electrical Conductivity Properties of the Vacuum Forming Packing Materials by Ion Implantation (이온주입에 의한 진공성형 포장재의 전기전도 특성)

  • A study has been made of surface modification of various organic materials by ion implantation to increase the surface electrical properties. The substrate used were PP(polypropylene), PET(polyethylene teraphthalate), ECOP(ethylene copolyester), PS(polystyrene). N$_2$, Ar ion implantation was performed at energies of 40 and 50keV with fluences from 5${\times}$ 10$\^$15/ to 7${\times}$10$\^$16/ ions/$\textrm{cm}^2$ with and without H$_2$O gas environment. Surface resistance decrease of implanted polymers was affected by ion implantation energy, ion species, atmosphere of chamber and kind of polymer. In result, surface conductivity of polymers irradiated with atmosphere gas H$_2$O was 10 times more higher than normal vacuum atmosphere, but after 90 hours, surface conductivity returned to the without H$_2$O gas atmosphere condition caused by aging effect. After vacuum forming, surface resistance value was changed to over 10$\^$16/$\Omega$/$\square$, because creation of surface cracks.
