Flavor Components in Sun-Dried Ray (마른 가오리의 풍미성분(風味成分))

  • To investigate the flavor components of sun-dried ray, Raja porasc, the contents of such as free amino acids, nucleotides and their related compounds, total creatinine, betaine, TMAO, fatty adds, and volatile compounds were analysed. The content of total free amino acids was 1773.3mg% on dry basis and the abundant amino acids were taurine, lysine, leucine, alanine, glycine, glutamic acid, proline, and valine in order and these amino acids accounted for 80% of total free amino acids in sun-dried ray. In the nucleotides and their related compounds, hypoxanthine was the most abundant. Ammonia-N was the most abundant, resulting 26.4% of extractive nitrogen which was 1965.6mg% and next free amino acid-N, total creatinine-N, and nucleotide-N in order. In the fatty acid composition of total lipid and neutral lipid, polyenoic acid was abundant holding 42.0%, 45.3% respectively. In phospholipid, the ratio of polyenoic acid and saturated fatty acid were similar to 39% respectively. The predominant fatty acids in total lipid, neutral lipid, and phospholipid were $C_{16:0},\;C_{22:6},\;C_{18:1},\;C_{18:0},\;and\;C_{20:4}$. In the volatile compounds, isocaproic acid, caproic acid, isobutyric acid, and butyric acid were the major portion of the 8 kinds of volatile fatty acids detected and 2-butanone, pentanal, and 2-methylpropanal were the major portion of the 8 kinds of volatile carbonyl compounds detected and also trimethylamine was the major portion of 2 kinds of volatile amines detected. It was presumed from the results that the reciprocal action of taste compounds such as free amino acids, nucleotides and their related compounds total creatinine, betaine, and TMAO and volatile compounds such as volatile carbonyl compounds, volatile fatty acids, volatile amines, and ammonia played an important role for the characteristics of flavor of sun-dried ray.

Concentrations of VOCs in Groundwater Associated with Land Uses in Ulsan Area (토지이용에 따른 울산지역 지하수의 VOCs 함량 특성)

  • Contamination of groundwater by volatile organic compounds (VOCs) was investigated for 168 groundwater wells in Ulsan area to study the natural attenuation of organic compounds in the aquifers. As groundwater contamination by VOCs is closely related to land use, 168 groundwater samples were classified into 4 different groups; agricultural, forestry, industrial, and residential & business. From analysis 65 out of 168 groundwater samples contained more than one VOC. Analysis of samples were performed fir 36 halogenated aliphatic hydrocarbons and 25 petroleum hydrocarbons set up by NAWQA of US geological survey. Twelve petroleum hydrocarbons were detected in 26 groundwater wells, but their concentrations were less than 1.5 g/L except for MTBE. Twenty three chlorinated aliphatic hydrocarbons, composed of 11 methanes, 6 ethanes and 6 ethenes, were detected in 63 groundwater samples. The range of methanes concentration was $ND\~330\;/gL,\;ethanes\;ND\~84\;gL$, and PCE and their derivatives $ND\~62\;g/L$. As the study area was comprised of the aerobic/denitrification zones and $Fe^{+3}$ redox condition, most of petroleum hydrocarbons were degraded well, while halogenated hydrocarbons were slowly biodegradation.

Chemical Composition and Biological Activities of Elsholtzia ciliata (Thunb.) Hylander (향유의 향기성분 분석 및 생리활성 검정)

  • This study was carried out to investigate the chemical composition of essential oils, absolutes and oleoresins isolated from Elsholtzia ciliata and the biological activities of them. Yields of essential oils, absolutes and oleoresins were 0.34%, 11.33% and 15.24%, respectively. The major component was naginate ketone in essential oils, methyl linolenate in absolutes and 9,12,15-octadecatrienoic acid in oleoresins. Eseential oils and oleoresins showed the inhibitory activities in enzyme-dependent, enzyme-independent and autooxidatve lipid peroxidation systems. $EC_{50}$ values in neutral red uptake assays 24 h of exposure times were $23.3\;{\mu}g/m{\ell}$, $341.0\;{\mu}g/m{\ell}$ and $17.2\;{\mu}g/m{\ell}$ in essential oils, absolutes and oleoresins, respectively, and essential oils and oleoresins showed the cytotoxic effect at the only high dose. Absolutes and oleoresins did not show antibiotic and mutagenic activities. On the contrary, essential oils with over $500\;{\mu}g/plate$ showed antibiotic and mutagenic activities in Ames test. Essential oils and oleoresins have a prolongating effect the ciliostasis of rat trachea.

Geochemistry of the hydrocarbon gases in the Pohang Area (포항 지역 지하수에 분포하는 탄화수소 가스의 지화학)

  • Chemical components of water, chemical and isotopic compositions of extractable gases were analyzed to characterize the properties of the natural gases which are dissolved in ground water in the Pohang area. Amount of total extracted gases ranges from 27 ml/l to 50.1 ml/l. Hydrocarbon gases are composed of methane ($27{\~}376,420 ppm$) and ethane ($19{\~}127 ppm$). Amount of total hydrocarbon gases is related to the lithology and geological factors around the reservoir. Quantity of hydrocarbon gases tends to increase in the Tertiary reservoirs and in the reservoirs where the Tertiary formations are thick enough. According to the relationship between hydrocarbon gases and total solids in the ground water, it is believed that the hydrocarbon gases were dissolved in the Tertiary formation water. Based on the methane content ($>99.9\%$) and isotopic composition (${\delta}C^{13};-73.1\%_{\circ}{\~}-43.22\%_{\circ}$), we interpret the gases to be of predominantly biogenic origin which were generated by the methanogenic bacterial processes under the low temperature and anoxic conditions.

Studies on the Lipid Components in Sweetfish from Korea-2 Comparison of the contents of neutral and phospholipid components (한국산 은어의 지질성분에 관한 연구- 2 중성지질 및 인지질의 성분 비교)

  • The class and fatty acid composition of neutral lipid(NL) and phospholipid(PL) of Korean sweetfish were experimented. The NL was mainly consisted of triglyceride ($94.8{\sim}99.5\%$), and also identified free sterol($0.29{\sim}2.77\%$), sterol ester and diglyceride in less quantity. Triglyceride content of viscera was much higher than those of other tissues. Main components in the PL were phosphatidylcholine(PC, $7.9{\sim}61.6\%$), phosphatidyl ethanolamine(PE, $19.3\%{\sim}39.3\%$) and followed by diphosphatidyl glycerol and sphingomyelin. PC and PE contents were higher in muscle and head tissues. The major fatty acids in NL fractions of sweetfish were 16:0, 18:1n-9, 16:1n-7, 18:2n-6, 18:0 and 14:0. Fatty acid composition of NL was similar to those of total lipid and were not significantly different among the fishes, the large and small sweetfish. In case of PL fractions, the major fatty acids were 16:0, 18:1n-9, 22:6n-3, 18:0 and 18:2n-6.

  • 산초종피 메탄올 추출물과 heperoside의 사전투여가 사염화탄소에 의해 예상되는 혈청지질설분의 농도 변화에 미치는 효과를 밝히기 위해 ICR계 mouse를 대상으로 실험한 결과는 다음과 같다. 사엽화탄소로 혈청 총콜레스테롤 농도가 유의적으로 증가되었으나, 산초 메탄올 추출물과 hyperoside의 사전투여는 사염화탄소에 의한 이의 증가를 유의적으로 억게시켰으며, 20mg/kg hyperoside투여군에서 그 효과가 가장 높았다. 사염화탄소로 혈청 HDL-cholesterol농도가 유의적으로 감소되었으나, 산초 메탄올 추출물과 hy-peroside의 사전투여는 사염화탄소에 의한 이의 감소를 유의적으로 억제시켰으며, 20mg/kg hyperoside투여군에서 그 효과가 가장 높았다. 사염화탄소로 혈청 LDL-cholesterol농도가 유의적으로 증가되었으나, 산초 메탄올 추출물과 hyperoside의 사전투여는 사염화탄소에 의한 이의 증가를 유의적으로 억제시켰으며, 20mg/kg hyperoside 투여군에서 그 효과가 가장 높았다. 사염화탄소로 혈청 triglyceride 농도가 유의적으로 증가되었으나, 산초 메탄올 추출물과 hyperoside의 사전투여는 사염화탄소에 의한 이의 증가를 유의적으로 억제시켰다.

  • 실험동물에서 곰피로부터 분리한 phlorglucinol은 acetaminophen의 투여로 현저히 증가된 간조직에 있어서 지질과선화의 함량을 억제하였다. Acetaminophen 투여에 따른 간 cytochrome P-450, aminopyrine N-deme-thylase 및 aniline hydroxylase 활성변동은 관찰할 수 없었다. 곰피 성분 투여군은 glutathione S-transferase의 활성에서는 대조군의 수준에는 미치지 않으나 효소의 활성이 acetaminophen 단독 투여군보다 현저히 증가되었다. 그리고 간조직중 glutathione의 함량은 phlorglucionl을 전처리군에서 acetaminophen 단독 투여군보다 증가되었다. Glutathione reductase 활성에서는 acetaminophen 투여군은 대조군보다 활성이 감소되었으며, 성분으로 전처리한 군은 acetaminophen 단독 투여군보다 증가 되었다. 따라서 곰피에서 분리한 페놀성화합물인 phloroglucinol은 acetaminophen 투여로 증가되던 지질과 산화함량을 감소시키며, acetaminophen 대사효소활성에서는 glutathione S-transferase의 활성이 증가되어 acetaminophen 의 대사를 촉진시키는 것으로 추정된다.

  • Effect of fried beancurd containing powered green tea on the serum lipid metabolism in rats were investigated. HPLC analysis of green tea-fried beancurd showed that epigallocatechin, epicatechin, epicatechin gallate and epigallocatechin gallate were intact without degradation during manufacturing process. Serum HDL-cholesterol, LDL-cholesterol, triglyceride and glucose concentrations were measured in rats fed experimental diet containing green tea-fried beancurd. Serum LDL-cholesterol contents and blood glucose were significantly decreased with treatment of green tea-fried beancurd comparing to control.

  • 화에 따른 연두금파리(Lucilia illustris Meigen) 타액선의 미세구조 변화와 타액선 내부에 함유된 분비물질의 형성과정 및 물질의 성분을 전자현미경 및 효소세포화학적 방법으로 관찰하였 다. 종령유충기의 타액선은 식도의 좌우에 위치한 한쌍의 반투명한 관으로 단층으로 배열된 편평형의 세포들로 이루어져 있었다. 세포질에는 조면소포체와 골지복합체가 풍부하였고, 세포내 물질의 생성이 매우 활발하였으며, 세포질내에 축적된 분비과립은 부분분비에 의해 배출되었다. 전용기의 타액선은 세포가 비후해짐에 따라 타액선의 내감이 줄어들며 타액선의 길이도 감소하였으며, 세포질내 조면소포체의 양적 감소와 대형분비과립의 형성이 현저하였다. 용기에는 대형의 자식성 액포들이 황범위하게 형성되어 있었으며 이는 유충시기의 타액선이 변태과정을 거치며 퇴화되는 것으로 사료되었다. 타액선 세포에 대한 acid phosphatase외 반응은 주로 내강면에 인접한 리소조옴에서 양성반응이 나타났으며, 종령유충 시기의 타액선 세포질내 지질성분은 주로 기저부에 존재하였으나, 용 형성 48시간 이후에는 관찰되지 않았다.

Lipid Composition of Roe, Muscle and Viscus of Liza Carinata, a Species of the Mugilidae Family (등줄숭어의 알, 근육 및 내장의 지질조성에 관한 연구)

  • Total lipids from the roe, muscle and viscus of L. carinata were analyzed for lipid composition by column chromatography, thin-layer chromatography and gas-liquid chromatography. The roe lipids were characterized by a high level of wax esters (63.1%) and a low proportion of trigiycerides (9.9%). The viscus lipids also contained wax esters (32.8%) as its main component, followed by free fatty alcohols and acids (23.5%). On the other hand, the muscle lipids were found to contain a large amount of triglycerides (66.1%) with a trace of wax esters. The main fatty alcohol component of roe and viscus wax esters was C16:0 alcohol (53.0%; 61.7%), accompanied by C18:1 alcohol (10.2%) in the former and by C15:0 alcohol (8.8%) in the latter. Considerable amounts of odd-numbered fatty alcohols were found in both wax esters. On the other hand, the fatty acids of the roe and viscus wax esters contained a high percentage of monounsaturated (49.7%-56.6%) consisting of C16:1, C18:1 and C17:1 acid, and a significant amount of polyunsaturated (41.2%-32.9%), particularly C20:5${\omega}$3. The fatty acid components of triglycerides and phospholipids were different among the tissues tested, especially between roe and muscle or viscus. The fatty acid compositions of free fatty acids from the muscle and viscus were characterized by a higher level of polyunsaturated fatty acids (46.0-34.3%) compared to those of triglycerides 'in the roe, muscle and viscus (28.4%, 19.4% and 19.2%).
