Effects of heating conditions and seed roasting on the lipid oxidation and antioxidants of perilla seeds were studied. Perilla seeds, that were unroasted or roasted at $180^{\circ}C$ for 20 min, were ground and heated over steam at $100^{\circ}C/1$ atm or at $135^{\circ}C/2$ atm. Lipid oxidation was evaluated by peroxide value, conjugated dienoic acids contents, and fatty acid composition. Tocopherols and polyphenols were also determined. Lipid oxidation of perilla seeds was higher during heating at $135^{\circ}C/2$ atm than at $100^{\circ}C/1$ atm, and the oxidation rate was lower in unroasted seeds than in roasted seeds. Degradation of tocopherols and polyphenols in perilla seeds during heating was faster under high pressure and temperature, and was decreased by seed roasting. Contribution of polyphenols to the oxidative stability of perilla seeds during heating was higher than that of tocopherols, suggesting polyphenols and seed roasting as important factors in lipid oxidation of perilla seeds.
Raw adlay powder (RAP) and processed adlay powder (PAP) were prepared and the changes of fatty acid compositions of lipids in RAP and PAP during storage at $5^{\circ}C\;and\;35^{\circ}C$ for six months were studied. The major fatty acids found in the adlay lipids were oleic acid (28-45%), linoleic acid (38-50%) and palmitic acid (14-18%). Throughout the storage period, the concentrations of linoleic acid were decreased in samples stored at $35^{\circ}C$, but those of oleic acid and palmitic acid were relatively increased according to the oxidation proceeded. However, the concentrations of these fatty acids were hardly changed in samples stored at $5^{\circ}C$. These changes were especially more notable in the lipids from RAP than those from PAP during storage Little difference in fatty acid composition was noted between neutral lipids and triglycerides in the samples.
The effects of chlorophyll (0.33 mg/kg) and ${\beta}$-carotene (3.3, 9.9, 19.8 mg/kg) addition to a mixture of roasted perilla seeds, rice, and water (30:45:225, w/w/w) on the lipid oxidation and tocopherol contents were studied during heating at $100^{\circ}C$ for 120 min to simulate cooking of perilla and rice porridge. Lipid oxidation was evaluated with peroxide values (POV) and conjugated dienoic acid (CDA) values, and chlorophyll, ${\beta}$-carotene, and tocopherols were determined by HPLC, POV, and CDA values were increased during heating, indicating the occurrence of lipid oxidation in the perilla and rice porridge. ${\beta}$-Carotene decreased the POV and CDA values of the samples in a concentration-dependent manner, while the addition of chlorophyll did not affect them. Chlorophyll and ${\beta}$-carotene which were added, and tocopherols naturally present in samples were degraded, following the first order kinetics during heating, and ${\beta}$-carotene protected tocopherols from degradation.
The extraction characteristics of lipids from powdered sea mustard have been investigated by the use of supercritical carbon dioxide($SC-CO_2$) and cosolvents. The extraction rate was increased as the particle size of the sea mustard is smaller, the pressure is higher, the temperature is lower, and the quantities of the fluid is more. However, the extraction yield of lipids from sea mustard was almost constant at a given condition. The optimum extraction condition was determined with the extraction yield of $1.45wt\%$ at 300um of particle size, 313K of $SC-CO_2$ temperature, 13.8MPa of pressure, and 30L/min of flow rate. Ethanol was the most efficient cosolvent among ethanol, methanol, and hexane. The extraction yield was increased at about 2.21times by the addition of ethanol as a cosolvent to $SC-CO_2$. As the residence time and the average concentration of lipids were decreased, the mass transfer parameter($k_fa$) was increased. But the opposite result was obtained when the ethanol was used as cosolvent.
Lipid oxidation and antioxidant stabilities of nut-sesame yeotgangjeong (Korean traditional candy bar) with different binders were evaluated during storage in the dark. S1, S2, and S3 binders consisted of starch syrup, sugar, and water (58:34:7.6, w/w/w); starch syrup, jocheong, honey, trehalose, and water (43.5:11.6:2.9:34:7.6, w/w/w/w/w); and starch syrup, jocheong, honey, sugar, trehalose, and water (43.5:11.6:2.9:17:17:7.6, w/w/w/w/w/w); respectively. Lipid oxidation was determined by peroxide and p-anisidine values, and tocopherol, lignan, and polyphenol contents were determined spectrophotometrically. Peroxide values were significantly higher (p<0.05) in yeotgangjeong samples with S2 or S3 binder than in those with S1; however, the converse was true for tocopherol degradation. Lignan was the most stable antioxidant in yeotgangjeong. The results suggest that tocopherols have a priority over lignans to control the lipid oxidation of yeotgangjeong during storage; reduced lipid oxidative stability after substituting sugar with trehalose might be because it increases oxygen diffusivity and inhibits the antioxidant action of tocopherols on lipids.
The apple seed contained 25.96% of crude fat and 37.62% of crude protein. The lipid fractions obtained by cilicic column chromatography were mainly composed of about 93.52% neutral lipid, whereas compound lipid was only 6.48% level. Among the neutral lipid separated by thin layer chromatography, triglyceride was 92.17%, sterol ester, sterol, diglyceride and free fatty acid were 3.53, 2.25, 1.44 and 0.56, respectively. The predominent fatty acids of total and neutral lipids were linoleic acid (59.79-69.37%) and oleic acid (20.04-29.82%), but those of glycolipid and phojspholipid were linoleic acid (29.20-36.04%). The major fatty acids of triglyceride separated from neutral lipid were oleic acid (44.31%), linoleic acid (36.66%) and palmitic acid (12.48%). The salt soluble protein of apple seed was highly dispersible in 0.02M sodium phosphate buffer containing about 1.0M $MgSO_4$, and the extractability of seed protein was 37%, Glutamic acid was the major amino acid in salt soluble protein, followed by arginine and aspartic acid. The eletrophoretic analysis showed three bands in apple seed protein, and the collection rate of the main protein fraction purified by Sephadex G-100 and G-200 was 76.6%. Glutamic acid, aspartic acid and arginine were the major amino acids of the main apple seed protein. The molecular weight for the main protein of the apple seed was estimated to be 45,000.

This study was conducted to compare nutrient intakes regarding stages of change in dietary fat reduction behavior. Subjects were consisted of healthy 383 college students (250 females and 133 males) in Gyeonggi-Do. Stages of change classified by an algorithm based on 6 items were designed each subjects into one of the 5 stages: precontemplation (PC), contemplation (CO), preparation (PR), action (AC), maintenance (MA). Nutrient intakes were assessed by 24-hr recall method. Regarding the 5 stages of changes, PR stage comprised the largest group (31.1%), followed by AC (28.7%), PC (19.3%), CO (13.8%), MA (7.1%). Female were more belong to either AC or MA. Those in PC and PR had the most energy, fat, saturated fatty acid and cholesterol (except male) and those in AC and MA had the least. These dietary patterns were more distinctive in female than in male. The higher stage of change in dietary fat reduction behavior, the higher self-efficacy. Energy % from fat in PC, CO, PR was too higher than 20%, that of in AC and MA (except male in MA) was within 20%. The average P/S and $\omega$6/$\omega$3 ratio of diet fat for female were similar to the recommended ratio, but the average $\omega$6/$\omega$3 ratio for male was found to be 10.1~12.9, which was beyond the suggested range, 4~10. In male, energy, fat and protein intakes from dinner were significantly different among stages of change, but in female, besides dinner, those from breakfast, lunch and snack were significantly different among stages of change. These results of our study confirm differences in stages of change in fat intake in terms of nutritional status, especially in female, and indicate the need for taking these phases of changes into account in nutrition advice.
To produce low salt fermented anchovy by an accelerated method with Asp. oryzae and Bacillus sp. koji, enzyme activity and variation of microflora during the 60 day fermentation were examined. Bacterial counts changed a little during the fermentation with the highest on day 40 for proteolytic and anaerobic bacteria and on day 20 for aerobic bacteria. Proteolytic, lipolytic, aerobic, and anaerobic bacteria counts were higher in the Bacillus sp. koji added anchovy paste than in others. The protease and lipase activities reached the highest point on day 20 and 30, respectively, and decreased gradually afterwards. The protease activity was higher in Asp. oryzae koji than in bacillus sp. koji, but the lipase activity was to the contrary.
Mucor plumbeus FRI 0007 was grown on media containing starch solely as carbon source, urea as nitrogen source and minerals including magnesium, calcium and iron of different concentration. The ratio of nonpolar and polar lipid of the total lipid produced by the Muror plumbeus FRI 0007 changed by minerals added in the medium and incubation period. The nonpolar lipid content was higher on the medium containing only one mineral rather than 5 minerals and the nonpolar lipid consisted mainly of trig1yceride, free fatty acid and free sterol. The triglyceride content was higher on the medium containing one mineral and decreased with the incubation time lapse. The major fatty acid composition of total, nonpolar and polar lipid were oleic, palmitic and linoleic acid which comprised about 90% of total fatty acids and their compositions changed slightly depending on the minerals added in the medium.
In the present study, proximate compostions, fatty acid and amino acid compositions of wild and cultivated Dodok (Codonopsis laceolata B. et H.) were analysed. The contents of crude ash and crude protein were higher in the cultivated Dodok than in the wild Dodok. The main fatty acids in the total lipid, free lipid and bound lipid of wild and cultivated Dodok were linoleic acid, palmitic acid and followed by linolenic acid. In the case of wild Dodok, numerous unknown peaks were appeared significantly. The amino acids analyzed in wild aid cultivated Dodok were lysine, histidine, arginine, aspartic acid, threonine, serine, glutamic acid, proline, glycine, alanine, valine, methionine, isoleucine, leucine, tyrosine and phenylalanine. Arginine was the predominant amino acid in both wild and cultivated Dodok.
