Cooking Quality of Noodle Affected by the Additives (첨가물이 국수의 조리특성에 미치는 영향)

  • This study investigated the effects of various additives to cooking water on cooking quality of noodle. Addition of l% NaCl to boiling water showed a low amount of water absorption and good texture than the addition of sugar or oil at 1%. The types of salts (NaCl, CaCl, and MgSO$_4$) did not show any significant difference in cooking quality, however, adding NaCl was effective on texture improvement Cooking quality was increased with increasing concentration of NaCl. The texture of noodle was not significantly changed by the increase of NaCl, however, the addition of 5% NaCl was significantly different from no addition of NaCl.

  • This study introduced the effects of various additives to boiling water on cooking quality of noodle. Addition of 1% NaCl to cooking water showed a low amount of water absorption and good texture than the addition of sugar, oil and acid at 1% concentration. Adding NaCl was effective on noodle texture and quality improvement. Cooking quality was increased with increasing concentration of NaCl. The texture of noodle showed that addition of 6% NaCl was significantly different from no addition of NaCl.

  • 본 연구는 의료서비스를 생산 제공하는 병원조직의 계선조직 관리자의 리더십 스타일이 부하직원들의 직업존중감과 조직행동에 미치는 영향을 분석하고자 한다. 본 연구에서 사용할 관리자의 리더십 스타일은 헤이컨설팅 그룹에서 제시한 6가지 리더십 스타일인 지시명령형, 비전제시형, 관계중시형, 집단운영형, 규범형, 육성형 리더십스타일을 사용하고자 한다. 각 리더십 스타일이 직원들의 직업존중감, 즉 부서 내에서의 커뮤니케이션 수준, 직무몰입, 직무만족, 자기비전 자각 및 이직의사 등 조직행동에 어떤 영향을 미치는지 알아보고자 한다. 또한 관리자의 리더십 스타일과 직업존중감에 따른 조직행동, 즉 직무만족, 조직충성도, 자기계발의지, 이직의도 등에 대해서도 분석하고자 한다. 연구표본으로는 사립대학교병원 1개, 국립대학교병원 1개, 500병상 이상 규모의 종합병원 1개이며, 조사 및 분석에 활용할 개선조직은 진료행정부서인 원무과(부), 진료지원부서인 의무기록실(팀), 의료기사, 간호과(부)이다. 연구의 결과를 통해서 직원들이 가장 선호하는 관리자의 리더십 스타일을 도출함과 동시에 각 리더십스타일의 장단점을 통하여 직원들의 직업존중감 확대와 생산적인 조직행동이 조직성과로 이어질 수 있는 방안을 제시하고자 한다.

  • 본 논문에서는 내부마케팅의 실행요인 및 개인의 행동과 업무 수행수준에 영향을 미치는 심리적 변인인 자기효능감을 살펴보고, 내부마케팅과 자기효능감이 기업의 조직 구성원들의 행동을 유도하여 조직몰입과 직무만족에 영향을 미치는지를 확인하고자 하였다. 실증적으로 확인하기 위한 구체적인 평가의 방법으로는 수집된 자료를 SPSS21.0 및 AMOS21.0을 이용하여 실증분석을 실시하였다. 연구결과를 요약하면 기업의 내부마케팅 활동과 자기효능감은 심리적 영향에 따라 조직 구성원들의 직무만족과 조직몰입에 정(+)의 영향을 미치는 것으로 분석되었다. 이는 내부 직원들의 업무 지향적 태도 형성을 위해 조직의 방침과 목적달성을 공유하기 위한 기업의 역량강화 활동과 조직 구성원들의 심리적 관리가 필요한 것으로 판단된다.

  • This study is to establish the effect of the call center counselors' personal characteristics and perceive organizational support(POS) on their organizational commitment and organizational citizenship behavior(OCB). through survey targeting 290 call center counselors in Seoul. Accordance with these conclusions, Self-esteem, Self-efficacy except Emotional Intelligence were positive(+) influence on Organizational Commitment. and Emotional Intelligence, Self-esteem, Self-efficacy were positive(+) influence on OCB. Also Self-esteem and Organizational Commitment, OCB were full mediation on POS And Self-efficacy and Organizational Commitment, OCB were part mediation on POS. This result implies call center needs the approach method and different perspectives to increase the degree of call center counselors' organizational commitment.

A Study on the Information Security Related Organizational Citizenship Behavior: From Prospect Theory and Goal Orientation Theory Perspective (정보보안 관련 조직시민행동에 대한 연구: 개인 전망, 조직 목표지향성 관점을 중심으로)

  • The purpose of this study is to verify the influence of the cognitive process related to the organizational citizenship behavior. The research method consisted of the cross-design of the prospect dimension and goal orientation dimension, and information security factors consisted of distributive justice, response efficacy, self efficacy, and organizational citizenship behavior. As a result of the study, the dimension of prospect had a significant effect on response efficacy and self efficacy, and it was found that the influence of the gain condition was greater than that of the loss condition. The goal orientation dimension had a significant effect on response efficacy and self efficacy, and it was found that the influence of the growth condition was greater than that of the validation condition. The research model that explained the relationship between information security factors appeared as a partial mediating model between distributive justice, response efficacy, and organizational citizenship behavior. The implications of this study suggest that it is necessary to establish an information security strategy in combination with individual decision-making factors and organizational culture factors.

The Impact of Day-care Center Organizational Characteristics on Teacher Efficacy (어린이집 조직특성이 교사효능감에 미치는 영향 - 교사경력 5년을 기준으로 -)

  • This study examined the effects of day-care center organizational characteristics on teacher efficacy. The participants of this study were 319 day-care center teachers who work in the Seoul-Gyeonggi area. The results of this study are as follows: First, day-care center teacher efficacy shows the difference depending on the teachers' career. Second, teachers' efficacy was influenced by day-care center organizational characteristics. In particular, it appeared that 'challenge' and 'distinction of role' affect teacher efficacy when the career of the teacher is less than 5 years. And it appeared that 'challenge', 'distinction of role' and 'retraining' affect teacher efficacy when the career of the teacher is more than 5 years. We discussed organizational characteristics for improving teacher efficacy and suggested the implication for retraining teachers and supervision to promote teacher efficacy based on the results.

  • 재래돈육과 개량돈육의 지방함량을 달리한 patty를 만들어 저온저장 중 육색과 조직감을 비교분석하였다. 육색은 재래돈육이 명도($L^{\ast}$)는 유의적으로 낮고, 적색도($a^{\ast}$)는 유의적으로 높은 경향을 나타내었다(P<0.05). 또한, 조직감은 재래돈육이 hardness, springiness, cohesiveness, gumminess, chewi-ness, resilience이 높게 나타나 육질이 쫄깃하고 단단한 것으로 나타났다.

  • The effect of major ingradients (Water, Soybean oil, Na-caseinate, Soybean protein isolate, Corn starch. Lactic acid and disodium phosphate) on the textural properties of imitation cheese were studied by response surface methodology and evaluated by contour diagram. The hardness of imitation cheese was directly influenced by the contents of water, oil and Na-caseinate and also affected by the interactions between water and oil and corn starch and lactic acid/phosphate. The adhesiveness was strongly affected by the interactions between caseinate and lactic acid/phosphate, SPI and corn starch and corn starch and lactic acid/phosphate. The springiness was directly influenced by the contents of oil, caseinate and lactic acid/phosphate, and also affected by the interactions between SPI and lactic acid/phosphate and corn starch and lactic acid/phosphate. The melting property was strongly influenced by the contents and interactions of lactic acid/phosphate.

Effects of Emotional Labor, Nursing Organizational Culture on Self-efficacy in Clinical Nurses (임상간호사의 감정노동과 간호조직문화가 자아효능감에 미치는 영향)

  • The objective of this study was to the effects of emotional labor and nursing organizational culture on the self-efficacy among clinical nurses. The subjects of this study were the clinical nurses working at 6 general hospitals in C & D city. The self-reported questionnaires were administered to 475 clinical nurses. The levels of self-efficacy, nursing organizational culture and emotional labor of the subjects were revealed moderate to high. Self-efficacy and emotional labor, emotional labor and nursing organizational culture showed a negative correlation, Self-efficacy and nursing organizational culture showed a positive correlation. Nursing organizational culture affects the self-efficacy that is significant explanatory variables, of which variables are in general education, job satisfaction, and employee turnover experience. The findings suggested that Nurses' self-efficacy for managing environmental management programs with interventions seem to be necessary.
