Comparative Study on Content and Composition of Oligopeptide, Free amino acids, 5'-Ribonucleotides, and Free sugars in salted preserves Produced at Korea and Japan (한국과 일본의 젓갈 중 Oligopeptide, Free amino acids, 5'-Ribonucleotides와 Free Sugars 성분의 비교 연구)

  • To investigate the difference of palate between Korean and Japanese people, we analyzed oligopeptide, free amino acids, 5'-ribonucleotides and free sugars of salted preserves from Korea and Japan. The salted preserves from Korea were grouped into 3 classes, 'Food Market (Korea)', 'Side Dish (Korea)', 'Bottled (Korea)'. The 'Side Dish (Korea)' and the 'Bottled (Korea)' type are made by adding to the 'Food Market (Korea)' seasonings, red pepper or other food materials. The salted preserves from Japan were bottled goods purchased at food stores, and they were classified as 'Bottled (Japan)'. The results were as follows: (1) Sodium chloride was 23.2% in the 'Food Market (Korea)' type. 14.4% in the 'Side Dish (Korea)', 7.1% in the 'Bottled (Korea)' and 5.8% in the 'Bottled (Japan)', respectively. (2) The 'Food Market (Korea)' didn't contain free sugars. but all the other salted preserves contained $3,500{\sim}6,500\;mg$ free sugars/100g. (3) None of the salted preserves contained 5' IMP or 5' GMP. (4) The main free amino acids of the 'Side Dish (Korea)' were glutamic acid, leucine and alanine, but the 'Bottled (Japan)' contained an extremely high amount of glutamic acid.

  • 창란젓갈은 최근 염도 8% 이하의 양념젓갈 형태가 보편화되어, 일정 중량의 규격포장으로 유통되는 사례가 많은데 대표적인 포장 형태는 병과 필름포장을 들 수 있다. 그러나 창란젓갈을 비롯한 젓갈류 대부분의 포장은 병포장보다 상대적으로 단가가 낮은 필름포장 재질인PE(low density polyethylene)를 사용하고 있는데, 이 경우 숙성이 끝난 정상적인 젓갈 제품을 충진하더라도 PE 필름의 가스투과도가 높아 젓갈 냄새가 누출되어 나옴으로서 소비자에게 불쾌감을 주는 경우가 많다. (중략)

  • 창란젓갈은 명태의 내장을 원재료로 만든 젓갈로서 자가소화효소나 미생물의 초기 오염도가 높고, 특히 저염양념젓갈은 다른 젓갈에 비해 변패가 빠른 편이며, 냉장조건에서도 유통기한이 40일 정도로 짧아, 콜드체인시스템을 잘 지키지 않는 국내 유통 특성상 고온의 외기에 제품이 노출될 기회가 많아 반품발생률이 증가하는 실정이다. 창란젓갈을 비롯한 젓갈류는 대부분 병포장이나 필름포장인 PE(low density polyethylene)를 사용하고 있는데, 병포장한 창란젓갈의 문제점은 압력이 증가할 경우 내부에 기포가 형성되어 냄새나 액즙이 누설되고 심하면 포장이 파손되기도 하고, 가물은 소비자가 병 뚜껑을 개방할 때 파열음과 함께 내용물이 유출되는 등 상품성이 저하되는 경향이 있다.   • 젓갈은 전통적인 저장발효식품으로 어패류의 육질, 내장 및 생식소 등을 원료로 하여 염장하였을 때 육자체에 함유된 자가소화효소와 젓갈 중의 미생물이 분비하는 효소작용에 의하여 원료 물질이 분해되면서 독특한 풍미를 갖게 된다(Park et al., 1996). 창란젓갈은 명태의 위와 창자를 원료로 하여 만든 젓갈로, 식염 함량이 8%이하의 저염양념젓갈의 형태로 제조되고 있으며 거의 전 과정이 정치 상태에서 진행되기 때문에 염장 및 숙성 시간이 오래 걸릴 뿐만 아니라 용기 상하간에 품질 편차가 커서 제품이 균일하지 못하다. Studies on the Shelf-life Extension of Jeotkal, Salted and Fermented Seafood (젓갈류의 유통기한 연장을 위한 연구)

  • To develop natural food preservatives for extending the shelf-life of jeotkal (salted and fermented seafood), antimicrobial substances were extracted from 32 types of medicinal herbs and edible plants using 95% ethanol. Among the extracts, Glycyrrhizae radix, Curcumae domestica, Galla rhois, and Resina pini showed relatively high inhibitory effects on the growth of the microorganisms isolated from the deteriorated jeotkal. We selected and tested the extract from Recina pini as a natural jeotkal preservative. This ethanol extract was purified partially by adding equal quantity of water, through which 77% of insoluble materials were removed as impurities. In manufacturing modified jeotkal using squid, sucrose and starch syrup were substituted with sorbitol, $glucono-{\delta}-lactone$ was added instead of vitamin C and lactic acid, and sterilized hot pepper was used instead of natural one. The shelf-life of modified jeotkal was prolonged by 4 days compared with the control jeotkal when stored at $20^{\circ}C$, while that of modified jeotkal containing 1.0% partially purified Recina pini extract was prolonged by 6 days compared to the control. The same tests were conducted for the changran (stomach and intestine of Alaska pollack) jeotkal preservation. The shelf-life of the control jeotkal was 24 days, whereas the modified jeotkal and the Resina pini extract-containing modified jeotkal maintained their qualities without changes in microbial and chemical characteristics for 90 days at $20^{\circ}C$ storage.

Effects of Salted-Fermented Fish Products and Their Alternatives on Angiotensin Converting Enzyme Inhibitory Activity of Kimchi During Fermentation (젓갈 및 젓갈 대용 부재료가 김치의 숙성 중 Angiotensin 전환효소 저해작용에 미치는 영향)

  • Angiotensin converting enzyme(ACE) inhibitory activity of Kimchi added with salted-fermented fish products(SFFP), such as salted-fermented anchovy(SFA), salted-fermented anchovy sauce(SFAS), low salt-fermented anchovy sauce(LSFAS), salted-fermented small shrimp(SFS), low salt-fermented sandlance sauce(LSFSS) and their alternatives, such as oyster hydrolysate(OH), Alaska pollack hydrolysate(APH) and sea-staghorn extract(SSE) were studied during fermentation at $20^{\circ}C,\;10^{\circ}C\;and\;4^{\circ}C$. ACE inhibitory activities of Kimchi samples added with SFFP were increased until some fermentation period and then kept similarly constant levels at every fermentation temperature. Similar tendencies were occurred in amino nitrogen (AN) content. ACE inhibitory activities of Kimchi samples added with SFFP alternatives rapidly increased in 1st or 2nd day fermentation and then very slowly increased but AN contents showed roughly constant levels $(400{\sim}600\;mg/100\;g)$ in every fermentation temperature. Kimchi added with LSFAS had higher ACE inhibitory activity (>80%) with elevated level of AN (>600 mg/100 g) among the tested Kimchi samples. Kimchi samples added with SFFP alternatives also showed comparable activity to Kimchi added with SFFP This study shows that Kimchi added with SFFP and their alternatives is a good source as a functional food.

Preparation of Squid-Jeotkal with Pasteurized Red Pepper II. Shelf-Life Extension of Squid-Jeotkal (살균고춧가루를 이용한 오징어젓갈 제조 II. 양념오징어젓갈의 보존성 연장)

  • In this study, ohmic heating was applied for pasteurization of red pepper pow-der, and investigated its pasteurization effect. After pasteurization, seasoned squid-jeotkal was manufactured by using red pepper powder, and its quality changes were investigated. On com-paring sensory evaluation in squid-jeotkal by pasteurized and conventional red pepper powder during storage at 5, 16 and $25^{\circ}C$, quality changes in squid-jeotkal by the pasteurized red pepper powder. But quality change difference between two products were decrease with increasing stor-age temperature. Viable cell counts in two products stored at 5$^{\circ}C$ were increased slowly until 60 days. Viable cell counts in squid-jeotkal by conventional red pepper powder were increased up to ca. 10$^{8}$ CFU/g at 15, 25 $^{\circ}C$ after 30, 15 days, respectively, but that by pasteurized were ca. 10$^{8}$ CFU/g at $25^{\circ}C$ after 30 days. Changes in pH, VBN and NH$_2$-N in two products were shown difference significantly, but were decreased by increasing storage temperature. In squid-jeotkal by conventional red pepper powder, the main free amino acids were glutamic acid, leucine, glycine, aspartic acid and alanine, and these amino acids held 47.95% of the total free amino acid. But in squid-jeotkal by pasteurized red pepper powder, glutamic acid, glycine, aspartic acid, leucine and Iysine, and these amino acids held 57.58% of the total free amino acids.

A Survey on the Consumption and the Perception of Salted Sea Foods among Seoul Area Housewives (서울지역 주부들의 젓갈에 대한 이용실태 및 인식 조사)

  • A total of 165 housewives in Seoul area were interviewed to survey the Salted Sea Foods. The aim of this study was to investigate the perceptions and preferences of 20s~50s housewives to salted sea foods. As to the recognition of salted sea foods, shrimp salted sea foods(100%)>anchovy sauce(97%)>canary sauce(91%)answered. Necessity of the Development plan of salted sea foods as to its importance 23%, regarded salted sea foods very important, while 44.8% and 6.1% not important. The Participants considered that we need to succeed and develop salted sea foods. We need to develop new recipes to increase the usage of salted sea foods.

  • Nitrite scavenging activity of Kimchi added with salted-fermented fish products(SFFP), such as low salt-fermented anchovy sauce(LSFAS), salted-fermented anchovy sauce(SFAS), salted-fermented anchovy(SFA), salted-fermented small shrimp(SFS), low salt-fermented sandlance sauce(LSFSS) and their alternatives, such as oyster hydrolysate(OH), Alaska pollack hydrolysate(APH) and Sea-staghorn extract(SSE) were studied during fermentation at $20^{\circ}C,\;10^{\circ}C\;and\;4^{\circ}C$. Nitrite contents of Kimchi samples added with SFFP were roughly decreased except Kimchi added with SFS and SFAS, which increased at the 2nd day of fermentation. Fermentation of Kimchi at $4^{\circ}C\;and\;10^{\circ}C$ resulted a decrease in nitrite(<5 ppm). Nitrite contents of Kimchi samples added with SFFP alternatives rapidly decreased in the initial fermentation and then kept a low level (<2 ppm). Nitrite scavenging effects of Kimchi samples added with SFFP and their alternatives were steady during fermentation, showing a little variation in samples added with SFFP. Samples added with LSFAS and OH showed higher nitrite scavenging effects(90%) than others$(70{\sim}80%)$.
