Quality Characteristics of JungKwa made with Ginseng and the Effects of Different Types of Sweetners (감미료의 종류를 달리한 수삼정과의 품질 특성)

  • Jungkwa is traditional food in Korea and difficult to prepare. This study proposes to use a rice cooker to simplify the process of preparing ginseng jungkwa. The following is the summary of the study. This study examined low calorie sweeteners (xylitol, oligosaccharide, stevioside, erythritol) instead of sugar for ginseng jungkwa to satisfy customers' health needs. After adding sugar, xylitol, oligosaccharide, stevioside, and erythritol to ginseng jungkwa, moisture and sugar content were measured. Based on the results, the ginseng jungkwa made with xylitol had a low moisture content, but it had the highest sugar content. The ginseng jungkwa with xylitol had average sweetness equal to that of sugar. In addition, L-values were highest with stevioside whereas the b-values and a-values were highest with sugar. Hardness and springiness were highest in the ginseng jungkwa added with sugar while adhesiveness was highest in the ginseng jungkwa added with oligosaccharide. In a sensory evaluation, the appearance, flavor, taste, texture, and overall preference were highest for the oligosaccharide added ginseng jungkwa. In the end, the best low calorie sweetener for rice cooker prepared ginseng jungkwa proved to be oligosaccharide.

Effects of Resistant Starch of Rice on Blood Glucose Response in Normal Subjects (쌀의 난소화성전분이 정상인의 혈당에 미치는 영향)

  • Effort of rice resistant starch (RS) content on glucose blood level of normal Subject was examined using Suwon 464 and Ilpum, haying different RS contents. Enzymatic-gravimetric method showed RS contents of Suwon 464 and Ilpum were 16.3 and 0.7%, respectively. Both rice varieties, each containing 50g carbohydrate, were pressure-cooked and fed to ten healthy male volunteers after overnight fast. Significant difference was observed in 60 min blood glucose levels of Suwon 464 and Ilpum after meal, showing $90.3{\pm}4.8$ and $111.6{\pm}2.7mg/dl$, respectively (p<0.01).

Effect of Storage Conditions on the Sensory Characteristics of Cooked Rice (보온 조건이 쌀밥의 관능 특성에 미치는 영향)

  • Physicochemical and sensory characteristics of cooked rice during warm-keeping with different temperature $(70,\;75,\;80^{\circ}C)$ and period (0, 6, 12, 24, 48 hr) were investigated. As the storage temperature increased, sweet flavor, glossiness, moistness, taste and moisture content decreased but off-flavor, color and sensory and texturometric hardness increased. This trend was significant with storage period. As the storage time and temperature increased, yellowness(b) measured by Hunter color difference meter increased while lightness(L) and whiteness decreased. Degree of retrogradation of cooked rice during storage increased, particularly did in cooked rice stored at $80^{\circ}C$. Cooked rice stored at 70 and $75^{\circ}C$, 6 hr had the least changes in flavor and appearance but more changes in them longer storage time. Cooked rice stored at $80^{\circ}C$ had rapid changes in flavor, appearance and texture at initial state of storage. These results showed that the changes in moisture content of cooked rice stored at various conditions had the most important effect upon sensory characteristics of cooked rice.

Effect of Cooking Methods on the Qualities of Quick Cooking Rice (취반방법이 즉석쌀밥의 품질에 미치는 영향)

  • Quick cooking rice was produced by cooking raw, white long grain rice with three different methods which were atmospheric cooking in electric cooker, autoclaving and precooking followed by autoclaving. The drying rate curve showed that cooking methods affected little the drying pattern of the cooked rice except that precooking treatment before autoclaving retarded dehydration. The quick cooking rice prepared by precooking and autoclaving method among three cooking methods showed the fastest rehydration rate and took 7.5 minutes in reaching equilibrium moisture content by soaking in boiling water. And it had less hard and more cohesive texture than the milled rice cooked by conventional method and the quick cooking rice prepared by electric cooking when reconstituted. The microstructure of quick cooking rice was investigated among cooking methods.

A Study on Electric Power Monitoring System per Appliance (기기별 전력 모니터링 시스템 개발에 관한 연구)

  • This paper presents ideas of service scenarios for home residents using electric power monitoring system per appliance, the implementation of the monitoring system, and analysis of acquired electric power usage pattern. By acquiring and analyzing electric power usage pattern, home residents can get information of power usage pattern of every legacy (non-Demand Response-ready) appliance. Further they can get pieces of recommendation how to reduce energy consumption, intelligent standby power blocking service, and alarming service to abnormality of appliances. In order to check the feasibility of the ideas, a system that can acquire electric power pattern per appliance is implemented, and electric power pattern of some appliances are stored to a database and it was analyzed to show if auto-identification of a type of a device is possible, which is a basic required function for the scenarios presented.

Elimination of BHC Residues in the Polishing and Cooking Processes of Brown Rice (현미(玄米)의 도정(搗精) 및 취반(炊飯) 과정중 BHC 잔류분(殘留分)의 제거(除去))

  • In order to investigate the effect of polishing washing and cooking processes on the residue level of BHC in rice grain, brown rice samples having a 0.3 ppm total BHC content were subjected to various treatments and residue analysis. The results are summarized as follows: 1) The conventional polishing process of brown rice decreased the residue level down to 8 and 20% for 100 and 70% polished rice, respectively. 2) The washing procedure decreased the level to 34 and 31% for 100 and 70% polished rice, respectively. 3) The cooking processes with a conventional kettle and an automatic electric cooker decreased the residue level to 86 and 77% in 100% polished rice, and 69 and 41% in 70% polished rice, respectively. 4) By summation of the above results in sequence. it was concluded that the residue levels of BHC in cooked rice were 2.3 and 4.3% of original residue in the brown rice for 100 and 70% polished rice, respectively.

The Effect of Dietary Fiber Content of Rice on the Postprandial Serum Glucose Response in Normal Subject (쌀의 식이섬유함량이 정상인의 혈당에 미치는 영향에 관한 연구)

  • The purpose of this study is to investigate the effect of dietary fiber content of rice on the postprandial serum glucose and insulin responses in normal subject. Two rice varieties, Ilpum and Suwon 464 which are different in dietary fiber content, were cooked in pressure cooker and used for the test. The rice with a higher dietary fiber content gave a significantly lower glucose level (p<0.01) and insulin level (p<0.05) than did the normal rice variety. After a meal, the 60-min glucose levels of Suwon 464 and Ilpum were 90.3${\pm}$4.8mg/dl and 111.6${\pm}$2.7mg/dl, respectively. The glycemic index (GI) of Suwon 464 shows 64.5%, which was apparently lower than that of Ilpum. These results indicate that Suwon 464 high in dietary fiber can be useful in low-GI diets.

  • This study was conducted to determine the effect of different fiber content of rice on blood levels of glucose insulin and triglyceride in normal subject. Ilpum and Suwon 464, which have different fiber content were used for the test. Two types of rice containing 50 g of carbohydrate were pressure-cooked and fed to ten healthy male volunteers after an overnight fast. After a meal, the 60-min blood glucose levels of Suwon 464 and Ilpum were 90.3$\pm$4.8 mg/dL and 111.6$\pm$2.7 mg/dL, respectively (p<0.01). And the 120-min blood insulin levels of Suwon 464 and IlPum were 2.9$\pm$0.8 mg/dL and 7.7$\pm$1.6 mg/dL, respectively (P<0.05). There was no significant difference in triglyceride level between two rice varieties. The calculated glycemic index (GI) was 64.5% for Suwon 464, suggesting that Suwon 464 high in fiber can be useful in low-GI diets.

Development of Home Electrical Power Monitoring System and Device Identification Algorithm (가정용 전력 모니터링 시스템 및 장치식별 알고리즘 개발)

  • This paper presents an electrical power monitoring system for home energy management and an automatic appliance-identification algorithm based on the electricity-usage patterns collected during the monitoring tests. This paper also discusses the results of the field tests of which the proposed system was voluntarily deployed at 13 homes. The proposed monitoring system periodically measures the amount of power consumption of each appliance with a pre-specified time interval and effectively displays the essential information provided by the monitored data which is required users to know in order to save power consumption. Regarding the field tests of the monitoring system, the households responded that the system was useful in saving electricity and especially the electricity-usage patterns per appliances. They also considered that the predicted amount of the monthly power consumption was effective. The proposed appliance-identification algorithm uses 4 patterns: Zero-Crossing Rate(ZC), Variation of On State(VO), Slope of On State(SO) and Duty Cycle(DC), which are applied over the 2 hour interval with 25% of it on state, and it yielded 82.1% of success rate in identifying 5 kinds of appliances: refrigerator, TV, electric rice-cooker, kimchi-refrigerator and washing machine.

Elimination of Phenthoate Residues in the Washing and Cooking of Polished Rice (쌀의 취반 중 Phenthoate 농약 잔류분의 제거)

  • This study was undertaken in order to elucidate the elimination of phenthoate residues by washing and cooking processes of rice which if the most important food crop in Korea. When contaminated rice was washed with distilled water three times, the removal rate of total phenthoate was 51%. The removal rate in the successive washings was 37.3% (wash filtrate 7.8%, wash sediment 29.5%) in the first, 14.3% (wash filtrate 6.2%, wash sediment 8.1%) in the second and 8.9% (wash filtrate 5.8%, wash sediment 3.1%) in the third washings. More than half of the residue was removed by the first washing and most residues were found in the sediment rather than in the filtrate of the rice washings. The residue rate of phenthoate after cooking by an electric rice cooker was 41%, indicating that the removal rate after cooking was 59%, because phenthoate is thermally stable at the cooking temperature. In conclusion, phenthoate residues contaminated in rice grains are grcatly removed in the washing process and it is desirable to wash the grains before cooking in order to decrease the hazards from pesticide residues such as phenthoate. Reduction factor of phenthoate in rice cooking is proposed to be 0.4.
