  • The changes of the volatiles from apple fruits were examined with Mallus pumila Miller var. Fuji, Ralls Janet and Jonathan harvested at the preclimacteric stage and stored under the normal atmospheric pressure of 760mmHg and subatmospheric pressure of 380mmHg at the temperature of 1 and $20^{\circ}C$ each. The production of the volatites in the normal storage temperature increased markedly up to around 30 days on storage and then decreased rapidly, whereas that of the volatiles in the low storage temperature increased slowly before decreasing. The changing pattern of volatiles from apples during storage at the normal atmospheric pressure was more remarkable than that of volatiles produced at the subatmospheric pressure. During storage, most of flavoring materials were increased, and the decrease of the content of esters was more rapid than that of alcohols and aldehydes among the volatiles. The amounts of the volatiles in Fuji apples during ripening at $20^{\circ}C$ after removing from the subatmospheric pressure storage for 90 days at $1^{\circ}C$ were nearly maximum at 3 days on ripening.

  • In order to investigate the quality changes during the storage after curing were determined volatile basic nitrogen(VBN), amino nitrogen, total creatinine, total carotenoid, extents of browning, reducing sugar and glycogen. During the storage of $5{\pm}1^{\circ}C$ after fermented for 1 or 2 days at $25{\pm}1^{\circ}C$, amino nitrogen increased slowely. Whereas the total carotenoid and glycogen decreased. Browning did not occurred for 50 days. Total creatinine increased gradually until 20 days but reducing sugar increased continuously through 50 days of storage. The result of sensory evaluation during the storage of fermented ascidian added $0.1\%$ papain and protease-A with NaCl $10\%\;and\;15\%$ showed that original taste and flavor of ascidian for $30{\sim}40$ days of storage at $5{\pm}1^{\circ}C$.

Effect of Washing Treatment of Electrolyzed Acid Water on Shelf-life of Greenhouse Mandarin Emits during Marketing (출하 전 전해산화수 세척에 의한 하우스감귤의 선도유지 효과)

  • This study was carried out to extend a marketing shelf-life of the Jeju greenhouse mandarin fruits. Total soluble solids were not showed any significant differences by the temperatures and pre-treatments during the marketing period. Acid content and firmness of the fruits were gradually decreased, which were better in cold than in room temperature treatment. The fruits washed in electrolyzed acid water(pH 2.4∼2.7) maintained freshness higher than those of control Internal CO$_2$concentration of those was 1.0 % more or less in the beginning marketing stage, but increased along the marketing period in mom temperature. Especially Internal CO$_2$concentration of wax-coated fruits rapidly increased more than any other, whereas it was a little decreased in cold treatment. After 10 days in room temperature, decay ratio of the fruits was below 4.0% in electrolyzed acid water washing, compared to 10.4% in control. After 30 days in cold temperature, decay ratio was only 3.7% in electrolyzed acid water washing compared to 4.4% of wax-coated treatment and 7.4% of control. The weight loss among the pre-treatments in room temperature had no significant differences and was higher than in cold one.

  • In this study, germination characteristics and effect of some chemicals on germination of Trapa japonica $F_{EROV}$ seeds were investigated to obtain a fundamental data for controlling them. When the seeds were stored at low temperature for at least 3 months, their dormancy was completely released with a germinability of above 90%. However, those stored under the room or high temperature condition were never germinated. Germination was best at constant temperature of around $25^{\circ}C$ or at alternate temperature of 25/$15^{\circ}C$ (12 hr-day/12 hr-night), and was nat dependent on light. They could germinate though planted at the depth of 15 cm, but their initial growth were: suppressed with increase of planting depth, especially above 10 cm depth. Germinability was lost when the fresh weight was decreased more than 30%, indicating that the seed is sensitive to dehydration. The freezing at $-20^{\circ}C$ for 1 hr didn't affect germination, but 5 hr treatment completely killed them. Their germination was inhibited by 100% at 100 ppm ABA and slightly inhibited above 25 ppm of butachlor, whereas pyrazosulfuron-ethylnt is likely to control T. japonica physically and herbicide treatment to inhibit germination may not be recommendatory. and bensulfuron-methyl didn't inhibit the germination at the concentration of 100 ppm. Taken together, dehydration treatme is likely to control T. japonica physically and herbicide treatment to inhibit germination may not be recommendatory.

Effect of Food-Garbage Compost on the Characteristics and Storage of Persimmon Fruits (음식물 쓰레기를 이용한 퇴비가 감과육의 특성 및 저장성에 미치는 영향)

  • Reducing sugar content of persimmon fruits was increased by applying food-garbage compost Dungsi was brighter with yellow color than that of control. The Gabjubaekmok was darker than that of control with red color. It was suggested that taste of astringent was reduced because total phenol and soluble tannin contents were reduced by applying food-garbage compost. The vitamin C content of persimmon fruits during storage was higher than that of control. Stability of persimmon fruits by applying food-garbage compost and non-food garbage compost was about the same at room temperature. At low temperature, hardness of persimmon fruits was maintained for 20 days. Hardness and reducing sugar contents of persimmon fruits were increased by applying food-garbage compost. The result was shown that there was no effect on composition of persimmon fruits by applying food-garbage compost and maintaining hardness at room temperature, but at low temperature, the composition of persimmon fruits was changed.

Effects of Light and Storage Condition on the Germination of Oenothera lamarckiana Seeds (큰달맞이꽃 종자(種子)의 발아(發芽)에 미치는 광(光) 및 저장조건(貯藏條件)의 영향)

  • The effects of light and storage conditions on the germination of Oenothera lamarckiana were investigated. Germination was induced by red light, but inhibited by green, blue or infrared. No germination occurred in the dark. Radicle was more photosensitive than other parts of the seed. The rate of germination was proportional to increase in Light intensity ranging from 10 to 3000 Lux. Photosensitivity occurred 6 hrs after water imbibition of air-dried seeds. Maximum photosensitivity was detected 1-2 days after seeding under the light condition at 300 Lux. Germination was almost completed 3 days after seeding. When seeds stored in the chilling and wetting condition were kept at constant temperature in the dark, they germinated well. Air-dried seeds, however, didn't germinate. Whereas, the seeds which kept at alternating temperature had the tendency that seeds stored at room temperature (25$^{\circ}C$) germinated better than those stored at low temperature (4$^{\circ}C$).

Current Research Status of Postharvest and Packaging Technology of Oriental Melon (Cucumis melo var. makuwa) in Korea (국내 참외의 수확 후 관리 및 포장기술 연구)

  • Oriental melon ($Cucumis$ $melo$ var. $makuwa$) is a popular and high-value market fruit cultivated in Korea. Consumers are becoming increasingly interested in oriental melon as a healthy diet over the past few years. However, the melons have relatively high quality loss because the fruit are mainly produced for a limited period of time in the summer season. Lack of the proper postharvest treatments and high temperature exposure at harvest or during distribution are the most critical environmental factors limiting postharvest life of fruit. This review focuses on the overview of current research studies for postharvest treatment and functional packaging technology of oriental melon in Korea. Major physiological problems of the harvest fruit include the ripening process in quality changes of the produce such as loss of weight, firmness, flavor, and decay during the storage periods. Low temperature at 7 to $10^{\circ}C$ with high relative humidity of 90 to 95% is the suitable environmental condition used to maintain the quality of fresh oriental melon. Controlled atmosphere (CA) storage or modified atmosphere (MA) packaging can be used as supplemental treatments to extend postharvest-life. For oriental melon, an optimum CA is currently recommended to be 2-3% oxygen and 5-10% carbon dioxide atmosphere. Precooling, pretreatments of ethylene action and functional packaging system can be applied to oriental melon after harvest in order to extend storage life. Major active packaging technologies are concerned with a selectively gas permeable film related to respiration of produce and the packaging applications of ethylene removal, antimicrobial, and antifogging substances to keep the effective freshness of fruit.

아쿠아이온을 이용한 농산물의 선도 유지

  • 기존 저온저장고의 가습방법을 개선하고 아울러 음이온을 농산물의 선도 유지에 이용하고자 아쿠아이온발생시스템의 설계, 제작이 레너드효과를 응용하여 이루어졌다. 시스템의 아쿠아음이온의 발생량은 42,965음이온/cc, 입자크기는 $10^3$$\mu\textrm{m}$ 이하, 가습속도는 0.13$\ell$/h이었으며 85% 이상의 고습도 조건에서도 결로가 발생하지 않는 상태로 가습이 가능하였다. 아쿠아이온 클러스터에 의해 저장고는 90% 이상의 균일한 고습도와 정온을 유지할 수가 있었다. 아쿠아이온시스템의 경우 유해가스와 분진등을 흡착, 제거하여 저장고 내를 청정하게 유지시키는 기능이 있는데, 에틸렌가스 제거 효과는 초기 농도 50ppm에서 5분후에 50% 이상이 제거되고 2시간 후에는 3ppm 이하로 제거되었다. 아쿠아이온발생시스템이 브로콜리, 잎상추, 애호박 등의 보관에 적용되었다. 아쿠아이온발생시스템이 부착된 저장고($0^{\circ}C$)에서 20일동안 보관한 경우 기존 저장고에 보관한 경우에 비하여 감모율, 부패율 및 관능적 품질에 있어서 유의적으로 우수한 차이를 나타내었다.

Changes of Volatile Flavor Components of Domesticated Codonopsis lanceolata According to Various Storage Conditions (재배더덕의 저장 및 유통조건에 따른 향기 성분의 변화)

  • We investigated the changes in the volatile flavor components of domesticated Codonopsis lanceolata, which were packed in woven polypropylene (WP) film or low density polyethylene (LDPE) film and stored for 15 and 30 days at refrigerated ($2{\sim}4^{\circ}C$) or room ($18{\sim}20^{\circ}C$) temperature (hereafter referred to as WP-RE-15, WP-RO-15, LDPE-RE-15, LDPE-RO-15, WP-RE-30, WP-RO-30, LDPE-RE-30 and LDPE-RO-30). 167 volatile flavor components were identified in the fresh domesticated Codonopsis lanceolata by GC/MS. The volatile flavor components which were identified in the domesticated Codonopsis lanceolata stored for 15 days were as follows ; LDPE-RE (117 components), WP-RO (65 components), WP-RE (49 components), and LDPE-RO (48 components). After 30 days, the numbers of components were as follows : LDPE-RE (99 components), WP-RO (94 components), WP-RE (46 components), and LDPE-RO (85 components). In all conditions, the following 7 volatile flavor components were identified; 1-hexadecene, 2,6-dimethyl-2-octanol, 2-methyl-2-dodecanol, ${\alpha}$-cedrene, ${\beta}-selinene$, farnesane, and isoledene. According to the sensory evaluation, the freshness of domesticated Codonopsis lanceolata was best maintained with LDPE film and under chilled conditions.
