Changes of Physicochemical Properties of Conjugated Linoleic Acid(CLA) Accumulated Pork during Storage Time (Conjugated Linoleic Acid(CLA)가 축적된 돈육의 저장기간중 이화학적 특성변화)

  • To investigate the effects of dietary conjugated linoleic acid 011 changes of physicochemical properties of pork. Twenty pigs were divided into 5 treatment groups and subjected to each experimental diet(0, 1.25% and 2.5% CLA for 2 weeks, 1.25% and 2.5% CLA for 4 weeks, as total fed diet before slaughtering(about 110 kg). Pork loin samples were aerobically packed and stored for 14 days at 4$^{\circ}C$. Samples were then analyzed for general compositions, physicochemical characteristics and sensory evaluation. pH value of CLA fed group pork was significantly increased than that of control group(p<0.05). Crude fat content of CLA treated group pork was significantly higher than the control pork(p<0.05), but there were no significant differences in crude protein, crude ash and total moisture contents between control and CLA treated groups. AU CLA fed group pork showed higher WHC value than control pork. Drip loss was significantly lower compared to those of control porks. No significant differences in lean meat and fat color(CIE L*, a*, b*) were observed between control and the CLA treated group porks. Meanwhile, CLA pork tended to be lower in content of total heme pigment compared to control pork. No remarkable differences were found in sensory properties(color and drip loss) among control and CLA diet-fed group porks. Marbling score and acceptability were significantly increased in CLA diet-fed pork compared to the control pork.

Studies on Feed Formulation to Reduce Methane Emission and Optimal Rearing Density for Environmental-Friendly Hanwoo Production (친환경 한우 생산을 위한 메탄 저감용 사료 배합 및 적정 사육밀도에 관한 연구)

  • This study was conducted to analyze the mixing ratio of raw feed materials for the methane mitigation and also to identify the minimum rearing density for improving the productivity of beef calves as eco-friendly fodder. Raw materials used in this study for the formulation of feed for methane reduction were crushed corn and alfalfa along with other 21 species. In addition, to investigate the appropriate rearing density, 12 Hanwoo calves with average weight of 150 kg was selected and experiment was conducted for four months. Methane gas emission (Bo) is about 3-4 times less in TMR 4 compared to TMR 1, 2 and 3. Feed price calculated for TMR 4 ration was also affordable. In addition, all TMRs showed a normal ruminal pH. Disappearance rate was observed to be lower in TMR 4 as compared to TMR 1, 2 and 3, but methane production decreased by 24 to 37%. The result showed improved total body weight, average daily gain and feed conversion ratio in rearing low-density ($18m^2/head$), and general treatment ($9m^2/head$) compared to overcrowding treatment ($6m^2/head$). In addition, blood components (total protein, glucose, AST, ALT and GGT factors) involved in health and disease treatments and health-related nutrition metabolism are lower in the low-density and general treatment compared to the high density treatment. Postural development (development of body size) i.e., weight, height and width significantly increased in the low and general density treatment compared to high density treatment. Especially excellent improvement was observed in low-density treatment than the general treatment. Moisture content, colonic bacteria and coccidium are higher in low and high density treatments than in the general treatment. The adequacy for beef rearing density is considered to be more desirable in an area more than $6m^2/head$. In conclusion, present study suggests that possibility of methane reduction through adjusting mixed feed ration. Also, rearing density is also an important factor in the growth and development of beef calves.

  • 지하방수로는 도시의 지하에 대규모 수로 터널을 시공하여, 도시 지역에 발생한 집중 호우를 초기에 배제하여 제내지 침수 피해를 줄이는 목적으로 사용되는 대표적인 구조적 홍수 피해 경감 대책이다. 효과적으로 침수 피해를 줄일 수 있을 뿐만 아니라, 특히 지하에 설치되어 토지 수용에 대한 부담이 줄어들기 때문에 일본 등지에서 최근 주요 홍수 방어 대책으로 활용되고 있다. 지하방수로 유입부는 크게 접근수로, 유입구, 수직 갱도(vertical shaft)로 구분되며, 접근 수로를 통하여 유입된 흐름은 유입구를 통하여 가속된 후 수직 갱도로 유입되게 된다. 따라서 지하방수로의 배제 능력을 평가하기위해서는 유입구에서의 유량 및 흐름 특성을 정확히 평가하는 것이 매우 중요하다. 나선식 종경사형 유입구(inclined spiral intake)는 지하방수로 유입구 중 가장 일반적으로 사용되는 형식으로 나선식 유입구의 한 형태로 유입구의 외측 또는 중앙선을 따라서 일정한 경사를 주어 사류 유입 흐름을 유도함으로서 유량 배제 효율을 높인 형태이다. 나선식 종경사형 유입구도 일반적인 나선식 유입구와 마찬가지로 접근수로 수위를 측정하여 유입량을 예측할 수 있다. 본 연구에서는 수리 모형 실험을 통하여 나선식 종경사형 유입구에 대한 수위-유입량 관계를 검토하였다. 평탄한 입구를 가지는 안내벽이 있는 형식의 유입구 모형을 이용하여 수위-유입량 관계를 검토하였다.

  • 본 연구는 해양플랜트 지원선 중 작업자들에게 전용거주시설을 제공하는 생활바지선 거주구공간계획에 관한 연구이다. 생활바지선의 거주구는 '작업자영역', '서비스영역', '승무원영역', '업무영역'으로 공간을 분류할 수 있다. 본 연구에서는 현재 사용되고 있는 10척의 생활바지선 일반배치도(GA)를 조사하여 거주공간특성을 분석하였다. 또한 해양플랜트 거주구 설계시 가장 많이 참조되는 ABS, NORSOK 등 해외선급협회에서 제시하는 해양플랜트 거주구 공간설계지침을 분석하여 생활바지선에서 거주구 공간계획에 적용하기위한 설계지침을 제시하였다. 그리고 생활바지선 거주구 설계모델을 설정하고 모델을 대상으로 데크별 공간배치와 동선을 계획하였다. 마지막으로 거주구 설계모델의 객실, 식당, 주방, 휴게공간 그리고 위생시설 등 주요공간을 대상으로 공간계획을 실시하고 계획안을 제시하였다. 최근 국내 조선업계에서도 생활바지선에 대한 관심이 증가하고 있으나 거주구 공간설계기술의 부족으로 외국 설계업체에 의존하고 있는 형편이다. 따라서 우선 한국선급협회에서 본 연구결과를 기초 생활바지선 거주구 공간계획을 위한 설계지침을 시급히 만들어야만 한다.

Effects of Feeding Dietary Mugwort on the Beef Quality in Fattening Hanwoo (쑥사료 급여가 비육한우의 육질에 미치는 영향)

  • This study was conducted to determine the effect of feeding dietary mugwort on the beef quality during 14 month(from 14 month to 27 month) with 32 heads of fattening Hanwoo. Fattening Hanwoos were randomly allotted 4 treatments(8 heads/treatment): C-1[(control(0%) of Hanwoo steers)], C-2[(control(0%) of Hanwoo heifers)], T-1(supplemented with mugwort powder 2.0% of Hanwoo steers), T-2(supplemented with mugwort powder 2.0% of Hanwoo heifers). The shear force value and water holding capacity(WHC) of longissimus muscle were the highest in T-1($3.20kg/0.5inch^2$, 54.32%) and cookingloss was in C-2(22.22%) than the others(p<0.05). However, panel test scores of juiciness, tenderness and flavor of longissimus muscle were the highest for T-1(5.20-5.50 point) between the treatment group. The total catechin and epicatechen in longissimus muscle were higher in treatment group(0.43-046 mg/kg, 0.056-0.065 mg/kg) than control group(0.23-0.25 mg/kg, 0.031-0.032 mg/kg)(p<0.05). The content of total fatty acid in longissimus muscle were oleic acid(48.45-47.56%), palmitic acid(29.67-28.86%), stearic acid(9.92-10.82%), palmitoleic acid and myristic acid(4.68-5.49%, 2.48-3.89%) of range. In conclusion, the effects of feeding dietary mugwort of Hanwoo steer were improved the quality beef with highly panel test scores(juiciness, tenderness, flavor) and physical-chemical characteristics(shear force value, WHC).

Improvement of Water Quality by Corona Discharge Plasma-activated Water in a Tilapia Recirculating Aquaculture System (코로나 방전-플라즈마 처리수의 틸라피아 순환여과양식시스템 수질 개선 효과)

  • Disinfection and maintenance of rearing water in aquaculture is an essential element for the prevention of fish diseases. This is especially important in recirculating aquaculture systems (RAS) in which fish are reared at high density using recycled water. In this study, tilapia was reared in two different RAS (one with plasma generator - PW system, another without plasma generator - No PW system). In plasma treated group, UVT% of water was improved clearly, and the number of heterotrophic bacteria decreased significantly after 40 days. Total weight gain of tilapia in PW system was significantly higher, and other growth indicators were also relatively higher although not statistically significant. In addition, the fish in PW system had a 100% survival rate, and there were no histological differences between fish from both systems. Fish did not seem to be affected by the toxicity of ROS. In conclusion, it is expected that plasma water can effectively deactivate fish pathogens and improve the quality of rearing water.

Effect of Selenium Sources on Meat Quality of Hanwoo Steers (셀레늄 급여원에 따른 한우 채끝육의 육질 특성)

  • This study was conducted to investigate the feeding effect of selenium provided by different sources on the physico-chemical properties of M. longissimus thoracis. Twenty Hanwoo steers(20~24 months, approximately 613kg) were assigned to 4 different feeding groups of each five, depending on the sources of selenium such as inorganic selenium(sodium selenite), organic selenium(Yeast, USA Sel-Plex), Se-SMC(Se-spent mushroom compost) and the control(no selenium). The selenium level in feed was 0.9 ppm for all groups except the control. Animals were fed with different feeding treatments for 12 weeks and slaughtered at National Livestock Research Institute. The inorganic selenium group had the highest cooking loss(CL. %) and followed by the Se-SMC group and organic selenium group. No significant differences in chemical composition, WB-shear forces, water-holding capacity(WHC) and sensory properties were found among the groups(P>0.05). There were 40% frequencies of grade A in the inorganic selenium group and followed by the organic selenium group(20%). Se-SMC group had 80% of frequencies for grade 1+ and followed by the inorganic selenium group(40%), whereas the organic selenium group and the control group had the 20% frequencies for grade 1+. From the results of this study showed that the selenium sources did not affect chemical composition, WHC and tenderness of Hanwoo steers. However, the inorganic selenium group had the highest cooking loss(%) and lowest pH when compared to the other groups.

Effects of Dietary Mugwort on Nutritional Composition and Physicochemical Characteristics of Thawed Hanwoo Beef (쑥의 급여가 동결 한우육의 성분조성 및 해동 후 물리화학적 특성변화에 미치는 영향)

  • The nutritional composition of thawed Hanwoo beef fed no mugwort (T0) and thawed Hanwoo beef fed mugwort (T1) were analyzed after freezing at $-20^{\circ}C$ for 12 months. Also the effect of feeding mugwort was investigated by comparing physicochemical and palatability changes by chilling the beef after thawing. There were no significant differences in general components of T0 and T1 Hanwoo beef. Among the minerals, there were no significant differences in the contents of Ca, P, K, Mg and Zn, however Na content in T0 and Fe content in T1 were significantly higher. The total amino acid did not show a significant difference but leucine was found to be higher in T0 than T1, and glycine, cysteine, histidine and arginine were higher in T1 than T0. Regarding fatty acids, stearic acid was higher in T0, while palmitoleic acid, oleic acid and total unsaturated fatty acid was significantly higher in T1. The hardness value became lower by chilling after thawing regardless mugwort consumption, and therefore the tenderness improved. The freshness, fat rancidity and antioxidant activity of thawed Hanwoo beef changed more slowly for T1 than T0, which indicates that feeding mugwort had a positive effect. There were no significant differences in taste, juiciness, tenderness or and palatability of the cooked beef between T0 and T1 for both 0 days and 3 days after thawing. However, the aroma of cooked T1 beef was significantly superior.

The Effects of the High Pressure Boiled Extracts (HPBE) of the Ogol Chicken with Herbs on the Hormones, Cytokine, Specific Antibody of Serum in the Rat (오골계 증탕액 급여가 흰쥐의 혈중 호르몬, Cytokine 및 특이항체에 미치는 영향)

  • This study was conducted to investigate feeding effects of the high pressure boiled extracts (HPBE) of the Ogol chicken with herbs on glucose, hormones and immunological response (cytokine, specific antibody) of serum in the rat which fed either with normal feed (T$_1$), normal feed + herb HPBE (T$_2$), normal feed + Ogol chicken HPBE (T$_3$), normal feed + mixture of cross-bred Ogol chicken HPBE (T$_4$) hydrolyzed with Flavourzyme 0.1% for 35 days. During experimental period, there was a weak trend to have a higher glucose content for the T$_4$ group with 102.27${\pm}$5.95 mg/dL, but it was not significantly higher than other treatments. For insulin level, T$_1$ group showed numerically a slightly higher level with 6.79${\pm}$4.64 ${\mu}$IU/mL, but the difference was not significant in statistic term due likely to a large variation in comparison with other treatments. The treatments did not significantly alter testosterone level in rat plasma with 1.09, 1.46, 0.98, 1.13 ng/mL in T$_1$, T$_2$, T$_3$ and T$_4$, respectively. T$_4$ treatment increased the aldosterone level to a significantly (p<0.05) higher level (273.33 ng/dL) than other treatments. The extract treated rat showed a tendency in the cortisol level of lower levels than the control group, particularly, it was significantly (p<0.05) lower in T$_3$ group than other groups. T$_3$ and T$_4$ groups showed higher levels for interlukin-4 (IL-4) and anti-BSA IgG in immune cells and plasma. T$_2$, T$_3$ and T$_4$ treatments showed a slightly higher levels in v-interferon (INF-r) than the control, with a greater effect for T4 treatments. These results suggested that HPBE of the cross-bred Ogol chicken hydrolyzed with Flavourzyme increased immunological activity and decreased the concentration of cortisol and aldosterone hormones.

  • 최근 도입 필요성이 계속하여 높아지고 있는 지하방수로 유입구로는 유입구 효율과 성능으로 인하여 와류식 유입구가 많이 적용되고 있다. 그 중 나선식 유입구(spiral intake)는 가장 일반적으로 사용되는 형식으로 초기에 활용되었던 원형 유입구(circular intake)를 대신하여 사용되는 형식이다. 형태적인 복잡성에 도 불구하고 형식상의 특성으로 인하여 와류(vortex)를 안정적으로 형성시키기 때문에 많이 사용되고 있다. 나선식 지하방수로 유입구가 사용되는 가장 큰 이유는 유입구 내부에서도 수위가 안정적으로 유지되며, 유입 유량에 따른 수위의 변화가 다른 유입구 형식에 비하여 비교적 안정적으로 예측 가능하기 때문이며, 만약 지하방수로 유입구 내부에서 수위가 안정적으로 유지되지 못하고 도수 현상 등에 의한 수위 상승 현상 등이 발생하는 경우 지하방수로 내부로 안정적으로 유량을 배제하는 것이 어려워지고, 또한 도수 현상이 발생하는 동안 과도한 유량이 유입될 경우 다시 본류로 흐름이 역류할 가능성도 생각할 수 있다. 따라서 유입구 형상에 따른 수위의 변화를 정확히 예측하는 것이 매우 중요해 진다. 본 연구에서 검토될 나선식 종경사형 유입구(inclined spiral intake)는 일정한 바닥 경사를 도입하여 사류 흐름을 보다 안정적으로 가속시켜 유입구 내부에서의 도수 현상을 방지하는 형식으로 유입구 바닥의 외측 또는 중앙선을 따라서 일정한 경사를 주어 사류 유입 흐름을 안정적으로 유도함으로서 유량 배제 효율을 높인 형태라 할 수 있다. 본 연구에서는 유입구 외측을 기준으로 일정한 경사(5.0 %, 7.5 %, 10.0%, 12.5%)를 가진 나선식 종경사형 유입구 모형을 제작하여 유입 유량 변화에 따른 유입구 내부에서 수위-유량관계를 확인하였다
