Development and quality characteristics of beverages containing black sesame for nutritional supplementation in the elderly (고령자 영양 보충을 위한 흑임자 음료 개발 및 품질특성)

  • As a calorie supplement for the elderly, functional beverages based on black sesame were prepared with different roasting times (0, 10, 15, and 20 min for R-0, R-10, R-15, and R-20, respectively), and their properties were compared. The total calorie content of the beverage was adjusted to match that of half a meal to meet the nutritional requirements of the elderly. The suspension stability of all samples was maintained for 5 day by the addition of xanthan gum. Regarding the color of the beverage, L* and a* values decreased, whereas b* increased with the increase in black sesame roasting time. Among the samples, the total lignan content did not change, except for R-20, which showed a significantly lower value than the others. Total polyphenol content significantly increased with roasting time, reaching the maximum value in R-15 and R-20; however, the free radical scavenging effect decreased for R-20. Based on the results of the sensory test, R-15 was the most acceptable for customized beverages.

Consumer Preferences for Tea-Related Smartphone Applications: Focus on 20's Consumers ('차(茶)' 관련 스마트폰 앱에 대한 소비자 선호도와 특성: 20대를 중심으로)

  • Tea is one of the three most consumed drinks in the world along with coffee and cocoa, and it represents culture and tradition. There are more than 1,000 tea-related smartphone applications registered in the Apple App Store and Google Play. This study examined, for the consumers of the 20's, if there are differences in consumer preferences for tea-related applications based on gender, age, tea consumption amount and tea drinking duration. Based on surveys of 169 tea consumers, this study found that there were significant differences in consumer preferences for tea-related applications based on age and tea drinking amount. The applications of 'tea places,' 'entertainment,' and 'tea timer' were preferred by the consumers of 20's and 'etiquette,' 'tea ceremony,' 'teaware,'and 'tea information recording' were favored by the consumers of 30's and older. The consumers with higher drinking amount showed higher preferences for tea etiquette related applications. There were no significant differences for tea-related applications based on gender and tea drinking duration. The result of the study is expected to contribute to the development of tea related applications with higher appeals to consumers as well as traditional Korean drinks.

Optimization of Processing Conditions for Making a Black Ginger and Design Mixture for Black Ginger Drinks (흑생강 제조 공정 최적화 및 기능성 흑생강 음료 제조)

  • Black ginger, obtained from steaming and drying process, provides the various functional properties. This study was performed to investigate the optimum processing conditions for black ginger with high content of biologically active substance such as anti-oxidations. Optimum processing conditions such as temperature and time for black ginger was determined by response surface methodology (RSM) with manufacturing process and functionality. The optimum steaming condition was determined 6 hours at 93.2$^{\circ}C$, and 82.7 mg/L DPPH scavenging activities was obtained at this condition. The black ginger drink was made with black ginger extracts, Japanese apricot, and honey. Interaction effects of these ingredients were investigated by modified distance based on design and analyzed by linear, nonlinear regression model, and RSM. The optimization of mixture ratio was made by statistical modeling using DPPH scavenging activities and sensory properties which are the important target constraints in drink. Total flavonoids showed a linear canonical form, while preference and antiradical activity showed a nonlinear canonical form indicating the higher interaction among mixtures. The response trace plot revealed that antiradical activity, sensory properties and total flavonoids were quite sensitive to the drink blending. The optimum formulation of the drink was set at 14.2% of black ginger extracts, 5% of Japanese apricot, and 10.8% honey.

Social Commerce Food Coupon Recommending System Based On Context Information Using Bayesian Network (베이지안 네트워크를 이용한 상황정보에 기반을 둔 소셜커머스 음식 쿠폰 추천시스템)

  • More sales of food and beverage coupons have been made using SNS on social commerce recently. If one buys coupons on social commerce, he/she can enjoy products at a lower price; however, there are drawbacks that one must consider such as location, service hours, and discount rate. Thus, this paper suggests a system that recommends food and beverage coupons on social commerce for users that considers a user's personal context of location, time, and purchase history. In order to reflect a user's context awareness and continuous preference, this paper suggests a method based on the Bayesian network. In order to reflect personalized weighting on the standard of coupon selection to match a user's preference, a measurement and classification of weighting preferences is performed on the basis of AHP. 20 experiments in one month involving 12 students were carried out to verify the effectiveness of the system, resulting in an 80% satisfaction level.

Characteristics of Model Beverages with Gardenia Blue Pigments (치자 청색소를 첨가한 모델음료의 특성)

  • We investigated stabilities of blue pigment extracted from Gardenia jasminoides at various conditions to check its applicability for beverages. Gardenia blue pigment with maximum absorption at 587 nm was obtained from the reaction of glycine and genipin (aglycone of geniposide). The blue pigment was found to be relatively unstable at acidic pH but very stable at alkaline conditions with half-life values of 102 days and 126 days at PH 9.0 and PH 11.0, respectively. The pigment also showed high thermal stability with half-life value of 55, 18, and 2 days at 50, 70, and 9$0^{\circ}C$, respectively. The addition of inorganic ions, sugars, and amino acids to model beverage containing this blue pigment increased retention rate at room temperature while addition of vitamin C decreased the stability. The sensory evaluation of the model beverage showed that inorganic ions and amino acids increased overall acceptability, indicating that the blue pigments of Gardenia jasminoides can be used as a natural colorant for leverage.

Food Cravings, Appetite, and Taste Palatability in Women with Premenstrual Dysphoric Disorder (월경전 불쾌기분장애에 따른 맛 선호도 및 식품섭취 변화)

  • Women with the premenstrual dysphoric disorder (PMDD) report increased cravings for certain foods and altered taste preferences ding the premenstrual period. The objective of the present study was to investigate the association of PMDD with luteal phase food cravings, appetite, and taste preferences in 1,078 nurses. Among the 626 nurses who gave valid responses, the prevalence of PMDD and premenstrual syndrome (PMS) was 4.6% (N = 29) and 78.3% (N = 490), respectively. A highly significant increase was observed in the preference for sweet tasting foods during the luteal phase, compared to the follicular phase. Desire for sweet foods during the premenstrual period was significantly different among the three groups, being highest in the PMDD group, lower in the PMS group, and lowest in women with no symptoms. Both the PMDD and PMS groups showed significant increases in preferences for pungent tasting foods during the luteal phase. A repeated measures of analysis of variance on the taste preference data revealed that the desire for sweet tasting foods was significantly greater than for others such as salty, sour, and pungent tastes. A greater proportion of the subjects in the PMDD and PMS groups reported an increase in their total food intake during the luteal phase, compared to those women without premenstrual symptoms. Compared to the PMS group or the women with no symptoms, the PMDD group reported increased intakes of high carbohydrate foods during the luteal phase. The most commonly reported food cravings were for sauteed spicy rice cakes (ddukbokki), or for cold buckwheat noodles mixed in chili pepper sauce. These results indicate that the luteal phase food cravings, appetite and taste preferences change in accordance with the severity of the premenstrual symptoms.

The Optimal Addition Level of Loquat Leaf Extract in the Rice Beverages (반응 표면 분석을 통한 비파엽 첨가 쌀음료의 비파엽 첨가량의 결정)

  • The optimal amount of loquat leaf extract (LLE, $18^{\circ}$ Brix), fructose, and cream were determined to develop a rice beverage supplemented with LLE. The loquat leaves were extracted by water at $80^{\circ}C$ for 6 hrs and then concentrated to 18% of solid for 1 hr at the same temperature to extraction. To investigate the optimal concentration of the additives, the response surface methodology (RSM) was employed for the experimental design. The addition amounts of the additives were coded. Sweetness, bitterness, off-taste, color, taste preference, and total preference were affected significantly (P<0.05) by the addition of LLE, fructose, and cream. Cream masked the bitterness and off-taste. The total preference of the LLEsupplemented rice beverage showed a lower score than the commercialiy available rice beverages. To achieve the preference level of the commercial rice beverages, the regression between fructose and LLE concentration was calculated as: fructose= $0.618{\times}(LLE)^2+0.406{\times}(LLE)$. Conclusively, cream had an effect of masking the bitterness of rice milk, and the preference was highly related to the addition amount of fructose.

Optimization of the preparation method of citron (Citrus junos Sieb.) beverage containing hibiscus using response surface methodology (반응표면 분석법을 이용한 히비스커스 첨가 유자 음료 제조의 최적화)

  • This study aimed to optimize the preparation method of citron (Citrus junos Sieb.) beverages with hibiscus using response surface methodology (RSM). The experimental conditions were established using a central composite design with three independent variables as follows: ratios of citron (40~60%), citric acid (0.34~0.94%), and hibiscus (0.3~0.7%). The results indicate that an increase in the citron ratio contributed to increased sweetness and as the concentration of citron and hibiscus increased, the brightness of the citron beverage decreased and the yellowness increased. The citron ratio showed a significant correlation with the ABTS radical scavenging capacity. Among the 15 experimental groups, 4 representative samples showing statistical significance were selected, and sensory tests were performed, in comparison with commercially available products. As a result of the sensory test, four beverages prepared with the selected recipes showed higher preference than commercial beverages, and optimal recipe conditions were 40% citron, 0.34% citric acid, and 0.5% hibiscus.

A Study on the Enamel Erosion Caused by Energy Drinks (시판되는 에너지음료의 법랑질 침식효과에 대한 연구)

  • To find out the effect of commercially available energy drinks on tooth enamel erosion, analyzed pH, buffering capacity, and the content of some of the inorganic components selecting 4 energy drinks that has high affinity of the products currently being sold. In addition, by observing the degree of erosion before and after immersion in energy drink by surface microhardness and scanning electron microscope (SEM) the results were as follows: Acidity of energy drink 'Burn Intense' was the lowest as $2.78{\pm}0.01$ highest on distilled water as $6.475{\pm}0.01$. 'Burn Intense' buffering capacity was $3.48{\pm}0.155$ at pH 5.5, $1.88{\pm}0.15$ at pH 7.0 which is the highest, and 'Hot6' was $1.71{\pm}0.37$, $1.23{\pm}0.35$ on each of it showing the lowest points. Ca content on energy drink was the highest at 'Volt Energy' as ($77.21{\pm}2.70mg/kg$), the lowest at 'Hot6' as ($0.98{\pm}0.05mg/kg$). P content was the highest on 'Hot6'($1.34{\pm}0.05mg/kg$) and detected at 'Red Bull'. Enamel surface hardness variation of the energy drinks before and after immersion showed rapid decrease at 'Red Bull' ($66.65{\pm}35.60$), and 'Volt Energy' ($61.96{\pm}31.42$), 'Burn Intense' ($58.53{\pm}24.84$), 'Hot6' ($53.99{\pm}60.26$) was in order. Distilled water, the control group, showed significant difference with the experimental group (p<0.05). But there was no significant difference between energy drinks. At SEM observation and analysis, 'Burn Intense' was the most severe demineralization, 'Volt Energy', 'Hot6', 'Red Bull', distilled water was in order. In the above results, taken together there were no statistically differences between energy drinks but significant difference in comparison with distilled water. In addition, at SEM observation and analysis all energy drink caused dental erosion, especially 'Burn Intense', has the lowest acidity, was serious. Thus, it is believed to provide a variety of oral health education and information about energy drinks that can affect the erosion of the teeth so public have the right to be recognized and reasonable dental care.

Preference and Feasibility Traditional Accommodation in Jae Cheon City (전통호텔 건립의 타당성 및 선호도 -제천시를 중심으로-)

  • This paper is to suggest direction for development, and to analysis feasibility and preference traditional hotel which will be build in Jae cheon city. The questionnaires are distributed each50 in local area (Jae cheon, Dan Yang, Cheong Ju, Won Ju) and 100 in seoul, then used for data analysis 248.The results are as followed. First, it was showed that architectural style which is mixed korean traditional style outside with modern style inside, 100,000 (won) lower room cost, Korean restaurant, and various facilities. Second, two main reasons for using traditional house are to proper room price, and good location which is tourist attraction near lodging. Third. accommodations which is compromise between Korean and Western style is closely related with lower room cost (100,000 won), and natural-oriented traditional facilities. Fourth, traditional accommodations which is blend Korean style with Western style are strongly connected proper room and food & beverage price, and sanitation.
