The effects of dipping syrups prepared with isomaltooligosaccharides on the characteristics of Yackwa were investigated. The dipping syrups were prepared replacing sucrose with 0, 25 and 50% isomaltooligosaccharide. Physical and sensory characteristics of Yackwa were evaluated. Isomaltooligosaccharides increased dehydration rate and increased absorption rate of dipping syrups. Yackwas dipping in the syrup containing isomaltooligosaccharides were more acceptable than those with sucrose syrup. The acceptability was significantly correlated with shinness(p<.01), moistness(p<.05), adhesiveness(p<.05), cohesiveness(p<.01), roasted taste(p<.0l) and sweetness(p<.05). Therefore, isomaltooligosaccharides might be a good alternative for sucrose in making dipping syrup of Yackwa.

The facial skin condition expresses physical healthy as well as is considered one of important factors for attractiveness. Especially, most people prefer shiny skin. So various cosmetics has been manufactured for expression of shiny skin. However, shiny skin is subjectively evaluated, and difficult to evaluate clear shininess using the existing method in oily skin. Moreover, there is no clear classification criteria between shininess and glossiness, which is assessed negatively in the skin. So there has not been a reference value by mechanical measurement to define and classify shiny skin from greasy skin. In this study, we measured skin biophysical parameters (gloss, hydration, translucency and sebum) and facial images which are selected by volunteers using sensory evaluation. According to the measurement results, the values of gloss, sebum, and translucency were similar in both shiny and greasy skin; the values of sebum and gloss increased, whereas those of translucency decreased. However only skin moisture values statistically increased in shiny skin. In conclusion, we propose objective assessment criteria for classifying shiny and greasy skin using device measurement and quantitative assessment.

In order to verify whether the serum using the medicinal plant Coptis japonica is effective in anti-aging of the skin, the improvement rate was analyzed by measuring the skin elasticity and radiance of the subjects, and the satisfaction was evaluated through a questionnaire. Twenty-two female subjects were given a serum containing 3% Coptis Japonica extract on one cheek for 4 weeks, and the test site was measured, and the skin elasticity increased by 5.73% from 0.8505 ± 0.0395 R2 (mm) before use to 0.8993 ± 0.0234 R2 (mm) after 4 weeks. Skin glow increased by 4.74% from 55.94 ± 5.49 (a.u.) to 58.59 ± 4.66 (a.u.), and the probability of significance was p<0.001, indicating a significant increase in the improvement rate of both items. It was found that all subjects were 100% satisfied with the improvement of elasticity and 95.5% satisfied with the improvement of radiance, and no skin abnormalities were found during the trial period. These results are expected to be used as basic data for future research and product development of anti-aging functional cosmetics using Coptis Japonica extract.
