Studies on the Estimation of Growth Pattern of Meat in the Edible Parts of Broilers in Growing Stages (육용계에 있어서 성장단계에 따른 부위별 가식육의 증가양상 추정에 관한 연구)

  • A study was conducted to investigate the possibility of improving the effectiveness of the existing method(s) to estimate the edible meat weight in live broiler chicken. Four. breeds of chicken, white Cornish broiler chicks(parent stock), Single Comb White Leghorn(SCWL) egg strain chicks (parent stock), and two reciprocal cross breds of these parent stocks were employed in this study. A total of 480 birds, 60 male and 60 female chicks for each breed, were used. Ten male and 10 female chicks from each breed were randomly sacrificed at 0, 2, 4, 6, 8 and 10 weeks of ages in order to measure the body weight, edible meat weight of breast and 1eg(thigh and drum-stick), various components of body weight and various body shape measurements. In addition, chemical analyses of edible meat were carried out. Results obtained from this sturd were summarized as follows. 1. The average body weights of White Cornish broiler chicks and SCWL egg strain chicks were 1.82${\pm}$0.048kg(X${\pm}$S.E.) and 0.67${\pm}$0.029 kg. respectively, at 8 weeks of age. The feed to gain ratio for White Cornish and SCWL chicks were 2.24 and 3.28, respectively, for 0 to 8 weeks of age. The reciprocal cross bred chicks (White Cornish ${\times}$ SCWL) showed intermediate values in both parameters.

Evaluation of Genetic Ability for Meat Quality in Hanwoo Cow (육질개량을 위한 한우번식우의 유전능력평가)

  • This study was carried out to estimate genetic parameters and breeding values of Hanwoo cows for carcass traits. Carcass records were collected from Korean steers raised at the private farms located in rural area of Gangwon-do and slaughtered from December 2004 to June 2008 at the three slaughter houses near fattening farm. The results obtained in this study were summarized as follows; The means and standard deviations of the carcass traits were $5.57{\pm}2.01$ for marbling score (MS), $10.87{\pm}4.06mm$ for backfat thickness (BFT), $87.87{\pm}9.07cm^2$ for eye muscle area (EMA), $426.75{\pm}49.27kg$ for carcass weight (CW), and $65.80{\pm}3.80$ for yield index (YI). Heritability estimates using single trait analyses were 0.36 for MS, 0.35 for BFT, 0.24 for EMA, 0.29 for CW, and 0.40 for YI, respectively. Genetic correlation coefficients of MS with BFT, EMA, CW, and YI were -0.21, 0.30, -0.21 and 0.30, and those of BFT with EMA, CW and YI were -0.12, 0.57 and -0.97, and those of EMA with CW and YI were 0.32 and 0.27, respectively. And genetic correlation of CW with YI was -0.62. Single trait selection for MS might lead to reducing BFT, but might be an obstacle to increase CW due to negative genetic correlations of MS with BFT and CW.

A Novel SNP in the Exon 8 Region of the CLMN Gene and Its Association with Marbling Score in Hanwoo (한우 CLMN 유전자 exon 8번 영역의 신규 단일염기다형과 근내지방도의 연관성에 관한 연구)

  • This study aimed to identify single nucleotide polymorphisms in exon 8 region of the calmin (CLMN) gene and to evaluate their associations with meat yield and quality traits in Hanwoo (Korean cattle). We compared gene expression pattern of CLMN between high and low marbling score groups with extremely different intramuscular fat content of the longissimus lumborum muscles in Hanwoo. The CLMN gene was highly expressed in the high marbling score group. Total of nine SNPs were identified in the exon 8 region of CLMN gene, genotyping of the SNPs was carried out using direct-sequencing analysis in Hanwoo population (n=300) to evaluate their association with meat yield and quality traits. As a result, g.23249G>C in exon 8 was significantly associated with marbling score. Animals with the CC and GC genotypes had higher marbling score than those with the GG genotype. We constructed haplotypes of CLMN gene by linkage disequilibrium analysis and analyzed association between haplotypes and meat yield and quality traits. Haplotype of CLMN gene was associated with marbling score. As a result, animals with the CC-CC haplotype (g.23249G>C and g.23465T>C SNPs) had higher marbling score than those with CT and GT haplotypes. These findings suggest that the SNPs of bovine CLMN gene may be a useful molecular marker for selection of meat quality traits in Hanwoo.

Study on the Carcass Yield Grade Traits and Prediction of Retail Product Weight in Hanwoo Beef (한우도체의 육량등급 요인 특성과 판매 정육량 추정)

  • Analyses were conducted to estimate carcass component of yield grade factors by sex and live weight class and to develop the prediction equation of retail product weight by sex in Korean native cattle (Hanwoo). Data from 42,113 Hanwoo carcasses were used to estimate the traits of yield grade factor and an additional 1,066 carcasses were used to develop the prediction equation of retail meat weight. The average of fasting weight of cow, bull and steer were 529 kg, 596 kg, and 634 kg respectively. Carcass weight (CW), backfat thickness (BFT), loineye area (REA), Index score of wholesale meat and yield grade were significantly (p<0.01) affected by sex and live weight. The lean meat percentage, fat percentage and bone percentage based on the weight of cold carcasses were significantly different (p<0.05) between sex groups. The equation of predicting the retail meat product from this study could be expressed as a multiple regression $Y=-4.18+0.63{\times}CW\;(kg)-0.17{\times}BFT\;(cm)+0.16{\times}REA\;(cm^2)$, $R^2=0.93$. Among the independent factors, the BFT was the highest contributor to the prediction equation. Using the equation from this study should allow for rapid, precise and cost-effective assessment of the retail product in Hanwoo beef carcasses.
