Analysis of Benzo[α]pyrene Content in Edible Oils from Korean Market (시중에 유통되는 식용유지 중 benzo[α]pyrene 함량 분석)

  • Concentrations of benzo[$\alpha$]pyrene in edible oils from Korean market were evaluated by high performance liquid chromatography. Benzo[$\alpha$]pyrene known of the carcinogenic polycyclic aromatic hydrocarbons(PAHs), has been found at variable concentrations in several foods. This is associated with several factors during the process including contaminated raw materials, exposure of environment, and procedure of process or cooking. The levels of benzo[$\alpha$]pyrene were ranged from 0.5 to 1.4 $\mu$g/kg in virgin olive oil. Benzo[$\alpha$]pyrene contents in refined and virgin olive oil, sesame oil, soybean oil, corn oil, sunflower oil, safflower oil, and processed oil were 0.6-1.0 $\mu$g/kg, 0.9-1.3 $\mu$g/kg, 0.6-3.3 $\mu$g/kg, 0.5-1.1 $\mu$g/kg, 1.2-1.7 $\mu$g/kg, 1.0-2.1 $\mu$g/kg, and 1.0-1.4 $\mu$g/kg, respectively.

  • This study has attempted to use ozone for the treatment of skin diseases as research results that ozonated olive oil has an excellent therapeutic effect on skin diseases are known. However, there is hardly any accurate data in Korea. Usually, animal tests related to cosmetics are not performed, but toxicity tests were conducted because they were absolutely necessary. In general, there are not many cases of measuring actual data through animal tests for the purpose of confirming the performance of cosmetics, but in the case of toxicity tests, it is recommended to accurately measure skin reactions, so this experiment was conducted. In this experiment, in order to evaluate the skin irritation of ozonated oil (high concentration) on the rabbit, the test substance was applied to the back of the rabbit for 24 hours, and then mortality, general symptoms and skin irritation were evaluated. Experimental Results As a result of evaluating the treatment site of the test substance after a certain period of time, no skin irritation was observed in all animals.

  • 발효는 어떤 식품에 유용한 미생물이 자라 큰 분자의 영양소를 분해하여 소화되기 쉬운 식품으로 변하게 한다. 그리고 음식속의 영양소를 이용하여 산성분, 맛성분, 생리활성 물질을 만들어내어 음식물의 보존기간을 연장할 뿐 아니라 균자체(유산균, 프로바이오틱 이라함)나 그 생성물들은 사람의 건강을 증진시키는 효과를 갖는다. 우리나라의 발효식품에는 김치, 장류(된장, 간장, 청국장, 고추장 등), 젓갈류, 막걸리가 대표적이다. 서양에서는 우유 발효식품으로 요구르트, 치즈, 채소발효식품으로는 사우어 크라우트, 피클, 올리브가 있고, 발효빵, 발효소세지, 술로는 포도주, 맥주 등이 있다. 발효 콩제품으로는 템페(인도네시아), 미소(일본된장), 쇼유, 낫또, 수후, 도우치 등 다양하다. 이에 우리나라에서 가장 많이 섭취하고 있는 김치, 된장 및 청국장의 암 예방효과에 대하여 알아보고자 한다.

  • It seems unrealistic to say that fried chicken, often known as the American soul food, has one of the biggest markets in South Korea. Yet, South Korea owns more numbers of fried chicken restaurants than those of McDonald's franchise globally[4]. Needless to say not all these fast-food commerce survive in such small country. In this study, we propose a predictive model that could potentially help one's decision whilst deciding to open a store. We've extracted all fried chicken restaurants registered at the Korean Ministry of the Interior and Safety, then collected a number of features that seem relevant to a store's closure. After comparing the results of different algorithms, we conclude that in order to best predict a store's survival is FDA(Flexible Discriminant Analysis). While Neural Network showed the highest prediction rate, FDA showed better balanced performance considering sensitivity and specificity.

Research on the Quality Properties of Olive Oils Available in Korea (국내 유통되는 올리브오일의 품질특성 실태조사)

  • An investigation of various olive oils available in Korea was carried out to assess their quality properties such as color, oxidative stability, fatty acid composition, tocopherol content, sterol content and benzo(a)pyrene content. In color measurement, by using a Lovibond color scale and Hunter color difference meter, both a and b values of extra virgin olive oil were higher than those of pure olive oil by Tintometer (Lovibond PFX995). However, extra virgin olive oil showed higher a value and lower L value than pure olive oil by the Hunter color difference meter. In the rancimat test, the induction period of extra virgin olive oil $(38.03{\sim}8.47hr)$ was longer than that of pure olive oil $(32.40{\sim}9.94hr)$. In fatty acid composition, C18:1 $(72.01{\sim}78.53wt%)$ was present in the greatest amount, with lesser amounts of C18:2 $(4.88{\sim}10.36wt%)$ and C18:3 $(0.56{\sim}1.09wt%)$. The tocopherol content ranged from ${\alpha}-Toc\;4.09{\sim}13.89mg/100g$, ${\beta}-Toc\;0.57{\sim}1.34mg/100g$, and ${\gamma}-Toc$ $3.41{\sim}8.03mg/100g$, and ${\alpha}-tocopherol$ was found to be the main isomer in all oil samples. Therefore, there was little difference in the fatty acid composition and tocopherol content among the different types of olive oils. In sterol content, ${\beta}-sitosterol$ $(124.52{\sim}19.33mg/100g)$ and campesterol $(1.10{\sim}0.62mg/100g)$ of extra virgin olive oil were higher than that of pure olive oil $({\beta}-sitosterol\;92.68{\sim}17.44mg/100g,\;campesterol\;0.59{\sim}0.35mg/100g)$. Benzo(a)pyrene was found in almost all samples, with $0.287{\sim}0.106{\mu}g/kg$ in extra virgin olive oil and $1.204{\sim}2.130{\mu}g/kg$ in pure olive oil.

  • 한국산 해조 3종, Umbraulva olivascens (P.J.L. Dangeard) G. Furnari, Bryopsis minor Womersley, Sargassum polycystum C. Agardh에 대한 형태학적 및 분류학적 주해가 제시된다. Umbraulva olivascens는 뚜렷한 올리브 체색, 파상형 연변, 엽체의 구멍 및 조하대 서식처에 의해 특징지어진다. Bryopsis minor는 작은 조체, 모든 방향에서 많은 분지, 기부에 잘록함이 없는 선형의 소지, 두드러진 가지 흔적을 결여하는 축, 뚜렷한 중심 피레노이드를 갖는 엽록체, 주축과 비슷한 길이의 가지 및 뚜렷하지 않은 주축을 갖는 것이 특징적이다. Sargassum polycystum은 조체 모든 부분에서 나는 원통형 내지난형의 돌기, 가시가 있는 뚜렷한 중륵을 갖는 전연 내지 다소 거치연의 잎과 드물게 나는 기낭을 갖는 것으로 특징지어진다. 이 3종은 여기서 한국 해조상에 처음 기록된다.

A Case Study of a Taeeumin Patient with Olivopontocerebellar Atrophy Improved with Jowisengcheong-tang (조위승청탕(調胃升淸湯)으로 호전된 올리브교소뇌위축증 환자 1례)

  • Objectives The aim of this study was to examine significant improvement of dizziness, gait disturbance, insomnia and xerostomia after treatment with Jowisengcheong-tang in a Taeeumin patient with olivopontocerebellar atrophy (OPCA). Methods The patient's subjective and objective symptoms were observed daily throughout the hospitalization period using global assessment (G/A), and the Unified Multiple System Atrophy Rating Scale (UMSARS) was used to assess the overall function of patient. Results The symptoms of dizziness and xerostomia decreased from G/A 100 to G/A 10~30 for five days, and the UMSARS score decreased in Part I,II. Conclusions This case showed that Sasang constitutional medicine treatment can be effective treatment method for OPCA. We consider that consistent treatment can contribute to improve the patient's quality of life.

Immunohistochemical Localization of NMDA Receptor in the Auditory Brain Stem of Postnatal 7, 16 Circling Mouse (생후 7일, 16일된 circling mouse 청각 뇌줄기에서 N-메틸-D 아스파르트산염 수용체(NMDA receptor)에 대한 면역염색학적 분포)

  • Glutamate receptors may play a critical role in the refinement of developing synapses. The lateral superior olivary nucleus (LSO)-medial nucleus of trapezoid body (MNTB) synaptic transmission in the mammalian auditory brain stem mediate many excitatory transmitters such as glutamate, which is a useful model to study excitatory synaptic development. Hearing deficits are often accompanied by changes in the synaptic organization such as excitatory or inhibitory circuits as well as anatomical changes. Owing to this, circling mouse whose cochlea degenerates spontaneously after birth, is an excellent animal model to study deafness pathophysiology. However, little is known about the development regulation of the subunits composing these receptors in circling mouse. Thus, we used immunohistochemical method to compare the N-Methyl-D-aspartate receptor (NMDA receptor) NR1, NR2A, NR2B distribution in the LSO which project glutamergic excitatory input into the auditory brainstem, in circling mouse of postnatal (p) 7 and 16, which have spontaneous mutation in the inner ear, with wild-type mouse. The relative NMDAR1 immunoreactive density of the LSO in circling mouse p7 was $128.67\pm8.87$ in wild-type, $111.06\pm8.04$ in heterozygote, and $108.09\pm5.94$ in homozygote. The density of p16 circling mouse was $43.83\pm10.49$ in wild-type, $40\pm13.88$ in heterozygote, and $55.96\pm17.35$ in homozygote. The relative NMDAR2A immunoreactive density of LSO in circling mouse p7 was $97.97\pm9.71$ in wild-type, $102.87\pm9.30$ in heterozygote, and $106.85\pm5.79$ in homozygote. The density of LSO in p16 circling was $47.4\pm20.6$ in wild-type, $43.9\pm17.5$ in heterozygote, and $49.2\pm20.1$ in homozygote. The relative NMDAR2B immunoreactive density of LSO in circling mouse p7 was $109.04\pm6.77$ in wild-type, $106.43\pm10.24$ in heterozygote, and $105.98\pm4.10$ in homozygote. the density of LSO in p16 circling mouse was $101.47\pm11.5$ in wild-type, $91.47\pm14.81$ in heterozygote, and $93.93\pm15.71$ in homozygote. These results reveal alteration of NMDAR immunoreactivity in LSO of p7 and p16 circling mouse. The results of the present study are likely to be relevant to understand the central change underlying human hereditary deafness.

Effect of Die Temperature and Dimension on Extract Characteristics of Extruded White Ginseng (사출구 온도와 구조에 따른 압출성형 백삼의 추출 특성)

  • The objective of this study was to determine the effect of die temperature and dimension on extraction pattern, extract yield, and crude saponin content of extruded white ginseng. The extrusion variables were die temperature $(110\;and\;120^{\circ}C)$ and die dimension (3 holes with 1.0 mm, 2 holes with 2.0 mm, and 1 hole with 3.0 mm diameter). The browness and redness were indicator of active components in ginseng extract. Both were used to evaluate the effect of die temperature and die dimension on release pattern and release rate constant. Browness and redness of extract achieved its lowest value at die temperature $110^{\circ}C$ and 2 holes with 2.0 mm diameter, indicating the lowest extraction rate constant. Extract yield highly increased by extrusion treatment. Extract yield and crude saponin content were the highest at die temperature $120^{\circ}C$ and 1 hole with 3.0 mm diameter. In conclusion, extrusion process has contributed significantly in improvement of release rate of its active components.

Analysis of Characterization in Commercial Extra Virgin Olive Oils (유통 압착올리브유의 이화학적인 특성)

  • To analyze and differentiate volatile compounds of 13 extra virgin olive oils from market, solid-phase micro extraction (SPME) GC-MS and electronic nose (EN) equipped with metal oxide sensors were applied. The volatiles identified in extra virgin olive oils include hexanal, 4-hexen-1-ol, (Z)-3-hexen-1-ol, acetic acid, and 2,4-dimethyl-heptane, etc. Response from EN was analysed by the principal component analysis. Proportion of the first Principal component was 99.70%, suggesting that each aroma pattern of the 13 extra virgin olive oils could be discriminated by EN. Fatty acid compositions were oleic (61.1${\sim}$77.9 mole%), palmitic (11.7${\sim}$16.5 mole%), linoleic (4.7${\sim}$9.7 mole%), stearic (2.5${\sim}$2.9 mole%), Palmitoleic (0.8${\sim}$2.4 mole%), and linolenic acid (0.7${\sim}$1.2 mole%). In color study, extra virgin olive oil showed $L^{\ast}$ value of 81.7${\sim}$92.9, $a^{\ast}$ value of -28.3${\sim}$13.5 and $b^{\ast}$ value of 52.2${\sim}$139.0. Total phenol and ${\alpha}-tocopherol$ contents were 6.2${\sim}$24.9 mg/100 g and 5.5${\sim}$12.8 mg/100 g, respectively. In Rancimat test, the induction period of 13 extra virgin olive oils showed 31.76${\sim}$54.04 hr while their POV ranged from 13.5 to 22.9 meq/kg oil.
