Physicochemical properties of Hallabong Tangor(Citrus Kiyomi ${\times}$ ponkan) cultivated in Heated greenhouse were investigated. Moisture contents of Hallabong and M16A (a variant species of Hallabong) were 87.42% and 88.12% total sugar were 8.01% and 7.81% and acid content were 1.09% and 0.99% respectively. Vitamin C content of Hallabong was 72.01 mg/100 g that was higher than Citrus unshiu. Potassium content of M16A was 938.33 mg/kg, while Hallabong was 1369.33 mg/kg. The contents of inorganic element in a decreasing order were K > Ca > P > Mg > Na in Hallabong, and K > P > Ca > Mg > Na in Ml6A. Sucrose in Hallabong and M16A were 3.60% and 4.36%, respectively, which is half of total free sugars. Fructose and glucose Hallabong and M16A were 2.22% and 1.90%, 1.94% and 1.65% respectively. Citric acid in Hallabong and M16A was 82.32% and 69.88%, respectively among total organic acids. The content of malic acid was higher in M16A, compared to Citrus unshiu. Hesperidin and narirutin were identified main flavonoids.
Yeast strains useful for the production of wine using mandarine orange, Citrus unshiu, as a main substrate were screened, and their primary ability to decompose citric acid that affects directly wine quality was investigated. Total eleven strains were selected for brewing orange wine. Five wild strains were from soil-based collections and identified: four of them were Saccharomyces cerevisiae and one of them was S. ellipsoideus. The rest of six strains were from among eighteen laboratory strains: three of them were S. cerevisiae, and the other three were S. coreanus, S. uvarum, and S. sake. Two strains of S. cerevisiae out of these selections were chosen and their decomposition of citric acid was investigated. Citric acid was not utilized as sole carbon source for cellular growth. However, when both citric acid and glucose were added together as carbon sources, decrease of citric acid concentration was observed after incubation. Shaking incubation was more effective for the reduction of citric acid than standing incubation. Utilization of citric acid did not contribute to the increase of ethanol concentration during fermentation. On the other hand, it appeared that citric acid caused partial inhibition of cellular growth of the yeasts.
Major components and antioxidative properties of whole fruit powders and juices prepared from premature mandarin, Citrus unshu, were investigated. Dietary fiber, flavonoid, and organic acid contents greatly increased in samples with lower degree of fruit maturity (August) than higher ones (October), and in whole fruit powders than extracted juices, whereas free sugar contents, especially sucrose content, increased in fruits with higher degree of maturity than lower ones. Antioxidative properties were not affected by degree of fruit maturity, whereas total polyphenol content and electron-donating abilities were higher in extracted juices than whole fruit powders. Nitrite-scavenging abilities of all samples were similar except at pH 6.0.
This experiment was carried out to examine the effects of foliar applications of 100 mg.L$^{-1}$ ethephon mixed with different calcium formulae (10,000 mg.L$^{-1}$ Clef-non, 2,000 mg.L$^{-1}$ Cell-bine, 2,000 mg.L$^{-1}$ Hicalux, and 2,000 mg.L$^{-1}$ calcium acetate monohydrate) on the rind coloration, defoliation and fruit quality of satsuma mandarin cultivated in the plastic greenhouse. Foliar applications of ethephon alone or in mixture with either Clef-non, Cell-bine, Hicalux or calcium acetate monohydrate demonstrated that increased 'a'value of peel chromaticity as compared to the control. The treatments encouraged fruit colour and allowed the harvest date to be predicted. The defoliation ratio decreased considerably by foliar applications of ethephon mixed with Cell-bine or Hicalux. The sugar content of fruit increased by 1.6, 1.54, and 1.54$^{\circ}$Bx with the foliar applications of ethephon, ethephon+Clef-non, and ethephon+Cell-bine, respectively. With the foliar applications of ethephon in mixture with Cell-bine, fruit coloration was accelerated. defoliation was delayed, and fruit quality was improved.

In order to obtain a basic understanding of the storage of Satsuma mandarin sacs, the canned sacs were stored at room temperature from Feb. 20 to June 20(4 months), after dipping in chlorine solution and pasteurization as a pretreatment before canning. In general, the brix, acidity and pH of the sacs were almost not affected by the chlorine treatment ana a variety of pasteurization temperatures during storage. The broken rate was apperently increased by chlorine treatment, especially in the early stage of storage. However, the broken sacs were partially recovered in the end of storage. The contents of total carotenoid were almost not decreased by the conditions of the pretreatments during storage. The contents of vitamin C were sharply decreased between 3rd and 4th month of storage time on all sample. As a result, the decrement of vitamin C in canned sacs was caused by storage temperature rather than the condition of the pretreament.

This study was conducted to observe the effects of urea foliar spray to replace soil fertilization on defoliation ratio, shoot growth and fruit setting in satsuma mandarin (Citrus unshiu Marc.). Twice foliar sprays of 1% urea after harvest increased N and chlorophyll contents in leaves, and decreased defoliation during the winter season. The growth of the ovary and spring shoot was stimulated by the twice 0.8% urea foliar spray around the time of bud emergence. In addition, the treatments increased the number of flowers and fruit setting, but didn't influence fruit quality.
The changes of freshness from the several transportation methods and the effect of low temperature transportation for Satsuma Mandarin (Citrus unshiu Marc. Var. okitsu) fruit were investigated to get informations on keeping freshess and good taste. There were 695 lower in fresh weight, 1.91mg lower in vitamin C and 20% higher in sugar acid rate for citrus fruit after room temperature (17$^{\circ}C$) transportation than low temperature transportation (5$^{\circ}C$), respectively. The loss of freshness md tasting was caused by the weight loss of citrus fruit because the sugar acid rate was increased in room temperature (from 16.11 to 21.75). Therefore, it is desirable for citrus fruit to transport in low temperature to keep high quality and freshness.
The stowage effects of Satsuma mandarin(Citrus unshiu Marc. var. miyagawa) were investigated by selecting various pretreatmnents; non-tested, wax-coating, paper packaging, 0.02mm cryovac film packaging. Weight loss of film packaging was the lowest among that of others, but decay radio was increased highly at late stages of storage. Soluble solids, moisture content of peel and total sugar were maintained almost constant, but acid content, vitamin C and firmness were reduced gradually during storage at room temperature. For 100 days storage, losses from weight and decay of ton-treated, paper packaging, wax-coating and film packaging were 15.9%, 18.5%, 17.4% and 12.9%, respectively. Acid content was decreased loom 1.28% to 0.81∼0.91% after 100 days storage. Ethylene evolution was increased in a degree after 65 days storage, and the amount was increased repidly afer 115 days. it seemed to be derived from decayed fruits and physiological activities. CO2 content of inner part of fruits was increased between 40∼100 days after storage. Optimum storage period of early variety of Satuma mandarin was regarded for 100days on the basis of appeareance and taste.

This study investigated EEG signal, subjective fragrance sensation, and the preference of differently colored cotton knit treated with Citrus unshiu oil containing microcapsules as well as examined their relationships for providing regression models on subjective fragrance preference. Color variables combining 2-level hue (Yellow and Green) and 3-level tone (strong, pale, and grayish) were applied by dyeing prior to microcapsule treatment. We invited 28 female college students aged 20's for EEG signal experiments and subjective fragrance sensations with fragrant knit by rubbing. EEG signals at $mid-{\alpha}$, $fast-{\alpha}$, and $low-{\beta}$ showed significant differences depending on color; Green had more relative power values and grayish tone did more at $low-{\beta}$. Even though subjective sensation showed no significant differences depending on color, some of them such as Fresh, Comfort, and Natural showed significant correlations with EEG signal at $low-{\beta}$, which means that the fragrance sensations of Citrus unshiu fragrance are concerned with attention and alertness for Koreans. Fragrance preference was regressed significantly using some EEG signals and subjective sensation. The results could be utilized to value up fragrant textiles by Citrus unshiu oil.

The canned fruit flesh of orange (Onju, Citrus unshi Marc.) was stored at $5^{\circ}C,\;15^{\circ}C,\;and{\;}30^{\circ}C$ for 4 months and the contents of sugar, organic acids and vitamin C of stored orange were investigated. The contents of reducing sugar of orange stored for 4 months slightly increased from 4.91% to $5.39{\sim}7.95%$ and decreased as the temperature rised. The sugar was composed of $6.63{\sim}18.09%$ sucrose, $3.86{\sim}9.12%$ glucose and $3.59{\sim}9.51%$ fructose. The content of sucrose used in manufacturing process was the highest and decreased as the temperature rised and as the storage period prolonged, whereas the contents of glucose and fructose increased as the storage period prolonged. The content of citric acid in the sample was the highest $(50.41{\sim}90.15\;mg%)$ among the-citric, malic, maleic, ${\alpha}-ketoglutaric$ and oxalic acids. The organic acids decreased as the temperature rised after storage for 4 months. The content of vitamin C was $8.28{\sim}14.29\;mg%$ and decreased most pronouncedly at $30^{\circ}C$ after storage. The color of the samples did not change significantly, but the degree of transparency, L was $20.41{\sim}23.01$ after storing the sample.
