Using Service Design Tools in Community Nutrition Research: A Case Study in Developing Dietary Guidelines for Young Adults (서비스 디자인 도구의 지역사회영양학 분야 활용: 청년 식생활 가이드 개발 사례)

  • Objectives: Recent epidemiological data reported that young adults in their 20 ~ 30s are a vulnerable population with unhealthy dietary practices and a few signs of deteriorated health indicators. However, there are no dietary guidelines that are specifically developed for the young adult population. This study introduces some data collection tools that are mostly used in the service design field, and demonstrates how these tools can be used in nutrition research for developing dietary guidelines for specific target groups. Methods: To understand the context of food choices among young people, 39 people were enrolled to complete a probes booklet. Thematic analysis and word cloud were performed to capture the main themes from the probes and a persona was developed based on the findings. Results: Data from the probes enabled us to grasp the various contextual meanings of eating practices among young people. Most participants understand what a healthy diet is and often have a willingness to practice it. However, there were very few participants who were following the practices. We created four types of persona for developing dietary guidelines: healthy eating, emotional eating, convenient eating, and trendy eating. Conclusions: Probes and persona were used in order to understand the lives of young adults and develop targeted messages. We hope that this introduction will be helpful to researchers who are looking for new ways of understanding their target population in the field of community nutrition.

  • 자주복, Takifugu rubripes은 경골어류 복어목 참복과에 속하고, 우리 나라 전 연안 및 일본 훗카이도 이남, 중국 등지에 분포하며 전장 70 cm이상까지 성장하는 대형어이다(Abe, 1949). 어류는 자어기에 내부영양에서 외부영양으로 영양원이 전환되는 초기생활사에 있어 소화 기관계의 변화가 일어나고, 치어기의 생장과 생존에 크게 영향을 미친다고 제시하고 있다(Lee, 1988). 이 연구는 소화흡수와 직접 관련된 자주복 부화 자·치어의 각 성장단계에 따른 소화 기관의 형태적 기능적 분화과정을 조직학적으로 관찰하여, 종묘생산 과정에서의 초기 대량 폐사를 줄이고, 적절한 먹이 투여시기에 의한 보다 나은 성장률을 얻는데 중요한 기초자료를 제공하고자 한다. The Effect of Microalgal Growth on Nutrient Sources Using Microalgal Small Scale Raceway Pond (SSRP) for Biodiesel Production (바이오디젤 생산을 위한 미세조류 옥외배양 시스템의 영양원에 따른 미세조류 성장 특성 비교)

  • The world is in need of sustainable and eco-friendly energy sources such as microalgal biodiesel due to global warming and fossil fuel shortages. In this study, we compared the effectiveness of liquid fertilizer produced from swine manure and agriculture grade solid fertilizers as nutrient sources for microalgal biomass production. Mixed culture (Chlorella spp., Scenedesmus spp., Stigeoclonium spp.; CSS) was cultivated for 28 days in Small Scale Raceway Pond (SSRP) using various nutrient sources (swine manure liquid fertilizer, agricultural solid fertilizer, and mixture of these two fertilizers). Biomass and lipid productivity of fertilizer mixture were the highest at 0.8 g/L and 5.8 mg/L/day, respectively. These results indicate that the fertilizer mixture can provide microalgae necessary nutrient sources for stable biodiesel production and biomass growth. In addition, overall cost of microalgal cultivation and subsequently biodiesel production would be significantly reduced.

  • In the traditional medicine, the basidiocarps of Poria cocos (Fr.) Wolf naturally collec­ted have been widely used as a traditional remedy for dropsy, diarrhea, gonorrhea and nervous disease more than 3500 years ago. It was recently found to be composed of the particular compounds having antitumor effects. Therefore, its demand has been gradually increased, whereas it is still dependent upon the natural harvest. The artificial cultivation of P. cocos was carried out to observe the morphological characteristics and to investigate the cultural characteristics of P. cocos isolates collected. The morphological characteristics of its basidiocarps was observed. The physiological aspects of its isolates were also investigated.
