식혜제조 조건이 식혜밥알의 형태에 미치는 영향

  • 식혜를 제조하는 과정에서 엿기름 추출액의 농도가 당화시간과 밥알형태 및 식혜의 관능평가에 미치는 영향 등에 대하여 조사하였다. 엿기름 추출액의 농도가 기본배합비(쌀 6g, 엿기름 7g, 물240ml)의 4배(쌀 24g, 엿기름 28g, 물 240ml)일때 당화시간 단축과 밥알 형태 유지에 가장 적합하였다. 당화된 밥알의 형태는 엿기름 추출액의 농도 및 당화시간과 당화 전 밥알형태에 의해 영향을 받는 것으로 나타났다. 당화가 완료되었을 때 보다 미량의 전분질이 남아 있을 때가 식혜의 부드러운 맛과 밥알형태 유지에 적합하였다. 밥알형태유지에 적합한 당화시간은 240분이 가장 좋았고 또한 210분과 270분에서도 적합한 것으로 나타났다. 식혜제조시 부드러운 맛과 밥알 형태를 유지하고 생산공정의 단축을 위해서는 쌀 : 엿기름 : 물을 24g : 28g : 240m1의 비율로 제조한 후 전체의 양이 4배가 되게 약 3배의 물을 첨가하는 것이 바람직한 것으로 사료된다.

Effect of Several Cereal Extracts on Enzymatic Browning (수종 곡류추출물의 효소적갈변 억제효과)

  • The inhibitory effects of cereal extracts and concentrates from barley, waxy rice flours and malt on enzymatic browning were measured using apple polyphenol oxidase (PPO). Malt concentrate showed the largest inhibitory effect on PPO among all. The relationship between the properties of malt concentrate such as browning intensity and reducing power and their inhibitory effect on PPO was also studied. As the heating time increased, the browning intensity and the reducing power of malt concentrates were increased, while PPO activities were decreased. Inhibitory effect of malt concentrates on PPO increased with heating time and their concentration. L-value and compression force of the apple slices dipped in malt concentrate decreased by 6.9% and 14.3%, respectively, showing the smallest changes compared with raw and water-dipped apple slices during cold storage for 9 days. These results suggest that malt concentrate can be a potential source for the control of enzymatic browning.

  • The ways of preservation of chotkal which are classified by the principles of fermentation, are analyzed and interpreted. Chotkal is preserved mainly as two forms; one is chot and the other is shikhae. The fact that shikhae is preserved only in the eastern area can be attributed to two main reasons; (1) raw materials are available throughout four seasons and (2) relatively less production of salt. Chotkal is further classified into nine different ways of preservation and shikhae into fourteen. Regional characteristics for chot include that (1) in western part, Kechot is preserved in salty water (2) in central part Origuljot is fermented either with salt and powdered red pepper, or with salt, powdered red pepper and cooked cereal, (3) in southern part, freshwater shrimp with (1) salt only, (2) salt and powdered red pepper, (3) salt and cooked cereal, (4) salt, powdered red pepper and cooked cereal, (4) in northern part, fish with salt and powdered red pepper. Those for shikhae include that malt is used in southern part, shredded radish in northern part and cooked cereal more in southern part than in northern part.

Optimization of Sikhe Processing using the Obtained Data by Biosensor (바이오센서 계측 결과를 이용한 식혜제조의 최적화)

  • This study was to determine the optimum conditions of malt extracting temperature, extracting time of malt in water, ratio of malt to water, and rice volume of malt extract water on saccharification in producing sikhe (sweet rice drink) using central composite design of response surface methodology. Glucose and maltose were analyzed by a biosensor having dual cathode system. The optimum temperatures of malt extracting for glucose and maltose were 60 and $55^{\circ}C$. The saccharification power for the two sugars was highest when malt powder soaked for 6.5 and 5.75 hour, respectively. And ratios of malt to water for optimum saccharification were 1 : 6.3 to 1 : 8.8, respectively. The optimum volumes of malt extracting to rice for the two sugars were 0.48% and 0.6%, respectively. The application of response surface methodology to sikhe processing showed a good correlation with high significance.

Quality Characteristics of Barley Varieties Related to Enzymatic Activity in Malt (엿기름의 효소활성과 관련한 보리의 품질특성)

  • Sixteen domestic barley varieties and subsequently produced malts were evaluated for quality characteristics. Diastatic power(DP), complementary actions of amylases in malt, had a wide $variation(139{\sim}220^{\circ}L)$ among the barley varieties. Some 6-row barley varieties demonstrated significantly high DP values. ${\beta}-\;and\;{\alpha}-amylase$ activities in malts were also significantly influenced by barley varieties. Diastatic power was highly correlated with ${\beta}-amylase$ activity, indicating that the ${\beta}-amylase$ activity was a predominant factor determining saccharifying action in malt. Amylograph was used to indirectly estimate starch-degrading enzymatic activity, and the reduction in amylograph viscosity was associated with ${\alpha}-amylase$ activity. Barley quality factors in relation to enzymatic activity of malt were analyzed, and the barley variety with lower kernel weight and less plumper kernels tended to produce higher starch-degrading enzyme activity. Potential diastatic power, an estimate of bound ${\beta}-amylase$ in raw barley, was associated with diastatic power in the final malt. Potential diastatic power turned out to be an important factor for predicting good malting barley.

Characteristics of Sikhye(Korean Traditional Drink) made with Different Amount of Cooked Rice and Malt and with Different Sweeteners (재료의 양과 감미료를 달리한 식혜의 관능적 특성)

  • This study was conducted to investigate the characteristics of Sikhye as affected by different amount of cooked rice and malt, and by different kinds of sweeteners. In the various Sikhyes made with the different amount of cooked rice and malt, the degree of such sensory properties as color and malt odor significantly increased with the increased amount of malt. As the amount of cooked rice increased, sensory properties such as turbidity, sweetness and viscosity increased. Reducing sugar content in Sikhye was consistent with those of sensory evaluation on sweetness. Sikhyes containing aspartame, saccharin, sorbitol or sucrose at equisweet levels to Sikhyes containing 10% sucrose showed different sensory characteristics except sweetness. Sikhye sweetened with mixtures of substituted sweeteners showed increase in sweetness and differences in bitterness and astringency compared with Sikhye containing 10% sucrose.

Quality Characteristics of Syrup made with Saccharified Barley Liquid (보리당화액을 첨가한 시럽의 제조와 품질특성)

  • Barley is a main food source, along with rice, in our dietary life that is easy to buy and process. It is required to develop a beverage base and barley syrup for desserts in order to raise utilization of barley beyond its present use in Sikhye (sweet fermented rice drink) and Jocheong (grain syrup) production. In pursuit of the goal to increase the usability of barley as an ingredient of processed food, this study examined the optimal preparation conditions of barley mash for barley syrup. In addition, the study prepared a barley syrup using saccharified barley liquid, analyzed quality characteristics, and conducted a sensory evaluation. Saccharified barley liquid(barley mash) was prepared with ratios of adding malt of unhulled barley germinated as 0 g(CON), 10 g(BM10), 20 g(BM20), and 30 g(BM30). The results of measuring pH under the varied conditions of saccharification temperatures from $50^{\circ}C$, $60^{\circ}C$, and $70^{\circ}C$, as well as time from 1 to 8 hours, treveal that the optimum condition for malt saccharification is $60^{\circ}C$ for 5 hours. By adding oligosaccharides and lemon juice to the saccharified barley liquid at the different ratios of added malt, this study measured quality characteristics(color value, viscosity, pH, sweetness) of barley syrup warmed up for 1 hour. As the result of measuring color in the barley syrup prepared by saccharified barley liquid, higher levels of added malt saw L-value decreased while a-value and b-value both increased. BMs30 showed the highest viscosity of $1,202.67{\pm}3.06$. As for pH, BMs30 was the highest at pH $3.57{\pm}0.02$. The result of the sensory evaluation of barley syrup showed the superior sensory characteristics of BMs20 in terms of color, flavor, sweetness, viscosity and overall quality.

찹쌀노치 제조법에 관한 연구

  • 1. 3시간 침수시켜 분홰한 찹쌀가루를 20meshcp를 통과시켜 시료로 이용했다. 2. 찹쌀에 대한 엿기름의 첨가량과 처리시간을 달리하여 노치를 제조한 결과 5%엿기름 첨가로 8시간 삭히는 조건이 최대의 전체적인 맛을 나타냈다. 3, 엿기름의 처리온도는 5$0^{\circ}C$조가 6$0^{\circ}C$에서 총당과 환원당 함량이 높고 요오드 비색도 값은 작았다.

  • The investigation was aimed to reduce the period of bed log through the protection of harmful fungi and to know the effects of physiological activating substances on the yield increase of Lentinus edodes. Mycelial growth was evaluated both the bed logs and physiological activating substances, respectively. I percent extract of Allium cepa and malt as a physiological activating substance was highly effective in mycelial growth of Lentinus edodes. Better effects among the bed logs by the application fo physiological activating substances observed in both Quercus serrata and Carpinus laxiflora. This results suggested that supplement of physiological activating substances to the bed log would be beneficial for the production of Lentinus edodes.

Comparison of the Quality Characteristics of Sikhye Made with $N_2$-Circulated Low-temperature Dry Malt and Commercial Malts (저온 질소 건조한 엿기름과 시판 엿기름으로 제조한 식혜의 품질 특성 비교)

  • This study compared the quality characteristics of sikhye (a traditional Korean sweet rice drink) samples prepared with $N_2$-circulated low-temperature dry malt (RM) and commercial malts. The amylase activities of the malts and the physiochemical (brix, reducing sugar, turbidity, color) and sensory qualities of the sikhye samples were examined. The results showed that RM had higher ${\alpha}$-amylase and ${\beta}$-amylase activities than the commercial malts. And the sikhye made with RM had higher sugar and reducing sugar contents as compared to the samples made with commercial malts. There were no significant differences in L-values between the groups; however, the RM sikhye showed lower a- and b-values. Finally, the sensory evaluation results indicated that RM sikhye received higher sweetness, color, flavor, and overall acceptability scores than the samples made with commercial malts.
