Study on the Characteristics of Far Infrared Ray Drying for Rough Rice(I) (벼의 원적외선 건조특성에 관한 연구(I))

  • 본 연구에서는 원적외선.열풍 복합건조특성을 구명하기 위하여 건조용량 150-500kg이고, 승강기, 상.하부스크류, 건조실, 템퍼링실, 송풍기 및 가열장치로 구성된 시뮬레이터를 제작하여 건조특성시험을 실시하였다. 그 결과를 요약하면 다음과 같다. 가. 열풍온도에 따른 곡온변화를 시험한 결과 열풍온도 45$^{\circ}C$일 때 곡온 32-33$^{\circ}C$를 유지하였으며, 48, 51$^{\circ}C$일 때는 곡온이 35$^{\circ}C$가 넘어서는 현상을 나타났다. 건조중 곡온이 35$^{\circ}C$를 넘어서게 되면 동할미 발생량이 많아지고 품질저하가 급격히 일어난다. 나. 템퍼링실의 온도편차가 2,5$^{\circ}C$ 정도로 고른 온도분포를 나타내었고, 버너 입구쪽과 템퍼링실 중앙지점에서 온도가 약간 높게 나타났으며, 원적외선방사체 표면온도분포는 열풍온도가 45$^{\circ}C$일 때 평균 17$0^{\circ}C$를 유지하였고, 48$^{\circ}C$, 51$^{\circ}C$일 때 각각 22$0^{\circ}C$, 23$0^{\circ}C$에서 유지하는 것으로 나타났다. 다. 원적외선방사체 길이방향으로 온도편차는 버너를 기준으로 해서 버너쪽에서 멀수록 온도가 높았고, 중간, 근거리 순으로 나타났다. 버너의 원거리쪽에서 온도가 높게 나타난 것은 원적외선방사체를 통과하는 열풍이 빠져나가도록 되어있는 열풍 유동관이 버너 원거리에 위치하고 있어 버너에 불꽃이 점화되면서 열풍이 방사체 끝쪽으로 일시 머물렀다가 배출되기 때문으로 판단된다. 라. 건조기의 송풍량을 요인으로 하여 건조속도와 건조에너지를 비교한 결과 송풍량이 30cmm일 때가 25cmm에서보다 약 33%의 건조속도가 증가되어 송풍량이 많을수록 건조속도가 빨라졌으나, 건조에너지는 1,391kcal/kg.water로 나타나 약 4.2%정도가 더 소요 되었다. 곡물순환속도를 요인으로 하여 비교 시험한 결과 곡물순환속도가 33kg/min일때가 26kg/min보다 약 25%의 건조속도가 증가되어 곡물의 순환속도가 빠를수록 건조속도가 빨라졌으며, 건조에너지도 1,334kcal/kg.water로 비슷하게 소요되었다. 마. 시험구와 대비구의 건감률은 시험구에서 1.08~1.36w.b./h로 나타나 대비구보다 약 9.9~18.3%가 높게 나타났고, 건조에너지는 10.2~14.6%가 절감되었다. 발아율은 열풍온도가 낮을수록 높게 나타났고 시험구가 대비구보다 발아율이 낮게 나타났으며, 동할률 증가량도 원적외선.열풍 복합건조방법이 높게 나타나 이것은 곡물 표면에 원적외선 방사에의한 복사열이 전달되어 열장해를 받았기 때문으로 판단되며, 금후 더 연구하여 적정 열풍온도 및 방사체 크기를 구명해야 할 것이다.

Physicochemical characteristics and sensory evaluation of bracken (Pteridium aquilinum) and Aster scaber dried by different methods (건조방법에 따른 고사리와 취나물의 이화학적 및 관능적 특성)

  • The changes in physicochemical characteristics and sensory evaluation of bracken (Pteridium aquilinum) and Aster scaber dried by different methods sun-dried, hot-air-dried and freeze-dried were investigated. The freeze-dried Aster scaber showed the lowest moisture content than those of sun-dried and hot-air-dried. Freeze-dried bracken and Aster scaber showed higher rehydration rate than sun-dried and hot-air-dried. In the color values, the freeze-dried bracken and Aster scaber had the highest $L^*$ value of 29.48 and 32.73, respectively, while freeze-dried Aster scaber showed the lowest $a^*$ value of -6.78. Rehydrated bracken and Aster scaber after freeze-dried were the highest value in $L^*$ and $b^*$, while the lowest in $a^*$ value. In sensory evaluation, freeze-dried bracken and Aster scaber showed the highest in color, appearance, flavor, texture and overall acceptability. There were no significant differences in texture between hot-air-dried bracken and freeze-dried bracken after rehydrating. However, freeze-dried bracken and Aster scaber were the highest in color, appearance, flavor and overall acceptability. In conclusion, freeze-dried bracken and Aster scaber showed the best rehydrated rate, color and sensory properties.

Antioxidant Activities in Freeze-dried and Hot Air-dried Schizandra Fruit (Schizandra chinensis Baillon) at Different Microwave-asssisted Extraction Conditions (마이크로웨이브 추출조건에 따른 동결 및 열풍 건조 오미자 추출물의 항산화 특성)

  • This study was aimed to investigate the effect of microwave-assisted extraction on Schizandra fruit extract dried by two different treatments: freeze-drying and hot air-drying. Two extraction parameters were measured in particular: total polyphenol content and antioxidant activity. Both values were found to increase as the microwave power increased, for both drying processes. However, the extract from the freeze-dried sample exhibited higher antioxidant activity than that from the hot air-dried samples. Additionally, the total polyphenol content and antioxidant activity of the extract from the freeze-dried samples increased with the extraction time, whereas they decreased with the extraction time in the case of the hot air-dried sample. Solvent concentration was also found to have a significant effect on total polyphenol content and antioxidant activity; the highest values for both properties were achieved at 50 and 70% ethanol concentrations, respectively. In summary, a higher total polyphenol content and antioxidant activity were observed for Schizandra fruit extracted by freeze-drying than that by hot air-drying.

Studies on the Drying Methods of Gangjung Pellets (강정 반데기 건조방법에 관한 연구)

  • The purpose of this study was to develop a drying method of Gangjung. a traditional Korean snack, thus to reduce the drying time and to improve the quality of Gangjung. Two drying methods, hot air drying and far infrared ray drying were used by changing conditions such as air velocity(0.4, 1.2, 1.6 m/s), temperature(40, 50, 60$\^{C}$), and aging. Optimal moisture content of dried Gangjung pellet was 17% which was proper for frying. Cracks appeared on the surface of Gangjung pellet at lower levels of moisture content. Far infrared ray drying saved drying time about 20%. Both hot air drying and far infrared ray drying at 0.4 m/s of air velocity tended to show better quality of Gangjung than those dried at higher air velocities. The expansion volume and texture of Gangjung drying at 40$\^{C}$ was better than other temperature conditions, regardless of drying methods. Quality of Gangjung, dried at single stage without aging, was superior to those dried at double stage including aging process. Moreover, single stage drying save the drying time at least 24 hr. Gangjung dried at high temperature became hard and less brittle in sensory evaluation. In image analysis, air cell distribution in inner structure of Gangjung became uniform and fine as drying temperature decreased to 40$\^{C}$. Overall, Gangjung made of Gangjung pellet by the use of far infrared ray drying at 40$\^{C}$ without aging, showed the best quality in terms of physical and sensory properties.

Studies on Cnidium officinale As Natural Spices (천궁의 향신료로서의 이용 연구)

  • This study was performed to develop natural spices using Cheongung (Cnidium officinale) which is one of the Korean medicinal plants, Cnidium of officinale is a perennial plant of the Umbelliferae family and is widely distributed in Korea. The overall acceptances of flavor and color, and the masking effects on meaty and fishy flavor of Cnidium officinale were investigated by sensory evaluation. The overall acceptances of fresh Cnidium officinale were the highest, followed by freeze dried and hot air dried samples. The meaty and fishy flavor of cooked pork and fish were significantly reduced by the addition of fresh, hot air dried and freeze dried Cnidium officinale. Cnidium officinale showed similar or higher masking effects on meaty and fishy flavor compared with black pepper.

Quality Evaluation of Dried Cooked Rice as Space Food (우주식품 개발을 위한 건조 쌀밥의 품질 평가)

  • This study was conducted to investigate the rehydration properties and the sensory quality of sun-dried (SD), hot-air dried (HD), and freeze-dried (FD) cooked rice as space food. Rehydration ratio of HD and FD were significantly higher than those of SD, but there was no significant difference between HD and FD (p<0.05). A cross section of SD showed the smooth surface without any cavities. While HD showed large cavities, many small air cells in FD were observed by a scanning electronic microscope. Stickiness/hardness ratio of HD was similar to that of FD and significantly higher than SD (p<0.05). Also, sensory properties of HD and FD were significantly higher than those of SD, but there were no differences between HD and FD (p<0.05).

Effects of Convection Oven Dehydration Conditions on the Physicochemical and Sensory Properties of Ginkgo Nut Powder (열풍건조 조건에 따른 은행분말의 이화학적 및 관능적 특성)

  • Effects of convection oven dehydration conditions on the physicochemical and sensory properties of ginkgo nut powder were examined using three types of pre-treatment on ginkgo nuts: coarse grinding of ginkgo nut (GR); coarse grinding followed by 1 min blanching (GB); 3 min blanching followed by coarse grinding (BG). Pretreated ginkgo nuts were dried in convection oven at 70 and $80^{\circ}C$ to the moisture content of approximately 5%. Rehydration rate, swelling power, solubility, lightness, and greenness of GB ginkgo nut powder dried at $70^{\circ}C$ were the most similar to those of freeze dried one. GR and GB samples dried at $70^{\circ}C$ had higher sensory values of green color and ginkgo nut flavor. Ginkgo nut powder with desirable quality attributes could be produced by drying GB in convection oven at $70^{\circ}C$ for 10 hr.

Quality Evaluation of Ginger Dried using a Molecular Press Dehydration Method or Employing a Dehydration Liquid (분자압축탈수 방법과 탈수액을 이용한 건조생강의 품질평가)

  • The qualities of ginger prepared by an MPD (molecular press dehydration) method using maltodextrin, or dried using reused dehydration liquid, or prepared by freeze-drying or hot-air drying, were compared in terms of approximate overall composition, color, water absorption index, water solubility index, total sugar level, reducing sugar concentration, antioxidant activity, and gingerol content. The approximate composition of ginger prepared by the MPD method was lower in overall biochemical content than were those of gingers prepared using other methods. Ginger prepared by the MPD method retained the original ginger color. The water absorption and solubility index of ginger prepared by the MPD method (using maltodextrin) were better than those of gingers dried using other methods. The total sugar content did not change noticeably upon processing. The reducing sugar content of ginger prepared by hot-air drying was low. The antioxidant activity of ginger prepared by the MPD method was higher than that of freeze-dried and hot air-dried ginger samples, with values lower than those of BHA (3(2)-t-Butyl-4-hydroxyanisole) and BHT (2,6-Di-tert-butyl-4-methylphenol). The gingerol content of ginger prepared by the freeze-drying method was higher than that of gingers prepared by other methods. However, ginger constituents were present in the dehydration liquid used in the MPD method. The results indicate that both the MPD method (using maltodextrin) and the use of reused dehydration liquid are efficient methods by which ginger can be dried.

Quality Characteristics of Tea Thermally Processed from Dried Ixeris dentata Root (열처리에 따른 씀바귀 침출차의 품질특성)

  • To investigate tea prepared from Ixeris dentata root, color, and levels of free sugars, organic acids, cynaroside, total polyphenolics, and free amino acids were investigated using various thermal processing methods. These included natural drying(ND), hot-air drying(HAD, $75^{\circ}C$), hot-air drying after steam(HADS, steaming at $95^{\circ}C$ for 30 min) and roasting after hot-air drying(RHAD, roasting at $140^{\circ}C$ for $2{\sim}3$ min). Total free sugars, organic acids, cynaroside, and free amino acids contents were highest after ND treatment. Total polyphenolics was highest after RHAD processing. The level of cynaroside, a principal component of Ixeris dentata root, was significantly decreased by HADS. The major free sugars were fructose, glucose and sucrose. Succinic acid was prominent among organic acids, and was present at 2.25%(v/v) after ND treatment. The lightness(L), redness(a), and yellowness(b) of all dried Ixeris dentata root powders were best after RHAD treatment, but analysis of the leaching liquids after hot water treatment yielded variable results. Lightness and redness were the highest after RHAD and yellowness was the highest after ND treatment. Overall, the RHAD drying method was found to be superior to other methods, in sensory evaluation tests.

Effects of drying methods on quality characteristics and antioxidative effects of Omija (Schizandra chinesis bailon) (건조방법을 달리한 오미자의 품질특성 및 항산화 효과)

  • The antioxidative effect and quality characteristics of different drying methods (hot air drying, far-infrared radiation drying, vacuum freeze drying) from Schizandra Chinensis Baillon were investigated. The moisture contents and water activity(Aw) contents each 4.46% and 0.38 values of the vacuum freeze drying were lower than those of other samples. A significant not difference in pH values occurred in all samples (p<0.05). The highest content $^{\circ}brix$ vacuum freeze drying was $6.60^{\circ}Brix$ respectively. The turbidity values of the samples were hot air drying 8.24 T%, far infrared radiation drying 0.32 T%, vacuum freeze drying 71.85 T%. The Hunter's L, a and b values of vacuum freeze drying were higher than those of other samples. The order of the free sugar content was glucose>fructose>sucrose, and that of the total free sugar contents were vacuum freeze drying (6.33 g/100 g) > far infrared drying (5.01 g/100 g) > hot air drying (3.73 g/100g). Antioxidant acitivy (DPPH radical scavenging, ABTS radical scavenging) and total phenol, total flavonoid, and total tannin content was highest in vaccum freeze drying than other different drying methods except nitrite scavenging ability.
