냉면소스 제조공정의 표준화를 통한 품질향상 연구

  • 최근 소득수준의 향상과 여성의 사회진출로 인해 우리의 식생활도 많은 부분이 사회화되고 있다. 즉 완전조리식품과 반조리식품이 급격히 증가하고 있다. 기존의 인스탄트식품이 저가격, 반건강 특성으로 생각되어진 반면 최근 고가의 건강 지향적인 반조리식품으로 변화하고 있다. 이러한 경향은 식품가공기술 및 식품포장기술의 향상과 사회적요구에 부합된 결과로 사료된다. 이에 대표적인 경우가 다양한 소스류의 상품화 경향이다. 본 연구개발 사업에서 이루어지는 냉면소스도 가정에서 하기에는 번거롭고, 건강지향적 식생활로 메밀의 수효가 증가하여 냉면의 소비가 증가하리라 생각된다. 현재 시판되고 있는 기존의 몇몇의 제품들이 있기는 하나 제조공정, 보존상태 등에서 많은 문제점이 있다. 따라서 문헌 통하여 기존제품의 배합비를 조사하고, 냉면소스 배합비의 최적화를 위해 10여차례에 걸쳐 20종류의 소스에 대하여 배합비의 변화와 관능검사에 의해 배주스, 양파, 겨자, 마늘, 설탕, 물엿, 소금, 미원, 참기름, 고춧가루, 진간장, 생강즙, 식초, 파인애플로 구성된 소스를 개발하였다. 개발된 소스의 pH, 당도, 염도, 색차를 측정하여 관능검사의 결과와 비교 검토하였고, 식품재료의 차이에 의한 맛의 변화를 보정하기 위한 근거로 사용하였다. 저장성 검사를 위해 일반세균과 대장균을 검사하였다. 그 결과는 다음과 같다. 소비자들의 기호에 맞는 냉면소스를 개발하기 위해 다양한 식품의 배합을 시도하여 상품성이 있을 것으로 판단되는 recipe를 완성하였고, 일반인(주부)들을 상대로 한 호감도 조사에서도 좋은 성적을 나타내었다. 시료를 1주간격으로 한달간 실험한 결과 쇠고기가 들어 있는 제품을 제외하구 대장균은 검출되지 않았으며 일반세균은 위생법의 허용치내에 있었다. 쇠고기가 있는 제품은 가격상승과 저장성에 문제가 있어 이를 제하고 최종적인 레시피를 결정하였다.있었다. 그러나 식이 섭취상태와의 관련성은 나타나지 않았다. 이상에서 생활습관이 신체계측치 및 혈중 지질 농도와 일부 상관을 보이는 것을 알 수 있었으며, 건강위험 요인도 관찰할 수 있었다. 고지혈증은 심혈관계질환의 주요한 위험 인자로 알려져 있으며, 그 유발 요인에는 여러 환경적인 요인과 식이 요인이 있다. 또한 생활습관은 영양소의 섭취량에도 영향을준다. 이처럼 식이 요인과 생활습관은 단독 혹은 상호 영향을 주게 되므로 고지혈증 및 심혈관계질환을 개선하려면 식사요법과 생활습관 교정을 병행하여야 한다. 고지혈증의 원인 중의 하나로 지적되고 있는 음주와 흡연은 상호 유도작용이 있으므로 금연이나 절주를 하고자 할 경우 두가지를 동시에 자제해야 효과적일 것으로 생각된다. 폐경후 여성들에게 발생 빈도가 높은 심혈관질환의 위험요인인 고지혈증을 예방하고자 하는 노력은 폐경후 여성들의 삶의 질적 향상을 위해서도 매우 중요하다. 또한 균형식 섭취와 운동을 통해 혈중 지질 수준을 건강하게 유지하고, 비만으로의 이행을 방지함으로써 심혈관계질환을 예방하도록 하여야겠다.료보다 절반이하 수준이었다.   • This study aims to find a way to realize gender identity in product design. After reviewing the present research, it was found out that it is necessary to extend notion of gender and to redefine the concept of gender design. Specific products were selected in order to analyze the characteristics of femininity. Refrigerators, which represent the femininity the best, were chosen and analyzed based on the graphic elements. As a result, the concept of gender have been used quite limitedly in a refrigerator. Since the stereotype of women has already been implicit, it was considered difficult to propose an alternative plan for realizing the extended concept of gender. Therefore, digital devices have been proposed for a potential alternative group. This product group, of course, has a limitation like the refrigerators. However, when functions, frequency of use, and use of space are considered in depth, It can be a possible group that holds the meaning of gender in design. This study is significant that it attempted to examine the possibility of convergence in identity and usability when the graphic elements of a product are constructed by gender design that considers the identity of a user through redefining the concept of gender.

  • Representation of an entity starts with recognition of its existence, and recording is mutually circular in that it acts as a means to enable the recognition of the existence. No record is left on an unrecognized entity, record is distorted if any, and the distorted reproduction represents the entity, reinforcing its invisibility. Spivak describes those who cannot speak on their own and cannot be represented as subaltern. This paper examines public record, the media and research records of female restaurant workers, identifies the subaltern characteristics and limitations of their records, and suggests the points to be considered and specific roles required for recording the subalterns. If it is possible to increase the possibility of representation by completely recording a person as an entity that contains the times and society, the accountability of the record to provide an account will extend beyond institutions to the times and society, and individuals and community will be established as political subjects.

  • Eating disorders are psychiatric disorders characterized by abnormal eating patterns and cognitive distortions related to food, weight and shape, which is in turn result in adverse effects on nutrition status, medical complications, and impaired health status and function. The American Psychiatric Association's DSMIVTR offers two diagnoses to describe disordered eating anorexia nervosa and bulimia nervosa. A third category, eating disorder not otherwise specified(EONOS) include binge eating disorder. The prevalence of eating disorder has greatly increased among adolescence and young adults since 1990's when rapid import of western culture took place. It is likely that patients who ask for weight loss are at high risk of having eating disorder. Severe dietary restriction for weight loss may cause eating disorder. Therefore it is recomendable for doctors to have appropriate understanding and guidelines of eating disorder to help their patients.

Exploration of the Multiple Structure of Relational Self and Construct Validation among Korean Adults (한국남녀의 관계적 자아의 특성: 다원적 구성요인 탐색 및 타당성 분석)

  • The present study was conducted to (1) explore the perceptions of Korean men and women about what is an important relationship for them and how do each gender group construe relational self, and (2) develop the scale to assess the factors of relational self and verify construct validity of the scale. 40 college students and 60 adults participated in survey and FGI (Focused Group Interview) respectively, and content analysis of their responses yielded 2 categories with 39 characteristics of relational self. The one category was named 'instrumentality' which was important to men and the other was named 'expressivity' which was important to women. The list of 39 items was administered to a nationwide sample of 1503 Korean adults to assess their construal of relational self through the 6-point Likert scale. Principal axis factor analysis showed that the two categories were unidimensional with high reliability. As a result of factor analysis on each category, a total of 9 factors were extracted. Specifically, the instrumentality consisted of factors such as utilitarianism, independence, initiativeness, self-assurance, and competence. And the factors of expressivity were empathy, passiveness, dependency, consideration. The tests of mean difference revealed that men had higher scores in most of the instrumental factors, while women had higher scores in most of the expressive factors. But there was no sex difference in the interdependent self-construal scale(Cross, 2000) which has been frequently used for measuring relational self. This is related to the Korean's collective cultural characteristics, and it was concluded that the relationship with others is very important to both Korean men and women, but the meaning and expectation of the relationship as well as the method for its preservation are different to each sex group. In addition, the correlation analyses indicated that the feminity score was positively correlated with the expressiveness while the masculinity score was positively correlated with instrumentality. This result implicated the differences of relational self among Korean people were related to the socialization process of each sex, i.e., sex role identity. Finally, limitations of this study and the directions for future research were discussed.

  • Currently social games with an emphasis on the relationship between the friends, especially women customers, have contributed to the expansion of game market attracting large audiences. Though recent interest in social games and the explosive propagation of social game into game industry, scholarly research for social game is insufficient. The objective of the study is to explore the success factors for successful social games. We suggest the guidelines for development of social game. Commercial success of social games and the number of users with the best game, farmville, were investigated for understanding key success factors in social game field. As a result, social interaction, simple interface, non-dynamic methods, instrumental rationality factors have been identified. This study will expect the guideline in order to develop a successful social games.

Comparison of Service Quality between Local and Global Coffee Brand Shops (국내와 국외브랜드 커피전문점의 서비스품질 비교)

  • The purpose of this study was to compare service quality between local and global coffee brand shops and to investigate improvement. Of 350 questionnaires distributed to customers of six brand coffee shops (three local brands, three global brands) located in Daejeon, 330 complete questionnaires (94.3%) were analyzed. The questionnaire included a seven-point multiple-item scale for measuring service quality. The 21 items measuring service quality were grouped into four factors, and the mean scores for the levels of "representativeness", "coffee sensory and beverage features", "employee attitude" and "physical environment" were 5.42, 4.77, 4.74, and 4.13, respectively. The levels of "coffee sensory and beverage features" and "employee attitude" of the high income customers were significantly lower than those of the low income customers. The results showed that the levels of "employee attitude" of local coffee brand shops was significantly higher (p=0.050) than that of global coffee brand shops. Whereas, the levels of "representativeness" of global coffee brand shops was significantly higher (p=0.003) than that of local coffee brand shops. Based on the results, the global coffee brand shops should pay attention to internal marketing and the local coffee brand shops must strive to improve service quality through strategies such as improving brand awareness and developing representative beverages and foods.

Association of Osteoarthritis with prevalence of Metabolic syndrome: based on 2009-2010 Korean National Health & Nutrition Survey (골관절염과 대사증후군과의 상관관계: 2009-2010년 국민건강영양조사 이용)

  • This study was attempted to investigate the possible association of osteoarthritis with the metabolic syndrome (MetS) and its components in Korean adults based on the Korean National Health and Nutrition Examination Survey (KNHANES). The prevalence of MetS was significantly increased in OA group in women. To investigate the association between the components for MetS and osteoarthritis, we analyzed the mean values of 5 components of MetS, waist circumference (WC), triglyceride (TG), HDL-cholesterol, systolic blood pressure, and fasting plasma glucose in normal and OA group. In women, WC, TG, HDL, and systolic blood pressure were associated with the development of OA. Moreover, accumulation of components of MetS was significantly related to the prevalence of OA in Korean men and women. These data suggest that MetS might be a novel risk factor for OA and MetS should be taken into account in the prevention and treatment of OA for Korean adults as well.

A Study on the Relationship between the Evaluation of Morality on the Korean Drama Characters and the Drama Enjoyment and Quality Evaluation by Foreign Audience (외국 시청자들의 한국 드라마 등장인물에 대한 도덕성 평가와 드라마 '흥미도'와 '질 평가'와의 관계 분석)

  • In this study, we examined how the United States, Chinese, and Japanese viewers perceive the morality of the main characters in the family drama 'Take Care of Mom' and the influence of the perceived morality has on drama enjoyment and quality evaluation. Results show that the viewers from all three countries evaluated 'Hoonjae' favorably and evaluated selfish older brother, 'Hyung Kyu', unfavorably. This means there are common norms that exist in all three countries for judging the good and evil in a drama. However, the main female characters that played opposing characteristics were evaluated differently from all three countries. This is because the relationship between parents and children, and the role of mother and woman were perceived differently from each country. These results support the argument that consumption of drama may differ by viewer's cultural background. Additionally, the research hypothesis that 'moral evaluation of major characters will influence the drama enjoyment and evaluation of the drama quality' was not supported in China and Japan, and was only supported by the U.S. viewers.

Effects of physical activity level on functional fitness in community-residing older adults (지역 거주 노인의 활동 체력과 신체 활동수준의 관련성)

  • The objective of this study was to examine the relationship between physical activity (PA) level and functional fitness (FF) parameters in community-dwelling older adults aged 65 or above in Korea. Subjects' (M: 1,645; F: 2,394) PA level were assessed using a questionnaire. The subjects were divided into two groups: one below the recommended level of PA(LPA) and one above the recommended level (PA). PA was further classified by intensity level into medium- and high-intensity PA (MIPA and HIPA respectively) groups. FF was assessed based on six test items representing the following fitness areas: lower and upper body strength, agility and dynamic balance, flexibility, aerobic capacity, coordination, and body composition. Of the subjects, 36% met the recommended level of PA. Both MIPA and HIPA were superior to LPA in all FF items(p<.05). The HIPA group was significantly better in terms of agility and dynamic balance, coordination, and lower body strength (only in women) than was the MIPA group(p<.05). In conclusion, PA above the recommended level is needed to maintain functional fitness. In addition, HIPA seems to promote fall-related functional fitness and should be encouraged when safe and feasible.
