Characteristics of Propolis Extracts from Ethanol Extraction (에틸 알코올로 추출한 프로폴리스의 이화학적 특성)

  • Propolis was extracted using various concentrations of ethanol at different solvent-sample ratios. Volatile flavor components of propolis were detected by GC/MS, and the principal components were analysed. The content of total flavonoids (TF) in propolis extract increased 2 to 14% with increasing concentration of ethanol in the extraction solvent from 20 to 50%, but deceased slightly between of 60 and 70%. The 70% ethanol extract of propolis had the strongest antimicrobial activities to E. coli, L. plantarum and S. cerevisiae. Propolis ethanol extracts (2 to 14%) showed higher antioxidative activities when added oil to soybean oil during storage at $37^{\circ}C$.

  • Excavated archaeological cast iron objects in improper storage are quickly corroded and disintegrated into block and powder finally. Hence desalination treatment which is a way of removing internal corrosive factors, especially chloride ion, is an important process. But desalination is often omitted or objects are dehydrated by alcohol because the destruction of objects could occur during desalting. Although current desalting methods mostly use an aqueous alkali solution, $OH^-$ ions of water could accelerate corrosion and broaden internal cracks cause of high surface tension. Therefore this study experimented desalting using ethyl alcohol, which is low surface tension, to investigate an effect of desalination. As a result, desalting using ethyl alcohol showed the similar or more effective results of desalting using water. In addition, as aspects of desalting safety, ethyl alcohol desalting method was smaller destruction of objects and extraction of Fe from the objects than the aqueous alkali solution. However, this study explored the possibility of desalting methods using organic solvent in fieldwork, so the results would provide basic date for making the safe and effective desalting method for archaeological cast iron objects through further experiments.

CONDITIONS FOR PROCESSING OF MEATY TEXTURED FISH PROTEIN CONCENTRATE FROM ALASKA POLLACK AND MACKEREL (명태 및 고등어의 축육과 유사한 어육조직단백질 농축물의 가공조건)

  • For the effective utilization of the coastal fish resources in Korea, an investigation on the optimum processing conditions and the quality of a textured fish protein concentrate similar to the texture of animal meat has been carried out with the fish meat of Alaska pollack and mackerel. A noodle shaped product was prepared with the fish meat paste after the adjustment of pH and salt content. The product was soaked in $96\%$ ethyl alcohol to produce textured fish protein concentrate and then dried. The processing conditions were estimated with the rehydration capacity of the textured fish protein concentrate(FFC). The quality of the final product was evaluated with chemical composition, sensory test and texture measurement. The optimum pH and salt content of the fish meat for the processing of meaty textured FPC were 7.5 and $1.0\%$ respectively. The most effective soaking conditions were as follows:soaking time, 40 min. ; temperature of alcohol, 5 to $20^{\circ}C$;amount of alcohol, 4 times the weight of tile fish meat paste, number of soaking in alcohol, 4 times. The alcohol remaining in meaty textured FPC could be removed effectively by forced air drying. The yield and the contents of protein and lipid in the meaty textured FPC from Alaska pollack were $19.9\%\;84.3\%\;and\;0.5\%$ and those from mackerel were $29.8\%,\;78.1\%\;and\;3.6\%$ respectively. The content of essential amino acid in the meaty textured FPC from Alaska pollack and mackerel was not inferior to that of beef, textured soybean protein and FAO pattern. Beef meat can be substituted with the meaty textured FPC up to $50\%$ in processing meat balls withoutanysignificantlossinthetaste, ordor and texture.

Conditions for Processing of Meaty Textured Fish Protein Concentration from Filefish and Sardine (축육(畜肉) 조직(組織)과 유사(類似)한 말쥐치 및 정어리의 조직(組織) 단백질(蛋白質) 농축물(濃縮物)의 가공(加工) 조건(條件)에 관한 연구(硏究))

  • For the effective utilization of the fish resource in coastal regions, an investigation on optimum processing conditions and meat quality textured fish protein concentrate (FPC) was carried out with the fish meat of filefish and sardine. Optimum pH and sodium chloride content of fish meat were 7.5 and 1.0 %, respectively. The most effective soaking conditions were as follows ; soaking time, 30 min ; temperature of ethanol, 5 to $20^{\circ}C$ ; amount of added ethanol, 3 times the weight of the fishmeat paste ; repeated number of soaking in ethanol for filefish and sardine, 2 and 4, respectively. The ethanol remaining is meaty textured FPC could be removed effectively by forced-air drying. Yields of the product to the minced meat weight and the contents of protein lipid in meaty textured from filefish were 21.1, 77.6 and 0.2 % and those from sardine were 24.3, 75.8 and 3.6 %, respectively. Contents of essential amino acids in meaty textured FPC of filefish and sardine were not inferior to those of beef, textured soybean protein and FAO pattern. Beef meat could be substituted with the meaty textured FPC up to 50 % in the processing of typical meat balls and hamburger without any significant loss in its taste, odor and texture.

The Analysis of Ethanol Distribution Level in Biological Specimens (생체 시료중에서 Ethanol 농도 분포에 관한 연구)

  • Five kinds of packed column and two kinds of capillary column were used to get optimum condition for ethanol analysis by using fifteen different volatile, low molecular weight organic substances. Only two columns, Gaskuropack 54 and DB-1, showed good separation efficiency. In the adding salt-effect experiment 0.6N - perchloric acid, 1M - meta-phosphoric acid and saturated NaCl solution were used for alcohol concentration measurement of biological fluids and tissue specimens. Among adding salt experiment, adding saturated NaCl solution showed the most stable value of alcohol concentration. This fact might be due to the increased vaporization of alcohol in the saturated NaCl solution. In the time-course of blood alcohol concentration, the alcohol level was lineary decreased to the diameter of vessel containing specimens. This result was interpreted in view of ethanol level, weight, water content, and hematocrit value. The ethanol distribution levels were measured from samples of blood and tissue obtained from 25 postmortems cases investigated by NISI. This study showed that the distribution level was decreased in order of brain, blood, kidney, spleen, liver, and lung.

  • This paper presents the results of an experimental investigation on the combustion of single droplets arrays of Ethyl alcohol and kerosene fuel droplets in atmospheric pressure. The initial droplet diameters, d$_{0}$, were nominally 1.3~1.8mm, and inter-droplet separation distance l(l/do=1.31~2.60). experimental results indicate that burning rate constants(K) of ethyl alcohol and kerosene droplets were independent of initial droplet size as 0.0083, 0.0095 $\textrm{cm}^2$/sec. For 1-D droplet array's kerosene fuel droplet, burning rate constants(K) decreases with decreasing normalized inter-droplet distance. Normalized inter-droplet distance has stronger effect on 2nd fuel droplet than 3rd fuel droplet. When normalized inter-droplet distance is larger than 2.60, the effect of droplet spacing on droplet life is very small.

Determination of ethyl carbamate in maesil wine by alcohol content and ratio of maesil (Prunus mume) during ripening period (알코올 농도 및 담금비에 따른 숙성 기간별 매실주의 에틸카바메이트 함량조사)

  • This study was designed to investigate the formation of ethyl carbamate (EC) during the ripening of Maesil with sugar and Soju (19.5~35% alcohol contents) using a homemade method. Maesil, sugar and Soju were purchased at ordinary market in June of 2012. The preparation of sample for analysis was conducted by method of Henry et al. The analysis of GC/MS was used SIM mode (m/z 89, 74, 62). Quantification was performed in terms of the 62 ion and was based on an internal standard procedure. Good linearity was obtained with a regression coefficient ($r^2$ = 0.993). Low detection limits (LOD) was achieved 4.31 ug/kg and recovery for alcohol was 74.8%. During 90 days, fermentation with sugar was not detected EC (under LOQ). 15 days ripened Maesil wine contained EC between non detected~32.7 ug/kg and 90 days ripened Maesil wine was 19.7~87.4 ug/kg. Higher proportion of Maesil and Soju increased EC contents. EC levels were increased 32.7 ug/kg to 87.4 ug/kg in the ratio of Maesil to 35% alcohol-Soju (1:1). In the ratio of Maesil to 35% alcohol-Soju (1:3) was increased non detected to 69.7 ug/kg. After 90 days, Maesil wine was filtered Maesil through a seive and ripened by 180 days to investigate the formation of EC compared with non filtered. Treatment of filtered, EC contents was much higher level compared with non filtered. Therefore, this result showed that alcohol contents contribute to increase EC formation more than Maesil.

  • The amount of nitrogen gas adsorbed by Spherocarb and Sucrose Char was measured as a function of the relative pressure with temperature being kept constant at 77 to 184K. Isotherms at different temperatures were obtained by keeping the adsorbent at a constant temperature using liquid nitrogen, iso-pentane, n-pentane, ethyl alcohol, and iso-propyl alcohol slush baths. The objective for this study is to provide information on the specific surface area and pore volume by analyzing the experimental data using adsorption models such as the Brunauer-Emmett-Teller and Dubinin-Radushkevich models.

  • The $^1H-NMR$ spectra of the NH-group were obtained for N-ethylacetamide (NEAA) in the series of n-alcohols over a temperature range of 310∼350K by using NMR spectroscopy. The $^1H-NMR$ lineshape coupled to $^{14}N$ nucleus were analyzed to obtain the reorientational correlation times ${\tau}_c$ of NEAA. The data indicate that the coupling of solute and solvent decreases as the chain length of n-alcohols increases. But in the n-alcohols the reorientational motion depends almost linearly on η/T of solvents over our temperature range. The results are discussed in the context of the subslip phenomenon.

Studies on Production and Characteristics of Edible Red Color Pigment Produced by Mold(Monascus sp.) (홍곡곰팡이를 이용한 식용적색 색소의 제조 및 이의 성상에 관한 연구)

  • 1) Higher yield of red color was observed by the isolated strain (Monascus D-7) than the type cultures in steamed rice medium. 2) In a case of Monascus purbigerus IAM 8004, best yield of color was obtained at Lin's submerged culture medium containing 1% wheat bran, 2% starch and 3% corn meal instead of rice powder as carbon source. However, in a case of isolated strain (M. D-7), good result was shown at 1% rice bran and 2% starch as a source of carbon in Lin's medium. 3) Good yields were obtained from both strains in Nishikawa's medium which was added with 3% defatted soybean flour. 4) There were no significant differences in pigment extractability among solvents. Extracted pigment was stable in wide range of pH and heat, whereas relatively unstable in sunlight. 5) Toxicological study of extracted pigment determined $LD_{50}$ at 0.2539g/20g, when injected in mouse. When injected in to mouse in 25% ethanol solution: considering the toxicity of ethanol, the toxicity of pigment itself is believed to be none.
