Effects of Alkaline Reagent on the Rheological Properties of Wheat Flour and Noodle Property (알칼리제가 밀가루의 리올로지와 국수의 성질에 미치는 영향)

  • The effects of sodium carbonate (Na), potassuim carbonate (K) and their mixtures (Na/K=0.7-2.0) on pasting properties by amylograph and mixing properties by farinograph of wheat flour (9.45% protein), and of alkali mixtures (0.16%) on noodle property were examined. The concentrations of alkali used were 0.08%, 0.10% and 0.16% based on flour weight (14% mb). The salt (1.7%) and alkali decreased the initial pasting temperature but increased the amylograph peak viscosity. The peak viscosity increased with the increase of alkali concentration, but the mixing ratio at a fixed concentration had no effect on peak viscosity. The farinograph absorption decreased by salt, but the effect of salt diminished in the presence of alkali. The salt and alkali increased the farinograph stability, of which the former was more pronounced. The effect of alkali alone and mixtures in the presence of salt on amylograph and farinograph were essentially the same regardless the concentrations and mixing ratios. The yellowness and breaking force of dry noodle prepared with salt and alkali was higher than that prepared with salt only. The weight and volume gain of the optimum cooked noodle remained essentially constant, but the shear force and compression force were increased by the alkali.

  • 최근 건선산업에서 문제점으로 지적되고 있는 것은 제조과정 중 이산화탄소를 다량 방생시키는 시멘트의 사용이다. 이는 알칼리활성 무기결합재로 대체함으로써 시멘트보다 이산화탄소 배출량을 저감할 수 있지만 고가의 알칼리 자극제를 다량 사용하기 때문에 경제적 측면 및 사용성을 고려하지 않으면 사용할 수 없기 때문에 이에 대한 대체재에 관한 연구가 필요한 실정이다. 이에 본 연구에서는 고로슬래그를 기반으로 하는 알칼리 활성 무기결합재에 알칼리 자극제의 사용량을 저감하기 위해 레드머드를 사용하고, 레드머드에 적합한 알칼리 자극제의 종류와 사용방법에 대하여 연구하고자 하였다.

  • 본 연구에서는 디젤로 오염된 토양을 효율적으로 정화하기 위해, 알칼리제와 과산화수소를 이용하는 새로운 방식의 토양세척기법에 대하여 일련의 회분식 실험을 통하여 최적의 운전조건을 검토하고자 하였다. 알칼리제인 NaOH를 이용하여 세척수의 pH를 상승시켜, 강알칼리 상태에서 과산화수소를 주입하면 미세기포가 발생되며, 이 미세기포에 의해 토양에 흡착되어 있는 유류 오염물질이 효과적으로 탈착.부상된다. #60(0.25mm) 이하의 자연토양을 6,500 mg TPH/kg dry soil로 오염시켜 사용하였으며, 세척수의 pH, 진탕비(토양 중량 : 세척용액 부피), 과산화수소 주입량, 세척시간에 의한 영향을 살펴보았다. 세척수의 pH는 12, 진탕비는 1:5, 과산화수소 주입량은 1%, 세척시간은 1시간으로 적용한 결과 최대효율(60%)을 얻을 수 있었다.

  • For the enhanced oil recovery, one of the most important factors is to determine the surfactant formulation in chemical flood. The objective of this study is to analyze the microemulsion formed between the alkali-surfactant (AS) solution and A crude oil for screening surfactants. The alkali-surfactant solution was manufactured by using the surfactant purchased from AK ChemTech. $C_{16}-PO_7-SO_4$ and sodium carbonate solution were used as surfactant and alkaline, respectively. Both TEGBE and IBA were used as a co-solvent. The AS solution and A crude oil can form a Type III middle phase microemulsion at the salinity from 0.0 wt%~3.6 wt%. Increasing the salinity causes the phase transition of microemulsion from the lower (Type I) to middle (Type III) to upper (Type II) phase. Interfacial tension (IFT) values calculated by Huh's equation were in good agreement with ultralow IFT. According to this characteristic, the surfactant purchased from a domestic company can be applied to the enhanced oil recovery.

Cooking Properties of Dry Noodles Prepared from HRW-WW and HRW-ASW Wheat Flour Blends (미국밀과 호주밀의 제면성 비교)

  • The rheological properties of hard red winter, western white and Australian standard white wheat flours and of HRW-WW and HRW-ASW wheat flour blends having the same protein content were studied. Cooking properties of dry noodles prepared from HRW-WW and HRW-ASW wheat flour blends were also investigated. The noodles were prepared with salt and alkaline reagent. The salt and alkaline concentrations used were 1.7% and 0.17%. respectively, based on the weight of wheat flour. The alkaline reagent was an equal mixture of sodium carbonate and potassium carbonate. The HRW-ASW wheat flour blend had higher farinograph absorption and slightly stronger curve than HRW-WW wheat flour blend. Salt decreased the absorption of wheat flours by 2 and of wheat flour blends by 1%. However, alkaline reagent essentially had no effort on farinograph absorption. Salt and alkaline reagent strengthened the dough of wheat floors and wheat flour blends, with the former being more effective. No significant differences in pasting properties between HRW-WW and HRW-ASW wheat flour blends by amylograph were observed. There were no significant differences in rate of increase of weight or volume between noodles prepared from HRW-WW and HRW-ASW wheat flour blends. Alkaline reagent did not affect the weight gain of noodles hut lowered the volume gain. Breaking force of dry noodles and cutting force of cooked noodles were similar between the two noodles. Alkaline reagent increased both the breaking and cutting forces of noodles. Sensory evaluation revealed that the noodles prepared from HRW-WW and HRW-ASW wheat flour blends were slightly different. but not different from each other by preference test.

Quality characteristics of noodles supplemented with rice flour and alkaline reagent (쌀가루와 알칼리제를 첨가한 국수의 품질특성)

  • The purpose of this study was to investigate the optimal amount of alkaline reagent (0.2 or 0.4%) and rice flour (10-40%) for noodle and supplementation, and compare quality characteristics with those of wheat noodles. Texture properties, pH, tension profiles, and cooking quality of noodles supplemented with rice flour and alkaline reagent were measured. Wheat noodles with 0.4% alkaline reagent added displayed increased b values (Hunter's color), pH, hardness, chewiness, tension profiles, and turbidity, and decreased L, and a values, gumminess, weight, and water absorption compared to wheat noodles with 0.2% alkaline reagent added. Hardness and springiness of wheat noodles with 0.4% alkaline reagent added were 35.2 and 0.0118 N, respectively. These values for rice doodles with 0.4% alkaline reagent and 20% rice flour were similar (36.3, 0.0117 N, respectively). This suggests that addition of 0.4% alkaline reagent and 20% rice flour may be the optimal parameters for producing rice noodle.

  • 본 연구에서는 고유동, 저발열 및 고강도 특성을 발현하는 belite-rich cement(BRC)에 있어서 카르복실산계 유기혼화제를 사용했을 때 가용성 알칼리의 함량 변화에 따른 흡착거동과 유동특성에 미치는 영향성에 대해 검토하였다. BRC에서 알칼리 0.1~0.2 wt% 및 알칼리 설페이트 0.3~0.5 wt% 첨가시 슬럼프가 증가하거나 손실이 거의 없었으며, 그 이상의 함량을 첨가하였을 때 다시 유동서 저하를 가져왔다. 그러나, 보통 포틀랜드 시멘트(OPC)의 슬럼프 유지능력은 알칼리 및 알칼리 설페이트를 첨가할수록 감소되었다.

Properties of Epoxy-Modified Mortars with Alkali Activators and Ground Granulated Blast Furnace Slag (알칼리자극제 및 고로슬래그미분말을 병용한 에폭시수지 혼입 폴리머 시멘트 모르타르의 성질)

  • The purpose of this study is to investigate the properties of hardener-free epoxy-modified mortars(EMMs) using ground granulated blast furnace slag(GGBFS) and alkali activators. The hardener-free EMMs with a GGBFS content of 20% using 4 types of alkali activators were prepared with various polymer-binder ratios, and tested for strengths, water absorption, carbonation depth, chloride ion and H2SO4 penetration depth. The conclusions obtained from the test results are summarized as follows: The compressive strength of the EMMs with a GGBFS content of 20% attains a maximum at a polymer-binder ratio of 10%. The flexural strength of the hardener-free EMMs using Ca(OH)2 as a alkali activator is improved with increasing polymer-binder ratios. However, the flexural strength of the EMMs using NaCO3, Na2SO4 and Li2CO3 is gradually decreased with increasing polymer-binder ratios. Regardless of the type of alkali activator, the water absorption, chloride ion penetration and carbonation depth are remarkably decreased with increasing polymer-binder ratios due to the epoxy film formed in the EMMs. The H2SO4 penetration depth of the hardener-free EMMs with a GGBFS content of 20% is gradually increased with increasing polymer-binder ratio. In this study, the properties of hardener-free EMMs using Ca(OH)2 as a alkali activator are more excellent than those of other alkali activators.

  • The treatment of petroleum contaminated soil requires various physico-chemical remediation technologies which are efficient in time and can reduce the possibility of secondary contamination by themselves In this study, an innovated soil washing process was proposed to treat the diesel-contaminated soil. Micro-bubbles, which were generated by hydrogen peroxide, deserted and floated the contaminants. Soils less than #60(0.25mm) were artificially contaminated by 6,500mg TPH/kg dry soil initially. The process was examined for pH, the soil to water mixing ratio, concentration of $H_2O$$_2$, and contacting times. In the case of less than #60 soil, maximum removal efficiency(60%) was obtained at pH 12. 1.0% hydrogen peroxide, and 1 : 5 soil to water mixing ratio for 1 hour.

  • Recently, numerous studies are being performed to examine alkali-activated cement which uses industrial by-products, such as GGBS and fly ash, as well as alkali activators. Alkali-activated cement is a type of binder that exerts the same strength as cement without using cement by mixing industrial by-products with alkali activators. Alkali activators, which are used mainly for carbon-reducing technologies and alkali activation, are expensive and difficult to apply in the field due to risks related to strong alkalinity. Therefore, this study intends to explore methods to use red mud as a substitute for an alkali activator. To that end, this study has evaluated engineering properties, such as flow and strength, of CLSM that uses red mud and paper sludge ash as binders and its possibility to cause soil pollution. This study also aims to present the appropriate mixing ratios of red mud and paper sludge ash to produce CLSM.
