Changes in Nutritional Components of Toha-jeot (Salt- Fermented Toha Shrimp) during Fermentation (토하젓의 숙성과정중 영양성분의 변화)

  • Changes in the nutritional components of Toha-jeot, salt-fermented Toha shrimp(Caridina denticulata denticulata $D_{E} H_{AAN}$), which was salted with 20%(w/w) sodium chloride and fermented during 60 days at $4\pm1^{\circ}C$ were investigated. The free amino acid contents in Toha-jeot, of which glutamic acid, leucine, Iysine, arginine, glycine and alanine occupy the majority, in order of abundance, increased gradually up to 50 days of fermentation. Most of the nucleotides were decomposed to hypoxanthine; thus ATP and ADP were not detected. Fermentation decreased inosine, IMP and unsaturated fatty acid contents and increased saturated fatty acid contents of Toha-jeot. Palmitic acid was the most abundant fatty acid, followed by palmitoleic acid, linoleic acid, EPA and stearic acid. Among the mineral constituents of Toha-jeot, Na and Ca were dominantly occupying. The Hunter "L" and "b" values of Toha-jeot increased during fermentation while "a" value remained unchanged.

Effects of Food Grade Porcine Pancreatic Lipase on Neutral Volatile Compound Profiles in Cheddar Cheese (식용 돼지췌장 리파제가 체다치즈의 중성 휘발성 성분 생산에 미치는 영향)

  • Effects of commercial food grade porcine pancreatic lipase on the neutral volatile compounds in Cheddar cheese were studied The enzyme was incorporated into the cheese at two different levels of concentration and ripened at various temperatures. The production of 2-butanone increased at higher amount of lipase and higher temperature, but the production of 2-pentanone was inconsistent trends during ripening periods. The concentration of acetaldehyde was the highest among aldehydes and was increased consistently during ripening Periods. In alcohol production ethanol was the most abundant but no further consistent trend was observed after 6 wk. The production of ethyl butyrate was the most abundant ester and related io lipase activities as well as ripening temperatures. Dimethyl sulfide was the only sulfur compound and appeared not to be related to the addition of lipase or ripening temperatures . Statistical analysis suggested that ethyl butyrate was most correlated to aged Cheddar flavor during cheese ripening.

The Effects of Maturing Temperature of Kanjang Mash on the Distributions of Compositions and Sensory Characteristics of Kanjang (재래 간장덧의 숙성온도가 간장의 성분 및 식미특성에 미치는 영향)

  • In order to study the effects of the maturing temperature of kanjang(Korean traditional soy sauce) mash on the distributions of chemical compositions and sensory characteristics of kanjang, test kanjang mash prepared by mixing one part of meju and three parts of 20% salt solutions was matured at 15, 30 and $45^{\circ}C$ for 60 days respectively. It was found that although the higher the maturing temperature upto $45^{\circ}C$ for 60 days of maturing the higher total nitrogen, total free amino acids and pigment content in kanjang could be obtained, better quality kanjang containing the lower acetic acid, butyric acid and pyroglutamic acid with the higher ratio of the glutamic acid to the total free amino acids and the higher sensory evaluation scores could be prepared by maturing kanjang mash at $15^{\circ}C$.

  • Modified radish Kimchi and radish-root juice were fermented under $N_2$ atmosphere at $22{\sim}23^{\circ}C$ and $37^{\circ}C$, respectively and their changes of vitamin C content. were determined by dinitrophenylhydrazine and indophenol methods. In the earlier period of the fermentation, vitamin C content decreased temperarily and then began to increase. When the flavor of Kimchi was most acceptable, vitamin C showed the maximum value which eras equivalent to or more than the initial, after which vitamin C content decreased gradually. The increase of vitamin C content seemed to come from the biosynthesis of the vitamin owing to the enzymatic action occurred in radish-root. The addition of galacturonic acid to Kimchi and to radish-root juice elevated the vitamin C content, which suggested galacturonic acid was a good substrate for the synthesis of vitamin C. The optimum pH of the Kimchi fermentation for the better vitamin C content ranged 4.0 to 4.5.

Quality Characteristics of Gochujang with the Addition of Skipjack Cooking Broth as Protein Source (단백질원으로 참치자숙액을 첨가한 고추장의 품질 특성)

  • To improve the functional properties of Gochujang, different amount of skipjack cooking broth (l%, 3%, 5%) were added and their physicochemical properties were examined during storage. During fermentation of Gochujang, pH value decreased and titratable acidity increased, regardless of the amount of skipjack cooking broth. Content of amino-nitrogen increased rapidly at 30 day of fermentation from 171.59 mg% for the control to 191.10 mg% for 5% skipjack cooking broth, and then slightly decreased. It increased with the increase of the amount of skipjack cooking broth. Content of reducing sugar had the highest value at 30 day of fermentation, and then slightly decreased During fermentation, $\beta-amylase$ activity showed the highest value at 30 day of fermentation, and then slightly decreased. Free amino acid content increased with the increase of skipjack cooking broth amount Hunter L a, and b values gradually decreased during fermentation of Gochujang. Based on sensory evaluation of Gochujang after 90 days, Gochujang with the addition of skipjack cooking broth was better than the control in terms of taste, color, flavor, and overall.

  • Using three types of porcelain clays such as White, Blue, and Yellow clays, which were used as raw materials for Bae씨a, C Chungja, and common porcelains, the biological refinement by an enrichment culture of iron reducing bacteria was studied. | In the biological clay refining, amounts of leached iron increased as increasing sucrose $\infty$ncentration, which was s supplemented as a carbon and electron donor source for cell growth and iron reduction. Total amounts of the leached iron a and specific rate of iron reduction were dependent on the types of the clay. Strength and chromaticity of refined clays which a are important properties required for porcelain clays were improved as increasing sucrose concentration. The degree of s shrinking, however, did not changed. the redness among the chromaticity of refined clays is favorably reduced through the r ripening by the iron reducing bacteria. Considering iron removal efficiency and the change of physical properties, the optimal c concentration of sucrose was 4%(w/w) in the clay.

Effect of Enoki Mushroom (Flammulina velutipes) Addition on the Quality of Kimchi during Fermentation (팽이버섯 첨가가 김치의 숙성 중 품질에 미치는 영향)

  • Enoki mushroom (Flammulina velutipes) was added in preparation of kimchi, and the quality was evaluated during fermentation at $10^{\circ}C$. Kimchi showed a rapid decrease in pH until 11 days, but revealed a retarded decrease thereafter. Titratable acidity increased sharply until 15 days, but increased slowly thereafter. Treatment with 5% enoki mushroom showed a lower pH and titratable acidity than control. Total microbial load and lactic acid bacterial count were maximum at 5 days, and were about $2.0{\times}10^{8}\;CFU/ml$. Radical scavenging activity was greater in enoki mushroom added kimchi after 11 days, and it was mainly due to the materials soluble in methanol and ethanol. Kimchi with 5% enoki mushroom showed higher scores than others in color and taste for sensory evaluation.

  • Chemical and microbial properties of Northern sand lance, Ammodytes personatus, sauce fermented at $15^{\circ}C$ with fermentation accelerating agents, koji, enzyme, and squid viscera, were analyzed. Total creatine content of Northern sand lance sauce with squid viscera increased up to 2 months of ripening and decreased gradually thereafter, while that with koji or enzyme, and control, increased up to 3 months of ripening and then decreased slowly. TBA values of all samples increased sharply during early ripening, followed by slight decrease. Free amino acid content with all agents increased continuously as fermentation progressed. Major free amino acids of Northern sand lance sauce were glutamic acid, alanine, valine, leucine, and lysine. Total viable cell counts with all agents also increased during early ripening and then decreased. Total viable cell count of Northern sand lance sauce with squid viscera was the highest followed that with koji, enzyme, and control. Northern sand land sauce manufactured with koji showed the most acceptable sensory evaluation result, followed by that with squid viscera.

Studies on Establishment of Optimal Aging Time of Korean traditional Kochujang (재래식 찹쌀고추장 및 보리고추장의 적정 숙성기간 설정을 위한 연구)

  • To industrialize the Korean traditional Kochujang, we investigated the process and changes of chemical components of glutineous rice Kochujang and barley Kochujang, which are our major traditional Kochujangs. We prepared traditional glutineous rice Kochujang and barley one in Sunchang and Keosan, respectively. To establish the optimal aging time, we investigated changes of the chemical components and sensory evaluation of the Kochujang during fermentation of 180 days. Changes of chemical components of glutineous rice Kochujang were similar to those of barley Kochujang. The results of sensory evaluation on color, flavor, taste, texture and overall acceptibility indicated that glutineous rice Kochujang was preferred to barley one, and the highest score was obtained at the aging of $90{\sim}120$ days for both Kochujangs. However, we established that the optimal aging time was 150 days by considering changes of permissible chemical components and the results of sensory evaluation at the same time.

Chitinase Activity and Textural Property of Leek Added Kimchi During Fermentation (부추첨가 김치의 발효과정 중 chitinase 활성과 조직감)

  • Several ingredients of kimchi including chinese cabbage, garlic, leek, big green onion, and small green onion were assayed for their chitinase activities. Kimchi with various leek contents (4, 8, 12%) were fermented at 15$^{\circ}C$ for 9 days and the chitinase (EC 3.2.1.14) activity and textural properties were determined. The chitinase activity of the ingredients was in the order of garlic>leek>small green onion>chinese cabbage>big green onion. During fermentation, the chitinase activity of kimchi juice appeared more prominent than that of kimchr tissue, however, it was decreased in all kimchi samples among which the control sample showed a remarkable drop. The activity of chitinase in kimchi tissue increased until 3rd or 5th day of fermentation and then decreased. The puncture force of all kimchi samples decreased and those of leek-added kimchi were higher than those of control. The above results suggested that the addition of leek for kimchi preparation could contribute to the improvement of textural qualities of kimchi due to chitinase activities of leek during fermentation.
