A Study ion the Contents of Dietary Fibers and Crude Fiber in Kimchi Ingredients and Kimchi (김치재료 및 김치의 식이섬유와 조섬유 함량연구)

  • 배추김치 재료 및 김치의 총 식이 섬유(수용성 및 불용성) 함량 측정과 조섬유 함량을 측정하여 김치의 실제 이용 식이섬유 함량을 섬유소로 알려진 조섬유 함량과 비교확인하였다. 김치재료 중 $마늘(22.3\pm1.3%)이$ 수용성 식이섬유 함량이 가장 높았고 $고춧가루(31.7\pm0.1)는$ 불용성 식이섬유 함량이 가장 많았다. 김치 재료의 총 식이섬유 함량은 건조물단 19.1~39.1%로 $고춧가로(39.1\pm0.6%)가$ 가장 높았다. 김치는 불용성 식이섬유 함량이 수용성 식이섬유 보다 2배 정도 많았고 생김치와 $5^{\circ}C에서$ 3주 발효한 김치의 총 식이섬유 함량은 각각 $20.7\pm0.1%와$ $24.0\pm0.1%로$ 적당히 익은 김치의 식이섬유 함량이 높았다. 김치재료의 조섬유 함량은 총 식이섬유 함량과 크게 차이가 있었는데 마늘은 $1.3\pm0.1%로$ 가장 낮았고 고춧가루는 $20.5\pm0.7%를$ 나타내었다. 김치의 조섬유 함량은 식품성분표에서의 함량과 비숫하여 신선물당 생김치는 $0.7\pm01%,$ 3주 김치는 $0.9\pm0.1%였으나$ 건조물당은 생김치 $8.2\pm0.5%,$ 3주 김치는 $9.3\pm0.2%로$ 총 식이섬유 함량의 1/2~1/3 정도이었다.

Studies on the fiber contents and effective selection method by the early testing in thirteen different hemp varieties (조기검정법에 의한 대마의 섬유함량 및 선발에 관한 연구)

  • Thirteen varieties of hemp, Cannabinus sativa L., consisting of four Italian, one Japanese and eight local varieties were used in the study on the fiber content and a satisfactory selection for the higher-fiber-yielding plants. In addition, the relationship among fiber contents at the ball setting stage, and at the maturity stage, primary fiber content, and total fiber content were determined. The results of the study are summarized as follow: 1. Fiber weight of the matured male plant expressed as percentage of the fiber weight to dried stems varied from 12.09 to 26.71 percent for the Italian varieties, 14.25% for the Japanese variety and ranged from 6.59 to 16.79 for the local varieties. It was shown that on the average, Italian varieties contained more fiber compared with the other varieties. 2. On the same basis, the average percent age of fiber for Italian male plants was 20.77 while it was 20.96 for female plants. For the Japanese variety, similar figures were 14.24 for male plants and 15.43 for female plants. By comparison, the average percent fiber for the male plants of Korean varieties was only 10.34 but averaged 16.79 for female plants. In this experiment, female plants contained a greater percentage of fiber than male plants. 3. Statistically significant correlations were obtained between fiber content at the ball setting stage and fiber content of the mature plant. The correlation coefficient was r=0.942**, while the regression equation was Y=0.28+1.03X. These data indicate that plant. selection by early testing at the ball setting stage is an effective method for the improvement of fiber content. 4. The correlation between primary fiber content and total fiber content was r=0.913**, with a regression equation of Y=12.01+1.20X. It should thus be possible to obtain plants of higher total fiber content at maturity by the selection of plants which have a higher content of primary fiber at the ball setting stage. 5. From a study of the transverse sections from the hemp plant it was shown that Italian varieties have wide bands of primary and secondary fibers with narrow areas of woody material, while both Korean local varieties and Japanese varieties have narrow bands of primary and secondary fiber and wide areas of woody material. For hemp improvement, it is certain that a variety which has a narrow area of woody substances and wide area of fiber in its stem should be selected.

Effect of Kenaf Fiber Loading on the Properties of Natural Fiber/Natural Rubber Composites (천연섬유/천연고무 복합재료의 특성에 미치는 Kenaf 섬유함량의 영향)

  • Natural fiber/natural rubber composites were fabricated by uniformly compounding natural rubber and cellulose- based natural fiber kenaf and then by compression molding. The effect of kenaf fiber content on their vulcanization behavior, hardness, tensile properties, tear strength and static and dynamic properties was investigated. The contents of kenaf fiber in the composites were 0, 5, 10, 15, and 20 phr, compared to natural rubber and additives. The result indicated that various properties of natural rubber depended on the kenaf fiber content. With increasing kenaf fiber content, the torque for vulcanization of natural rubber was increased whereas the vulcanization time was reduced as well. The hardness, tensile modulus and tear strength of kenaf/natural rubber composites were gradually decreased with the fiber content whereas the tensile strength and elongation at break were decreased. Also, with increasing the kenaf fiber content the dynamic property of natural rubber was changed more greatly than the static property. The loss factor, which is closely related with the damping or absorption of the energy given to natural rubber, was proportionally increased with the fiber content.

Dietary Fiber Compositon and Viscosity of Extracts from Domestic Barley, Wheat, Oat, and Rye (국내산 맥류의 식이섬유 조성 및 이들 추출물의 점성 비교)

  • 국내산 품종별, 보리, 귀리, 밀, 호미의 식이섬유 함량과 추출물의 점성을 분석하여 생리적 기능성이 높은 식물 소재로서의 활용성을 모색하였다. 평균 총 식이섬유함량은 보리 19.9%, 호밀 18.0%, 밀 15.9%귀리 groat 15.5%,보리쌀 9.7%의 순이었다. 수용성 식이섬유의 함량은 보리 6.6%, 호밀, 6.4%, 보리쌀 5.4%, 구리 .groat 4.9%밀 3.8%의순이었으며 ,밀과 호밀의 제분부산물인 bran은 경제적인 측면에서 활용성이 높은 식이섬유 소재인거승로 확인되었다. $\beta$-glucan 함량은 보리와 귀리에서 4.4.~4.5%로 유사하게 높았으며 호밀과 밀에서는 낮게 나타났다. 총 $\beta$-glucan 에대한 수용성 $\beta$-glucan 의 비율로 나타낸 용해성은 귀리와 보리순으로 높았으며 밀과 호밀에서는 낮은 것으로 나타났다. 식이섬유 추출물의 점도는 호밀, 보리쌀 귀리, groat. 밀의 순으로 높았으며, 맥류 품종의 수용성 식이섬유 함량이 높을수록 점도가 높을경향을 보여주었다. 국내산 맥류의 고점도 식이섬유는 생이기능성이 높은 건강식품소재로서의 활용가치가 클것으로 사료되었다.

Dietary Fiber Contents in Some Vegetables and Seaweeds (채소류 및 해조류 식품의 식이섬유 함량)

  • In this study, dietary fiber contents in vegetables and seaweeds were determined by Mongeau-Brassard method and the AOAC official method. The average total dietary fiber(TDF) contents by AOAC official method were 6% for vegetables, and 33% for seaweeds. The average ratios soluble dietary fiber (SDF) contents to TDF contents were 47% for vegetables and 57% for vegetables except bellflower root and 1.0% - 8.0% for seaweeds. TDF$\pm$error boundary values by Mongeau-Brassard method were a little higher than those by AOAC official method. But, F/Fc of all samples were lower than 1.0. Therefore, Mongeau-Brassard method was evaluated as precisely as AOAC official method.

Effects of Single Cells of Carrot and Radish on the Fecal Excretion Properties, Mineral Absorption Rate and Structure of Small Intestine and Colon in Rats (당근과 무의 단세포물 섭취가 흰쥐의 배변특성, 무기질 흡수율 및 소장과 대장의 구조에 미치는 영향)

  • The effects of single cells of carrot or radish on the fecal excretion, mineral absorption rate and structure of small intestine and colon were investigated in rats fed 5% single cell diet for 4 weeks. Carrot contained 28.76% of total dietary fiber and 21.45% of insoluble dietary fiber, and radish contained 23.14% of total dietary fiber and 16.77% of insoluble dietary fiber on a dry weight basis. Total dietary fiber contents of the single cell were 44.68% for carrot, 48.0% for radish. Absorption rates of magnesium were higher in the carrot and radish single cell groups than the other groups. Cellulose significantly increased fecal weight and weight of small intestine. The consumption of cellulose and single cells decreased digestibility of lipid. The length of colon were longer in the carrot and the radish group than the other groups. Scanning electron microscopy studies showed that small intestine microvilli with leaf-shaped were seen in cellulose and single cell fed groups. These results suggest that the diet containing 5% single cells of carrot or radish increases the digestibility of dietary fiber, weight gain, and fecal output and shorten the gastrointestinal transit time.

  • 세계적인 자원고갈과 지구온난화와 같은 환경문제가 발생됨에 따라 대체에너지 개발에 대한 연구가 활발히 이루어지고 있다. 섬유소 기질을 이용한 바이오에탄올 생산은 세계적으로 막대한 자원이 있으며 광합성에 의해 재생산되는 무한한 재원으로서 환경적으로도 대기오염물질을 적게 배출하여 유용한 에너지원으로 각광받고 있다. 하지만 섬유소 기질은 cellulose, hemicellulose, lignin과 같은 고분자 화합물이 유기적으로 결합된 단단한 결정구조로 이루어져 있어 이를 분해하여 원하는 물질을 얻기 위해서는 전처리 과정이 필요하다. 전처리 공정은 바이오에탄올을 생산하는 당화 및 발효공정의 효율 및 반응시간 단축에 기여하며, 특히 섬유소 기질일 경우에는 필수불가결한 공정이다. 전처리 공정은 물리적, 화학적, 생물학적 방법으로 나누어지며, 이러한 방법들 중 기질의 특성과 처리효율에 따라 기술들을 병합하여 사용하기도 한다. 이에 본 연구에서는 산 처리, 암모니아 처리, 과산화수소 처리 및 효소를 이용한 생물학적 처리를 단독 또는 병행하여, 전환된 당 성분 및 함량을 조사함으로서 섬유소계 기질인 채소 음식물류 쓰레기를 대상으로 바이오에탄올을 경제적으로 생산하기 위한 적합한 전처리법을 검토하였다. 전처리 방법별 당화율을 살펴보면, 산 처리와 암모니아-과산화수소-계면활성제 처리가 각각 65.3 % 및 65.7 %로 가장 높았으며, 과산화수소 처리는 16.2 %로 가장 낮았다. 반면 전처리 공정 없이 효소를 이용한 당화만을 실시한 경우에는 4.3 %의 낮은 당화율을 나타내었다. 섬유소계 기질의 전처리 효율을 향상시키기 위해 첨가하는 계면활성제의 효과는 암모니아-과산화수소 및 암모니아-과산화수소-계면활성제 처리의 당화율을 비교한 결과, 뚜렷한 효과를 확인할 수 없었다. 전처리 방법별 당의 성분 및 함량을 비교한 결과 육탄당은 암모니아-과산화수소-계면활성제 전처리에서 가장 많이 검출되었다. 오탄당은 산 처리 후 그 함량이 현저히 높았으며, 오탄당 중 xylose의 함량이 60.49 mg/g로 가장 많이 차지하고 있었다. 이 결과로부터 전처리 방법에 관계없이 당화율은 유사한 수준을 보이지만, 당화된 당의 성분 및 함량에는 큰 차이가 있음을 알 수 있었다. 이당류의 경우 과산화수소 및 암모니아-과산화수소 처리를 제외한 나머지 전처리 방법에서 유사한 수준을 나타내었다. 암모니아 처리 및 과산화수소 처리를 순차적으로 병행한 암모니아-과산화수소 처리에서는 각각의 처리시보다 육탄당의 함량은 증가하였으나 암모니아 처리시보다 이당류의 함량은 감소한 것으로 나타났다.

Studies on Composition of Dietary Fiber in Vegetables (한국인 상용 채소류의 식이섬유 조성에 관한 연구)

  • The distinctive physiological effect of dietary fiber in the body were studied according to contents and characteristics of each fiber component. In the present study, the composition of fiber in vegetables was investigated, and the effect of heat treatments on fiber content was studied. Contents of total pectin were 0.89~2.75 g/100 g on dry weight basis, with most contents from 1~2 g/100 g. The hot water soluble pectin (HWSP) content of vegetables ranged from 0.33~0.98 g/100 g, sodium hexametaphosphate soluble pectin (HXSP), from 0.29~0.81 g/100 g and HCl soluble pectin(HCLSP), from 0.30~1.40 g/100 g. HCLSP showed the greatest variation according to the type of vegetables. Every vegetable types showed similar contents of these three pectic fractions. Fiber contents of vegetables ranged from 8.8~23.8% for cellulose, 0.6~10.6% for hemicellulose, 1.0~5.2% for lignin, 10.9~25.4% for acid detergent fiber (ADF) and 11.8~31.9% for neutral detergent fiber (NDF) on dry weight basis. Especially, peppers showed higher contents of NDF than the other vegetables. It was found that a great portion of NDF, which is total insoluble dietary fiber, was composed of cellulose since cellulose constituted 63% of NDF. Heat treatment reduced total pectin content in all vegetables regardless of the heating methods and the greatest reduction was observed upon boiling. HWSP content increased, whereas HXSP and HCLSP contents decreased. Heat treatment increased the NDF, ADF and cellulose contents, and most changes were due to changes in cellulose content. The values of hemicellulose and lignin showed irregular pattern upon heating. Contents of total dietary fiber (TDF) were 1.20~7.11% on fresh weight basis. Garlic, edible burdock and pepper leaf showed higher contents of TDF than other vegetables. It was found that a great portion of TDF was composed of insoluble dietary fiber.

The Effects of Insoluble Polymers on Water Stability of Carbon Fiber Reinforced Polymer-MDF Cementitious Composites (불용성 폴리머가 탄소섬유 보강 Polymer-MDF 시멘트 복합재료의 기계적 특성에 미치는 영향)

  • High alumina cement(HAC) and polyvinyl alcohol(PVA) based macro-defect-free(MDF) cement composites were reinforced using short carbon fibers, 3mm in length, 1-4% in weight fraction and insoluble polymers such as polyurethane, epoxy, phenol resin, in order to increase mechanical properties and water stability. The specimens were manufactured by the low heat-press(warmpress) method. In addition, the interface and the cross-linking reaction of cement and polymers was also studied by the SEM and TEM. Flexural strength of HAC/PVA based MDF cementitious composites was proportionally decreased with increasing fiber contents due to the undensified structure around fibers. The flexural strength of insoluble polymer added specimen was decreased with increasing fiber contents, while water stability was dramatically improved. Epoxy resin added specimen showed the highest strength with increasing fiber contents, compared with other specimens. The water stability of fiber content 4% added specimen immersed in water presented about 95%, 87% at 3 and 7 days immersed in water, respectively. The interfacial adhesive strength of fiber-matrix was very much improved due to cross linking reaction of polymer and metal ions of cement. Tensile strength of insoluble polymers added composites as linearly increased with increasing the fiber contents. The epoxy resin added specimen also showed highest tensile strength. The 4% fiber added specimen presented 30~80% higher strength than controlled specimen.

Postprandial Plasma Lipid Levels and Digestive Enzyme Activities After High Fat Meal in Rats Adapted to Dietary Fiber (식이섬유 식이에 적응된 흰쥐에서 고지방식이가 식후 혈장지질농도와 소화효소활성에 미치는 영향)

  • Rats were adapted to diets containing 10% cellulose,10% sodium alginate and fiber-free diet for 5 weeks. Following a 14 hour fasting, rats were fed 5g of a test meal that provided 50% energy from fat, then killed at 4 hour postprandially. Plasma and lipoprotein fraction-cholesterol levels were lower in sodium alginate-fed animals than in rats fed other diets. Plasma TG did not differ among diet treatments. Increase in TG content of HDL fraction occurred in dietary fiber groups. Intestinal apolipoprotein B level and lipase activity were lower in sodium alginate-fed group than in other dietary groups. These results suggest that chronic consumption of sodium alginate affects plasma cholesterol level as in the case of fiber supplemetation, but is less likely to modify the acute Plasma TG response to high fat meal than if a fiber supplement is incorporated into the meal.
