Effects of Various Sub-ingredients on Sensory Quality of Korean Cabbage Kimchi (배추김치의 관능적 품질에 미치는 부재료의 영향)

  • Effects of various sub-ingredients (hot pepper, garlic, ginger, green onion, leek, salted and fermented anchovy juice, and sugar) on the sensory quality of Korean cabbage kimchi were investigated. Sixteen sensory attributes were selected and their intensities evaluated by 20 panelists. The kimchi had an unbarmonized taste and unpleasant flavor when fermented with individual sub-ingredients, but had a well harmonized taste when fermented with all sub-ingredients. Hot pepper, ginger and garlic contributed to reduction of the unpleasatnt taste and moldy odor. The strong garlic flavor was reduced by adding green onion and leek. Salted and fermented anchovy juice gave a palatable taste, and the overall taste was improved by adding sugar. All sub-ingredients except sugar reduced the sour tasts.

"상한잡병론"에 나타나는 양허증후의 변증론치에 대한 고찰

  • ${\ulcorner}$상한잡병론(傷寒雜病論)${\lrcorner}$에 나오는 양허증의 병인병리(病因病理)에 대한 내용을 종합하여 검토하고, 그 처방의 구성 약물과 용약 규율에 대하여 살펴본 결과, 양허증을 치료하는 상용약물로는 부자 계지 건강 오수유 생강 등이 쓰였음을 알 수 있었다. 임상에서 약을 사용할 때에는 장부의 생리적 특징에 근거하여 약물을 배합하여야 좋은 효과를 얻을 수 있다. 예를 들어 심양허(心陽虛)에는 계지감초(桂枝甘草)에 복령(茯笭)을 배합하고, 신양허(腎陽虛)에는 진무탕(眞武湯) 신기환 등(等)에 복령(茯笭), 택사(澤瀉), 백출(白朮) 등의 약물을 배합하여, 비양허(脾陽虛)로 인한 담음(痰飮)에는 계지감초(桂枝甘草)의 신감(辛甘)한 약성으로 화양(化陽)하고, 복령(茯笭), 백출(白朮)로 건비리습(健脾利濕)하는 영계출감탕을 사용하며, 심하(心下)에 수(水)가 정체된 경우에는 윗 처방에 사인 백두구 등의 온건비위(溫健脾胃)하고 성비소식(醒脾消食)하는 약물을 가하여 사용한다. 폐양허(肺陽虛)하여 폐위가 된 경우에는 감초(甘草) 건강(乾姜) 등을 사용하여 온폐복기하는데, 이는 ‘배토생금(培土生金)’의 의미이다. 간양허(肝陽虛)가 나타나는 경우는 매우 드문데, 위기가 허한(虛寒)하여 간(肝)이 소설(疏泄)작용을 못할 때에는, 오수유(吳茱萸)로 온위산한(溫胃散寒)하고, 인삼(人參) 대조(大棗)로 보중익기하며, 오수유(吳茱萸) 생강(生姜)의 신산(辛散)작용으로 간기를 다스리는 오수유탕(吳茱萸湯)을 사용하여 강역지구(降逆止嘔)하며, 혼(魂)을 수렴하지 못하여 생긴 실안(失眼)에는 산조인탕(酸棗仁湯)으로 보간(補肝)하여 치료하며, 간경(肝經)에 한사(寒邪)가 침입하여 근맥이 연급(攣急)하게 된 경우에는 지주산(蜘蛛散)을 사용하여 온경산한(溫經散寒)한다.

Quality Characteristics of Ginger and Ginger Pomace Powder according to Pretreatment Methods (전처리 방법에 따른 생강과 생강박 분말의 품질 특성)

  • In this study, chemical properties and functional ingredients of ginger and ginger pomace discarded after juice were analyzed. Ginger and ginger pomace were subjected to hot air drying, steaming, followed by hot air drying, soaking in vitamin C for 1 hour and 3 hours. When soaked in vitamin C for 3 hours, the moisture content was highest at 9.2% for ginger and 7.3% for ginger pomace. Among inorganic ingredients, the potassium (K) content was high at 2,633.6 mg% in hot air-dried ginger after steaming and at 1,584.3 mg% in ginger pomace. Total flavonoid content of ginger pomace was high at 67.3 mg/g when soaked in vitamin C for 3 hours. Gingerol content was the highest at 9.8 mg/g when ginger was dried with hot air. It was 10.5 mg/g in ginger pomace. After ginger pomace was steamed and dried with hot air, shogaol content was as high as 2.0 mg/g.

Effect of Diet Containing Whole Wheat Bread with Capsosiphon fulvescens and Lindera obtusiloba Ethanol Extracts on Plasma Glucose and Lipid Levels in Rats (매생이와 생강나무잎 에탄올 추출물이 첨가된 통밀빵을 섭취한 랫트의 혈당과 지질수준에 미치는 영향)

  • The present study was conducted to investigate the effect of whole wheat bread with added Lindera obtusiloba (LO) and Capsosiphon fulvescens (CF) ethanol extracts on serum glucose and lipid levels in Sprague Dawley rats. Rats were divided into five groups depending on the diet administered: normal bread (NC), whole wheat bread (W), whole wheat bread with LO leaves extract (WL), whole wheat bread with CF extract (WC), and whole wheat bread with freeze-drying CF (WDC). After 4 weeks of consuming the experimental diet, the blood glucose level and hemoglobin A1c contents were found to be significantly lower in the W, WL, WC, and WDC groups than in the NC group. The high-density lipoprotein-cholesterol levels increased in the WL group when compared to those in the NC group and triglycerides levels decreased in all wheat groups compared to those in the NC group. These results suggest that wheat breads containing LO and CF extracts are effective for preventing hypercholesterolemia and obesity.

Inhibitory Effects of Functional Sujeonggwa Drinks on Hepatic Lipid Accumulation in Hypercholesterolemic ApoE Knockout Mice (고콜레스테롤혈증 ApoE Knockout Mice에서 기능성 수정과의 간지질 축적 억제 효과)

  • In this study, the hepatic lipid-lowering effects and related mechanism of action of sujeonggwa were examined in hypercholesterolemia-induced apoprotein E knockout (apo E ko) mice. Sujeonggwa drink was prepared with cinnamon, ginger, and sugar by modifying the traditional recipe of sujeonggwa. Sugar was partially substituted with either stevia or short chain fructooligosaccharide (scFOS) in order to reduce the calorie content of sujeonggwa, which was measured by descriptive analysis. Apo E ko mice (n=42) were induced to have hypercholesterolemia (plasma total cholesterol concentration >1,000 mg/dL) by administration of a high cholesterol diet for 4 weeks, followed by division into six groups. Experimental groups were orally administered water as a vehicle (normal group), sugar solution (control group), commercially available 'V' sujeonggwa drink (positive control group), or three different types of sujeonggwa drinks (S-sugar, S-stevia, and S-scFOS group) for 6 weeks while high cholesterol diet was provided to all animals. Compared to the control group, concentrations of hepatic triglycerides, total cholesterol, thiobarbituric acid reactive substances, and reactive oxygen species in S-sugar, S-stevia, S-scFOS were significantly reduced (P<0.05), indicating that sujeonggwa had inhibitory effects on hepatic lipid accumulation. Protein expression levels of fatty acid synthase (FAS) and its transcription factor, sterol regulatory element-binding protein (SREBP)-1 responsible for triglyceride synthesis, as well as 3-hydroxy-3-methylglutaryl-CoA reductase (HMGCR) and its transcription factor, SREBP-2 responsible for cholesterol synthesis, were also reduced in S-sugar, S-stevia, and S-scFOS groups (P<0.05). These benefits of sujeonggwa were even greater in S-stevia and S-scFOS compared to S-sugar. The beneficial effects of S-stevia on regulation of hepatic lipid metabolism were slightly greater than those of S-scFOS although the differences were not significant. In conclusion, sujeonggwa drinks, especially functional sujeonggwa drinks in which sugar was partially substituted with stevia or scFOS, inhibited hepatic lipid accumulation via suppressing FAS and HMGCR protein expression through down-regulation of SREBP-1 and 2.

Analysis of Ingredients and DPPH, ABTS Activity for the Development of Cosmetic Raw Materials using 5 Kinds of Plants Native to Mt. Jiri.-III (지리산 자생식물 5종의 화장품 원료개발을 위한 성분 및 DPPH, ABTS 활성분석-III)

  • Five species, including Synurus plamatopinnatifidus (Makino) Kitam, Lindera obtusiloba Blume, Acorus gramineus Sol., Swertia japonica (Schult.) Griseb., and Valeriana fauriei Briq., native to Mt. Jiri, were collected from their habitats from April to October 2022. The collected plants were analyzed for 17 types of polyphenol components in the whole plant, and the antioxidant activities of DPPH and ABTS were measured according to the parts of the leaves and roots, and the contents of total polyphenol and total flavonoid were measured. Based on these results, we hope that they will be used as basic data for the development of antioxidant cosmetic raw materials targeting the five plants native to Mt. Jiri with high antioxidant efficacy. 1. The polyphenol components contained in the five species of plants native to Mt. Jiri were 12 types, including catechin and quercetin. Among them, the total polyphenol content of A. gramineus was 39.5ppm, and the variety with the lowest polyphenol content was S. japonica with 5.9ppm. 2. DPPH radical scavenging activity was confirmed by EC50 value. As a result, the variety with the highest DPPH radical scavenging activity was L. obtusiloba leaves at 35.31㎍/mL. The variety with the lowest scavenging activity was V. fauriei at 262.69㎍/mL for the leaves and 278.99㎍/mL for the roots. 3. ABTS radical scavenging activity was confirmed by EC50 value. The variety with the highest scavenging activity was L. obtusiloba roots at 55.79㎍/mL and 58.85㎍/mL for leaves. The variety with the lowest scavenging activity was S. japonica leaves at 576.5㎍/mL. 4. The variety with the highest total polyphenol content was L. obtusiloba leaves at 158.72mg/g, and the variety with the lowest content was V. fauriei leaves at 0.13mg/g. Therefore, there was a large difference in the total periphenol content by variety. 5. The variety with the highest total flavonoid content was L. obtusiloba leaves at 163.75mg GAE/g, and the other varieties showed low contents at 17.67~41.38mg GAE/g.

Quality Characteristics of Kimchis with different Ingredients (재료를 달리한 김치의 품질)

  • The changes of the aerobic viable bacterial counts, the content of chemical components and the sensory evaluation in Kimchis which were prepared with Various ingredients (red pepper, green onion, garlic and ginger) and fermentation at $20^{\circ}C$ were investigated. Aerobic viable bacterial counts were suddenly decreased with fermentation, but it was decreased slowly from the second day. Salinity of Kimchis was $1.8%{\sim}2.0%$ and titratable acidify were lower in sample 2 (deleted red pepper) and 3 (deleted green onion) on the first day but sample 4 (deleted garlic) after the fifth day. Total sugar content was decreased from $1.8{\sim}2.7g/100g$ to $0.8{\sim}1.1g/100g$ during fermentation periods. Carbon dioxide content maintained relatively higher in sample 2 and 5 (deleted ginger) with fermentation. Volatile organic acid content showed no difference in all Kimchis with fermentation. During the whole fermentation period, appearance was the worst in sample 2. Texture, off-flavor and overall-eating quality were the worst in sample 4. Carbonated flavor and overall eating quality were the best in sample 5.

Effect of Ginger Fractions for Inhibition of Soybean Oil and Rat Liver Microsomal Lipid Peroxidation (생강 추출획분의 대두유 및 흰쥐 간 마이크로좀 지질 과산화 억제 효과)

  • The content ratios of gingerol in 4 fractions (hexane, ether, ethylacetate and hexane-ether (1:1, v/v) fraction) extracted from ginger (Zingiber officinale Roscoe) were analyzed using high performance liquid chromatography (HPLC). The content ratios of 6-gingerol in 4 fractions were hexane fraction; 49.5%, ether fraction; 20.74%, ethylacetate fraction; 21.43% and hexane-ether (1 : 1, v/v) fraction; 93.70%. Antioxidant activities of soybean oil added 0.2% of each ginger fraction and 0.02% of BHT were determined by peroxide value during storage at 45$^{\circ}C$. And relative antioxidant effectiveness (RAE) was calculated as the ratio of the induction period of a given substrate oil to that of a control oil. RAE of each fraction was hexane fraction; 2.60, ether fraction; 2.33, ethylacetate fraction; 2.07 and hexane-ether (1 : 1, v/v) fraction; 2.75, BHT; 1.74. Inhibition effect of each fraction on the rat liver microsomal lipid peroxidation showed hexane fraction; 93%, ether fraction; 92%, ethylacetate fraction; 86% in 350 g/$m\ell$ and hexane-ether (1 : 1, v/v) fraction; 89% in 20 g/$m\ell$.

Antimicrobial Activity of Ginger(Zingiber officinale Roscoe) Oleoresin by Supercritical Fluid Extraction (초임계유체 추출에 의한 생강(Zingiber officinale Roscoe) Oleoresin의 항균활성)

  • The study indicated that antimicrobial activity about gram positive and gram negative bacteria of ginger-oleoresin(GO) extract with the condition of ethanol and supercritical fluid extractions. As the concentration of extraction increases, the clear zone of GO ethanol extract also increased dependently. This led the antimicrobial activity of gram positive bacteria to take bigger place than gram negative bacteria especially in Listeria monocytogenes. There was a high antimicrobial activity in E-III treatment where the ratio of the ginger powder extract to ethanol extraction was 1:6. It was quite effective to treat the antimicrobial activity of GO ethanol extract under $80^{\circ}C$ and there was not big difference in the intervals which were the extraction time - 1 to 7 hours. The antimicrobial activity of supercritical fluid extract seemed to take the biggest place in Listeria monocytogenes. From the supercritical fluid extract, it was shown the strong ability of antimicrobial activity in the condition with 100 bar $35^{\circ}C$, 250 bar $35^{\circ}C$ and 250 bar $65^{\circ}C$. Furthermore, according to the case of solvent extract, there was not any significant difference in the antimicrobial activity with condition of extraction. However, there was significant antimicrobial activity in E-III treatment of 100 bar and 500 bar of extraction pressure, and $35^{\circ}C$ and $65^{\circ}C$ of extraction temperature.

생강엑기스의 제조에 관한 연구

  • 1) 본 연구에서 시료로 선정한 충남 서산산 건강(dry ginger)은 수분이 $9.4\%$, 회분이 $8.7\%$ 그리고 alcohol에 의한 추출량이 약 $9\%$이다. 이는 선진국에 채택사용하고 있는 건강의 규격기준에 의하면 양호하다. 2) Non- flavor물질의 추출을 최소화하고 특히 증류과정에서 유효성분 손실을 최소화 할 수 있고, 엑기스내의 용매 잔류량이 인체에 유해하지 않고 추출효율을 높일 수 있는 용매는 ethyl alcohol이다. 3) 널리 사용하고 있는 관류추출(percolation)의 성능을 분석하고 이의 개선방안을제시하였다. - 추출효율을 높이기 위하여 건강(dry ginger)의 입자를 작게하면 압력강하가 증대되어순환되는 용액의 유속을 제어하기가 힘들다. - 입자가 작을 시에는 유체의 흐름이chan-nelling현상을 나타낸다. - 위와 같은 조건에서는 물질 전달속도가 느리므로 추출효율을 증대시킬 수가 없다. - 따라서 percolation추출에 사용되는 건강의 입자크기는 30mesh크기 이상이어야 운전조작이 용이하나 추출효율이 낮으므로, 추출시간 6시간에 회수된 생강엑기스양은 약 $2.5\%$이다. 4) percolation추출의 단점을 보완하기 위하여 기계적교반 추출을 선택하여 다음과 같은 개선점을 찾았다. - 교반형 추출에서는 고 - 액분리시 cake 저항에서 문제가 야기되지 않는 범위까지 건강의 입자를 작게할 수 있으므로 추출효율을 크게 향상시킬 수 있었다. 즉, 작게 분쇄된 건강(30mesh통과$90\%$)을 대상으로 추출시간 3시간에 $7\%$의 회수율로 증대시켰다. 최적 운전조건은 다음과 같다. 건강시료:1kg 시료크기:-30mesh$90\%$ 용매:ethyl alcohol 3$\iota$ 교반속도:900r.p.m 추출온도:상온($15\~25^{\circ}C$) 추출시간:3시간 일차 추출조건과 동일하게 하여 얻어진 엑기스의 수율이 $2\~2.5\%$이므로 총엑기스의 수율은 건강(dry ginger)무게기준으로 $8.5\~9.5\%$이었다. 5) 교반추출의 효율이 개선되었다 하더라도 추출물의 분리가 용이하여야만 공정의 이용이 가능하다. 그러므로 교반추출후 고 - 액분리를 위하여 정압여과 장치를 이용하여 여과시 cake의 평균 비저항을 얻었으며, 이의 값은 $4.31\times10^8cm\;/\;gr$으로서 여과에는 어려움이 없다는 것을 의미한다. 따라서 추출속도와 효율이 상대적으로 우수한 교반형 추출기의 가능성을 예시할 수 있음을 알 수 있었다. 6) 추출물을 농축과정에서 휘발성 oil의 손실을 최대로 줄이기 위해서는 단순증류를 하지 말고 분별증류를 수행하여야 하며, gingerol과 같은 중요성분의 열분해 반응을 억제하기 위해서는 열전달 효율을 증대시켜 증류조작을 원활히 수행하여야 하므로, still내의 농축물을 계속 교반시켜야 하며 감압상태에서 증류온도는 $40\~50^{\circ}C$로 유지시키는 것이 가장 바람직하다. 7) Ethyl alcohol로 추출된 엑기스내의 수분이나 회분함량은 외국산 제품에 비하여 약간 낮고, 반면에 조지방 및 조단백 성분의 함량은 약간 높게 나타나고 있어 대체적으로 본 연구에서 얻어진 엑기스내의 비풍미성분(non- fla-vour component) 함량은 외국산에 비하여 많은 차이가 없다. 8) 수입 외국산에 비하여 국산엑기스(본 연구에서 ethyl alcohol로 추출)내의 무기성분등의 함량은 비교적 낮은 편이다. 9) 건강에서부터 oleoresin을 얻어 paradol을 제거시킨 후 순수한 gingerol을 분리하여 IR과 NMR로 확인한 결과, 국산건강의 엑기스에는 주로 6-gingerol이고 약간의 10-gingerol이 함유된 것으로 나타났다. 10) 순수하게 분리된 gingerol을 열분석(TGA와 DTG)한 결과 약 $75^{\circ}C$에서 gingerol의 열분해 반응이 일어남을 알수 있었다. 11) 건강 분말시료와 엑기스내의 미생물 검사 결과 건강분말에서는 세균수가 많이 존재하는 것으로 나타났으나, 이는 ethyl alcohol로 추출하는 공정 중 대부분의 균들이 사멸된 것으로 나타났다. 12) 관능적 측면에선, 본 연구에서 제조한 엑기스와 수입엑기스를 비교한 결과 생강 특유의 맛은 비슷했으나, 수입엑기스에서는 쓴맛과 톱밥냄새를 느낀다는 결과를 나타내었으며 전체적인 종합적 풍미는 국산 건강엑기스가 좋은 것으로 나타났다.
