Effect of Treatment with Ozonated Water on Shelf Life of Refrigerated Meat (오존수 처리가 냉장 쇠고기의 화학적 품질에 미치는 영향)

  • Ozone is a strong oxidant and potent disinfecting agent. In this study, volatile basic nitrogen, thiobarbituric acid reactive substances, acid value and pH all of which are quality indicators in meat products, were evaluated. The meat was treated with the ozonated water (0.2 ppm) for 0, 5, 10, 30, and 60 min and then stored at $5^{\circ}C$ for 24 d. The volatile basic nitrogen content of meat was 22.40 mg% after 9 d of storage and 23.24 mg% at 15 d of storage with ozonated water (0.2 ppm) treatment. During 24 d of storage, the pH, thiobarbituric acid reactive substances, and acid value were decreased when subjected to ozonated water treatment. These results suggested that the ozonated water treatment effectively improved the chemical properties and food safety.

Oxidative Stability and Sensory Evaluation of Camellia Oil (동백유의 산화안정성과 관능평가)

  • Camellia oil refined under laboratory conditions had a lower content of linoleic acid, higher oleic acid and lower iodine value than soybean oil. The oxidative stability of camellia oil from POV and AV was much higher than that of soybean oil during autoxidation. The acid values of both oils increased with frequency of frying whereas iodine value decreased. The significant decrease of iodine value of soybean oil compared to camellia oil is thought to be because more double bonds are present in soybean oil than in camellia oil. The result of sensory evaluation for taste, color, odor and total acceptance of potato chips fried with camellia, soy-bean and corn oil revealed that the potato chips prepared from camellia oil was the most favorable.

Studies on the Lipid Rancidity and Rheology of Yackwa During Storage (약과 저장시의 산패정도와 물성에 관한 연구)

  • The contents of crude lipids of Yackwa was especially high of 24.4%. After 30 days of storage, the acid value, TAB and the carbonyl value were 2.0, 1.3, and 1.4 times higher than the initial storage, respectively. Soaking in syrup prevented moisture loss and the progression from lipid oxidation to quality deterioration, and addition of ginger juice showed the slightly lower in lipid rancidity. When compared with the unsoaked group, the L value of the soaked group were lower during the 30-day storage. As for the textural changes during storage, elasticity and chewiness decreased slightly. It was hypothesized that the textural changes were affected not by the ginger juice or the storage period, but by soaking in syrup.

  • Relative retarding or pro-oxidant effect of 0.02% BHT, 0.01% citric acid and 0.1 ppm $CuSO_4$ $5H_2O$, on the peroxide value and the free fatty acid value development of two groups of edible soybean osils was studied. One group of the oils was stored in a dark place at $40{\pm}0.5^{\circ}C$, and the other group was irradiated 3 hours daily, with direct sunlight. The results of the study were as follow; 1. Peroxide value and free fatty acid value were, in general, more rapidly promoted in the case of the irradiated oils than in case of the oils stored in the dark place. 2. Peroxide value and free fatty acid value were rapidly increased in the case of the sample in addition to $CuSO_4$ $5H_2O $ in both caies. 3. Synergistic effect of citric acid on BHT was strong pronounced in both cases.

Prediction of Shelf-life of Instant Noodle by Hexanal Content (헥사날에 의한 라면의 저장성 예측)

  • The shelf-life of instant noodle stored at $35{\sim}65^{\circ}C$ under dark condition was estimated from the change of hexanal content, which was linearly increased as the storage time increased. The rate constants of hexanal production at various storage temperatures followed Arrhenius relationship. The activation energy and $Q_{10}$ calculated were 12.7 kcal/mole and 1.92, respectively. The rancid flavor was organoleptically detected after 6 days at $65^{\circ}C$ and 13 days $50^{\circ}C$, at which the content of hexanal was 3.5 ppm. The shelf-life of instant noddle at $21^{\circ}C$ based on $Q_{10}$ value of hexanal production was about 110 days. The changes of acid value and peroxide value of instant noodle during storage followed similar pattern to those of hexanal. The activation energy and $Q_{10}$ for both acid value and peroxide value were 16.0 kcal/mole and 2.55, respectively. The hexanal content showed a high positive correlation with acid value as well as peroxide value at all storage temperatures.

  • This study aims to examine appropriate kinds of pan oil to release a cake from the pan coated with polyether sulphone and to prove the change of acid value and peroxide value during the process of baking. The major factor effecting the rate of release of the cakes from the pan was properties of the oils rather than the additives. The releasing rate appeared higher as the iodine value was lower. The highest releasing rate was found in the sample, which was made of coconut oil plus 2% of wax, 2% of lecithin. The changes of acid value of the pan oil between the beginning and after baking was little different. In contrast, Peroxide value showed a great change after baking.

Effects of Coating Syrup with Water-Soluble Extracts of Gugija(Lycii fructus) on the Quality Characteristics of Yukwa (구기자의 수용성 추출물을 첨가한 집청액이 유과의 품질특성에 미치는 영향)

  • In this study, Yukwa(YU-G) was prepared by coating in syrup with water-soluble extracts of Gugija(Lycii fructus). The Yukwa samples were stored with PE film packing with air for 12 weeks at room temperature, after which the quality and shelf-life of the Yukwa were assessed. During storage, the moisture contents of YU-G were higher than those of the Yukwa due to being coated in syrup without water-soluble extracts of Gugija(YU-NG), whereas the instrumental textural hardness values of the YU-G were lower than those of the YU-NG. Color determination indicated that YU-NG and YU-G assumed a darker color after storage, becoming both redder and yellower. The peroxide and acid values increased abruptly in the YU-NG during storage, but increased slowly in the YU-G. During the 12 weeks of storage after preparation, the peroxide and acid values of YU-G remained at less than 40 meq/kg and 4 KOH mg/g, respectively. Thus, the experimental method of syrup coating with water-soluble extracts of Gugija rendered the YU-G fairly stable against fat rancidity. The YU-G evidenced generally higher overall acceptability than YU-NG when stored.

Effect of Silicone Oil on Properties of Cooking Oils for Pork Cutlet Frying (돼지고기 튀김조리시(調理時) Silicone oil 첨가(添加)가 튀김기름의 성질(性質)에 미치는 영향(影響))

  • In this study, silicone oil was added into soybean oil in order to investigate its effect on acid value (AV), carbonyl value (COV), TBA value, fatty acid composition and color intensity of soybean oil during frying at $170^{\circ}C$. It was found that the AV, COV and TBA value were significantly decreased as the concentration of silicone oil increased from 0 to 5 ppm in soybean oil after frying for 7 hours. The color intensity was also decreased by 26% of color of 7 hours-heated soybean oil without silicone oil addition. Little changes in fatty arid composition was measured between the samples after 7 hours frying. From the overall result of this study, addition of silicone oil by 1 ppm was recommended for effective reduction of rancidity development of soybean oil ing frying.

Changes on the Quality of Safflower Seed Products Coated with Edible Films during Storage (가식성 필름 코팅에 따른 홍화씨 가공제품의 품질 변화)

  • This study analyzed the change of physical and chemical characteristics on the safflower seed produce coated edible film. L and a value of safflower seed product coated edible film were slowly increased during storage, while b value decreased. Moisture content were increased during storage. Acid valus welt less increased when edible film was ased. Peroxide values were also increased during storage, but peroxide value in products coated sodium caseinate or k-carraggenan was $50\%$ in the control after 30 days of storage. The value of sensual test was higher in products coated sodium caseinate or k-carraggenan than those of control. Coating with sodium caseinate or k-carraggenan was effective for acidification retardation and quality improvement of safflower seed products.

  • Uniform milling is regarded as a very essential technology to produce high quality milled rice in Rice Recessing Complex. But non-uniformly milled rice can be produced very easily because of unadequate operation methods of milling system and bad brown rice conditions. This study was conducted to find out the bad effect of non-uniform milling degrees and store temperatures on quality characteristics such as taste of cooked rice, fatty acidity, whiteness and so on of milled rice during storage. According to the increase of non-uniform milling degrees, the fatty acid acidity and b value were increased very rapidly, and taste of cooked rice and whiteness were decreased very rapidly during storage. And the general quality characteristics of milled rice were better at low temperature storage of $5^{\circ}C$ than at high temperature storage at $25^{\circ}C$.
