Effect of the DSSE(Defatted Sesame Seed Extracts) on Quality Chracteristis of Soybean Sprouts (콩나물의 품질에 미치는 탈지참깨박 추출물의 영향)

  • Quality improvements of soybean sprouts on DSSE(Defatted Sesame Seed Extracts)-treated cultivation were determined in terms of growth rate, nutrient compositions value and the total bacteria. The length, diameter and weight of treated soybean sprouts were increased by 6.2%, 10.0% and 9.1%, respectively, compared with control. The contents of moisture, crude ash, crude fat of the treated soybean sprouts were similar to the control soybean sprouts, whereas crude protein content of the treated sprouts was 17% higher than the control. Both soybean sprouts contained 17 amino acids but the treated sprouts contained the higher contents of glutamic acid, threonine, methionine, tyrosine and valine. Little difference in fatty acid composition was noted between the two soybean sprout samples. Vitamin C contents of the treated soybean sprouts were 18.2 mg%, which corresponds to about 50% more vitamin C than the control. The treated soybean sprouts contained higher contents in minerals such as K, P and Ca than those of the control. The total bacteria of soybean sprouts in the control soybean sprouts increased rapidly after 2-day storage, but treated soybean sprouts increased immediately after 4-day storage.

Supercritical $CO_2$ Extraction of Sesame Oil with High Content of Tocopherol (초임계 이산화탄소를 이용한 토코페롤 고함유 참기름 추출)

  • The characteristics of sesame oil containing one of natural antioxidant, ' $\gamma$-tocopherol', were studied with the supercritical $CO_2$ extraction. Although $\gamma$-tocopherol has a lower vitamin E value in biological systems than $\alpha$-tocopherol, it is a more potent antioxidant with in oils. For the research of various factors influence to the $\gamma$-tocopherol contents increment, we have checked roasting time and temperature, as well as pressure, temperature and flow rate of supercritical fluid. As a result, we found that the $\gamma$-tocopherol content was maintained constant under the condition of roasting temperature over $200^{\circ}C$. With the longer roasting time, $\gamma$-tocopherol content was increased. Except 250 bar, the $\gamma$-tocopherol content was maintained constant under the condition of the various pressure of supercritical fluid. But $\gamma$-tocopherol content was increased with lower flow rate of supercritical fluid from 1 $m{\ell}$/L to 3 $m{\ell}$/L. When the extraction performance with the supercritical fluid was compared to the conventional compressed extraction, $\gamma$-tocopherol content was increased up to 1.6 times.

Cleaning and Storage Effect of Electrolyzed Water Manufactured by Various Electrolytic Diaphragm (격막 방식에 따라 제조한 전해수의 세척 및 보관 효과)

  • This study was carried out to investigate the efficacy of electrolyzed water manufactured with or without diaphragm on sterilization and preservation of cut-celery and shelled raw oyster. In cut-celery, total viable cell count and coliform group in the treatment of electrolyzed water were decreased to about 1/200∼1/1,000 level and about 1/100 level comparing non-treated ones. But moisture content, pH, hardness, vitamin C and residual chlorine content were showed a little difference among treatments up to 10 days at 10$^{\circ}C$. L and a color values were gradually increased in all treatments, and color differences($\Delta$E) were remarkable between treatment and untreatment sample. In overall acceptability, cut-celery treated with electrolyzed water showed somewhat higher score than that of other ones treated with tap water and 100 ppm NaClO solution until 5 days of storage. After 48 hours of storage, it was showed that VBN, total viable cell count and coliform count of shelled raw oyster treated with electrolyzed alkali water produced by non-diaphragm system are lower by about 3 mg%, 1∼2 log cycle and 2 log cycle respectively than that of ones treated with sea water. Total viable cell count of shelled raw oyster just after treatment was lower by about 1 log cycle than that of ones treated with sea water, and any significant increment was not found after 24∼48 hours of storage.

Food nutritional characteristics of fruit of Cudrania tricuspidata in its various maturation stages (꾸지뽕나무 열매의 숙기별 식품학적 특성)

  • This study was conducted to investigate the food value of Cudrania tricuspidata at its various maturation stages. The pH, total acid and reducing sugar contents of its fruit juice were determined to have been 4.2~5.1, 1.4~2.0% and 5.4~8.6%, respectively. The general chemical components of its fruit were observed as 76~80% moisture, 2.2~3.5% crude protein, 1.7~2.9% crude fat, 0.8~1.2% ash and 14.5~16.4% carbohydrate. Its free sugar, glucose and fructose contents were determined. The fructose contents of both its ripened and over-ripened fruits were higher than their glucose contents. Organic acids such as oxalic acid, citric acid, tartaric acid, malic acid and succinic acid were detected, and the concentration of the malic acid and the succinic acid were found to have been most abundant. The K content was higher than the amounts of other minerals, such as Ca, Fe, K, Mg, Na and P. Its vitamin C and the total amount of its dietary fiber were 127.5~149.2 mg% and 22.7~38.7%, respectively. Its insoluble dietary fiber content was higher than its soluble dietary fiber content. Its total polyphenol and flavonoid content were 18.9~19.6 mg% and 40.9~48.2 mg%, respectively.

염절임 가지의 저장방법에 따른 물성 및 일반성분의 변화

  • 본 연구는 수출방법의 개선과 절임 가공식품의 개발하고 일본 수출용으로 재배하고 있는 가지 품종의 최적 염절임 방법과 더불어 절임가지의 저장중에 물성 및 일반성분의 변화를 조사하였다. 절임가지의 명도와 황색도는 저장기간이 길어질수록 모든 조건에서 증가하지만, 진공포장한 절임가지의 명도와 황색도는 침지 저장한 것에 비해 변화 정도가 작았다. 절임가지의 염도는 절임 초기에는 축양 품종과 시키부 품종에서 각각 24.67, 20.27% 이었으며, 진공포장한 것은 저장 5일 이후에는 변화가 없었으나 침지 저장한 것에는 저장 중에 계속 감소하였다. pH의 변화는 품종과 저장방법에 관계없이 저장중에 감소하였으며, 수분함량은 절임중에 급격하게 감소하여 축양 품종과 시키부 품종에서 각각 79.93, 82.56% 이었으며, 진공 포장하여 저장한 절임가지에서는 5일째에 증가하였고 이후에는 변화가 없었으나, 침지 저장 방법에서는 두 품종 모두 15일까지 증가하였다. 또한 수용성 단백질 함량의 변화도 수분함량의 변화와 비슷하였다. 비타민 C의 함량은 생가지 보다 두 품종 모두 최적조건으로 염절 임 한 가지에서 높아 축양 품종과 시키부 품종에서 각각 21.41, 24.53mg/100g 이었으며, 저장기간 동안 그 함량이 감소하였고, 진공포장 저장한 방법이 침지 저장한 방법에 비해 감소하는 경향이 적었다. 저장기간에 길어질수록 나트륨과 마그네슘의 함량은 감소하였으나 반대로 칼륨의 함량은 증가하였고 특히 침지 저장한 방법에서 이와 같은 변화가 두드러졌다. 두 품종의 절임가지의 저장방법과 저장기간에 따른 물성 및 성분의 변화를 조사한 결과, 진공포장하는 것이 절임가지의 품질 유지할 수 있는 것으로 생각된다.부로 유출되어 균체의 생육이 억제되며 성장을 저해 또는 사멸시키는 것으로 나타났다. 대장균수는 우유, 달걀 및 콩나물의 모든 처리구에서 BAAG의 첨가에 의해 성장이 억제되었으며 농도가 증가시킬수록 균증식 억제 효과가 뚜렷하였으며, 총균수도 압도적으로 낮은 간을 보여주었다. 달걀의 조단백함량의 변화는 BAAG를 처리하지 않은 무처리 대조구에 비하여 침지 처리한 경우가 조단백 변화가 크지 않았다. 즉, BAAG의 침지 처리한 경우, 저장기간 14일이 경과 한 후에 10%정도의 수준으로 감소한데 반하여, 무처리구인 대조구의 경우, 23%수준으로 감소 증도가 증가하였다. 외관상의 변화와 상품 가치를 측정한 결과는 달걀의 경우, 14일이 경과후에는 무처리 대조구에서 흰자위의 감소와 노른자위와의 경계가 뚜렷하지 못하여 상품으로서의 가치가 크게 떨어진 상태였다. 우유의 경우에는 4$^{\circ}C$와 2$0^{\circ}C$에 저장된 대조구에서는 각각 3일과 12일경과 후 강한 부패취와 아울러, 표피의 갈변정도가 심하되어 관능적으로 부패상태를 인지할 수 있었다. 콩나물의 경우도 저장3일 경과 후에 부패취와 함께 점질성 갈변물질이 생성되었다. 이와 같은 결과로 볼 때, BAAG의 처리는 BAAC의 경우보다 가격은 저렴하면서도 항균력은 우수한 천연 항균복합제재로써 농산물 식품원료에 적용하여 선도유지 기간을 연장할 수 있는 효과를 기대할 수 있었다. 과일 등의 포장제로서 이용할 가능성을 확인하였다.로 [-wh] 겹의문사는 복수 의미를 지닐 수 없 다. 그러면 단수 의미는 어떻게 생성되는가\ulcorner 본 논문에서는 표면적 형태에도 불구하고 [-wh]의미의

Effect of Circulation Cycle of Nutrient Solution on the Dissolved Oxygen Concentration, and the Growth and Phytonutrient Contents of Leafy Vegetables Grown in DFT Systems (양액의 순환주기가 담액수경 엽채류의 용존산소 농도, 생육 및 식물영양소의 함량에 미치는 영향)

  • To determine the effects of circulation frequency of nutrient solution, three frequencies of 10min. on/10min. off; 10min. on/110min. off; and 10min. on/1,430min. off. treatments were applied to leafy vegetable production using deep flow technique (DFT) systems and their growth and phytonutrient content were investigated. In the 10min. on/I,430min. off treatment, dissolved oxygen concentration (DOC) 17 days after treatment decreased to 2.8mg. $L^{-1}$, known to be a low DOC that causes hypoxia, and thereafter decreased to 1.5mg. $L^{-1}$ 20 days after treatment. Fresh weight of 7 leafy vegetables in the 10min. on/1,430min. off treatment was lower by 0${\sim}$24% than those in the 10min. on/110min. off treatment, and those in the 10min. on/10min. off was higher by -2${\sim}$34% than those in the 10min. on/110min. off treatment as control. As the more frequent circulation was applied, the higher phosphorous content and the lower carbon to nitrogen ratio (C/N ratio) and total ascorbic acid contents were resulted. Results indicate that the circulation frequency of 110min, on/110min. off could be recommended for the production of the tested leafy vegetables in DFT systems.

A Comparison Study Between Image Analysis and Conventional Methods in the Evaluation of Asian Skin Color (아시아 피부에서 기존 미백 평가방법과 이미지 분석방법의 비교연구 (비타민 C 제형의 이온토포레시스 연구))

  • Until recently, the three conventional evaluation methods, which are instrumental (Chromameter$^{(R)}$ CR-400 and Mexameter$^{(R)}$ M18) and visual assessments have been used frequently for skin color evaluation. However, we took notice the potential of image analysis as a new tool to evaluate color change of skin. To reveal the reliability of the image analysis for the evaluation of whitening agents, 34 healthy female volunteers with hyperpigmentation were recruited, and the selected volunteers applied the whitening products containing Vitamin C twice a day in the morning and evening and received iontophoresis treatments once a week for 8 weeks. The changes in hyperpigmentation evaluated by Chromameter$^{(R)}$, Mexameter$^{(R)}$ and visual assessment were compared with the results from the image analysis. As with $L^*$ value trends of the analysis using Chromameter$^{(R)}$, the V value from the image analysis increased after applying the test products compared with baseline values. Furthermore, V value showed a positive correlation with $L^*$ value (r = 0.494, p < 0.01) and negative correlation with MI (r = - 0.683, p < 0.01) and VG (r = - 0.549, p < 0.01). Therefore, image analysis may be considered as an effective method to complement the limitations of visual assessment for whitening efficacy in Asians.

Comparison of Nutritional Composition and Antioxidative Activity for Kabocha Squash and Pumpkin (단호박과 늙은 호박의 영양성분 및 항산화활성 비교)

  • Nutritional compositions and antioxidative activity of Kabocha squash (Cucurvita maxima Duch) as health food were compared with those of pumpkin (Cucurvita moschata Duch). Kabocha squash had higher soluble solids and twofold harder flesh than pumpkin. Crude protein, crude lipid and total amino acid contents of Kabocha squash were higher than those of pumpkin. Major free sugar in Kabocha squash was sucrose, and its content were 2.1 times higher than that of pumpkin. Major organic acids of Kabocha squash and pumpkin were succinic and malic acid, respectively. Kabocha squash had higher amounts of vitamins $A,\;B_1,\;B_2,\;C$ and C than pumpkin, while both showed similar mineral contents except for iron. Contents of Total pectin and hydrochloric acid soluble pectin of Kabocha squash were 17.00 and 7.37 g/100 g AIS, respectively. In pumpkin, total pectin content was 25.14 g/100 g AIS, and water soluble pectin content was higher than those of other pectin fractions. Contents of carotenoid in Kabocha squash and pumpkin were 285.91 and 24,62 mg% d.b., respectively. Kabocha squash had higher electron-donating radical-scavenging activity, SOD-like activity and nitrite-scavenging effect than pumpkin.

  • This study was done to investigate the effect of adolescent smoking on dietary intakes and nutritional status of serum lipids and antioxidant vitamins. Subjects were 82 somkers whose average pack-year was 0.73, and 85 nonsmokers of male technical high school students in Seoul. Anthropometric measurement was performed and % body fat was also analyzed by Bioelectrical Impedance Fatness Analyzer(GIF-891). Dietary intakes and habits were examined through questionnaires and nutrient intakes were analyzed by Computer Aided Nutritional (CAN) analysis programs. Serum TG and total cholesterol levels were measured by Spotchem sp-4410 and serum HDL-cholesterol levels were measured by test kit. serum vitamin C level was measured by 2,4-dinitrophenylhydrazine method and serum levels of vitamin A and vitamin E were measured by HPLC. All data were statistically analyzed by SAS PC package program. There was a significant difference in body fat percentage and systolic blood pressure while other anthropometric measurements were not different between smokers and monsmokers. Caloric intakes(2335㎉) in adolescent smokers tended to be higher than that of nonsmokers (2,175㎉) but the difference was not statistically significant. Intakes of protein(76.67g) and niacin(16.49㎎) in adolescent male smokers were significantly higher(P<0.05) than those of nonsmokers although other nutrient intakes were not significantly different. Analysis of serum lipids showed that serum HDL-cholesterol level of smokers was significantly different. Analysis of serum lipids showed that serum HDL-cholesterol level of smokers was significantly lower(p<0.05) than that of nonsmokers, whereas other lipid levels were not significantly different. Serum vitamin C level was also significantly lower(p<0.05) in adolescent smokers than in nonsmokers. In addition, serum vitamin E level, which was 7.85㎎/1 in smokers, was lower than that of 9.20㎎/1 in nonsmokers(p<0.05) while serum vitamin A level was not significantly different between the two groups. These results indicate that cigarette smoking in adolescence decreases serum levels of HDL-cholesterol, vitamin C and vitamin E even thoughth their smoking history is very short. Comparison of Growth Characteristics of Aster scaber in Plastic House by Treatment of Soil Conditioners (참취 시설재배지 토양개량제 처리에 따른 생육특성 비교)

  • 참취(Aster scaber)는 국화과에 속하는 여러해살이식물로 취나물로 분류되어 전국에서 재배되고 있으며 주로 남부지역에서 조기재배 작형으로 많이 재배하고 있다. 참취의 잎과 줄기는 맛과 향기가 독특하여 예로부터 생채, 묵나물 등으로 이용되어 왔으며 칼슘, 철분, 비타민 A 등이 풍부하여 건강식품으로서도 가치가 높고 한약재로도 사용되기도 한다. 최근에는 항암효과와 더불어 콜레스트롤을 저하시키는 약리적 효능이 있는 것으로 밝혀져 기능성 식품으로도 각광 받고 있다. 참취 시설재배 시 통상 3년 마다 갱신이 이루어지고 있는데 그 이유로는 시설재배지 특성상 양분의 과다투입에 의한 염류집적과 잦은 관수로 물리성이 악화되어 참취의 생육이 저하되어 수량이 감소하는 결과를 초래한다. 본 연구는 토양개량제 처리에 따른 참취의 생육과 토양 물리화학성에 미치는 영향을 검토하여 참취 시설재배 농가에 활용할 수 있는 방안을 개발하고자 시험을 수행하였다. 2018년 4월부터 2019년 9월까지 전라북도 농업기술원 허브산채시험장에서 참취 시설재배를 대상으로 하고 무처리, 볏짚 1,000 kg/10 a, 왕겨 숯 1,000 kg/10 a, 야자섬유 1,000 kg/10 a, 4처리구로 하여 시기별 생육 및 토양특성을 조사하였다. 수확기 참취 생육특성은 초장은 25.6~27.2 cm, 엽장은 8.5~9.7 cm, 엽폭은 6.3~7.0 cm, 경직경은 4.3~4.6 cm, 및 수량은 $3.3{\sim}4.0kg/3.3m^2$으로 볏짚 처리구에서 대조구에 비해 좋은 생육 상황을 보였으며 수량성 또한 많았다. 시험 후 토양화학적 특성을 조사한 결과 토양 pH는 7.4~7.5, 토양유기물 함량은 34~36 g/kg, 유효인산 함량은 386~415 mg/kg 이었으며 처리 전 토양에 비하여 유기물 함량은 증가하고 유효인산은 낮아지는 경향을 보였다. 치환성 양이온 K, Ca, Mg는 K는 $0.8{\sim}1.0cmol_c/kg$로 낮아졌고, Ca와 $8.9{\sim}10.1cmol_c/kg$, Mg는 $3.1{\sim}3.4cmol_c/kg$로 증가하였다. 토양물리성의 변화는 왕겨숯 시용에서 대조구에 비해 가장 낮은 용적밀도 $1.22g/cm^3$와 가장 높은 공극률 54.09%을 보였다. 토양 삼상은 고상은 볏짚에서 51.98%로, 액상은 야자섬유에서 28.64%로, 기상은 왕겨숯에서 29.35%로 가장 높았다. 참취 시설재배지 토양개량제 시용함으로써 토양의 유기물함량 증가와 토양의 용적밀도 감소와 토양양 공극율 증가 등 토양의 물리 화학성을 개선할 수 있을 것으로 기대된다. 본 연구는 2년차 시험 결과로서 3년차에 재검토할 계획이다.
