Effect of Feeding Whole Crop Barley Silage- or Whole Crop Rye Silage based-TMR and Duration of TMR Feeding on Growth, Feed Cost and Meat Characteristics of Hanwoo Steers (청보리 사일리지 TMR 또는 청호밀 사일리지 TME 급여 및 급여기간이 거세 한우의 증체, 사료비 및 육질특성에 미치는 효과)

  • Feeding trial was conducted with 80 Hanwoo steers (7.5 months of age, 204.4 kg body weight) for 680 days from growing period to late fattening period to examine the feeding value of whole crop barley silage TMR (BS-TMR) and whole crop rye silage TMR (RS-TMR) on body gain, feed cost, slaughter characteristics and quality characteristics of $longissimus$ $dorsi$ muscle. Dietary treatments were conventional separate feeding of concentrate and rice straw (control), feeding BS TMR up to middle fattening period and same diet as for control during late fattening period (BS-TMR I), feeding BS-TMR for whole experimental period (BS-TMR II), feeding RS TMR up to middle fattening period and same diet as for control during late fattening period (RS-TMR I) and RS TMR for whole experimental period (RS-TMR II). Sixteen castrated calves were assigned to each treatment (4 pens, 4 heads per pen). Pens in each treatment were randomly distributed. Feeding both BS silage TMR and RS silage TMR slightly increased body gain of Hanwoo steers at the stages of growing and early fattening, and increased (P<0.0001) at middle fattening compared to feeding control diet while control diet tended to increase body gain at late fattening stage compared to feeding BS-TMR I, BS-TMR II and RS-TMR I diets. Total body gain was slightly increased in Hanwoo steers fed both I and II for BS and RS TMR compared to that in control diet. Feed cost per kg gain per head was relatively low in the Hanwoo steers fed silage TMRs to that fed control diet. Carcass weight, back fat thickness and $longissimus$ $dorsi$ area of Hanwoo steers tended to increase but lowered (P<0.047) yield index by feeding silage TMRs. Feeding BS TMR slightly decreased marbling score but no difference was found in the number of head over grade 1 between diets. Control diet tended to improve yield grade compared to silage TMRs. Chemical composition, water holding capacity, drip loss, cooking loss and pH, color and fatty acid composition of $longissimus$ $dorsi$ were not affected by experimental diets and feeding duration of silage TMRs. Shear force, however, was increased (P<0.046) by silage TMRs without difference between them compared to control diet. Based on the results of the current study, BS TMR and RS TMR could improve body gain and reduce feed cost without deteriorating meat quality compared to separate feeding of concentrate and rice straw. Overall feeding value was similar between BS TMR and RS TMR.

Effects of Fermented Feedstuff Added Saccharomyces cerevisiae on Fattening Performance and Carcass Grade in Hanwoo Bulls (Saccharomyces cerevisiae를 첨가한 발효사료의 급여가 한우 비거세우의 육성성적 및 도체 등급에 미치는 영향)

  • This experiment was carried out to investigate effects of fermented feedstuff added Saccharomyces cerevisiae(FFSC) on growth performance and carcass grade of growing Hanwoo bulls. Twenty six Hanwoo bulls averaging 230$\pm$24kg were randomly assigned within two dietary treatments which were control and FFSC. Average daily gain and feed intake were significantly higher in FFSC compared with control during growing, fattening and finishing period. Feed conversion was improved in FFSC compared with control during fattening and finishing period. During the whole experimental period, average daily gains were 1.06 and 0.98kg in FFSC and control, respectively, and it indicated that 19% was improved in FFSC compared with control(P<0.05). Feed intake was not significantly different between treatments during whole experimental period. In addition, feed conversion was not significantly different between treatments, there was a tendency to be beneficially increased about 7% in FFSC compared with control. There was no differences on yield traits including carcass weight, dressing, back fat thickness, rib-eye area and meat production between treatments. Marbling score was improved in FFSC compared with control(P<0.05). Appearances of ‘A’ ranked meat quantity were 44.4 and 25.0% in FFSC and control, respectively. Only FFSC had ‘1’ ranked appearance, but there was no ‘1’ ranked appearance in the control.

Feed Intake Evaluation of Korean Cattle (Hanwoo) Fed Diets Containing Different Levels of Compound Fattening Periods (한우의 육성 및 비육기간중 배합사료 급여 수준에 따른 사료섭취량 조사)

  • A study was conducted to evaluate feed intake of Hanwoo bulls and steers fed diets of compound feed and rice straw. Twenty bull calves and sixty steers at 5 to 7 months old were used. The experimental period was divided into three feeding stages which are growing period (〈300 kg body weight (BW)), early fattening period (300-450 kg BW) and late fattening period (〉450 kg BW). The animals were given the diets containing 14.1% crude protein (CP) and 70.0% total digestible nutrients (TDN) in the growing period, 12.1% CP and 70.6% TDN in the early fattening period, and 11.2% CP and 71.9% TDN in the late fattening period, respectively. Experiment 1 was designed to compare feed intake (as-fed basis) between Hanwoo bulls and steers fed the experimental diets ad libitum. In Experiment 2, Hanwoo steers were allocated in one of three compound feed feeding treatments to investigate feed intake (as-fed basis). The treatment groups were ① feeding level 1 group fed compound feed ad libitum through the whole periods; ② feeding level 2 group fed 1.0% compound feed per kg BW in the growing period, 1.5% compound feed per kg BW in the early fattening period and compound feed ad libitum in the late fattening period; and ③ feeding level 3 group fed 1.5% compound feed per kg BW in the growing period, 2.0% compound feed per kg BW in the early fattening period and compound feed ad libitum in the late fattening period. In Experiment 1, the average daily feed intake of bulls increased linearly through the whole experimental period while the feed intake of steers increased until their body weight was reached upto 521 kg, afterward reduced. Average daily feed intake was about 3.5% per kg BW of both bulls and steers at the beginning (150 kg BW) of Experiment 1 while bulls and steers at 600 kg BW consumed the diets of 2.0 and 1.5% per kg BW, respectively. In Experiment 2, the average daily feed intake of steers in the feeding level 1 group gradually increased through the growing and early fattening periods and then steadily reduced over the late fattening period. The average daily feed intake in the feeding level 2 group linearly increased through the whole period while the feed intake in the feeding level 3 group showed a relatively rapid increase and reached a peak at 455 kg BW, and then sharply dropped. The average daily feed intake of steers in the feeding level 1 at the beginning (150 kg BW) of Experiment 2 was about 3.5% per kg BW but there was a reduction (1.5% per kg BW) at 600 kg BW. Besides, The feed intake of steers in the feeding level 2 and 3 in which compound feed was given with limitation increased to 2.0-3.0% per kg BW in the growing period and then reduced to 1.5-2.0% per kg BW. The limited compound feed feeding of steers in Experiment 2 resulted in higher rice straw intakes up to two to three folds and two folds in the growing and early fattening periods, respectively, than the ad libitum feeding.

Effects of Growth Performance and Carcass Characteristics by Fermented Barley Grain Feeding in Post-fattening Hanwoo Steers (거세한우 비육후기 보리곡실 발효사료 급여에 따른 성장과 도체특성에 미치는 효과)

  • The purpose of this study was to investigate the proper feeding level and duration of fermented barley grain feed before harvesting to improve the availability of barley for feed. Trial 1 was to investigate the proper feeding amount of fermented barley grain fermented feed, and we prepared 32 heads (603.4 ± 42.7kg) of 22-month-old Hanwoo steer (603.4 ± 42.7kg) for 8 heads in 4 treatment groups. 48 heads (625.8 ± 13.1kg) for Trial 2 were used for 12heads per 4 treatments, and were reared for about 9 months until 30 months of age. Trial 1 is treated a Control group that feed 10㎏ of concentrate, replaces 10% fermented barley grain feed(FBGF) of the control by (TRT 1) and 20% (TRT 2) and 30%(TRT 3). Concentrate and FBGF fed 9, 2.1 kg, 8, 4.2 kg, 7 and 7, 6.3 kg on each treatments respectively and 1.5 kg of rice straw for forage. In Trial 2, 10% of alternative diets were judged to be appropriate, and the control of 9kg of diets and barley grain fermented feeds were used to determine the appropriate feeding period. The treatments were 3 months before shipment (TRT 1), 6 months (TRT 2) and 9 months (TRT32). Each treatment group had 8 and 2.1 kg of concentrate and barley grain fermentation, respectively. As a feed, rice straw was fed to 1.5 kg. The daily gains per treatment were higher in TRT 1 and TRT 3 was similar to the Control. Body weight and daily gain during the test period were higher in TRT 1 fed 10% barley grain fermented feed. TRT 2 was the highest at 6.13, and TRT 3 was 6.0, which was higher than 5.63 of TRT 1 and 5.5 of Control.

The Effects of Different Crude Protein Levels in the Concentrates on Carcass and Meat Quality Characteristics of Hanwoo Steers (농후사료의 조단백질 수준차이가 거세한우의 도체 및 육질특성에 미치는 영향)

  • The purpose of this study was to determine the effects of different crude protein levels in the concentrates on carcass and meat quality of Hanwoo steers. A total of thirty 5.3-month-old castrated Hanwoo calves ($135.6{\pm}10.52$ kg) were randomly allocated into either control or treatment group. The animals were separately housed to 5 heads per group. Crude protein levels in concentrates for growing, fattening, and finishing phases were 14, 13, and 11% for control group and 16, 15, and 14% for treatment group respectively. Comparative analysis of carcass characteristics, physico-chemical characteristics, and fatty acid composition in M. longissimus dorsi of Hanwoo steers were carried out. There was no statistical difference in average cold carcass weight between control (411.9 kg) and treatment (419.9 kg) group. Also, dietary crude protein level in concentrates did not affect M. longissimus dorsi area, backfat thickness, and meat yield index. In contrast, the marbling score in treatment group was higher (p<0.05) than the control group. Also, treatment group showed significantly higher (p<0.05) values than control group for CIE L-value, Mono-unsaturated fatty acids and oleic acid composition. Therefore increasing crude protein levels of concentrates in Hanwoo steers during growing and fattening phases might be beneficial for the improvement of meat quality.

Effect of Feeding High Guality Hay on Performance and Physico-chemical Characteristics of Carcass of Hanwoo Steers (양질의 건초 급여가 한우 거세우의 비육성적 및 도체의 이화학적 특성에 미치는 영향)

  • The current study was conducted to investigate the effect of high quality hay on the performance and carcass characteristics of Hanwoo steers. Twenty(20) Hanwoo(7 months old) were allocated into either Control(rice straw fed) or Treatment(timothy hay and rice straw fed) group(10 animals per group) and fed for 710 days until the animals reached at 30 months old. Concentrates were fed according to the feeding program composed with three(3) phases; growing, fattening, and finishing period. For the overall feeding period, final body weights were 761.3 and 799.6kg for the Control and Treatment groups, respectively, showing 38.3kg heavier body weight in Treatment group. ADG were 0.79 and 0.84kg for Control Treatment groups, respectively. These results might be because of the intake of high quality hay during growing phase and the effects persisted until the end of the experiment. Feed intake tended to be higher in Treatment group whereas feed conversion did not show significant difference between groups. Cold carcass weights were 451.0 and 475.3kg for Control and Treatment, There were no significant difference between groups in both yield and quality grade. There were no remarkable differences in physico-chemical characteristics fatty acid composition of carcasses between groups. In conclusion, it would be beneficial to feed high quality hay such as timothy during growing period of Hanwoo steers to produce high quality beef with heavier live and carcass weight.

Effects of Dietary Type During Late Fattening Phase on the Growth Performance, Blood Characteristics and Carcass Traits in Hanwoo Steers (한우 거세우의 비육후기 사료 형태에 따른 사양성적, 도체특성 및 혈액성분 변화)

  • To develop a diet for Hanwoo steers during the late fattening phase, three different feeding treatments were investigated: a group fed concentrate and rice straw separately (Formula feed), a group fed TMR during the whole late fattening period (TMR), and a group fed TMR plus concentrate (Formula-TMR). Thirty Hanwoo steers 20 months of age (average body weight = 445 kg) were allotted by a completely randomized design into three treatment groups (ten steers in each group). The impact of these treatments on the performance, carcass traits, and blood composition related to body fat synthesis was assessed. The average dry matter and TDN intake were greater in Formula-TMR compared to other treatments (p<0.05); however, body gain, carcass weight, meat production index, and fat color were not affected by dietary type. Blood characteristics, such as concentrations of retinol, insulin, and leptin were not affected by any of the treatments; however the marbling score of the longisimus muscle was significantly higher in Formula-TMR (p<0.05), which was relatively high in blood leptin concentration. The muscle texture, meat quantity index, and meat quality index were highest in the Formula feed, TMR, and Formula-TMR, respectively (p<0.05).

비육돈에 대한 옻의 급여가 돈육 품질에 미치는 영향

  • 본 실험은 비육돈에 대한 옻의 급여가 돈육 품질에 미치는 영향을 알아보고자 실시하였다. 사료내 옻나무 첨가 급여 수준은 비육후기 사료에 옻 분말 2%, 4%를 첨가하여 5주 동안 급여 하여 돈육의 육질 분석에 이용하였다. 옻 사료 급여수준(0%, 2%, 4%)에 따라 5주간 급여한 돈육의 육질특성을 비교분석한 결과, 명도($L^{\ast}$값), 적색도($a^{\ast}$값), 황색도($b^{\ast}$값)값에 있어서 4% 급여구가 높은 값을 나타내었다. 지질의 산패도(TBARS)는 급여수준과 관계없이 모두대조구의 TBARS값이 가장 높게 나타나 다른 처리구에 비해 산패가 빨리 진행됨을 알 수 있었다. 보수력은 4% 급여구가 대조구에 비해 높은 값을 나타내었다. 조직감에서는 경도와 씹힘성에서 옻 급여구들이 대조구보다 낮은 값을 보였다(p<0.05). 융점은 4% 급여구가 대조구와 2% 급여구보다 낮음을 알 수 있었다.

  • 다국적 제약회사에서 생산되는 제약화합물은 인간의 질병치료 뿐만 아니라 가축의 생산성을 향상시키는 물질으로도 활발하게 생산되는데 육우의 성장을 촉진하는 기능성 화합물들도 많이 있다. 북미에서 생산되는 소고기의 약 80%가 1번 이상의 성장촉진기술들이 활용되고 있다고 보고된다. 고기소로 생산되는 비육우에 적용되는 방법은 크게 피하 이식에 의해 혈류를 타고 성장을 촉진하는 17β-Estradiol과 합성 남성호르몬제인 Trenbolone acetate가 주로 활용되고, 비육후기 사료에 섞어서 급여하는 사료첨가제 형태인 β2-adrenergic agonist 같은 형태로 적용하게 된다. 근육을 성장하는 기술의 작용기전은 많은 선행연구에 의해 밝혀져 있는 반면 천연 알칼로이드 성분들의 기전은 밝혀진 것이 많지 않다. 한방제재들에서 많이 발견되는 알칼로이드 성분들은 생리활성 기능들을 가진 것으로 알려져 있지만, 생산, 수거, 가공, 추출 등의 공정에서 많은 비용이 발생하므로 비육우의 사료화 가능성은 아주 희박하다. 따라서 비용을 최소화 할 수 있는 후보재료를 검색중에 감자부산물을 확보하였고 기능성 물질의 추출과 사료첨가제 화 하여 비육우에 급여시험을 실시하였다. α-solanine과 α-chaconine은 감자의 잎, 과일 및 괴경에서 발견되는 글리코알칼로이드 화합물로, 쥐, 토끼, 닭과 같은 다양한 동물 모델에서 중독성을 가진 물질로 보고 되고 있다. 최근 연구에서는 비육우의 성능을 유도하는 데 사용되는 것으로 나타났다. 한우 송아지 3마리의 사태(Semimembranosus)와 등심(Longissimus Dorci)근육에서 추출된 근육위성 세포(BSC)에 다양한 수준의 α-solanine(control, 0.001, 0.01, 0.1, 1, 10μM)으로 처리해본 결과 근육관련 지표인 MHC2X과 β2-AR의 발현이 높게 나타난 것을 확인했다. 사료급여실험에서는 대조군에 비해 급여군의 등심단면적과 도체중이 향상되는 것을 확인하였다. 결과적으로 감자유래 농산부산물은 한우 비육우의 근육의 성장을 증가시키고, 그 작용기전은 β2-수용체에 작용하여 단백질 합성을 촉진시켜 근육을 축적시키는 것으로 확인하였다. 농산부산물을 이용한 기능성 사료개발은 최근 이슈가 되고 있는 축산분야 탄소저감을 개선할 수 있는 기술로 축산의 업사이클링 기술로 활용 가능하다.
