Effects of Maltogenic Amylase on Textural Properties of Dough and Quality Characteristics of White Pan Bread (Maltogenic Amylase가 식빵반죽의 물성과 식빵의 품질 특성에 미치는 영향)

  • Effects of maltogenic amylase on textural properties of dough and quality characteristics of white pan bread were investigated. White pan bread was prepared with four different levels of maltogenic amylase contents (M-1: 0.048 U/g, M-2: 0.060 U/g, M-3: 0.072 U/g, M-4: 0.084 U/g). The setback by amylograph for the control was $480.0{\pm}12.25$ Brabender Unit (B.U.) while M-4 showed the a setback of $215.0{\pm}5.00B.U.$ The absorption, mixing tolerance index, and stability by farinogram were not significantly different (P>0.05) for across all treatments. The area under the curve (135 min) by extensogram was higher than all samples. The texture profile analysis results showed that there was significant decreasing in hardness for the maltogenic amylase infused bread (P<0.05). M-3 and M-4 showed higher springiness and cohesiveness but lower hardness than control over 1 to 3 days, indicating possibly extended shelf-life. Imaging scan showed that air cell size less than $0.4mm^2$ for the control and M-4 were at rates of 94.90% and 95.70%, respectively. For sensory evaluation, M-3 and M-4 showed higher intensities than the control for taste, flavor, texture, mouthfeel, and moistness quality. These results imply that the quality of white pan bread could be improved by adding maltogenic amylase without the use of chemical additives.

Effects of Dietary Conjugated Linoleic Acid Levels and Periods on Meat Quality in Breast and Thigh Muscles of Broiler (Conjugated Linoleic Acid 급여기간과 첨가수준이 저장기간 중 육계의 부위별 품질특성에 미치는 영향)

  • A total of 180 Arbor Acre broilers (35 days of age) were fed a diet containing 0%, 0.6%, 1.2%, 1.8%, 2.4% or 4.8% conjugated linoleic acid (CLA) for 3 weeks then slaughtered at week 1, 2 and 3. Thigh and breast muscles were seamed out, vaccum-packed prior to storage in a chill for days 7 to analyse thiobarbituric acid reactive substances (TBARS). The accumulation of CLA in breast and thigh muscles was increased significantly (P<0.05) as the CLA level was increased, but no significant difference amongst the treatments. The contents of saturated fatty acids were significantly increased(P<0.05) with an increase of dietary CLA level, but those of unsaturated fatty acids were significantly decreased (P<0.05). The content of mono unsaturated fatty acid (MUFA) was decreased as dietary CLA level increased, even though that of poly unsaturated fatty acid (PUFA) had a little difference between dietary CLA level. Dietary CLA reduced the degree of lipid oxidation in raw chicken meat during storage.

Dose Evaluation of Neutron within Containment Building of a CE type Nuclear Power Plant (CE형 원전의 격납건물내 중성자선량 평가)

  • From measured results of the neutron fields at some principal places within the containment building in a CE type nuclear power plant in operation, the radiation exposure of a worker to the neutron at there was evaluated and the equivalent dose reflecting new recommendation (ICRP 60) was compared with that doing the old one (ICRP 26). The measured neutron field was also compared with calibration neutron field. From the analysis, the following conclusion was obtained: the average neutron radiation weighting factor according to new recommendation is 2.41 to 2.71 times higher than the old one. The average neutorn radiation weighting factor at the measured place was similar to that at calibration neutron field. The average neutron energy at measured place was between 42 and 158 keV and higher than that of calibration field of 500 keV. So, the measured equivalent dose in nuclear power plant could be overestimated compared to the real equivalent dose.

  • Digital satellite communication systems are usually integrated with terrestrial systems to provide various services. In these cases, they should satisfy the performance objectives defined by the terrestrial systems. Recommendation ITU-R S.1062 specifies the error performance objectives of digital satellite communication systems operating below 15 GHz. The error performance are given in terms of bit error probability divided by the number of the average bit errors in the burst ($\alpha$). This paper presents a theoretical method to estimate $\alpha$ that is a very important parameter in the satellite communication systems to analyze the error performance objectives. We show performance estimation result of DVB-RCS turbo code using the presented method, and verify them by comparing to the simulation results.

Changes in the Levels of $\gamma$-Aminobutyric Acid and Some Amino Acids by Application of a Glutamic Acid Solution for the Germination of Brown Rices (글루탐산 용액 처리에 따른 발아현미 중의 감마-아미노낙산 및 일부 아미노산 함량변화)

  • The changes in the levels of $\gamma$ -aminobutyric acid (GABA) and some free amino acids were investigated in germinating brown rices. Ungerminated brown rices were germinated for 72 hrs by application of the following solutions: 1) distilled water, 2) 50 ppm lactic acid, 3) 5 mM glutamic acid. The GABA levels were enhanced in all germinated states of brown rices compared with ungerminated ones, highest in the germinated brown rices by 5 mM glutamic acid solution. Alanine levels were also enhanced significantly in the germinated brown rices. The levels of aspartic acid and glutamic acid were decreased significantly in all the germinated states. The levels of serine decreased during germination in the solutions of water and lactic acid were increased by the germination in the glutamic acid solution. The data show that germination of brown rices by the application of the glutamic acid solution can significantly increase the levels of GABA and can restore the serine level.

Zeolites in the Volcaniclastics of Jeju Island (제주도 화산쇄설암의 불석광물)

  • Zeolites were formed by the alteration of volcanic glass in the volcaniclastics including tuff cone/rings and subsurface Seoguipo Formation, Jeju Island. Phillipsite and analcime were identified by X-ray diffraction and electron microprobe analysis. Si/(Si+Al) atom ratios of analcime and phillipsite were similar to that of parent basaltic glass. In comparison with the simple chemistry of analcime, phillipsite showed a range of cavity cation compositions. Na is the major cavity cations of phillipsite in the Dangsanbong and Yongmeori tuffs bearing analcime, while K and Ca in core samples of Seoguipo Formation. Microtextural analysis by scanning electron microscope showed a general sequence that early phillipsite encrustification of pores was followed by later analcime infilling. Zeolites are abundant in the older tuff cone/rings but nearly absent in the younger ones.

Effect of Selenium Supplementation on Beef Color Stability (셀레늄 급여가 쇠고기 육색 안정성에 미치는 영향)

  • The objective of this study was to investigate the supplementation effect of selenium on beef color stability. A total of 15 Hanwoo steers were divided into 3 groups and 2 groups were administered with 0.9 ppm of one of two organic-selenium products, Organic-Se and Se-SMC (Se-spent mushroom compost) for 4 mon. The third group was the control group, which was not with fed selenium during the same period. The result of this study showed that there was no significant difference in meat color between the control and treatments when Hunter $L^*$, $a^*$, $b^*$, chroma, hue and total color difference (${\Delta}E$) were measured after 30 min of blooming. When the oxymyoglobin (OxyMb) contents were measured after beef samples were ground and stored for 48 h at $20^{\circ}C$ in an incubator, they were 26.04%, 28.52% and 33.78% for the control, Organic-Se and Se-SMC after 14 d of storage and 12.65, 18.98 and 18.72 after 21 d of storage at $4^{\circ}C$, respectively (p<0.05). The control had a significantly higher metmyoglobin (MetMb) content than Organic-Se and Se-SMC (p<0.05). This result indicated that selenium supplementation was effective in preventing the oxidation of myoglobin(Mb) and production of MetMb and thus was able to maintain the purplish fresh red color of the meat.

Effect of Dietary Brown Rice on the Carcass and Meat Quality of Broiler Chicken (현미 급여가 육계의 도체 및 육질 특성에 미치는 영향)

  • The objective of this study was to evaluate the carcass and meat quality of broiler chicken when slaughtered after treating with different source of grain(T1, 100% corn; T2, 50% corn + 50% brown rice; T3, 100% brown rice) in broiler diet. The carcass weight was decreased when feeding level of rice increased. The yield of breast was higher in T2(18.6%) than T1(17.3%) and T3(l7.9%). The L values(L *) and b values(b*) in meat color were decreased as the feeding level of rice increased when compared to T1(P < 0.05). Warner-Bratzler shear force(WBS) values were higher in T2 and T3 compared to T1. Cooking loss(%) was increased for T2(23.49%) and T3(24.50%) compared to T1(22.90%). In fatty acid composition, linoleic acid(C18:2, n6) contents were significantly lower in T2(31.89%) and T3(27.89%) when compared to TI(33.21%)(P < 0.05), and the total contents of unsaturated fatty acids(UFA) were 76.85%(T1), 77.22%(T2), or 75.49%(T3). The ratio of n6/n3 was decreased as the level of rice increased in the feed(T1 19.89%, T2 17.73%, and T3 17.01%). In conclusion, the meat quality was not significantly different between T1 and T2 from the results of carcass weight, meat color, WBS, and fatty acid composition; therefore, brown rice can be substituted for 50% of corn in the broiler diets.

Effect of Nutritional Levels on the Growth and Meat Quality of Korean Native Black Pigs (사료의 영양수준에 따른 재래흑돼지의 산육능력 및 육질비교)

  • This study was conducted to evaluate the effects of nutritional levels on the growth and pork quality of Korean native black pigs (54 pigs from 35-75kg). Three nutritional levels (high, medium and low in ME and lysine) were tested. As nutritional levels increased, the average daily gain improved, and the days to market weight were reduced. There were no significant differences in dressing percentage, backfat thickness, loin eye area and % lean among the dietary treatments. However, barrows showed thicker (p<0.05) for backfat than gilt. The analysis of Korean native black pig carcass traits indicated that the fatty acid composition of loin-eye muscle, intra-muscular fat content, sarcomere length, and muscle ratio between red- and white-muscles did not show any statistically significant variation. However, regarding intra-muscular fat, H carcasses (high energy diet) contained higher levels of saturated fatty acids with lower levels of unsaturated fatty acids compared to the carcasses from the other two energy groups (M and L). In addition, the levels of n-3 tended to be lower as the energy/lysine level in the diet increased, while the ratio of n-6/n-3 tended to decrease as the energy/lysine level increased, even though the differences were not statistically significant. Even with no statistically significant differences, it was interesting to observe that the sarcomere length tended to increase as the energy level of the diet increased, and with muscle ratio analysis, the red muscle ratio from the L-group, and the white muscle ratio from the M-group were higher than the other energy groups.

The Effects of Stretching and Temperature of Pre-rigor M. Longissimus on Sarcomere Length and Tenderness of Beef (강직 전 쇠고기 등심근의 신장(伸張)과 온도처리가 근절길이 및 연도에 미치는 영향)

  • To investigate the effects of stretching and temperature of pre-rigor muscle on sarcomere length and tenderness of beef, hot boned M. Iongissimus dorsi thoracis were stretched or non-stretched, and stored at $0^{\circ}C$ for 48 hrs ($0^{\circ}C$ stretched and $0^{\circ}C$ non-stretched) or at $10^{\circ}C$ for 7 hrs followed by $0^{\circ}C$ for 41 hrs ($10^{\circ}C$ stretched and $10^{\circ}C$ non-stretched). There was no significant difference in muscle pH and drip loss between $10^{\circ}C$ stretched and $10^{\circ}C$ non-stretched samples, but they were significantly (p<0.05) lower in pH and drip loss than $0^{\circ}C$ stretched and $0^{\circ}C$ non-stretched samples. Stretched muscles at $0^{\circ}C$ showed significantly (p<0.05) higher cook loss than control muscles. Sarcomere length of $10^{\circ}C$ stretched muscle was significantly (p<0.05) longer than that of control. However, control muscle showed significantly (p<0.05) higher value of shear force at 2 and 14 days postmortem compared to that of $10^{\circ}C$ stretched muscle. Panels rated $10^{\circ}C$ stretched muscle as having a significantly (p<0.05) better tenderness, flavor and overall acceptability compared to those of control muscle. Results suggest that longer sarcomere length and tender beef could be obtained by stretching of pre-rigor muscle and storing it at $10^{\circ}C$ for 7 hrs followed by $0^{\circ}C$ for 41 hrs.
