The Factors Influencing Latent Fingermark Development on Adhesive Side of Iron Oxide Powder-based Small Particle Reagent (사삼산화철 기반의 소립자시약(Small Particle Reagent)의 접착면 잠재지문 현출 효과에 영향을 미치는 요인)

  • Latent fingerprint left on the adhesive sides of tapes can be easily found at a crime scene. Small Particle Reagents(SPR) based on iron oxide($Fe_3O_4$) is a technique for the detection of a latent fingerprint adhesive surface. In this study, found out that the causes affecting the quality of the fingerprints developed when used SPR based on iron oxide. To a suspension of 0.5g of iron oxide in 100ml of distilled water, 0.5ml or more surfactant were added can be developed latent fingerprints of good quality. In addition, using surfactants HLB(hydrophile-lipophile balance) value of 11~18 showed good contrast to the background and latent fingerprint.

  • From the world wide globalization of iron oxide industy, the global trade in iron oxide is changed rapidly and the production of iron oxide is increasing in China, currently. Iron oxide have a broad range of applications from construction materials to medical area. Therefore, it is expected that nanoparticulate iron oxides have many applications, too. There is a series of interesting applications are introduced, but in entirely different fields as they are known from conventional iron oxide.

Preparation of Instant Powdered Soup Using Oyster Wash Water and Its Characteristics (굴 세척액을 이용한 인스턴트 분말 수프의 제조 및 특성)

  • To utilize oyster cannery processing waste water effectively, this study was carried out to prepare instant powdered soup using oyster wash water. Instant powdered soup from oyster hot-water extracts (HWE) was prepared by mixing oyster spray-dried hot-water extracts (15 g) with table salt (5 g), cream powder (19 g), milk replacer (12 g), wheat flour (20 g), corn flour (15 g), starch (5 g), glucose (7.5 g) and onion powder (1.5 g). In preparing instant powdered soup from oyster wash water (OWW), powder from oyster spray-dried wash water instead of the spray-dried hot water extracts, was added and other additives were added in proportion to those in the HWE. The OWW consists mainly of carbohydrates (71.1%). It was not different from the instant powdered soup from hot-water extracts. The volatile basic nitrogen, vaible cell counts, coliform group of instant powdered soup from oyster wash water contains 29.4 mg/100g, $4.6{\times}10^4\;CFU/g$, <18 MPN/100g, respectively and its water activity has 0.246. So it was a hygienically safe and conservable instant food. The main fatty acid of OWW was 16 : 0 and 18 : 1n-9. Its chemical score of protein was 59.4% and its main inorganic matter was iron. According to a sensory evaluation, in contrast to the HWE, the OWW had a slightly lower aroma but better taste. It was concluded from the above chemical and sensual evaluation that the oyster wash water can be used as a flavor enhancer for instant powdered soup.

Rheological Properties of Dough Added with Pine Needle Powder (솔잎분말 첨가에 따른 밀가루 반죽의 물리적 특성)

  • The rheological properties of dough made with 0%, 1%, 2% or 3% pine needle powder were investigated The approximate composition of the pine needle powder was moisture content 58.1% crude protein 4.1% crude fat 3.9% crude ash 0.9%, and crude fiber 9.3%. Rapid Visco Analyzer (RVA) analysis showed that the initial posting temperature increased with increasing pine needle powder content, while the peak viscosity decreased The water absorption, stability, development time, elasticity and valorimeter value of the dough, as determined using a farinograph and alveograph, decreased with increasing content of pine needle powder, while weakness increased. The extensibility, fermented volume and consistency of the dough decreased gradually with increasing pine needle powder content. These results indicate that addition of pine needle powder affects the rheological properties of bread.

Effects of Carcass Grade and Addition of Mugwort Powder on the Storage Stability of Pork Sausage (쑥 분말 첨가가 등급이 다른 돼지고기로 제조한 소시지의 저장성에 미치는 영향)

  • The effects of carcass grade(B and E) and containing mugwort powder(0.3%) on the pH, volatile basic nitrogen(VBN), thiobarbituric acid reactive substances(TBARS), bacterial count and residual nitrite of the pork sausage were investigated during storage at 4$^{\circ}C$${\pm}$1 for 8 weeks. The pH value and VBN content of sausage containing mugwort powder were not significant different(p>0.05) depending on the carcass grade as compared to sausage free of mugwort powder. The TBARS values of sausage containing mugwort powder were significantly lower than those of sausage free of mugwort powder up to 8 weeks of the chilling process. The sausage containing mugwort powder showed to have lower bacterial counts and residual nitrite contents than those free of mugwort powder depending on the carcass grade. However, those of sausage were not affected by the carcass grade.

Quality of Ginger Powder as Affected by Concentration and Dehydration Methods of Ginger Extracts (농축 및 건조방법에 따른 생강 추출액 분말의 품질변화)

  • Reverse osmosis(RO) and rotary evaporation, freezer drying and spray drying as concentration and dehydration methods were, respectively, employed to investigate their effect on the flavor quality of ginger powder. Rotary evaporation and spray drying methods were more effective to restrict the browning of ginger powder than RO and freezer drying methods. Concentration methods had no effect on the free amino acids and free sugar contents of ginger powder, but freezer drying resulted in the less quality loss than spray drying. And the powder prepared from enzymatically hydrolyzed extract contained less crude protein, crude ash, browning and the changes in free amino acids, but had more the crude fat, solubility and free sugars than that from ginger extract obtained by filter press. Sensory results indicated that quality of ginger powder prepared by RO concentration and freeze drying of enzymatically hydrolyzed extract was as good as that without enzyme hydrolysis

Quality Characteristics of Yukwa (Fried Glutinous Rice Cake) with Curry Powder (카레 분말을 첨가한 유과의 품질특성 연구)

  • Yukwa was prepared with different amounts of curry powder (0, 5, 10, 15, and 20%) based on the amount of waxy rice flour used, and its physical, sensory, and antioxidant properties were measured. In terms of the textural properties, the hardness began to increase when ${\geq}15%$ curry powder content was used; however, the crispiness was unchanged by the amount of curry powder used. The expansion degree of yukwa significantly decreased when 20% curry powder was used. The internal microstructure was measured by scanning electron microscopy (SEM), which showed a more compact and homogeneous structure as the curry powder content increased. The use of increased curry powder in yukwa decreased the acid and hydroperoxide values, and this could have resulted from the antioxidant action of curcumin in the curry powder. Through sensory evaluation, yukwa containing 15% curry powder was chosen as the most acceptable by the elderly.
