In this study, four Korean black raspberry wines were developed using raspberries from different regions in Korea; Gochang (G), Hoengseong (H), Jeongeup (J), Sunchang (S). Sample wines were monitored for titratable acidity, ethanol, pH, reducing sugar content, color intensity, hue, total phenolic content, and organic acids during alcoholic fermentation and aging. After fermentation was complete, the pH levels in the four wines were in a similar range (3.43-3.52), while total acidity levels ranged from 9.98 to 16.2 g/L, which were significantly different among the four wines. During 120 days of aging, the ethanol content ranged from 15.8 to 16.40% which corresponds to a good conversion rate of sugars. Among the four samples tested, the wine made with Jeongeup raspberries showed the highest levels of total phenolic content, and other color values such as hue and intensity. The predominant organic acids were citric acids (3.30-4.89 mg/mL) and succinic acids (1.92-3.48 mg/mL). Overall the wine made with Jeongeup raspberries showed differences in physico-chemical compositions compared to the other wines made with Gochang, Hoengseong, and Sunchang raspberries, respectively.

Today, as the specification of pigs increases, it is important to develop eco-friendly livestock feeds that do not add antibiotics to highly utilizable materials as feed resources, and to produce functional eco-friendly pork and processed products. The purpose of this study was to establish Rubus occidentalis (RO) byproducts containing various amounts of physiologically active substances such as anticancer, anti - inflammation and antioxidant as a raw material for pig feed. The multifaceted efficacy of the RO fermented fodder (ROFF) was confirmed by the nutrient transport factors and antioxidant activity of Berkshire pigs. ROFF was added 0.3% to the general diet and the efficacy was confirmed by feeding diets to Berkshire pigs according to each weight for 43~73 days. As a result, the total cholesterol (TC), LDL-cholesterol (LDL-C) and HDL-cholesterol (HDL-C) levels were decreased or were increased in the castrated male and female Berkshire pigs but not significantly. It was confirmed that the tendency was improved in nutrition physiology. The biochemical levels of female finishing pigs were not significant but increased. In the case of finishing pigs with possibility of pregnancy, it is expected that the nutrition supply for piglet production and will help in the production of the healthy piglet. Transferrin (TFE) levels tended to increase in female growing pig and 110-150 kg finishing pigs. Thus ROFF could minimize the negative effects of iron contents deficiency in female Berkshire pigs. Glutathione peroxidase 1 (GPx1) activity was increased in castrated male and female 110-150 kg finishing pigs. Therefore, ROFF tends to improve the antioxidant capacity. The results of this study suggest that ROFF is one of the most favorable dietary sources when considering the contents of RO in feed. In particular, ROFF could have a positive effect on nutrient transport and iron content of female rather than castrated male Berkshire pigs.
We investigated the anti-obesity effects of Lactobacillus acidophilus C isolated from kimchi and red ginseng and black raspberry mixture fermented by this strain. Experimental samples were prepared with 10% skim milk, 1% red ginseng extract and 1% immature black raspberry powder and without red ginseng extract and black raspberry fermented by this strain at $37^{\circ}C$ for 24 hour. Male C57BL/6J mice were randomly divided into 4 groups (a normal diet group (N), a high-fat diet group (HF), a high fat diet with L. acidophilus C (C), and a high fat diet with fermented mixture (CEx)) and were orally administered daily for 6 weeks at concentration of 2,000 mg/kg body weight. The results showed that weight gain, weight of periepididymal fat and perirenal fat, adipocyte size, lipid accumulation in liver, serum glucose concentration, serum GOT and GPT concentration and serum leptin were decreased and concentration of HDL-cholesterol and serum adiponectin were increased compared to HF group. These results suggest that fermented mixture (CEx) might be helpful in improvement of high-fat diet-induced obesity than only L. acidophilus C intake.
Fermented compost made from medicinal herb wastes (MHWC) as an environment-friendly manure resource was applied to determine physiological activities of Rubus coreanus Miquel (Bokbunja). MHWC, poultry manure compost (PMC), and MHWC+PMC (1:1, w/w) were applied to 2 year-old Bokbunja plant at levels of 0, 20, 40 Mg/ha, respectively. Physiological activities of Bokbunja were investigated at 15, 20 and 25 days after flowering (DAF). Content of total phenolics in fruit was high in order of 25 > 20 > 15 DAF, showing highest value in fruit treated with MHWC at 40 Mg/ha. The flavonoid level showed same pattern to total phenolics. Electron donation abilities at fruits at 15 and 20 DAF were higher than at 25 DAF. Nitrite scavenging ability (NSA) was increased on in order of pH 1.2 > 4.2 > 6.0. NSA in fruit at 15 and 20 DAF was higher than at 25 DAF. Tyrosinase inhibition ability at fruits treated with MHWC showed the highest value among all composts. Xanthine oxidase inhibition ability in fruit treated with MHWC at 25 DAF was the highest. In conclusion, physiological activities of Rubus coreanus Miquel (Bokbunja) were improved in MHWC group.
In order to reuse remnants of medicinal herb extracts as an environment-friendly manure, fermented compost made from medicinal herb waste (MHWC), poultry manure compost (PMC) and MHWC+PMC (1:1, w/w) were applied on upland soil cultivated with 2 year-old Bokbunja plants. The results of the changes of soil chemical properties on upland soil, the yield and the sugar contents of the fruit harvested were summarized as follows. The pH in soils treated with composts (STCs) was significantly changed (p<0.05) compared with untreated control (UC) group. The electrical conductivity (EC) in MHWC group was decreased 0.46-0.56 times compared with UC, and it was different from PMC groups. The contents of organic matter and total nitrogen were increased in all of the treatments and MHWC group was the highest among the all groups. The content of available phosphorous was different by types and amounts of the composts. The content of heavy metal in all groups did not exceed the standard content for soil contamination. The yield and the sugar contents of the fruit harvested were the highest in the treatments of MHWC. In conclusion, MHWC is an effective compost resource on improvement of soil environment and promoting the fruit qualities.
Until recently, various studies for the production of high-acidity vinegar have been conducted, but there have been few studies on the concentration process of vinegar. In this study, the possibility of introducing freeze-concentration method was investigated for the production of high-quality, high-acidity vinegar. Acidity, pH, specific gravity, and glucose concentration were measured for frozen concentrated vinegar fractions obtained by freezing and thawing three types of Rubus coreanus vinegar with different acidy (7.53, 5.43, and 3.72). Acidity, specific gravity, and glucose concentration were all highest when 15% of the original vinegar was thawed. pH was the lowest when 15% of the original vinegar was melted. As a result of the measurement of cumulative acidity, when 20% of the original vinegar was melted, it was the highest at 9.32, which was 3.89 higher than that of the original vinegar. In this study, it was confirmed that vinegar can be effectively concentrated using the freeze concentration method and at the same time, the thawing ratio can be controlled to effectively obtain vinegar with the desired acidity. However, it is considered that studies such as organic acid and amino acid analysis are needed to determine whether the freeze-concentration method is introduced into the high-acidity concentrated vinegar manufacturing process.
In our study, we evaluated possibility of distillation process introduction for Korean Rubus coreanus balsamic vinegar production development, has a less complicated and more rapid process leading to higher production volumes and cost savings. In order to investigate the applicability of concentrated vinegar fraction (CVF) and distilled vinegar fraction (DVF) obtained from the distillation process as balsamic and distillation vinegar, acidity, pH, and specific gravity (S.G.) were measured for the vinegar fraction obtained from the distillation process. The acidity of final CVF (60% of initial volume) obtained 4 types of vinegar (acidity; 4.42, 4.84, 5.61, and 6.35) were increased mean 38.1%, compared to initial acidities. Especially, acidity and pH of the final CVF was similar to balsamic vinegar. In addition, acidity of DVF also increased and it of the final fraction was 4.41%, 4.95%, 5.88%, and 6.72%, respectively. And it was suggested that the final DVF could be used as distilled vinegar. In this study, it was confirmed that vinegar can be effectively concentrated through the distillation process, and distilled vinegar can be produced at the same time. However, it is thought that the introduction of the distillation process can be decided only after additional biochemical characteristics such as organic acid content and antioxidant activity measurement for each vinegar fraction are analyzed.
Wine extracts of four different berry fruits, such as mulberry, blueberry, strawberry, and raspberry, were investigated for antioxidant, anti-tyrosinase, and ${\alpha}$-glucosidase activities by using in vitro assays. Additionally, quantitative changes of ${\alpha}$-glucosidase inhibitor in mulberry wine were determined by HPLC according to mulberry cultivars and fermentation process. Among four berry wines examined, mulberry wine showed the most potent ${\alpha}$-glucosidase inhibitory activity with 69.37% at 0.23 mg/mL, while blueberry and strawberry wines exhibited the strongest inhibition against DPPH radical and tyrosinase activity, respectively. Four compounds were isolated and purified from mulberry wine by a series of isolation procedures, such as solvent fractionation, and Diaion HP-20, ODS-A, and Sephadex LH-20 column chromatographies. Among them, Comp. 4 exerted the strongest ${\alpha}$-glucosidase inhibitory activity ($I_C_{50}=31.57{\mu}M$), and its chemical structure was identified as quercetin by UV and NMR spectral analysis. Finally, the "Daeseongppong" (16.83 ppm) muberry wine had larger amount of quercetin than the "Iksuppong" (14.85 ppm) and "Cheongilppong" (8.92 ppm) mulberry wines, but their contents of three mulberry wines decreased considerably with aging process. These results suggest that mulberry wine containing quercetin acted as ${\alpha}$-glucosidase inhibitor may be useful as a potential functional wine for improving diabetic disorder.
The purpose of this study was to investigate the perceptions and preferences held by the general public concerning jeungpyun. Self-administered questionnaires were collected from 484 residents in Daegu and Gyeongbuk. The questionnaires contained questions on the recognition of jeungpyun, purchasing, frequency, purchasing factor, and preferences for and purchasing of jeungpyun containing different kinds of makgeoilli. According to the survey, females were higher than males (31.4%) by 69.7%, and that for ages 20~30' was the highest. Most of them were students (39.7%), and 81.7% of them had an income of under 4,000,000 won per month. The results of the eating frequency rate showed that over half of the people had jeungpyun once a month, and the recognition of jeungpyun for females (3.63) was higher than that for males (3.09). The respondents who joyed eating jeungpyun mentioned 'good taste and texture' as the top reason for eating jeungpyun, and 'different food and bad flavor' was mentioned as the reason for disliking it. As a result, popularization of jeungpyun was based on two factors: 1) fundamental factor and 2) external factor, and both significantly influence the preference for and purchasing of jeungpyun,-. Therefore, future studies should be conducted to improve preference for jeungpyun as a functional food. The results of preference and purchasing show that jeungpyun prepared with rice, rubus coreanum miquel, black bean, grape and green mume makgeoilli.
